- 0:00Speaker 1: Off the bench with Jacob Hester and Matt Flynn.
- 0:04Speaker 2: Say Hester and Hester got a fine little far from
- 0:08Speaker 2: carrying each other to and Natty to carrying each other on.
- 0:11Speaker 1: The air well, there's prop control for the.
- 0:16Speaker 2: Live from the Raising Kine Studio.
- 0:19Speaker 1: It's off the bench, all right.
- 0:39Speaker 3: Welcome back in our number three of OTV here live
- 0:42Speaker 3: from the Raising Caines Studio. Very excited for our next guest.
- 0:46Speaker 3: We look forward to it every baseball season. Good enough
- 0:49Speaker 3: to join us every single week here on OTV. Of course,
- 0:52Speaker 3: it is your head baseball coach Jay Johnson, getting ready
- 0:55Speaker 3: for opening weekend. Coach, we appreciate the time as always.
- 0:59Speaker 3: Hope you're doing.
- 0:59Speaker 4: Well, doing great?
- 1:01Speaker 5: How are you guys doing fantastic? How could we not be?
- 1:04Speaker 3: It is baseball season here in Baton Rouge, and so coach,
- 1:08Speaker 3: right off the top, before we maybe get into some
- 1:10Speaker 3: of the matchup like for you opening weekend, like kind
- 1:13Speaker 3: of what are some of the feelings that you have,
- 1:15Speaker 3: Like this is not your first time being a defending
- 1:17Speaker 3: national champion and going into an opening weekend, So just
- 1:20Speaker 3: describe all the work that you do in the fall,
- 1:23Speaker 3: the work you do in January, and just what opening
- 1:25Speaker 3: weekend means to you, I think it's awesome.
- 1:29Speaker 4: I think if you're not excited about it, it's probably
- 1:32Speaker 4: time to not coach anymore. So very very excited. I
- 1:36Speaker 4: think I'm excited for our players. As you mentioned, and
- 1:39Speaker 4: you guys as former athletes, know the time that you
- 1:42Speaker 4: put in away from you know, game day that nobody
- 1:45Speaker 4: else sees, and the game day and the competition is
- 1:49Speaker 4: the reward for all of that work, and so it's
- 1:52Speaker 4: exciting for me. It's kind of simplistic of like, hey,
- 1:56Speaker 4: I want to see what we need to do to
- 1:59Speaker 4: really get better. I think we're probably at a point
- 2:01Speaker 4: where we need to play somebody else to know what
- 2:04Speaker 4: we need to do to get better. And I mean
- 2:08Speaker 4: like winning games. An opportunity to win a game, you know,
- 2:12Speaker 4: that's that's something that I look forward to that the
- 2:15Speaker 4: competition is back.
- 2:16Speaker 6: Yeah, coach, I was thinking about the kind of your
- 2:18Speaker 6: off season. I know there's like a relentless amount of
- 2:21Speaker 6: work that's put in by your staff and the players,
- 2:23Speaker 6: and I know it's a little bit different from like
- 2:25Speaker 6: when Jake and I were in college with the nil
- 2:28Speaker 6: and people coming in for the first time in transfers,
- 2:30Speaker 6: but I remember The hardest off season I've ever experienced
- 2:34Speaker 6: was after the two thousand and three National championship. Nick
- 2:38Speaker 6: Saban was a coach, and it was basically a reminder
- 2:40Speaker 6: to y'all that, hey, y'all are not the team from
- 2:43Speaker 6: last year, and I'm going to send this message to
- 2:44Speaker 6: y'all really early in our off season. Is there anything
- 2:47Speaker 6: like that, like just from a mental standpoint, like, look,
- 2:50Speaker 6: this is not the team, and is there a reset?
- 2:53Speaker 6: Do you coach them a little bit harder in the
- 2:54Speaker 6: offseason leading up?
- 2:56Speaker 4: Yeah? I think it's a really good question. And you
- 2:59Speaker 4: guys are ten to play for the greatest coach of
- 3:01Speaker 4: all time in a sport that you know knows in
- 3:05Speaker 4: his line and quoting him as the biggest threat to
- 3:08Speaker 4: excellence is complacency. And it's very human nature to be
- 3:12Speaker 4: complacent when things are going good, because nobody likes being uncomfortable.
- 3:17Speaker 4: But it's in some of those uncomfortable times that we
- 3:20Speaker 4: grow the most. And it's really hard to facilitate that
- 3:25Speaker 4: when you're on the top of the mountain. And so,
- 3:28Speaker 4: but today players are smart. They're really smart. Not saying
- 3:31Speaker 4: you guys weren't smart, that's not what But you can't
- 3:36Speaker 4: you can't fabricate it to the point where they know
- 3:39Speaker 4: what's going on. And so, you know, we've had a
- 3:42Speaker 4: lot of honest conversations about it and use it as
- 3:45Speaker 4: kind of like setting our course of like what does
- 3:48Speaker 4: this team need to do to be successful? And you
- 3:50Speaker 4: stole a Kurt Signetti, you know, saying of stalking you know,
- 3:55Speaker 4: that complacency element and you know, honoring the process of
- 4:00Speaker 4: what it does take to be successful and you know,
- 4:03Speaker 4: holding the standard and that doesn't mean wins or championships
- 4:06Speaker 4: or omaha, just like holding the standard on a daily
- 4:09Speaker 4: basis of what's required to win. And so we have
- 4:13Speaker 4: talked about it in those regards. You know, you're gonna
- 4:16Speaker 4: get You're gonna get everybody's best shot. Like that's really
- 4:19Speaker 4: no different. That's the way that it is. And it's
- 4:22Speaker 4: been a little thunderbolt during practice yesterday, you know, raising
- 4:27Speaker 4: my voice that Milwaukee is going for the greatest win
- 4:30Speaker 4: in the history of their program on Friday, Like that's
- 4:32Speaker 4: what that's what's coming for us. So we have to
- 4:35Speaker 4: be on top of our stuff to deserve to win
- 4:38Speaker 4: that game. So it we're mindful of it and talk
- 4:41Speaker 4: about it frequently.
