- 0:04>> Dr. Terry Simpson: Let me start with something we all can agree on.
- 0:06Eat real food, limit added sugar, avoid ultra
- 0:09processed junk. Good solid. Correct. Now, here's
- 0:14the problem. That advice wasn't discovered last
- 0:17week, and pretending it was, while quietly
- 0:20sneaking in. Worse advice is how people get hurt
- 0:23and how policies don't get made. It's lazy.
- 0:27Science and public policy. Today on 4Q, we're
- 0:31going to talk about what happens when nutrition
- 0:33stops being science and starts being branding. I,
- 0:40um, am your Chief Medical Explanationist, Dr.
- 0:42Terri Simpson, and this is Fork U Fork University,
- 0:46where we make sense of the madness of the Maha
- 0:48public policy and teach you a little bit about
- 0:51food and medicine. Let's set the table. Literally.
- 0:58Okay, maybe not literally. The New Dietary
- 1:01Guidelines and the Upside Down Pyramid have been
- 1:03sold as a breakthrough, a reset, a, uh, moment of
- 1:07truth. And to be fair, some of what they're saying
- 1:10is right. Ultra processed food has some problems.
- 1:13Added sugar should be limited and most people
- 1:16should eat more whole foods. I've said that for
- 1:18years. So is almost everybody in the world of
- 1:20nutrition. But when influencers say, see, we were
- 1:24right all along, my response is simple. You didn't
- 1:27discover it, you copied it. Here's the danger.
- 1:31It's not that they agree with the obvious stuff,
- 1:33it's that they think they discovered it. Because
- 1:36once you convince yourself you're the discoverer,
- 1:39you also convince yourself you're qualified to
- 1:41rewrite the rest of the science. And that's where
- 1:44things go off the rail. You cannot replace
- 1:48scientists with influencers. Let me say that
- 1:50again. We can't afford to replace scientists with
- 1:54influencers. Nutrition science didn't come from
- 1:58podcasts. It came from metabolic wards, from
- 2:01cohort studies, from randomized trials, from
- 2:04people being willing to have boring, cautious, and
- 2:07sometimes wrong experiments. And just to be clear,
- 2:11there isn't a Mediterranean diet influencer
- 2:13community. There's no dash diet movement. But
- 2:16there are scientists and there are physicians and
- 2:19there are registered dietitians that understand
- 2:21nutrition. By contrast, there is a loud, low carb
- 2:24and carnivore influencer ecosystem, complete with
- 2:27brands, supplements, coaching programs, and
- 2:30contrarian identity. The difference matters
- 2:34because influence is not evidence. If you want to
- 2:38know if someone understands nutrition science or
- 2:40is just cosplaying it, ask them which matters
- 2:44more, fiber or saturated fat? And here's what the
- 2:48influencer crowd loves to say. Fiber isn't an
- 2:50essential nutrient. Now, technically, that's true
- 2:53in the narrowest biochemical sense, but it's
- 2:56misleading because fiber is essential. If you like
- 2:59a healthy gut microbiome, better. Insulin
- 3:01sensitivity, lower Cardiovascular risk and normal
- 3:04colonic function. Fiber feeds the bacteria that
- 3:07regulate inflammation and the metabolism. The
- 3:10entire field of research exists because of this.
