- 0:04>> Speaker A: Today we're talking about ultra processed
- 0:06foods, the boogeyman of modern
- 0:08nutritionists. Every single
- 0:11chiropractor and health person
- 0:14wants to jump down the throat and tell you that
- 0:16you shouldn't be eating these things. Some of them say they're going
- 0:19to outlive cockroaches, the ultra processed food, and maybe
- 0:22chiropractors. Others say they're the fast track
- 0:25to doom. But what's the truth? Let's
- 0:28dig in. As only a podcast called Fork
- 0:31you can.
- 0:35I am your Chief Medical Explanationist, Dr. Terri Simpson,
- 0:38and this is Fork U Fork
- 0:41University, where we bust a few myths, make
- 0:44sense of the madness, and teach you a little bit about
- 0:47food as medicine.
- 0:51Let's start with definitions. Ultra
- 0:54processed food, or UPF
- 0:57if you want to sound like smart kids, sounds
- 1:00like it was forged in a laboratory by mad
- 1:03scientists in lab coats cackling as they add an extra
- 1:05pinch of bad for you, seeking to make
- 1:08people sick because they own part of the big
- 1:11pharma. But in reality, ultra
- 1:14processed food simply means food that's been
- 1:17heavily modified from its original state, including, including
- 1:19ingredients you wouldn't find in your grandmother's
- 1:22pantry like emulsifiers, um, preservatives,
- 1:25stabilizers. This means everything
- 1:28from your favorite gas station hot dog
- 1:30to those plant based meat alternatives
- 1:33that some folks like me, actually are proudly shoveling down
- 1:36instead of a burger. Yes, those vegan
- 1:39nuggets are ultra processed food and welcome to the
- 1:42club. But I want to go through some of the myths.
- 1:45Lets start with myth one. They're all
- 1:48toxic and will kill you instantly.
- 1:51Listen, if ultra processed foods were that
- 1:54deadly, the entire American population would have
- 1:57been wiped out by the mid-1990s. While some
- 2:00ultra processed foods are high in salt, sugar and fats,
- 2:03they are not inherently toxic.
- 2:05It's about how much you eat and what else,
- 2:08uh, you're pairing with them. If your diet
- 2:11consists solely of neon colored cheese puffs and
- 2:14soda, which sounds like my teenage son.
- 2:17Yes, your health might take a hit, but
- 2:20a little moderation, not a problem.
- 2:24Twinkies last forever. Look, Twinkies have
- 2:27a long shelf life, but they are not immortal.
- 2:30They're not going to be sitting in a time capsule a thousand years from
- 2:33now waiting for archaeologists to take a bite.
- 2:36They contain preservatives, sure, but nothing that
- 2:39defies the laws of chemistry or
- 2:41thermodynamics. The myth started after a
- 2:44few poorly controlled experiments on old Twinkies, but in
- 2:47reality, they get stale and they get
- 2:50gross like any other
- 2:53food.
- 2:53Myth three, my favorite. If you can't
- 2:56Pronounce an ingredient. It must be bad. This is my favorite
- 2:59myth because by that logic I should avoid
- 3:01eating cyanocobalbumin, which
- 3:04is just vitamin B12, essential for your
- 3:07nervous system. And of course there are some
- 3:10silly people who say, oh my God, it's cyanide
- 3:13in there, it's gotta be bad, it's killing you. And of course it's
- 3:16not. Not all long
- 3:19complicated words are bad for you. Some
- 3:22are just the scientific names for
- 3:24everyday things.
- 3:26Dihydrogen monoxide, that's water.
- 3:29But I'll bet it get banned if you put it on
- 3:32a food label. And if
- 3:35you see an ingredient that says meat, well that's got to be good. All it is
- 3:38is meat. Wait until we break that
- 3:41down and give chemical names to every little moiety in the
- 3:44meat. Uh, that will sound scary.
- 3:47The real problems with ultra processed food. Well,
- 3:50here's the issue. Many ultra processed foods are
- 3:53designed to be hyper processed, palatable.
- 3:56Meaning they hijacked your brain's reward
- 3:59system. Ever wonder why you can eat an entire
- 4:02family sized bag of chips in one sitting? It's not
- 4:05a lack of willpower, it's science.
- 4:07Those foods, by hook or crook, are
- 4:10simply irresistible. Not the scientists
- 4:13were smart enough to make them that way. They just sort of
- 4:16stumbled into it because we all know what we like to
- 4:18taste. And ultra processed foods tend to
- 4:21be calorie dense, but nutrient poor. You can eat a lot of them
- 4:24without getting fiber, vitamins, minerals, not that much, much
- 4:27protein. Things your body needs. That's
- 4:30the real danger. Not that they exist, but they can
- 4:33crowd out the good stuff. They don't take that much
- 4:36room. Can you eat ultra processed foods and still
- 4:39be healthy? Absolutely. The key is
- 4:42balance. If your diet is 80% whole foods,
- 4:44fruits, veggies, lean proteins, whole grains, then
- 4:4720% processed ingredients isn't just going to wreck
- 4:50you. The problem is in the United States, ultra
- 4:53processed food make up anywhere from 70 to 80% of the diet of
- 4:56the average American. And that's where the trouble
- 4:59starts. There are those people
- 5:02who are reductionists,
- 5:04meaning they will take ultra processed food and say, see
- 5:07the problem is, pick one. The problem is, uh,
- 5:10high fructose corn syrup. We can show you. High
- 5:13fructose corn syrup chemically is pretty similar to glucose, which
- 5:16your body needs as its metabolic currency. Or
- 5:19the problem is seed oils. That's the favorite one of the
- 5:22carnivore crowd. And they'll say, oh, seed oils are ultra
- 5:25processed and made with hexane. And we've covered this before
- 5:27folks, seed Oils are vegetable oils.