- 4:43Speaker 3: Catching up with else, you had baseball coach Jay Johnson
- 4:46Speaker 3: here on OTB coach kind of going back to opening weekend.
- 4:50Speaker 3: So you build for months toward that opening weekend with
- 4:53Speaker 3: a very specific blueprint in mind. So when you have
- 4:56Speaker 3: that blueprint and maybe it starts to get tested in
- 4:58Speaker 3: real time, how do you balance like trusting the process
- 5:02Speaker 3: versus reacting to what you're actually seeing on the field,
- 5:06Speaker 3: Like do you have a certain timeline? Is it different
- 5:08Speaker 3: every single year? Like because we all have a blueprint,
- 5:11Speaker 3: but like you know, Mike Tyson said, everybody's got a plan,
- 5:13Speaker 3: so they get punched in the mouth.
- 5:14Speaker 5: So how do you always handle kind.
- 5:16Speaker 3: Of the opening idea to what it ends up being
- 5:18Speaker 3: even in a couple of weeks.
- 5:20Speaker 7: Yeah, it's a good question.
- 5:21Speaker 4: I think that's where like you can talk about being
- 5:24Speaker 4: process oriented or you can be about it. And part
- 5:28Speaker 4: of ours is, Hey, we're playing every game, like if
- 5:33Speaker 4: we don't win, like all of our families are going
- 5:36Speaker 4: to be taken, you know what I mean type deal,
- 5:38Speaker 4: Like that's a competitive level that I want. But at
- 5:40Speaker 4: the same time, while you're trying to do that, we
- 5:44Speaker 4: need to figure out how we become our best And
- 5:47Speaker 4: you know the line that I got from you know,
- 5:49Speaker 4: one of my mentors, Rich Hill, he's now the head
- 5:51Speaker 4: coach at the University of Hawaii. Yeah, who I worked
- 5:54Speaker 4: for for eight years. Is like, hey, we never want
- 5:56Speaker 4: to accept in winning what we wouldn't and losing, but
- 5:59Speaker 4: can we win enough games early to position ourselves well
- 6:03Speaker 4: while still working towards our best team? And you know,
- 6:06Speaker 4: I think that's something like, for instance, last year's team
- 6:09Speaker 4: did a really really good job of and did a
- 6:11Speaker 4: good job of finding ways to win, you know, when
- 6:14Speaker 4: we didn't maybe play our best and then playing near
- 6:16Speaker 4: our best often is the goal, Like you know, it's
- 6:19Speaker 4: a John Wooden thing. You know, great teams play near
- 6:22Speaker 4: their capability often. Yeah, and then not not validate yourself
- 6:25Speaker 4: as crazy as it sounds, and I don't want everybody
- 6:28Speaker 4: to think I fell and hit my head in the
- 6:29Speaker 4: off season, but like not validate ourselves by winning or
- 6:34Speaker 4: losing or what anybody says, but by a standard of
- 6:38Speaker 4: how we play. And when you do that you can
- 6:40Speaker 4: kind of keep getting that improvement and that that is
- 6:43Speaker 4: really really important as we go along.
- 6:44Speaker 6: Here, God, you got a lot of certainly a lot
- 6:47Speaker 6: of turnover on the on the roster. You got new
- 6:49Speaker 6: guys coming in. Is there any has there any been
- 6:52Speaker 6: been a big like pleasant surprises to you from any
- 6:55Speaker 6: anybody particular this offseason.
- 6:58Speaker 4: Yeah, and I don't I don't know if i'd call
- 7:00Speaker 4: surprises because they don't want to build a fence around
- 7:02Speaker 4: what I think, you know, anybody can or can't do.
- 7:05Speaker 4: I would say I've been very pleased with the improvement
- 7:10Speaker 4: of some of our freshmen since they've been here. You know,
- 7:14Speaker 4: Mason Brown clearly far and away the best hitter on
- 7:18Speaker 4: our team. You know, here in the preseason scrimmages. I
- 7:22Speaker 4: knew he would would be a great hitter in college,
- 7:24Speaker 4: but his maturity to slow things down and take quality
- 7:28Speaker 4: at bats against really good pitching was impressive. So you know,
- 7:33Speaker 4: he's going to get some early, early playing time and
- 7:35Speaker 4: be a great player here. I think he's gonna be
- 7:37Speaker 4: one of those staple, you know type players, kind of
- 7:40Speaker 4: a blend of you know, Josh Pearson type body, Kate
- 7:44Speaker 4: Beloso type impact with the bat at his best, really
- 7:47Speaker 4: good strikes on discipline, you know, very you know, very
- 7:51Speaker 4: j Johnson type offensive player, So very excited about him.
- 7:55Speaker 4: On the pitching staff, there's a lot of guys, you know,
- 7:58Speaker 4: to talk about. You know, I think looking at the bullpen,
- 8:02Speaker 4: really excited to have you know, Gavin Gidrie back. I'm
- 8:06Speaker 4: happy to have Devin Sheeran back, Like it's a great
- 8:08Speaker 4: accomplishment to win a championship last year without those two guys,
- 8:11Speaker 4: and they're gonna be key parts of this bullpen. Grant
- 8:15Speaker 4: Fonto is another guy that only through seven innings last
- 8:17Speaker 4: year who's throwing the ball really, really well. And so
- 8:21Speaker 4: those guys, you know, along with Maverick Rizzy a name
- 8:24Speaker 4: to know maybe that people aren't talking about a lot
- 8:27Speaker 4: of Ethan Plogg, a really good lefty that we got
- 8:30Speaker 4: from a JC, really good evaluating by Josh Simpson. It's
- 8:33Speaker 4: one of the reasons I hired him. Is longtime scout
- 8:36Speaker 4: for the Rangers. So I really like the back end
- 8:38Speaker 4: of that bullpen. I think, you know, it's gonna be
- 8:40Speaker 4: a little different model, Like we don't need seven or
- 8:43Speaker 4: eight out of the Friday or Saturday starter because we
- 8:45Speaker 4: could turn it over and match up for a good
- 8:47Speaker 4: part of the game and feel good about our chances
- 8:49Speaker 4: of getting zeros.