- 3:13Uh, contrast that with saturated fat. Saturated
- 3:17fat is truly non essential. There is no deficiency
- 3:21disease from not eating it. Your body makes all it
- 3:24needs, and excess saturated fat raises LDL
- 3:27cholesterol, worsens arterial health, and
- 3:30increases cardiovascular risk. So ask why is fiber
- 3:35dismissed as optional while saturated fat non
- 3:38essential and harmful in excess is quietly
- 3:41rehabilitated? That's not science. That is
- 3:45ideology. And here's another simple brain. The
- 3:49most important organ you own is largely made of
- 3:52polyunsaturated fats. Yep, the same fats that are
- 3:56called seed oils. Now, you don't want saturated
- 4:00fat replacing the fats in those cell, uh,
- 4:02membranes. But if you eat enough saturated fat, it
- 4:05will. And you definitely don't want saturated fat
- 4:08clogging the arteries supplying the brain. Unless
- 4:10stroke and cognitive decline are part of your
- 4:13plan. Biology doesn't care about your podcast
- 4:16downloads. It doesn't care how good looking you
- 4:18are without a shirt. It cares about what you put
- 4:21into your body. And if you put enough saturated
- 4:24fat going to replace cell membranes with saturated
- 4:27fat instead of polyunsaturated fat, they will
- 4:30become stiffer and harder and much more difficult
- 4:32for you to negotiate life. I had an exchange
- 4:36recently with Kali Means that illustrates the
- 4:38problem perfectly. His argument, in essence, was
- 4:40the government is finally calling out sugar and
- 4:43processed food and you should get behind that. And
- 4:45my answer is simple. We already did years ago.
- 4:50But. But when you act like you discovered it, you
- 4:52also act like you're qualified to rewrite
- 4:54everything else. And that's when bad ideas sneak
- 4:57in. Agreeing with the basics doesn't earn you the
- 5:00keys to the lab. Now, here's the part that really
- 5:03bothers me. After influencers took the place of
- 5:06scientists, after they reframed the message and
- 5:09claimed credit, they effectively said, okay,
- 5:11America, you're on your own now. Eat real food.
- 5:14Figure it out. Take responsibility. Now that's
- 5:17easy if you're wealthy, mobile and online. It's
- 5:20not so easy if you live in a food desert, rely on
- 5:22school lunches, or work two jobs. Public health
- 5:25exists because the willpower doesn't scale. And
- 5:29here's the bottom line. Let me make it really
- 5:31clear. Yes, eat real food. Yes, limit sugar. Yes,
- 5:35minimize ultra processed food. We agree. But don't
- 5:39pretend you discovered it. Don't replace science
- 5:41with influencers. And don't sneak saturated fat
- 5:44back while dismissing fiber. Because when
- 5:47confidence replace evidence, people don't get
- 5:50healthier. They just get misled on 4Q. We believe
- 5:54food should be delicious, practical and grounded
- 5:56in evidence. And evidence doesn't care who said it
- 5:59first, only whether it works. Data beats dogma,
- 6:03science beats slogans, and health doesn't improve
- 6:06when we trade researchers like Dr. Hall for
- 6:09influencers like Cali Memes. This has been
- 6:15researched and and written by me, Dr. Terry
- 6:18Simpson. And while I am a board certified
- 6:20physician and certified in culinary medicine, I am
- 6:23not your doctor. When you seek to make changes to
- 6:25your diet, please see a registered dietitian and a
- 6:28board certified physician. Not some eastern
- 6:31trained person and certainly not a chiropractor.
- 6:34All things audio have been done by our friends at
- 6:36Simpler media and the pod God himself, Mr. Evotera
- 6:40and you can find blog and further information on
- 6:43my substack@drsimpson.com and
- 6:46yourdoctorsorders.com and for Q.com did you get
- 6:49enough.coms there? Because we like dot coms
- 6:52apparently. Anyway, have a good week everybody and
- 6:55remember illegitimi non carborundum. All right,
- 7:05Ebo, what do you think? I think that instead of
- 7:08going to a doctor now we should just go to
- 7:10influencers, health coaches and gym bros.
- 7:15>> Speaker B: Well you're the one with the giant TikTok
- 7:17following influencer. Also, what the hell was that
- 7:22Harry Potter sounding stuff at the end there? Oh,
- 7:25and then there's this.
- 7:27>> Dr. Terry Simpson: And increases cardiovascular risk. Risk. And
- 7:32increases cardiovascular risk. I wonder if Ivo's
- 7:36gonna leave that in.
- 7:37>> Speaker B: Oh you do, do you? No you don't. And he's not.
