- 0:20Speaker 1: Selections from Aunt Sammy's radio recipes and USDA Favorites by
- 0:25Speaker 1: Ruth Van Demmon and Fanny Walker Yateman. Introduction. Aunt Sammy
- 0:31Speaker 1: came to life with the first radio broadcast of Housekeeper's
- 0:35Speaker 1: Chat on October fourth, nineteen twenty six. The character of
- 0:39Speaker 1: Aunt Sammy, wife of Uncle Sam, was greeted by the
- 0:43Speaker 1: USDA Bureau of Home Economics and the Radio Service. Many
- 0:48Speaker 1: women across the country played the part as they spoke
- 0:51Speaker 1: into the microphones of local radio stations. The highlights of
- 0:56Speaker 1: Aunt Sammy's show were the menus and recipes. Ante and
- 1:00Speaker 1: Sammy also talked about clothing, furniture, appliances, and other family
- 1:05Speaker 1: in household matters. And Sammy was just a homebody. However,
- 1:10Speaker 1: she commented on world affairs, reported the latest fads, and
- 1:14Speaker 1: told jokes. The talk moved easily from one subject to another,
- 1:18Speaker 1: always natural and entertaining. As well as informative, and Sammy
- 1:24Speaker 1: soon became popular. By the end of the first year,
- 1:27Speaker 1: her program was carried by forty three radio stations. By
- 1:30Speaker 1: nineteen thirty two, one hundred ninety four stations were broadcasting
- 1:35Speaker 1: at Sammy's show. A number of the stations were broadcasting
- 1:39Speaker 1: the show five times a week. Many listeners wrote for
- 1:43Speaker 1: copies of the recipes, and the Bureau of Home Economics
- 1:46Speaker 1: answered these requests with weekly Mambia graft sheets. In nineteen
- 1:51Speaker 1: twenty seven, the most popular recipes were assembled into a pamphlet.
- 1:55Speaker 1: The demand was so great that it had to be
- 1:57Speaker 1: reprinted after only a month. Aunt Sami's radio recipes were
- 2:03Speaker 1: revised in a large three times between nineteen twenty seven
- 2:06Speaker 1: and nineteen thirty one. In nineteen thirty two, it became
- 2:10Speaker 1: the first cookbook published in Braille. Aunt Sammy faded out
- 2:14Speaker 1: during the Great Depression. After nineteen thirty four, the name
- 2:18Speaker 1: Aunt Sammy was no longer used. The radio show became
- 2:22Speaker 1: drier and more factual, and was renamed Homemaker Chats. In
- 2:27Speaker 1: nineteen forty six, it was discontinued. Today, consumers are still
- 2:32Speaker 1: looking to USDA for information on how to make the
- 2:35Speaker 1: best use of the food available to them. A research
- 2:39Speaker 1: program in the Consumer and Food Economics Institute of the
- 2:43Speaker 1: Science and Education Administration provides the basis for numerous laboratory
- 2:48Speaker 1: tests and recipes. Current recipes emphasized time saving techniques, money
- 2:53Speaker 1: saving ingredients, and good nutrition. Taste panels are used to
- 2:59Speaker 1: evaluate new research has provided a group of publications for
- 3:04Speaker 1: the consumer on specific foods such as fruits, vegetables, eggs, beef, poultry, cheese, milk,
- 3:11Speaker 1: and soybeans. The series is designed to give information about buying, storing,
- 3:17Speaker 1: and using specific commodities. These and other publications help consumers
- 3:22Speaker 1: use a wide variety of foods to obtain nutritious, appetizing,
- 3:26Speaker 1: and economical meals. Providing directions for homecanning and freezing is
- 3:31Speaker 1: another service of the Consumer and Food Economics Institute. Publications
- 3:36Speaker 1: give safe procedures for preserving fruits, vegetables, meats, and poultry.
- 3:41Speaker 1: Many thousands of these publications have been distributed to consumers,
- 3:46Speaker 1: and the procedures have been widely used by others who
- 3:49Speaker 1: make recommendations to the public about food preservation. Still other
- 3:54Speaker 1: publications tell how to store food properly for maximum quality
- 3:57Speaker 1: and safety. Fiftieth Anniversary recipe collection includes recipes from current
- 4:04Speaker 1: publications and a selection of recipes from the first edition
- 4:08Speaker 1: of Aunt Sammy's Radio Recipes. All of these recipes have
- 4:12Speaker 1: been retested in the laboratory and found acceptable by taste panels.
- 4:18Speaker 1: End of introduction.