- 8:51Speaker 3: Talking to LSU Baseball with head baseball coach Jay Johnson
- 8:55Speaker 3: here on OTB coach Matt was talking about that all
- 8:59Speaker 3: season that had after the national championship, and that's the
- 9:02Speaker 3: year that I came in, and so like there's an
- 9:04Speaker 3: expectation for LSU and you got to kind of learn
- 9:07Speaker 3: the ways of LSU pretty quickly. But that was just
- 9:09Speaker 3: for a freshman class. Now it's freshman class and it's
- 9:12Speaker 3: transfer portal, and for LSU baseball it's way like even
- 9:16Speaker 3: more so because of all the success that y'all have had.
- 9:19Speaker 3: I mean, for God's sakes, there's something called the intimidator
- 9:22Speaker 3: in right field to show the success for other teams,
- 9:24Speaker 3: but the other team's not the only one that sees
- 9:26Speaker 3: the intimidator. Like new players see that when they walk
- 9:29Speaker 3: in as well. So for y'all, Like, how do y'all
- 9:32Speaker 3: make sure that those players know the responsibility of LSU
- 9:36Speaker 3: baseball but also allow them to be themselves and not
- 9:39Speaker 3: make it too much of a thing.
- 9:41Speaker 4: Yeah, So I try to be really clear with them
- 9:44Speaker 4: of like that's an accomplishment, that's what we're striving for here,
- 9:50Speaker 4: like so much so like we don't even really talk
- 9:52Speaker 4: about Omaha, and we don't even really talk about championships.
- 9:56Speaker 4: Like I try to let them know what my expectations are,
- 10:00Speaker 4: and that's to be the most prepared team on game
- 10:03Speaker 4: day or is what we call undefeated at preparation, and
- 10:07Speaker 4: then the expectation that they're going to give everything they
- 10:10Speaker 4: can to execute their job and be very clear with
- 10:13Speaker 4: them of what their job is. Like I have a
- 10:15Speaker 4: five minute to ten minute meeting with every player on
- 10:18Speaker 4: a roster this week, you know, between Monday and Tuesday,
- 10:21Speaker 4: to try to help give them clarity. Because you guys
- 10:23Speaker 4: have been there, It's like even if it's not exactly
- 10:26Speaker 4: what you want to hear, if you know it's truthful
- 10:28Speaker 4: and there's good communication and there's is a plan for you,
- 10:31Speaker 4: like it's easier to buy into what you need to
- 10:34Speaker 4: do as a team. But it's really hard. It's a
- 10:37Speaker 4: big challenge here. But like prepared and execute your job
- 10:41Speaker 4: with everything you got, like internally, those are those are
- 10:44Speaker 4: the expectations.
- 10:46Speaker 5: All right, coach.
- 10:47Speaker 6: I know you're preparing your team's preparing for opening weekend here,
- 10:50Speaker 6: and I know in February. I mean it's it's February
- 10:52Speaker 6: twelfth right now, and I know February there's there's probably
- 10:55Speaker 6: a balance you have there. There's a process in place
- 10:57Speaker 6: for the whole season in mind and the whole end
- 10:59Speaker 6: goals you want to get. There's probably like a little
- 11:01Speaker 6: bit difference of coaching for results versus development right in February,
- 11:06Speaker 6: and you kind of hit on that a little bit.
- 11:07Speaker 6: But in your opinion, what is a good first month
- 11:10Speaker 6: of baseball? What's a goal you would set for a
- 11:12Speaker 6: good first month of baseball for your team?
- 11:16Speaker 4: We win every game that we play, and you know,
- 11:20Speaker 4: which is tough in our sport, and we're improving as
- 11:24Speaker 4: we do that, and we're kind of figuring out what
- 11:27Speaker 4: the blueprint is going to look like for you know,
- 11:30Speaker 4: Championship Baseball, which might as well be the SEC because
- 11:33Speaker 4: you look through our schedule and the quality of teams
- 11:36Speaker 4: and players, Like I mean, I was thinking about like
- 11:39Speaker 4: somebody like Ole Miss the other day, Like I think
- 11:41Speaker 4: I saw they were ranked twenty fourth in the D
- 11:44Speaker 4: one poll and I was like, wow, that's a big miss,
- 11:46Speaker 4: Like they're a surefire national championship contender with the pitching
- 11:50Speaker 4: rotation that they have and old position players and ability
- 11:55Speaker 4: to match up and bullpen and new pitching coach there
- 11:58Speaker 4: as of last year that does a good job. Like
- 12:00Speaker 4: that's that's what's waiting So I think that goes back
- 12:03Speaker 4: to the improvement and putting yourself in a position to
- 12:07Speaker 4: where you can match up, because one win in our
- 12:10Speaker 4: league is absolute gold. And so again, I know it
- 12:14Speaker 4: sound like a boring coach speak, you know type deal,
- 12:17Speaker 4: but win every game that we play and improve and
- 12:21Speaker 4: find out our best teams. We're doing it.
- 12:23Speaker 5: I've always loved that about you.
- 12:24Speaker 3: Every game midweek, weekend, doesn't matter, go out there and
- 12:27Speaker 3: win the game.
- 12:28Speaker 5: So I'm all for that, coach.
- 12:30Speaker 3: What about something maybe that you're going to be eye
- 12:32Speaker 3: hustling this weekend. Maybe it doesn't show up in the
- 12:34Speaker 3: box score, but something that you've been working this fall,
- 12:37Speaker 3: something you'll been working in January. Some of these small
- 12:40Speaker 3: little nuances, the nitty gritty of it, that you're going
- 12:43Speaker 3: to be paying attention to, maybe more than anything else
- 12:46Speaker 3: this weekend, to see if y'all get it done.
