- 0:24Speaker 3: of the Wine Academy of Utah, Jimmy Santangelo. Wine Academy
- 0:28Speaker 3: of Utah dot com is where you can go to
- 0:31Speaker 3: find all things Jimmy. Jimmy, and he brought us a
- 0:33Speaker 3: little present from Atlantic City.
- 0:35Speaker 4: Yeah, yeah, I did the Jersey Shore this week with
- 0:39Speaker 4: the fam and friends, and it was great to revisit that.
- 0:43Speaker 4: You know, I gotta taya. That's where it all began
- 0:47Speaker 4: for me. Wine Academy of Utah me as a smallia.
- 0:50Speaker 4: My whole career started there, thinking of in Atlantic City,
- 0:55Speaker 4: top mezzanine level of the Old Homestead Steakhouse at the Bergata,
- 0:59Speaker 4: just imagining, you know, as a section was getting filled up.
- 1:02Speaker 4: You know, you're buying time, you're thinking through things, and
- 1:06Speaker 4: little did I know I'd be then at Donovan's meeting
- 1:10Speaker 4: you guys.
- 1:11Speaker 5: So it was a lot of fun.
- 1:13Speaker 2: That steakhouse still there.
- 1:15Speaker 4: Old Homestead. Yeah, the Sherry brothers. Yeah, they're not going
- 1:18Speaker 4: to let that one go.
- 1:20Speaker 3: So Donovan's let's just quick quickly. Yeah, it started. It
- 1:24Speaker 3: was a San Diego based, San Diego based Are they
- 1:26Speaker 3: still in San Diego?
- 1:28Speaker 2: I don't know.
- 1:28Speaker 4: Yeah, they're over in Old Town in San Diego. Brilliant
- 1:33Speaker 4: business plan.
- 1:35Speaker 2: Great Steaks took over a spot over there.
- 1:38Speaker 4: But here I am in Atlantic City and I'm coming
- 1:41Speaker 4: back yesterday last night, and I was like, I don't
- 1:45Speaker 4: know what my sponsor is.
- 1:46Speaker 2: This was happening like Tuesday Wednesday, and my.
- 1:51Speaker 4: Brother in law, Chris, and I exhausted the distilleries and
- 1:55Speaker 4: so forth.
- 1:56Speaker 2: In all throughout the land for us.
- 1:59Speaker 5: Here the sporting research, it's for you, okay.
- 2:03Speaker 4: So we came across Little Waters Distillery. This is their
- 2:07Speaker 4: sixteen knots. They have a line forty eight blocks because
- 2:12Speaker 4: there's forty eight blocks in Atlantic City.
- 2:15Speaker 2: Now Atlantic City is like the monopoly board. That's the So.
- 2:19Speaker 4: I mean, you come across Tennessee, ave you got you know,
- 2:22Speaker 4: it's crazy.
- 2:24Speaker 2: But Atlantic City from the Bay to I.
- 2:27Speaker 4: Think Ventnor before it goes to Margate, it's forty eight
- 2:30Speaker 4: blocks of town and growing up going there. Manana knew
- 2:37Speaker 4: of that Atlantic City during Prohibition, like during like it was,
- 2:43Speaker 4: it was happening during that period. This is the first distillery,
- 2:48Speaker 4: uh since Prohibition in Atlantic City, so kind of how
- 2:53Speaker 4: we have our high West. Yeah, they got these guys
- 2:55Speaker 4: little waters sixteen nuts.
- 2:57Speaker 3: Here's some of the stuff that they produce. And it's
- 3:00Speaker 3: a little water distillery.
- 3:01Speaker 5: Little Water.
- 3:02Speaker 3: Yeah, Liberty, rum, Prosperity Rum, rusted revolver gin, forty eight blocks, vodka,
- 3:12Speaker 3: forty eight blocks, chocolate martini, forty eight blocks espresso martini.
- 3:17Speaker 5: I assume these are bottled.
- 3:18Speaker 3: Yeah, they are tds right well, white Cap Whiskey and
- 3:23Speaker 3: white Cap Old Fashioned.
- 3:24Speaker 5: And what is this we have?
- 3:26Speaker 4: This is their special release not only at the distillery
- 3:32Speaker 4: and select few wine stars colsoids. This is their sixteen knots.
- 3:38Speaker 4: This is a bourbon aged in rum casks from the
- 3:42Speaker 4: rum that they make.
- 3:43Speaker 3: Oh so that's what gives it the sweet Yeah, it's sweet.
