- 0:00Speaker 1: I'll start Toyota Presents Off the Bench with Jacob Hester
- 0:03Speaker 1: and Matt Flynn. Say Hester and Hester from carrying each
- 0:09Speaker 1: other to and Natty to carrying each other.
- 0:12Speaker 2: On the air Control.
- 0:17Speaker 1: Live from the Mercedes Benz Madden Rouge Studio. It's off
- 0:21Speaker 1: the Bench.
- 0:33Speaker 3: Bart, all right, welcome back in. I remember three of
- 0:42Speaker 3: O t B. You know, we were talking earlier with EJ.
- 0:47Speaker 3: Manuel about Tyler shut coming from Louisville to the New
- 0:51Speaker 3: Orleans Saints. We don't often see quarterback battles in the NFL.
- 0:56Speaker 3: I was thinking about that. What he was saying, I
- 0:58Speaker 3: was like, you either have someone who is established, or
- 1:02Speaker 3: you drafted somebody that you're praying becomes like the established guy.
- 1:07Speaker 4: Not very often do.
- 1:08Speaker 3: You have a quarterback battle. But that's what the Saints have.
- 1:11Speaker 3: I mean, they have Spencer Rattler, They've got Tyler Schuck.
- 1:13Speaker 3: I mean they're gonna be going all training camp long,
- 1:16Speaker 3: fighting it out for this spot.
- 1:18Speaker 4: Like in your NFL.
- 1:19Speaker 5: Career, right, especially especially quarterback battles between two young two
- 1:23Speaker 5: young guys. That's true old that versus in the the
- 1:28Speaker 5: young guy. But usually there's always a plan in place.
- 1:30Speaker 5: That's why you draft young quarterbacks, even if it's not
- 1:33Speaker 5: first round, because of course if you're the top of
- 1:35Speaker 5: the first round, you're expected to.
- 1:36Speaker 4: Go in and play immediately.
- 1:38Speaker 5: But usually your second, third, fourth, fifth, guy like you
- 1:42Speaker 5: can you draft them because you got a guy there
- 1:46Speaker 5: and you're the grooming getting them ready all that stuff,
- 1:49Speaker 5: But I can. I'm trying to think that you mentioned that,
- 1:53Speaker 5: you bring it up. I'm trying to think of like
- 1:55Speaker 5: young quarterback battles, and we kind of potentially have.
- 2:00Speaker 3: You like Will Levice, Melik Willis a little bit there Tennessee. Now,
- 2:05Speaker 3: neither one of those worked out. Malik Willis who I
- 2:08Speaker 3: think is actually really good. I was about saying, I
- 2:10Speaker 3: actually think they've been green Bay, you know, got a
- 2:12Speaker 3: long future in the NFL.
- 2:13Speaker 4: Might but when he's gotten in the game, yeah, when.
- 2:17Speaker 5: Jordan Love has been hurt up in Green Bay, Maliks
- 2:20Speaker 5: he's done really well for himself.
- 2:22Speaker 3: So I just I wonder, and I bring it up
- 2:24Speaker 3: because I wonder how they're going to handle the reps.
- 2:27Speaker 3: Like we see quarterback battles in college all the time,
- 2:29Speaker 3: but in college it's different because you're always around the facility,
- 2:34Speaker 3: you're always that twenty hour rule they used to try
- 2:38Speaker 3: to sell to everybody.
- 2:40Speaker 4: You're twenty hours by Tuesday.
- 2:42Speaker 3: It felt like, okay, so you get a chance, and
- 2:44Speaker 3: you get more reps, you get more interaction, you get
- 2:46Speaker 3: a better idea.
- 2:48Speaker 4: It's just not like that at the next level because you.
- 2:50Speaker 3: Can only be there certain times and there's not a
- 2:53Speaker 3: lot of guys just hanging around the facility. Guys got families,
- 2:55Speaker 3: they got other obligations. Not that they're not doing what
- 2:58Speaker 3: they need to be doing. They are there getting it done,
- 3:00Speaker 3: and then they're going home. They're doing other things. So
- 3:04Speaker 3: I just wonder what the reps are going to look
- 3:06Speaker 3: like because in college, I feel like you get a
- 3:07Speaker 3: pretty good idea. I mean, how many times did you
- 3:09Speaker 3: have to repeat a play in college?
- 3:11Speaker 4: Just repeat it, repeat it.
- 3:15Speaker 3: You don't get that in the NFL, Like there's very
- 3:19Speaker 3: at least for me, Like there was some repeating, but
- 3:21Speaker 3: it wasn't because you got vets up there, Matt that
- 3:25Speaker 3: they're like, hey, my guy, if he doesn't got it,
- 3:28Speaker 3: we ain't doing it.