- 12:48Speaker 4: Yeah, I'll start with tomorrow. Like, and I stole this
- 12:51Speaker 4: from one of my peers in our league long before
- 12:53Speaker 4: I was a coach. Here he said, like the problem
- 12:55Speaker 4: with opening days everybody always tried to do too much right.
- 12:58Speaker 4: And so it's a simple stick message of that, use
- 13:02Speaker 4: our experience to not do that if that makes sense, like,
- 13:07Speaker 4: and just focus on execution and mindset and so you know,
- 13:12Speaker 4: we've you know, had good opening days over the course
- 13:15Speaker 4: of my career, and I've always felt like that was
- 13:17Speaker 4: a big, big part of that. And you know, emotional
- 13:22Speaker 4: control is a big part of your success in baseball
- 13:24Speaker 4: and in life. So I'm looking for emotional control and
- 13:27Speaker 4: then just focused on executing and this will be good.
- 13:31Speaker 4: These guys have a really old pitching staff that have
- 13:35Speaker 4: some guys that were All Conference pitchers, preseason Picture of
- 13:37Speaker 4: the Year type guys. So this will be a good,
- 13:40Speaker 4: good start to this thing. And then you know, Monday
- 13:42Speaker 4: playing Kent State Perennial Regional team thirty eight win team
- 13:47Speaker 4: pick to win the MAC. Like really good, good opportunity there.
- 13:50Speaker 4: So just excited to go on.
- 13:52Speaker 6: Yeah, coach, I know you looking back a little bit,
- 13:55Speaker 6: you never are going to replace people and are else
- 13:57Speaker 6: so that graduate and move on to the next level
- 13:59Speaker 6: of their careers. But you certainly got to replace lineup spots.
- 14:02Speaker 6: You certainly have to replace production levels or try to
- 14:06Speaker 6: to replicate production level. So in the lineup this year,
- 14:10Speaker 6: how are you going to try to how do you
- 14:12Speaker 6: envision replacing the power production from Jared Jones gave you
- 14:15Speaker 6: a year ago.
- 14:17Speaker 4: Well, I'm glad you brought that up and more in
- 14:20Speaker 4: a context of I think, you know, he's one of
- 14:22Speaker 4: the most underappreciated players I think in the history of
- 14:25Speaker 4: this program. I think he's third all time in home
- 14:27Speaker 4: runs and won two national championships in three years. Like
- 14:31Speaker 4: that's a pretty like all same career worthy resume from
- 14:36Speaker 4: where I sit. So more it's like a credit to Jared.
- 14:39Speaker 4: I think, you know, I don't want to sound too
- 14:41Speaker 4: like the movie Moneyball, but like you know, you get
- 14:44Speaker 4: three players to replace one, you know, type deal, and
- 14:48Speaker 4: I think that and then the length of last year's lineup,
- 14:51Speaker 4: where I think Luis Hernandez like hit nine homers, but
- 14:54Speaker 4: if you go back and you start counting the big
- 14:56Speaker 4: homers that he hit last year, they're they're pretty pronounced.
- 15:00Speaker 4: And so I think just working towards the whole lineup
- 15:04Speaker 4: being the best that they can be. You know, it's
- 15:07Speaker 4: not fair, you know, to ask somebody to do that.
- 15:10Speaker 4: It's not fair to ask somebody to try to replace
- 15:12Speaker 4: you know, Kate Anderson or Anthony Ironson. I just need
- 15:16Speaker 4: the guys on this team to be the best that
- 15:19Speaker 4: they can be. And I think, collectively, and I thought
- 15:21Speaker 4: last year's team did a great job of this, collectively,
- 15:24Speaker 4: we can be even better than the sum of the parts,
- 15:27Speaker 4: and that's what we're shooting for.
- 15:30Speaker 3: All Right, there, he is head baseball coach for LSU
- 15:32Speaker 3: fighting at Tigers, Jay Johnson. Remember Friday two pm Central Time,
- 15:36Speaker 3: Saturday one pm Central Time. Also on Sunday one pm
- 15:40Speaker 3: Central Time inside Alec Box Stadium, LSU versus Milwaukee coach.
- 15:44Speaker 5: We can't thank you enough.
- 15:45Speaker 3: We all look forward to being in the box and
- 15:47Speaker 3: watching the Tigers play, and we look forward to our
- 15:49Speaker 3: next conversations coming up.
- 15:51Speaker 4: All right, sounds great, thanks guys.
- 15:53Speaker 3: All right, Jay Johnson again, going to join us every
- 15:55Speaker 3: single week here on ot B, and this is the
- 15:59Speaker 3: coaching season we get Betterina Kim Malkey, Jay Johnson every
- 16:03Speaker 3: single week here on the show, and again some of
- 16:06Speaker 3: our favorite conversations. El Shoe base Baseball starts this weekend.
- 16:09Speaker 5: Else she's softball right now.
- 16:11Speaker 3: They're starting last week and they are playing their second
- 16:14Speaker 3: weekend right now, started on a Thursday here. They're going
- 16:18Speaker 3: against Nebraska, so we'll update you on that as well. Pitcher,
- 16:21Speaker 3: you were talking about no No, this one's timid. I
- 16:24Speaker 3: think this is a freshman for Yeah, so Jordi from
- 16:31Speaker 3: used to be Jordie Ball. She she's actually like a
- 16:34Speaker 3: two way player.
- 16:34Speaker 5: Now.
- 16:35Speaker 3: She didn't do that at Oklahoma. She's done that at Nebraska.
- 16:38Speaker 3: So with a tournament with so many games, I'm sure
- 16:40Speaker 3: she'll pitch at another point here and this invitational. So no,

- 18:46Speaker 5: school in classroom studying.
- 18:49Speaker 8: Ask is like instead of playing can you just play
- 18:52Speaker 8: the scene instead of playing the song?
- 18:54Speaker 5: I mean, honestly, on YouTube, we can't get in trouble.
- 18:57Speaker 8: So hey, the father in Laura I told you, yes,
- 19:03Speaker 8: super smart to do a although they're late.