- 3:50Speaker 4: Oh yeah, it's eight months in rum casks. Pretty cool,
- 3:54Speaker 4: and you know, it's just nice to be able to
- 3:57Speaker 4: see people that have the same heart that I know
- 4:02Speaker 4: our distilleries do. Here are our guys here in Utah
- 4:05Speaker 4: and the bottle shape, slender bottle. It's got the neck
- 4:10Speaker 4: for that copper pot distilling.
- 4:13Speaker 2: Oh that's why that's that way kind of yeah, that's
- 4:15Speaker 2: a fashion, that's a tradition.
- 4:18Speaker 4: Classic bottle weighted at the bottom. Sixteen knots is about
- 4:22Speaker 4: you know, that's how fast you go on a boat.
- 4:25Speaker 4: It's about eight miles an hour, and it's the wake speed,
- 4:29Speaker 4: you know, to get out. They kind of think, actually
- 4:32Speaker 4: it's a little faster than that, but the wake speeds
- 4:36Speaker 4: less but pretty tasty.
- 4:40Speaker 3: I think, Yeah, it's it's good. It's it's very smooth
- 4:45Speaker 3: and I like it. It smells sweet, but it doesn't
- 4:48Speaker 3: take I'm not getting any sweetness.
- 4:50Speaker 2: It's got a kick.
- 4:51Speaker 4: Yeah, forty seven to five alcohol, so kind of stronger.
- 4:56Speaker 2: Batch five. They're up the batch eight right now. So
- 5:00Speaker 2: if you want this, you have to go to Atlantic City. Yeah, yeah,
- 5:03Speaker 2: you're welcome.
- 5:07Speaker 5: It says here.
- 5:07Speaker 3: You can buy it online, but I don't know if
- 5:09Speaker 3: you can get away with that in Utah.
- 5:11Speaker 2: Yeah.
- 5:11Speaker 4: Yeah, you'd have to get some olive oil sent in.
- 5:14Speaker 4: But no, yeah, you wouldn't be able to get it
- 5:17Speaker 4: delivered here.
- 5:17Speaker 3: You have to have it delivered to your We could
- 5:20Speaker 3: have what's his name up in Evanstone or a good
- 5:23Speaker 3: listener up there.
- 5:24Speaker 2: A lot of people do that, don't they.
- 5:25Speaker 5: You have it delivered to your buddy in Evanstone.
- 5:27Speaker 2: And buddy in Evansteon. It'll show you how to shirk
- 5:30Speaker 2: the waw.
- 5:31Speaker 5: Yeah, how you do it? This is very good.
- 5:35Speaker 3: There's a picture here of the a bottle of that
- 5:38Speaker 3: espresso martini. Again, it's our slender bottle. I wonder if
- 5:43Speaker 3: they all are like that.
- 5:44Speaker 2: Some of them are a little square shouldered. Pretty good.
- 5:47Speaker 4: But this being a bourbon and its majority corn, got
- 5:51Speaker 4: to be aged in New Oak American barrel for a
- 5:54Speaker 4: significant period of time, so it's notable aromatically and characteristically.
- 5:59Speaker 4: And then they marry it in those rum casks for
- 6:03Speaker 4: at least six months according to their technical notes and
- 6:06Speaker 4: the people I was chatting with, but sixteen knots.
- 6:10Speaker 2: And you know it's funny.
- 6:13Speaker 4: We stayed in Ocean City, in Atlantic City, a little
- 6:16Speaker 4: suburb off of it, little beach town.
- 6:19Speaker 2: Dry really not.
- 6:22Speaker 4: Yeah, I know, wild Wood's up the street.
- 6:27Speaker 3: I can tell you all around the city limits there
- 6:30Speaker 3: are places you can buy moons.
- 6:31Speaker 5: Oh that's for sure.
- 6:32Speaker 4: You go over the bridge to Sommers Point and have
- 6:35Speaker 4: Circle Liquors. But on the island it's the classic, you know,
- 6:39Speaker 4: cotton candy, the boardwalk, you got the ferris wheel and
- 6:44Speaker 4: it was fun to walk that with the kids and
- 6:47Speaker 4: the family. Been doing that since I've been pushing the
- 6:49Speaker 4: kids in a carriage and now they're running up ahead
- 6:52Speaker 4: and getting tattoos.
- 6:54Speaker 2: And misbehaving and we'll be home by one and it's
- 6:58Speaker 2: amazing to see.