- 5:30Vegetable oils, when looked at in large studies, are
- 5:33healthy. Now because vegetable oils are cheap, they're
- 5:36put in all sorts of stuff. Your favorite
- 5:39protein bar has a lot of vegetable oil and it doesn't mean it's healthy
- 5:42or unhealthy. It's your protein bar. You
- 5:45can eat a lot of them. And let's be
- 5:48clear, when we have sort of classified
- 5:51ultra processed food by a standard, but
- 5:54we don't know if there's a single ingredient in there that's bad or
- 5:57not. We do know that people, when given
- 5:59ultra processed food, tend to eat about
- 6:02500 calories more a day. Ever wonder
- 6:05why we're eating more calories in the United States and in the
- 6:08western world? It's because we're eating more
- 6:11ultra processed food. Some people say we just need to put more
- 6:14fiber in it. It's not that simple. Some people will say the answer is more
- 6:17protein. It's not that simple. People want to make this
- 6:20stuff simple when it's not.
- 6:22Ultra processed food has some benefits. Did
- 6:25you know that? Let me give you a few. They have a strong
- 6:28shelf life, a long, long, strong
- 6:31shelf life. Is that bad? The Twinkies lasting
- 6:34forever? No, it's not.
- 6:36Why? Well, the only thing worse than
- 6:39obesity is starvation. And when you have shelp
- 6:43stable food, you can live through
- 6:45famine. If you're going to eat only whole
- 6:48unprocessed foods, let me remind you, when
- 6:51you got healthy and decided to put all those fruits and vegetables in
- 6:54your crisper in the refrigerator, they weren't so
- 6:57crisp after a while, were they? But the
- 6:59frozen fruits and vegetables picked at the ripeness, they were
- 7:02fine. The canned fruits and vegetables, they were
- 7:05fine. It's great if you can afford to go to and
- 7:08live in a place like I do in California and go to a farmer's market and eat
- 7:11that way. But even I don't. Here's the
- 7:14thing. Ultra processed food
- 7:17may have been a key that hit the reward
- 7:20center that allowed obesity to unlock
- 7:23for which we now have medications to control.
- 7:26Maybe we don't have proof of that.
- 7:29So it's really nice when people say you should only eat this, that
- 7:32or the other thing. The answer is it's not that
- 7:35simple. Yep, whole unprocessed food is the way to go.
- 7:38We'd like you to be on the Mediterranean night eating those things that
- 7:41are fresh and delicious. The answer is
- 7:44you're not going to die if you eat some kettle
- 7:47corn. And if you don't want the kettle corn,
- 7:50send it to me. Ultra
- 7:52processed food it's not the enemy. It's a
- 7:55tool for nutrition. It can
- 7:58be good, it can be bad. There's a lot of research to go
- 8:01into it. So when those people who are
- 8:04shirtless salesmen of supplements and scams
- 8:07trying to say it's bad while they're selling you their own
- 8:09version of ultra processed food, usually like this is
- 8:12purified bovine liver or whatever
- 8:15they sell, that's ultra
- 8:18processed crap.
- 8:20All right, that should be it for my rant for
- 8:22today. This is Dr. Terri
- 8:25Simpson was written and directed by me.
- 8:28And while I am a physician, I am
- 8:31not your physician. If you're going to change your diet to
- 8:34a healthy diet like the Mediterranean, or an unhealthy diet like
- 8:37keto or Carnivore, please consult with a western trained
- 8:40physician with a board certified credentials and
- 8:43a registered dietitian. Don't check with a
- 8:45chiropractor. Don't check with an Eastern medicine person.
- 8:48God. Don't check with the functional medicine people who want to get hundreds of
- 8:51ccs of blood out of your arm and charge you a
- 8:54lot, you don't need them. We were
- 8:56distributed by our friends at Simpler Media, the pod God, Mr.
- 8:59Evo Terra. And we were produced,
- 9:02even though she never wants to admit it, by our friend
- 9:05Producer Girl Production, who, when you are
- 9:08listening to this, will be celebrating 15
- 9:11years of CO producing this
- 9:13podcast over its many years and many
- 9:16forms. I don't know what you get a producer of
- 9:1915 years. Probably
- 9:21Xanax, then Wellbutrin.
- 9:24I'm not sure. All right, thanks for
- 9:27listening. Have a good week.
- 9:33Hey, Ivo, what's your favorite ultra processed
- 9:36food? I kind of vary between Reese's
- 9:39peanut butter cups and wine.
- 9:44>> Speaker B: Yeah, color me shock there, wino.
- 9:46Uh, I. I can't keep chips
- 9:49or snacky foods like that in the
- 9:52house because, yeah, I'm that guy that will eat the
- 9:55entire bag and I don't want to be that guy
- 9:57anymore. So, yeah.