- 19:06Speaker 6: The email said at eight am.
- 19:08Speaker 3: Can I say how stupid it is that you would
- 19:13Speaker 3: have a show on air and you're doing a fire alarm.
- 19:17Speaker 3: They would never do that later in the day, like,
- 19:20Speaker 3: how dumb is it that you're doing a fire alarm
- 19:23Speaker 3: test in a building where you have a live show
- 19:25Speaker 3: on in the middle of the show. That's the stupidest
- 19:29Speaker 3: thing I've ever heard of. Thirty minutes because we have
- 19:33Speaker 3: an hour when nobody's on air and then the next
- 19:36Speaker 3: show's on remote.
- 19:38Speaker 5: Yeah.
- 19:38Speaker 9: I was like, you could actually do it anytime ten
- 19:40Speaker 9: to one.
- 19:41Speaker 5: Yeah, it's a three hour window right there, bub man
- 19:45Speaker 5: trying to have me crash out here today.
- 19:46Speaker 10: Let's not crash out my I'll turn the music back
- 19:49Speaker 10: up so you can.
- 19:50Speaker 6: At least they didn't do while we were talking at M.
- 19:54Speaker 5: I would have what do we do? Pedro mm hm,
- 20:03Speaker 5: oh my god, it's miss.
- 20:04Speaker 10: Davis all right, I think they're done.
- 20:10Speaker 5: Maybe they were listening.
- 20:11Speaker 6: I was kind of Heartbroke's where I was trying to
- 20:13Speaker 6: look up to see what miss Davis was doing these days?
- 20:16Speaker 6: Uh huh, see where her acting career tugger. She was
- 20:18Speaker 6: actually a Canadian born Hey wasn't from West Texas at all.
- 20:23Speaker 10: Dang, that is heartbreaking.
- 20:25Speaker 6: What's she doing though, didn't say really like what she
- 20:29Speaker 6: doing tonight that you're trying to figure.
- 20:30Speaker 9: Out, like not necessarily now now.
- 20:33Speaker 5: But you know, cash year she's retired from dancing or teaching.
- 20:40Speaker 5: Too many dollar dollar bills.
- 20:45Speaker 9: That's a nice car for a teacher salary.
- 20:48Speaker 5: We got a game today.
- 20:51Speaker 3: Well, man, if anybody in the room can guess this
- 20:58Speaker 3: next question that I'm about to ask coffee on me tomorrow.
- 21:02Speaker 5: Morning, guess the answer. I guess the question. No, I
- 21:06Speaker 5: guess the answer to the question the question. If you
- 21:10Speaker 5: could guess the question I'm about to.
- 21:12Speaker 3: Ask, well, yeah, like I guess the answer to the question.
- 21:14Speaker 3: I thought that was just kind of like insinuated. I
- 21:18Speaker 3: forget who my audience is, though, give me, without looking
- 21:24Speaker 3: down at your screens, give me right now, currently who
- 21:28Speaker 3: the top team in the NBA in the East and
- 21:31Speaker 3: the top team in the West.
- 21:32Speaker 9: So the West would be.
- 21:36Speaker 8: It's is the West the Cleveland Cavaliers, I mean, sorry,
- 21:40Speaker 8: the East, the Cleveland Cavalers.
- 21:42Speaker 5: I'm not gonna take give me your guess.
- 21:43Speaker 9: And then the West would be not the Spurs. But
- 21:49Speaker 9: they're up there.
- 21:50Speaker 10: The Spurs are like, what second or third?
- 21:52Speaker 9: Yeah, they're up there.
- 21:53Speaker 10: I'm saying this with like literally no knowledge of what's
- 21:56Speaker 10: happening in the NBA. Besides with the Spurs.
- 21:59Speaker 5: Yeah, go the Knicks. It's not bad.
- 22:05Speaker 10: I know it's not the Spurs. I'm say the Spurs, I'll.
- 22:07Speaker 8: Go, I'll go Calves in the East, I'll go Houston
- 22:12Speaker 8: Rockets in the West.
- 22:14Speaker 11: Matthew, Uh Thunder okay, and Celtics okay.
- 22:30Speaker 3: Uh so for a laundry, she said, Nicks, they're actually
- 22:33Speaker 3: third in the East, so good guess.
- 22:35Speaker 5: And Spurs are second in the West.
- 22:38Speaker 3: You say Cleveland Cavaliers they're fourth in the East. And
- 22:41Speaker 3: you said the Rockets there fourth.
- 22:43Speaker 5: In the in the West. Uh.
- 22:46Speaker 3: There for Matthew, he said the Thunder in the West,
- 22:49Speaker 3: they are actually number one. He said the Boston Celtics
- 22:53Speaker 3: in the East, they're actually number two. Maybe card game
- 23:01Speaker 3: might have gotten him a little like a probably.
- 23:06Speaker 9: I forgot matt was a big time he's big time basketball.
- 23:11Speaker 3: But it is funny the team Nobody guessed the team
- 23:14Speaker 3: in the East like in any of their guesses there
- 23:18Speaker 3: Detroit Pistons, So right, in thirteen.
- 23:23Speaker 10: Wow, Spurs beat the Warriors last night?
- 23:26Speaker 9: That they did right after a three well the Calves.
- 23:29Speaker 8: I was like, wait a minute, I feel like I
- 23:30Speaker 8: had just seen something on ESPN a couple of days
- 23:33Speaker 8: ago talking about like Detroit the surprise team. I just
- 23:36Speaker 8: forget about him.
- 23:37Speaker 3: The second best record in the NBA Caid cutting here
- 23:42Speaker 3: from Oklahoma State from the tops chrome breaks.
- 23:46Speaker 9: I know.
- 23:47Speaker 5: I know that's how you know idiots sg A his
- 23:51Speaker 5: rookie years with the Clippers.
- 23:53Speaker 3: I do know that because you and I were on
- 23:55Speaker 3: a break a couple of weeks ago, and I had
- 23:56Speaker 3: the Clippers the break before the case said that the
- 24:00Speaker 3: next one was SGA.