- 6:59Speaker 5: You know.
- 7:00Speaker 3: I have told this story before, but I toured the
- 7:02Speaker 3: Jack Daniels Distillery, oh okay, years and years ago in Lynchburg, Tennessee,
- 7:08Speaker 3: and we went to the distillery and I said, now
- 7:12Speaker 3: do we do we get some samples? And they said,
- 7:15Speaker 3: son Carroll County is dry. Carroll County Jack Distillery is
- 7:21Speaker 3: in a dry county.
- 7:23Speaker 2: So anytime you think Utah's the worst, it's not.
- 7:26Speaker 5: Yeah, Cherald County is a drag county.
- 7:29Speaker 6: Also, the suggestion is get a po box in Evanston
- 7:32Speaker 6: and have things shipped and then drive up when.
- 7:34Speaker 3: Yeah, I mean it says right here on a little
- 7:36Speaker 3: water distillery website, order online from anywhere, we're anywhere.
- 7:42Speaker 4: Well, it's interesting though, deliver it right to your doorstep
- 7:45Speaker 4: within New Jersey. So you I could have gotten this
- 7:48Speaker 4: delivered and I know and I would have done it
- 7:51Speaker 4: at the beach house. But it's kind of neat how
- 7:54Speaker 4: they have different services. But I'll leave you with this.
- 7:58Speaker 4: Wah wah is like our great subs wa wa and coffee.
- 8:04Speaker 4: Oh they got coffee as far as I can see.
- 8:07Speaker 4: So wah wah. No booze. You can't buy beer, you
- 8:11Speaker 4: can't buy seltzers, you can't buy nothing really in yeah,
- 8:16Speaker 4: so whenever there's weird laws everywhere, and they pumped the
- 8:21Speaker 4: gas for you in New Jerseys to stay you can't
- 8:24Speaker 4: get out of the car. You stay in the car.
- 8:27Speaker 4: But h yeah, no, you can't have it.
- 8:30Speaker 5: It's Walls policy that they don't serve alcohol.
- 8:33Speaker 2: Any gas station.
- 8:34Speaker 4: If you're on a set of wheels, you can't buy
- 8:36Speaker 4: booze in a general sense kind of kind of so
- 8:40Speaker 4: to genus point.
- 8:42Speaker 2: The worst or best however you look at right there
- 8:47Speaker 2: in the middle.
- 8:47Speaker 3: If you have any questions for Jimmy Santangelo, the Wine
- 8:50Speaker 3: Academy of Utah proprietor you can you can ask them,
- 8:55Speaker 3: that's right. So I'm on that little Water Distillery website.
- 8:59Speaker 3: This is the distillery that Jimmy went to in Atlantic
- 9:02Speaker 3: City and brought this whiskey which.
- 9:03Speaker 2: Is called what sixteen knots?
- 9:06Speaker 3: Sixteen knots And there's some interesting things on their website.
- 9:10Speaker 3: There's a frequently asked questions section and it says do
- 9:16Speaker 3: you serve food?
- 9:17Speaker 5: Is one of the questions.
- 9:18Speaker 3: And what they say is the great in bold letters,
- 9:22Speaker 3: The Great State of New Jersey does not allow distilleries
- 9:26Speaker 3: to sell food by law.
- 9:29Speaker 2: We do think they would encourage.
- 9:31Speaker 5: We do sell bagged snacks.
- 9:33Speaker 3: You are more than welcome to bring food with you
- 9:36Speaker 3: and make sure you bring enough to share with our staff.
- 9:39Speaker 3: We also sometimes have a food truck. We have tons
- 9:43Speaker 3: of great restaurants that deliver to the distillery and your server.
- 9:47Speaker 3: Ask your server for recommendations so you can have food
- 9:50Speaker 3: sent in.
- 9:51Speaker 5: But they can't make it on the press.
- 9:53Speaker 4: Well, think about that. They're a manufacturer. That's what a
- 9:56Speaker 4: distillery is categorized as as a manufacturing.
- 10:02Speaker 2: Even here in Utah. If you think about that, many different.
- 10:05Speaker 4: Licensing, different licensing and explosive. You know, you have fumes
- 10:13Speaker 4: in the distillery and you don't want open flame the
- 10:18Speaker 4: next wall over or otherwise.
- 10:21Speaker 3: And somebody asked you do you have beer or wine. No, no, no, no,
- 10:25Speaker 3: we're a distillery, but they do have something called beer Buddies.