- 3:29Speaker 4: And they'll tell the coach like, let's keep going. Yeah.
- 3:32Speaker 5: I think in the NFL when the reloads and the
- 3:34Speaker 5: running again, So that happened if it was like a
- 3:37Speaker 5: mental mistake within the interior of the play, like a
- 3:41Speaker 5: fullback went the wrong way or a tied end had
- 3:44Speaker 5: the wrong emotion. Like that would happen, right college, It's
- 3:46Speaker 5: more like you just screwed that up fly or that
- 3:49Speaker 5: looked ugly.
- 3:50Speaker 4: Let's do it again, right.
- 3:51Speaker 5: But quarterback battles, any battle really like any position, but
- 3:56Speaker 5: quarterback specifically, that is the heart, just one to control.
- 4:01Speaker 5: And every coach is gonna do it differently. And trust me,
- 4:04Speaker 5: I've been in a lot, a lot of quarterback battles
- 4:08Speaker 5: and there's you can either split it. There's lots of
- 4:11Speaker 5: ways to split the reps. You can split it by
- 4:15Speaker 5: you can split it by series. And we're talking about practice, like, yeah,
- 4:19Speaker 5: we're gonna take one practice and for this series, you're
- 4:22Speaker 5: gonna go in with the ones. You go, that's the
- 4:24Speaker 5: guy going with the twos. Next series, we'll switch it.
- 4:27Speaker 5: You can do it by practice. So when I was
- 4:30Speaker 5: in Seattle, there was a three way competition myself to
- 4:35Speaker 5: Forest Jackson, Russell Wilson, and we did it by day.
- 4:39Speaker 5: So you're the one today, you're the two today, you're
- 4:41Speaker 5: the three today.
- 4:42Speaker 4: How did you like that? So there's pros and cons
- 4:46Speaker 4: to all of it.
- 4:47Speaker 5: None of it is perfect, Okay, So I if I
- 4:51Speaker 5: have to look back on it, I think I like
- 4:52Speaker 5: the day better because the at least you got a
- 4:55Speaker 5: day that you could settle in, you weren't worried about, like,
- 4:58Speaker 5: all right, I gotta make it. I got to take
- 5:00Speaker 5: advantage of every single little rep I gotta go throw
- 5:03Speaker 5: a touchdown on whatever, because you got a whole day
- 5:05Speaker 5: to get familiar familiarize yourself with the center in the huddle,
- 5:10Speaker 5: with the guys around you. So that was probably the
- 5:12Speaker 5: biggest chance of like getting in a rhythm.
- 5:15Speaker 4: Yeah.
- 5:16Speaker 5: However, just like anything, there's no perfect way to do it,
- 5:20Speaker 5: because you know, some days when you're doing that, you
- 5:24Speaker 5: might be the ones when they're installing third down blitz packages,
- 5:28Speaker 5: and it's like you get the it's a tough day.
- 5:30Speaker 5: It's always a tough stay for the offense the day
- 5:32Speaker 5: that they install like Bayer Defense. There's some there's some
- 5:35Speaker 5: days that are traditionally harder on the offense and the
- 5:38Speaker 5: defense just because of the install packages you put during
- 5:41Speaker 5: a training camp series. So it's like, well that kind
- 5:43Speaker 5: of sucked because like this other guy was on the
- 5:47Speaker 5: day that he was the ones he had. Yeah, it
- 5:50Speaker 5: was like guys wide open all over the place, but
- 5:52Speaker 5: I'm throwing it into tight coverage blah blah blah. But
- 5:55Speaker 5: it happens like that all the time. Like if I
- 5:57Speaker 5: look back at quarterback competitions, where it was, you know,
- 6:01Speaker 5: trading out by series or sometimes it was like, all right,
- 6:03Speaker 5: offense has ten plays in this specific series or this
- 6:09Speaker 5: segment of practice period, whatever whatever you want to call,
- 6:12Speaker 5: whatever your team calls it. All right, Matt, uh, JaMarcus,
- 6:17Speaker 5: you get the first five, Matt, you get the last five.
- 6:19Speaker 3: That sucks, like because okay, see, I actually would have
- 6:22Speaker 3: thought maybe that that was more preferred because you get
- 6:25Speaker 3: involved each and every day and not like the by day.
- 6:28Speaker 4: You're kind of the right.