- 24:02Speaker 8: Okay, they got they got. Tough guy Isaiah Stewart.
- 24:06Speaker 5: He's suspended right now.
- 24:08Speaker 3: What were the finger quotes?
- 24:11Speaker 9: He's a try hard, tough guy.
- 24:13Speaker 8: I think like anytime something goes wrong like Miles Bridges
- 24:17Speaker 8: and Isaiah Stewart's teammate got it too little scrum the
- 24:21Speaker 8: Big Dillo Shoven match, and Isaiah Stewart loses his mind,
- 24:24Speaker 8: runs onto the court, tries to fight people. Remember the
- 24:26Speaker 8: Remember the guy that ran under the court and tried
- 24:28Speaker 8: to fight Lebron A couple of years ago, same guy.
- 24:31Speaker 5: He's an idiot, a big fellow.
- 24:35Speaker 9: He's a big fella.
- 24:35Speaker 6: But also, like basketball is a lot of fake tough guys.
- 24:38Speaker 6: He's not hold me back, hold me back.
- 24:41Speaker 9: I get everybody has their roles to play. He's not.
- 24:44Speaker 9: He's not good enough to be acting like that.
- 24:46Speaker 3: He's just Detroit Pistons. And I knew nobody would get that,
- 24:51Speaker 3: because I would not have gotten that either. Right now,
- 24:55Speaker 3: in the East, it is the Piston, Celtics, Nicks, Calves, Raptors,
- 24:59Speaker 3: seventy six Ers, Magic and Heat, and then you've got
- 25:02Speaker 3: your playing spots with the Hornets and Hawks. In the West,
- 25:05Speaker 3: it's the thunder Spurs, Nuggets, Rockets, Timberwolves, Lakers, Sons, Warriors,
- 25:09Speaker 3: and then the Clippers and Trailblazers. Of all teams, the
- 25:13Speaker 3: New Orleans Pelicans are twenty seven and a half games
- 25:16Speaker 3: at a first place.
- 25:17Speaker 9: What's up a bud striking distance?
- 25:20Speaker 3: Hey, couple of seventeen eighteen game win streaks are right
- 25:23Speaker 3: back in this thing.

- 28:30Speaker 2: segment hungry. This is Monkeys with executive chef Michael Johnson.
- 28:37Speaker 5: Chef, what's going on?
- 28:38Speaker 7: Brother?
- 28:38Speaker 5: How you doing? I'm good, How are you doing? Fantastic?
- 28:42Speaker 5: Always glad to have you on the show.
- 28:44Speaker 3: Talk a little food here and get hungry with the
- 28:46Speaker 3: rest of our listeners, and we'll go ahead and get
- 28:49Speaker 3: right into it.
- 28:50Speaker 5: Hashtag munchies.
- 28:51Speaker 3: How do you come up with your menu each week
- 28:54Speaker 3: for the teams?
- 28:56Speaker 7: Yeah, so we actually come up with the menus three
- 28:59Speaker 7: weeks ahead of time, and we meet every actually, I'm sorry,
- 29:02Speaker 7: we come up with eight weeks of menus, right so,
- 29:05Speaker 7: and then and then every three weeks we sit and
- 29:08Speaker 7: scrutinize the menus and talk about if there's anything we
- 29:11Speaker 7: need to do to change over the next three weeks,
- 29:14Speaker 7: and if there was anything that we needed to evaluate
- 29:16Speaker 7: and come back with information on that that, we're not
- 29:19Speaker 7: waiting eight weeks for that information, right, So, and we're
- 29:22Speaker 7: we're actually talking about doing that more often, just to
- 29:26Speaker 7: you know, liven things up and get get feedback quickly,
- 29:29Speaker 7: more more quickly. But I mean it's a constant and
- 29:33Speaker 7: perpetual action, right, So it is you know, I have
- 29:38Speaker 7: one chef that puts the framework of the of the
- 29:40Speaker 7: menu together, and then the other chefs kind of look
- 29:43Speaker 7: through it and kind of poke at it a little
- 29:45Speaker 7: bit and and come up with suggestions. And then we
- 29:48Speaker 7: sit with the dieticians and let them poke through it
- 29:50Speaker 7: a little bit and allow them their their suggestions and such.
- 29:54Speaker 7: But realistically, it takes a team to get it done.
- 29:57Speaker 7: I mean, our menus change every ment, right. So you know,
- 30:01Speaker 7: if you're at a restaurant, you put a menu in place,
- 30:03Speaker 7: and you know, if there's restaurants that take weeks and
- 30:06Speaker 7: months to construct the perfect menu for their for their business,
- 30:09Speaker 7: right and we're constructing a new menu every meal, so
- 30:13Speaker 7: you know, it's burdensome, and so we we share the
- 30:17Speaker 7: labor amongst you know, like if one chef has been
- 30:20Speaker 7: doing it for a while, we'll we'll take and put
- 30:22Speaker 7: them on say scheduling, and let them do the scheduling
- 30:25Speaker 7: for a little while and then put another chef on
- 30:26Speaker 7: the on the on the menu. Because it is, uh,
- 30:30Speaker 7: it is burdensome. It's a lot of work, and so
- 30:33Speaker 7: we we do it as a shared group. And you know,
- 30:36Speaker 7: we need feedback from athletes, so we have uh deployed
- 30:42Speaker 7: you know, different mechanisms to allow them feedback as well.
- 30:44Speaker 7: And and and also I go and meet them in
- 30:47Speaker 7: their arenas wherever they're participating or practicing or whatever and
- 30:52Speaker 7: talk to them on a pretty regular basis, depending on
- 30:54Speaker 7: who's in in season and who's not, who's available and
- 30:57Speaker 7: who's not, just to kind of show face, meet them
- 30:59Speaker 7: where they are and have the open discussion you know,
- 31:02Speaker 7: about the menus and to be honest with you you know,
- 31:06Speaker 7: for me, if I'm as the executive chef, when when
- 31:09Speaker 7: the athletes are sitting here eating, they're not going to
- 31:12Speaker 7: give me honest feedback. If I come and ask them
- 31:14Speaker 7: how the food is, you know what I mean, They're
- 31:16Speaker 7: gonna say, hey, yep, it's so great, you know, right,
- 31:18Speaker 7: So it's kind of intimidating, and so I prefer to
- 31:21Speaker 7: go to them and their confidence places where they're comfortable
- 31:24Speaker 7: with their team around them, and we get good feedback
- 31:27Speaker 7: that way.