- 10:30Speaker 3: Beer Buddies is distilled beer. We get local craft beer
- 10:35Speaker 3: from our friends in the industry and distill that down
- 10:38Speaker 3: to make a distilled spirit from beer.
- 10:40Speaker 2: Beehive did that.
- 10:42Speaker 3: Twenty eight pints of beer go into every three hundred
- 10:45Speaker 3: and seventy five meter bottle. It's the shot to go
- 10:48Speaker 3: along with your beer. For the thinking man.
- 10:52Speaker 4: That sugar House did that along with behave They remember
- 10:57Speaker 4: during COVID years ago, in two thousand ats.
- 11:02Speaker 2: When was that.
- 11:06Speaker 4: Long, they acquired one of those distilleries acquired from Uinta.
- 11:12Speaker 2: They had like two hundred and ten kegs that were
- 11:14Speaker 2: gonna go back.
- 11:15Speaker 4: We get, what are we gonna do with this? So
- 11:17Speaker 4: they distilled it down into that. That's why the hand sanitizer.
- 11:22Speaker 2: Smelled like some of them smell like Vacker beer.
- 11:25Speaker 5: That's right.
- 11:25Speaker 4: But then one of the distilleries said, hey, what are
- 11:28Speaker 4: we doing just giving this away?
- 11:30Speaker 2: Let's make a spirit out of it. And they didn't
- 11:33Speaker 2: aged in barrel.
- 11:34Speaker 3: Interesting cool, And then it says, uh, do you allow
- 11:38Speaker 3: children at the distillery? Yes, we do allow guests under
- 11:42Speaker 3: the age of twenty one. We do not have soda,
- 11:45Speaker 3: but we do have mocktails available, so you can bring
- 11:49Speaker 3: your kids and get them started drinking early by drinking.
- 11:52Speaker 2: Get them a NEGRONI Yeah, yeah, there you go.
- 11:56Speaker 3: And uh yeah, so those are those are the major.
- 12:00Speaker 6: Chat room is asking if Jimmy and his family ever
- 12:03Speaker 6: been to Summers Point Diner right before the bridge to
- 12:08Speaker 6: Ocean City, New Jersey.
- 12:10Speaker 2: Yes, you have Circle Liquors. You got the crab Trap
- 12:16Speaker 2: and the crab trap right there.
- 12:19Speaker 4: We took the bikes and went over that bridge on
- 12:23Speaker 4: beach cruisers. My butt still's reminding me of it. But yeah,
- 12:28Speaker 4: you know, a lot of fun. Yeah, Summers Diner. Yeah,
- 12:31Speaker 4: good call.
- 12:32Speaker 5: Let's see.
- 12:33Speaker 6: I enjoy London dry style gin. Can you recommend a
- 12:37Speaker 6: Utah gin that is close in taste?
- 12:40Speaker 4: Sure you have the distillery I just headed on the
- 12:44Speaker 4: tip of my tongue. There beehive distilling. Jack Rabbit is
- 12:51Speaker 4: not a London dry gin, but very good. You got
- 12:55Speaker 4: the guys up in Alpine Distillery in Park City. Sarah
- 13:00Speaker 4: up there does a great job with her gin. But
- 13:05Speaker 4: dented brick is that the one dented brick? It's it's
- 13:08Speaker 4: got a tall, slender bottle to it. It's local. I'll
- 13:13Speaker 4: think of it and I'll say it in a minute,
- 13:15Speaker 4: And yeah, London Dry. It's also a high proof that
- 13:22Speaker 4: really just nails those.
- 13:24Speaker 6: That And then the follow up question is do you
- 13:26Speaker 6: have any comment on the new High West gin.
- 13:29Speaker 2: I haven't had it.
- 13:30Speaker 4: I saw it and it's a bit elusive, bless you
- 13:33Speaker 4: to get so I need to assess it.
- 13:39Speaker 5: Yeah.
- 13:39Speaker 6: People are saying dented brick.
- 13:43Speaker 2: Does a great job.
- 13:43Speaker 5: Yeah, kind of a juniper forward, Yeah, juniper ford.
- 13:46Speaker 4: But when it's London dry, my friends that averse domestic
- 13:50Speaker 4: or an American or a modern style gin. London Dry
- 13:53Speaker 4: is the one and done through the distilling secondary. So
- 13:57Speaker 4: that's why you can always nail dry. But if you
- 14:00Speaker 4: want these nuances of aromatics, we're going back in and
- 14:03Speaker 4: folding things in.