- 6:29Speaker 5: Again, there's no perfect way to do it, and I
- 6:30Speaker 5: was involved in a lot of different ways, and that
- 6:33Speaker 5: the other way is like you split a period like that,
- 6:35Speaker 5: or you the other way would be to switch a period,
- 6:37Speaker 5: like all right, JaMarcus, you have ten reps this period.
- 6:40Speaker 4: Next period, Matt's going to get ten reps. Right.
- 6:42Speaker 5: But then again, it's no, it's not an apples apples
- 6:45Speaker 5: comparison ever, because the defense isn't always doing the same thing.
- 6:48Speaker 5: You can't say, all right, Matt did this with this
- 6:52Speaker 5: personnel against this coverage and JaMarcus did this with that
- 6:56Speaker 5: same personnel versus the same coverage, because the defense is
- 6:58Speaker 5: calling different plays like it's there's no wait.
- 7:00Speaker 4: So the coach has to be really cognizant over the.
- 7:02Speaker 5: Overall picture of how a quarterback is communicating, how he's
- 7:07Speaker 5: getting through his progressions.
- 7:09Speaker 4: And you're not ever grading on an apples to apples.
- 7:15Speaker 4: It's not ever. It's all right, not an objective situation.
- 7:18Speaker 4: Let's have let's have quarterback coach, Matt Flynn.
- 7:21Speaker 3: If you've got the two guys right here behind us,
- 7:23Speaker 3: Spencer Rattler, who was a rookie last year, got a
- 7:25Speaker 3: handful of starts. You have Tyler shut coming in. We
- 7:28Speaker 3: all know his story, older quarterback for being a rookie quarterback.
- 7:31Speaker 3: But neither one of these guys has a full year
- 7:34Speaker 3: of starting in the NFL. Obviously, Okay, how would you
- 7:37Speaker 3: handle the reps between these two players as they try
- 7:41Speaker 3: to go win the job?
- 7:45Speaker 5: M That's a good, good, good question. I would handle
- 7:50Speaker 5: it that day, just thinking back on how I as
- 7:54Speaker 5: a player like to do it better?
- 7:57Speaker 4: Right?
- 7:58Speaker 3: Are you thinking eventually that because if you rotate days
- 8:01Speaker 3: that like Spencer Ratler might get a sub day which
- 8:04Speaker 3: is third downs and you're going to get more of
- 8:07Speaker 3: that look, and then Shuck might have the first and
- 8:09Speaker 3: second on stuff. But if you flip it, eventually Shuck's
- 8:11Speaker 3: gonna have the sub day and Spencer's gonna.
- 8:13Speaker 5: Have And like I said, there's no apples and apples comparison,
- 8:15Speaker 5: so it's all subjective. So you're gonna you just want
- 8:18Speaker 5: to see how they respond. But I think giving them
- 8:20Speaker 5: a full day, Spencer, you're the one today, Chuck You're
- 8:23Speaker 5: you're the one the next day.
- 8:25Speaker 4: It gives them a full practice.
- 8:26Speaker 5: You've got two hours to get in there and at
- 8:28Speaker 5: least get in a rhythm with your guys. Yeah, when
- 8:30Speaker 5: you get thrown in and out, when you're having to
- 8:32Speaker 5: come in and out, that's the worst. Like, that's why
- 8:34Speaker 5: I always hated two quarterback systems. They have worked at time.
- 8:38Speaker 3: I know you hated it with you it's the worst,
- 8:43Speaker 3: which Miles, I really get out of rhythm.
- 8:45Speaker 5: Yeah, when I come out of the game, we're gonna
- 8:48Speaker 5: I appreciate that. But here's why we're gonna keep doing it.
- 8:53Speaker 5: That's how it handled that I would do it by
- 8:55Speaker 5: day and that is coming from a guy with.
- 8:57Speaker 4: A lot, a lot.
- 9:00Speaker 3: That's why I actually, yeah, I was never. I was
- 9:01Speaker 3: never even you're an expert witness right now. Expert witness, yes,
- 9:05Speaker 3: but we're playing test.
- 9:07Speaker 5: I've never done a competition like that, whereas day by
- 9:10Speaker 5: day until I got to Seattle and I was like,
- 9:13Speaker 5: all right, this is this is pretty good.
- 9:15Speaker 4: Yeah, I can respect that.