- 31:29Speaker 5: Good, Chef, I'm sorry I was watching this game. Chef.
- 31:33Speaker 6: I want to ask you a little bit more personal question.
- 31:35Speaker 6: So this is a it's a big week for all
- 31:37Speaker 6: the hopeless romantics out there, maybe some people wanting to
- 31:40Speaker 6: procure a menu or a plate for a loved one
- 31:44Speaker 6: who they're trying to impress. What's the what's the perfect
- 31:47Speaker 6: Valentine's meal to make for a significant other?
- 31:52Speaker 7: Yeah, I think you know one. This comes from the
- 31:54Speaker 7: heart first of all. You know, like I'm a huge
- 31:58Speaker 7: fan of going out and getting you know, like if
- 31:59Speaker 7: I can find catch shrimp or catch some crabs, or
- 32:02Speaker 7: catch a fish, or you know, like even shoot a deer.
- 32:05Speaker 7: You know, like if I have a cow on my property,
- 32:09Speaker 7: which is kind of extraordinary, it's a bad example, but
- 32:12Speaker 7: you know, like the further the further I can delve into,
- 32:17Speaker 7: you know, like the procurements, even maybe the growth of
- 32:20Speaker 7: the of the product. You know, if it's some growing tomatoes,
- 32:23Speaker 7: which is a bad example too. Because they haven't come
- 32:26Speaker 7: up yet. But if it's something that you can grow
- 32:28Speaker 7: and it's something that you can put yourself into and
- 32:30Speaker 7: then produce it, you know, like it's it's a deeper
- 32:33Speaker 7: level of passion, if you will, I think it's it's
- 32:36Speaker 7: equitable instead of buying flowers from the place that you
- 32:39Speaker 7: know goes eight x on Valentine's Day. You know, like
- 32:42Speaker 7: those those roses cost twelve dollars last week and now
- 32:45Speaker 7: they're eighty five. I'm a I'm a huge fan of
- 32:48Speaker 7: going out and picking flowers or you know, like and
- 32:50Speaker 7: doing that more often, and and you know, like the
- 32:55Speaker 7: meal is going to come from the heart something that
- 32:57Speaker 7: I have, you know, not just gone out and bought
- 33:00Speaker 7: something that I have put a lot of time and
- 33:02Speaker 7: energy into procure.
- 33:04Speaker 3: Jeff, we also had another question kind of based off
- 33:07Speaker 3: my first question about when you put the menu together,
- 33:09Speaker 3: what about somebody that has restrictions in their diet. Certainly,
- 33:12Speaker 3: are you going to have some athletes that are going
- 33:15Speaker 3: to fall in that maybe they have something gluten doesn't
- 33:17Speaker 3: agree with them, whatever it might be lactose intolerant. So
- 33:20Speaker 3: when you have an athlete like that, what's that special consideration?
- 33:23Speaker 7: Look like, yeah, So we have an entire area of
- 33:26Speaker 7: the fourth Nutrition Center that is the dietary friendly Area.
- 33:30Speaker 7: We don't call it the allergen station, we don't call
- 33:33Speaker 7: it the gluten free station. We just call it the
- 33:35Speaker 7: dietary friendly area. And if there are special requirements, which
- 33:38Speaker 7: we do have some, we do have some silly ECX kids.
- 33:41Speaker 7: I mean, honestly, these days, you need to account for
- 33:45Speaker 7: probably anywhere between seven and ten percent of all human
- 33:49Speaker 7: beings in the United States, and stronger than that in
- 33:52Speaker 7: certain areas, are going to be some kind of dietary need,
- 33:56Speaker 7: right so we have to make accommodations for that.
- 34:00Speaker 5: We do.
- 34:00Speaker 7: We we have on certain nights of the week, we
- 34:03Speaker 7: we prepare an entire meal this group gluten friendly so
- 34:06Speaker 7: that they can come in and you know, they don't
- 34:09Speaker 7: have to wait for us to prepare something. They can
- 34:12Speaker 7: they can get that that dish and take it right
- 34:14Speaker 7: to the table so that they're not waiting on us,
- 34:16Speaker 7: you know, because it's it's one thing for us to
- 34:20Speaker 7: be able to produce it. But when you walk in
- 34:22Speaker 7: the door and you're with your friends and then you
- 34:24Speaker 7: have to go ask for special foods and you have
- 34:26Speaker 7: to wait for the chef to prepare it. By the
- 34:28Speaker 7: time you sit down and get your food, you know,
- 34:31Speaker 7: your friends are like, hey, we'll see u, you know,
- 34:34Speaker 7: and so we we we take that into consideration many
- 34:38Speaker 7: you know, it's it's it's got to be thoughtful food.
- 34:40Speaker 7: And so there's twice a week that we do that.
- 34:42Speaker 7: We we pre prepare these foods and you know, put
- 34:46Speaker 7: them into a secure area where it's not got not
- 34:50Speaker 7: not got any of those allergiens or gluten or whatever
- 34:53Speaker 7: it is, and and put a space in a white
- 34:56Speaker 7: jacket there or a sous chef or white jackets to
- 34:59Speaker 7: the people, you know, like the chefs in the kitchen
- 35:01Speaker 7: that run the kitchen. And then we have gray jackets
- 35:04Speaker 7: that are cooks and senior cooks as such. But we
- 35:06Speaker 7: usually hand that to a white jacket to handle. But yeah,
- 35:09Speaker 7: we do prepare for that for sure.
- 35:12Speaker 5: What color is your jacket, chef?
