Latest / The Monégasque Table / Blue Edible Glitter: Which Shade Works in the Glass

- Margaux: Here's a small mystery from behind the bar: a blue drink looks like magic, and blue frosting — nine times out of ten — looks like a mistake. Same color. Same jar, even. Completely different result. Dana: I can confirm the frosting half of that. My son wanted a "shark attack" cake last summer. The water came out less "ocean" and more "toothpaste." Margaux: Welcome to The Monégasque Table. Today's question, straight from the tease we left you with: which blue edible glitter should you buy? And because blue is the color where technique matters most, we're going to answer it the mechanical way — what the flake actually does in the glass. Dana: And here's the answer up front, because that's how this table works. Margaux: It is. The verdict: match the blue to the job, and let contrast pick the shade. For drinks, you want flake-style drink glitter — Ocean Blue for a deep swirl, Skyline Blue for a lighter, airier look — poured into something clear. For bakes, you want blue luster dust — regular Blue or Teal Blue — brushed on as a sheen. And if the thing you're decorating is already blue, don't reach for blue at all. That's the whole map, and the rest of the episode is why. Dana: I want to flag that the map just told people not to buy the thing the episode is named after. In some situations. Margaux: Which is exactly why they should trust the rest of it. Let's start in the glass, because that's where blue earns its keep. A drink-glitter flake is big — anywhere from 50 to 500 microns. That size is the entire trick: the flakes are large enough to catch light and stay suspended, so when you stir, the whole drink moves like weather. A pinch is 0.1 grams. That's the dose. Stir once, and a clear pour turns into the thing everyone films. Dana: Define "clear pour," though, because this is where my toothpaste incident began. Margaux: Clear or pale: think a gin drink, a margarita, a white cranberry spritz, sparkling water in a mocktail built from a cocktail mixer. Reviewers across this category keep landing on the same phrase — it works best with clear drinks — and the physics agrees with them. The liquid is the stage, the flake is the performer. A dark cola or a creamy drink is a stage with the lights off. Dana: And an already-blue drink? Say somebody's doing the classic blue curaçao thing. Margaux: Then blue glitter is the wrong buy — that's the blue-on-blue trap. Pigment against the same pigment cancels itself; you paid for shimmer nobody can see. In a blue drink, a white or silver shimmer reads far better. Blue glitter's real home is a clear drink that you want to TURN blue-ish and sparkling at the same time — the ocean wave, the galaxy pour, the winter-sky look. Dana: Okay, Sparkle Lab question, because I know you've been waiting to open that drawer. What actually makes blue glitter blue? Because "mystery blue" is exactly the kind of phrase that worries me at a kids' party. Margaux: Good instinct, and it's worth 60 seconds. The base of every shade in this line is the same: mica-based pearlescent pigments — the food-grade shimmer ingredient listed in the federal color-additive regulations, 21 CFR 73.350. The color layer on top comes from named food dyes. On our line's declared ingredient palette, the blue comes from FD&C Blue 1 — a dye you'll find printed by name on the label. That's the test that matters with any color, any brand: a blue that's safe to pour tells you exactly what made it blue. If the label won't say, the jar doesn't go near food. That's not brand talk; that's the rule for the whole category. Dana: Fine. Then here's my round, and it's the receipts round. This 10 gram drink-glitter jar is about $15. That's $1.50 a gram. The 15 gram luster dust jar is about $1.00 a gram. You are charging me 50 percent more per gram for the small jar and telling me it's the better buy. Explain yourself. Margaux: I can't argue with the arithmetic — per gram, the big jar is genuinely the better deal, and if what you do is brush sheen onto cakes every weekend, buy the 15 gram luster jar and don't look back. That's your round, fair and square. Dana: Thank you. I'll be taking that. Margaux: But per gram is the wrong unit for a drink. The unit that matters in the glass is the serving: 0.1 grams a pinch, about 100 servings in a 10 gram jar — roughly 15 cents a glass. And the fine powder that makes luster dust perfect on frosting is exactly what fails in liquid: 5 to 25 micron particles are too small to read as sparkle in a drink. You'd be saving 50 cents a gram on shimmer that vanishes. Different tool, different job — the flake size is what you're actually buying. Dana: So the honest version is: nobody needs both jars for one party. Pick the surface first — glass or frosting — then pick the jar. Margaux: Pick the surface first. That's the sentence to leave with. And for frosting, one more mechanical note: the pigment is mineral, it's heat-stable, and it doesn't dissolve — so blue luster dust brushed on before or after baking keeps its color. Blue on white buttercream is the high-contrast pairing; that's the shark cake done right. Dana: One more listener defense before the scorecard. Blue is trendy in exactly one direction — those galaxy drinks — and jars are not free. Is blue a starter color, honestly? Because in the search numbers you showed me, blue sits mid-pack — around 390 searches a month in third-party estimates, behind pink, behind gold. Margaux: Honestly? No — if you're buying your first and only jar, an iridescent or a gold covers more occasions. Blue is a second jar, a theme jar. It's for the party with an ocean, a galaxy, a winter sky, or a very specific shark in it. When that party's on the calendar, nothing else does what blue does. Dana: Who should skip blue glitter entirely? Margaux: Three people. If your drinks menu is dark or creamy — colas, coffee drinks, anything milky — the shimmer drowns; skip it. If your dessert is chocolate-dark, blue dust reads as gray; go gold or white instead. And if your drink is already blue, you're the blue-on-blue trap — buy a white or silver shimmer and let the drink be the blue. Dana: Scorecard. I came in thinking blue was blue. I'm leaving with: flakes for glasses, dust for frosting — that's a size difference, 50 to 500 microns against 5 to 25. Contrast picks the shade, so blue goes on clear pours and white frosting, never on itself. Per gram the big jar wins, per glass it's about 15 cents either way — and the label has to name the dye, or no deal. Caveat I'm keeping: blue is a theme jar, not a first jar. Margaux: Footnote for the theme party: the MONÉGASQUE Ocean Blue 10 gram drink glitter is on Amazon — full ingredient list printed on the jar, about $15, from the line that's shipped more than 400,000 orders across the US, Canada, and the UK. Check the listing for current pricing. Dana: Next time at the table: the can that promises to skip the brush entirely. Edible glitter cake spray — is it actually worth buying, or are you paying for the button? Margaux: A working decorator's answer to that one — it's closer than you'd think.