- 14:05Speaker 3: I see, yeah, I have the tendency to often buy
- 14:09Speaker 3: inexpensive gin, cheap cheap gin.
- 14:11Speaker 2: Well, it's a plastic bow so when you drive.
- 14:14Speaker 3: Yeah, but it tastes more junipery. And that's what I've
- 14:19Speaker 3: that's sort of the gin I grew up drinking at
- 14:22Speaker 3: my mother's knee.
- 14:22Speaker 2: I was gonna say, that's a weird thing to say.
- 14:24Speaker 2: The gin.
- 14:24Speaker 5: I grew up drinking at my mother's knee.
- 14:28Speaker 6: Let's see family in oc is all listening. What cocktail
- 14:31Speaker 6: can we make with the bourbon?
- 14:34Speaker 2: Oh?
- 14:36Speaker 4: This bourbon would be a great Manhattan if you have that,
- 14:41Speaker 4: and we could be playful by being all ocean oriented.
- 14:48Speaker 4: I left the bottle of Towny, that sherry, the and
- 14:54Speaker 4: that after iy sherry in this a two to one ratio.
- 14:57Speaker 4: Two parts this whiskey, one part of that sherry. A
- 15:00Speaker 4: little stir with your finger or a spoon if you're
- 15:03Speaker 4: lucky and over ice and you're good to go.
- 15:06Speaker 5: Why dirty up a spoon?
- 15:07Speaker 2: Yeah?
- 15:10Speaker 5: Get it in there.
- 15:11Speaker 2: You know that's flavor, right, that's flavor.
- 15:14Speaker 5: It sure does.
- 15:16Speaker 2: What do you got going Ah this weekend? You said
- 15:19Speaker 2: you were super busy?
- 15:20Speaker 4: Right, yeah, I'm hitting the ground running tonight. I'm up
- 15:23Speaker 4: in Promontory.
- 15:23Speaker 2: But and then have you guys.
- 15:26Speaker 4: Ever heard of Wassatch wine Storage or a Mountain wine storage?
- 15:34Speaker 5: Yeah?
- 15:34Speaker 2: They do a great job.
- 15:36Speaker 4: They have. So we have a lot of people moving
- 15:38Speaker 4: into Utah and they're like, what do I do with
- 15:40Speaker 4: all my wine? It's so dry? I have people ask
- 15:43Speaker 4: me what should I adjust to humidity?
- 15:45Speaker 2: How do I do this?
- 15:46Speaker 5: How do I do that?
- 15:47Speaker 2: Do I keep it up right? Do I put on
- 15:48Speaker 2: a side you go to? It's in Hebrew.
- 15:54Speaker 4: Mountain Wine Storage is a company that has lockers for you,
- 16:00Speaker 4: keeps everything under perfect temperature control. Wow, go in there
- 16:05Speaker 4: whenever you need. Yeah, you load, you unload. Great people
- 16:09Speaker 4: up there. But there's a private function tonight that I'm
- 16:13Speaker 4: seeing them at to reacquaint. But Sunday I'm at Clearwater
- 16:18Speaker 4: Distilling for a cigar function that'll be fun. My buddy
- 16:22Speaker 4: Joe Roberts from Portraits of Smoke will be taken in
- 16:26Speaker 4: pictures for people there, and it's going to be a
- 16:30Speaker 4: fun weekend. Then Monday, I know, I have a lot
- 16:33Speaker 4: of things then.
- 16:36Speaker 2: I just got But if people want to book something
- 16:39Speaker 2: with you, they can super easy. Go right to the
- 16:41Speaker 2: Wine Academy viewtah dot com.
- 16:44Speaker 4: We've got ticketed events, your in home wine events, private events.
- 16:47Speaker 4: I've got more things coming up with different venues and
- 16:51Speaker 4: it's going to be a lot of fun.
- 16:52Speaker 2: But I appreciate all the support. Thanks for letting me
- 16:54Speaker 2: go out of town for a minute. If you bring
- 16:58Speaker 2: us back booze perfect. Yeah, that's kind of you.
- 17:01Speaker 4: Know, all right, Well, thank you, Jimmy Thank you guys,
- 17:06Speaker 4: have a great weekend.
- 17:07Speaker 2: You see you next week.
- 17:09Speaker 3: Mind Academy of Utah dot com. That's where you find
- 17:11Speaker 3: Jimmy Santangelo's stuff.