- 35:13Speaker 7: Oh, it's white. There, it's white with some gravy on
- 35:16Speaker 7: it right now?
- 35:19Speaker 5: Well white or brown gravy? Yeah?
- 35:22Speaker 7: No, it's brown.
- 35:23Speaker 3: Okay, all right?
- 35:26Speaker 5: Hashtag munchies. Has have you ever had a former athlete
- 35:29Speaker 5: come work for you?
- 35:31Speaker 7: I actually have a former athlete working here right now. Yeah,
- 35:34Speaker 7: he played football with us in twenty nineteen, and he
- 35:38Speaker 7: is going back to going back to school to get
- 35:40Speaker 7: a degree, and so he wanted to come over here
- 35:42Speaker 7: and work with us, and I'm super super happy to
- 35:45Speaker 7: have him. He works at nights.
- 35:46Speaker 3: Yeah, probably some great place of work about saying, some
- 35:50Speaker 3: good work ethic as well.
- 35:51Speaker 5: He learned being a part of a team, eat good well.
- 35:54Speaker 7: And he appreciates me because he was here in twenty
- 35:57Speaker 7: nineteen and while I'm trying to accomplish here, you know,
- 35:59Speaker 7: and we appreciate him for what he's trying to accomplish
- 36:02Speaker 7: with himself, you know, his life beyond football. And I
- 36:04Speaker 7: admire the hell out of that man.
- 36:06Speaker 5: Yeah, no doubt about it. Chef.
- 36:08Speaker 3: It is Mardi Gras season, as we all know here
- 36:10Speaker 3: in Louisiana. Uh, favorite Mardi Gral parade food. Like you know,
- 36:16Speaker 3: if you're out there and maybe need to be a
- 36:19Speaker 3: little versatile, you don't want to go in and out
- 36:21Speaker 3: of the house, you're on a prey ground.
- 36:22Speaker 5: Maybe your go to snack for Mardi Gras season.
- 36:26Speaker 7: Uh, we call that a beer.
- 36:29Speaker 5: So it's liquid, okay, liquid diet You're in.
- 36:33Speaker 7: It's the only answer to that question.
- 36:36Speaker 5: That's a great I'm not even going to push you
- 36:37Speaker 5: on that, and that's a great one.
- 36:39Speaker 3: I can't even argue with that. Well done, Jeff, well done.
- 36:44Speaker 5: Let's see, I'm scott rolling here.
- 36:47Speaker 6: You kind of already answered them about the dietary restrictions.
- 36:52Speaker 5: What is your plans? Do you have to do? You?
- 36:54Speaker 5: Do you like to visit the praise?
- 36:56Speaker 6: Are you kind of like, uh, you know, there's some
- 36:58Speaker 6: parade heads out there that are like they'll just fight
- 37:00Speaker 6: for a parking spot and make their way with the
- 37:02Speaker 6: lawn chair or.
- 37:04Speaker 5: Do you have plans? You have something you do every year?
- 37:07Speaker 7: When I was younger, you know, I was in the
- 37:09Speaker 7: middle of canal every year, and that might be upright,
- 37:12Speaker 7: that might be you know, prone, laying down, you know,
- 37:16Speaker 7: like waiting for the next parade. And so I'm not
- 37:20Speaker 7: as much anymore.
- 37:21Speaker 4: Man.
- 37:21Speaker 7: I'm celebrating my fiftieth birthday this year, and you know,
- 37:24Speaker 7: like I feel like it's kind of a younger man's
- 37:27Speaker 7: game in my mind. So I'll go to a parade.
- 37:31Speaker 7: My fiance is trying to get me since she's never been,
- 37:34Speaker 7: and so we're having this kind of household struggle of
- 37:38Speaker 7: whether we're going or not, you know, my life is
- 37:41Speaker 7: chaos enough without the parade routes and such, and so
- 37:45Speaker 7: I kind of enjoyed, you know, calm at my house,
- 37:48Speaker 7: and so going to a parade on the weekend is
- 37:50Speaker 7: just kind of extending what my normal looks like to
- 37:53Speaker 7: be working such, so I will go. I just don't.
- 37:56Speaker 7: I don't. I don't relish it the way that I
- 37:58Speaker 7: used to do. I mean, like, get there, all have.
- 38:00Speaker 5: A good time.
- 38:01Speaker 7: It's the it's the idea of going through it in
- 38:04Speaker 7: the parking and the punk you know, like just the
- 38:07Speaker 7: rigmarole to find in a parking spot is enough to
- 38:09Speaker 7: turn me away.
- 38:11Speaker 5: All right.
- 38:11Speaker 3: There he is Chef Michael Johnson, executive chef for LSU Athletics,
- 38:15Speaker 3: good enough to join us every week for your munchie questions. Chef,
- 38:18Speaker 3: we appreciate it, look forward to our conversations as always.
- 38:21Speaker 5: Enjoy the rest of your week.
- 38:23Speaker 4: Thanks guys.
- 38:23Speaker 7: Take care.
- 38:26Speaker 5: Beer good answer there, I mean, drink your calories.
- 38:30Speaker 3: Sometimes I'd say the chef who prepares food said, the
- 38:32Speaker 3: only food I need is a ice cold do Sekis.
- 38:37Speaker 5: You wish that?
- 38:37Speaker 6: Like everybody just attacked whatever their job is and whatever
- 38:43Speaker 6: their passion was, Like chef attacks like being a chef,
- 38:46Speaker 6: the attention he does too, and the work ethic and
- 38:49Speaker 6: the thoughtfulness behind you know what, are you just talking
- 38:53Speaker 6: about curating a menu like it's right? Just thinking about
- 38:56Speaker 6: a menu, yep, and creating it just from out of poof,
- 38:59Speaker 6: out of the air.
- 39:00Speaker 5: It's wild.
- 39:00Speaker 6: And all the different alterations you have to make that
- 39:04Speaker 6: for dietaria restrictions and allergies and stuff. It's and for
- 39:09Speaker 6: so many walks of life too, so many taste buds.
