- Lucas: Welcome back to Learn French with Fexingo. We are episode 275. Luna: Hi everyone! I am so ready to get back into the kitchen. Last time we talked about searing meat and deglazing pans. That sounded intense. Lucas: It was high heat. Today we move to two very different techniques. One is dramatic, one is patient. Let's start with the drama. Luna: The dramatic one? Is that when things catch fire? Lucas: Sometimes. It is called flambéing. In French, the verb is flamber. Let's try it. Lucas: Flamber. Luna: Flamber. Lucas: Good. You add alcohol to a hot pan to ignite the vapors. It adds a rich flavor. We usually say flamber le plat. The dish. Luna: Flamber le plat. Lucas: Exactly. Flamber le plat. Luna: I feel like I need a helmet for this one. But okay. Flamber le plat. Lucas: Careful with the flame. Now, how do you actually do it in a sentence? You might say, I add a little cognac. To trigger the flame. Lucas: Ajouter un peu de cognac. Luna: Ajouter... un peu de cognac. Lucas: Perfect. Ajouter un peu de cognac. Luna: Ajouter un peu de cognac. Wait, does it have to be cognac? Can I use whiskey? Lucas: You can use any spirit. Rum, brandy, even wine. But cognac is classic for desserts or sauces. So, ajouter un peu de cognac. Luna: Got it. Ajoute un peu de cognac. Then wait for the blue flame. Lucas: Yes. Once the flame dies down, the alcohol burns off, leaving the flavor. This is flamber le plat. Luna: Flamber le plat. Okay, I can handle that. What about the patient technique? Lucas: That is simmering. When you want a sauce to thicken slowly without boiling hard. In French, we say laisser frémir. Frémir means to tremble or shimmer. Luna: Laisser frémir. Lucas: Listen closely. Laisser frémir. Luna: Laisser frémir. Lucas: Good. Laisser frémir. It implies a very gentle heat. The liquid just shimmers on the surface. Luna: Laisser frémir. So if I boil it too much, it ruins the sauce? Lucas: Often yes. Proteins tighten, fats separate. You want calm. Laisser frémir keeps it calm. Luna: Okay. Laisser frémir. How do I know my heat is right? Lucas: You check the stove. You say the fire is soft. Le feu est doux. Luna: Le feu est doux. Lucas: Right. Le feu est doux. Luna: Le feu est doux. So soft fire. Gentle heat. Lucas: Exactly. If the fire is too strong, you turn it down. Le feu est trop fort. But today we want le feu est doux. Luna: Le feu est doux. I like that phrase. It sounds peaceful. Lucas: It is. Simmering is peaceful. Flambéing is exciting. You have both tools now. Luna: Let's put them together. I add cognac, I flambé the dish, then I let it simmer. Lucas: Yes. First, ajouter un peu de cognac. Then, flamber le plat. Luna: Ajouter un peu de cognac. Flamber le plat. Lucas: Then reduce the heat. Le feu est doux. Luna: Le feu est doux. Lucas: And finally, let it go. Laisser frémir. Luna: Laisser frémir. Lucas: Beautiful sequence. Add cognac. Flamber the dish. Soft fire. Let it simmer. Luna: Ajouter un peu de cognac. Flamber le plat. Le feu est doux. Laisser frémir. Lucas: You got it. Just remember, safety first with the flambé. And patience with the simmer. Luna: I will keep both in mind. My kitchen is ready for some drama and some calm. Lucas: That is the spirit. And hey, before we wrap up, if Fexingo has been helping you make actual progress with this language...