- 9:16Speaker 5: And and like you said, you get the you know,
- 9:19Speaker 5: one day might be more set up for failure on
- 9:21Speaker 5: a quarterback than another day. But it's like that in
- 9:23Speaker 5: practice too, Like if you're you're subbing out every period
- 9:28Speaker 5: or halfway through practice, whatever it is, there's going to
- 9:30Speaker 5: be periods that are more set up for failure and
- 9:33Speaker 5: more set up for success. So the coach, you got
- 9:35Speaker 5: to trust the coach, and these coaches for the Saints
- 9:39Speaker 5: do seem like quarterback guys, like they are very cognizant
- 9:43Speaker 5: of the fact that you know, we're not gonna we
- 9:46Speaker 5: need to grow with these guys, we need to build
- 9:47Speaker 5: around them.
- 9:48Speaker 4: Yea. And based off of.
- 9:50Speaker 3: What we've been hearing from guys coming on the show
- 9:53Speaker 3: from OTA's in mini camp, a lot to be at
- 9:55Speaker 3: least positive about, like let's not they're not. I don't
- 9:59Speaker 3: think we're popping any champagne by any means, but I
- 10:04Speaker 3: think we're gonna be I think Nick said it the
- 10:06Speaker 3: first time we interview him. I'm pretty sure we're gonna be.
- 10:09Speaker 5: Not bad quarterback, right, yes, which is a really positive statement. So,
- 10:13Speaker 5: like one week into OTA's you got two really young
- 10:16Speaker 5: guys competing, which we never see.
- 10:18Speaker 4: But I'm kind of I'm.
- 10:19Speaker 3: Excited about there. The two guys that are competing. I
- 10:22Speaker 3: think they both are hungry football players. I think they
- 10:24Speaker 3: have both endeared themselves to the city, to the organization.
- 10:27Speaker 3: They're fully bought in. We never got that with Derek Carr.
- 10:30Speaker 3: When you look at Spencer Ratler, he was somebody out
- 10:33Speaker 3: of high school that had the highest marks, right, Everybody
- 10:37Speaker 3: was a believer in him. He was going to be
- 10:39Speaker 3: a first round pick when he was at Oklahoma. Didn't
- 10:41Speaker 3: work out for him. There, a guy named Caleb Williams
- 10:43Speaker 3: comes along. He goes to South Carolina, has some good
- 10:47Speaker 3: seasons there, there was flashes last year, and then you
- 10:50Speaker 3: get Tyler Shuck who's gone through injury.
- 10:52Speaker 4: Right.
- 10:52Speaker 3: He goes through Oregon in Texas Tech, he goes to
- 10:55Speaker 3: Louisville finds kind of finally his home and he started
- 10:57Speaker 3: to thrive there. So there's some intrigued and some unknown
- 11:01Speaker 3: there too, which might be bad, but it might be good.
- 11:03Speaker 5: I'm positive on it. Man, I'm intrigued by this battle.
- 11:06Speaker 5: I'm intrigued about how that position is going to look
- 11:08Speaker 5: because Spencer did some really good things this past year
- 11:11Speaker 5: with nothing around him. I mean, if you want to
- 11:14Speaker 5: draw up worst case scenario for a rookie quarterback, just
- 11:18Speaker 5: look back at what Spencer Ratler did last year.
- 11:20Speaker 4: And I've always been a fan of he was in college.
- 11:22Speaker 5: I know EJ brought it up earlier in the show
- 11:24Speaker 5: that like everybody kind of knew him from the Netflix
- 11:27Speaker 5: documentary Not Great in the Court of.
- 11:29Speaker 4: Public Appeal exactly.
- 11:30Speaker 3: And if look, if we were seventeen year olds and
- 11:32Speaker 3: the producer was telling us to ham it up do.
- 11:34Speaker 4: Like this, No doubt that's what they do on those shows.
- 11:37Speaker 3: Because I've like, and I've only interviewed him twice Home
- 11:41Speaker 3: rounding probably three times. He has been incredibly humble every
- 11:45Speaker 3: time I've been around him. I think that getting out
- 11:47Speaker 3: there and then the Oklahoma situation changed a lot for
- 11:51Speaker 3: him in a positive way.
- 11:52Speaker 5: Definitely, So I'm excited to see it. Brennan in the
- 11:56Speaker 5: chat said, yeah, Matt lost, said battle what he's talking about. Yeah, sure,
- 12:00Speaker 5: Ed didn't lose it, just run out of just run
- 12:03Speaker 5: out of TI all right, we just ran out of time.
- 12:06Speaker 5: He won a battle.
- 12:07Speaker 3: I mean, oh seven, you're starting quarterback, you started in
- 12:12Speaker 3: the NFL.
- 12:13Speaker 4: You want some battles. It's fine, guys. I don't even
- 12:16Speaker 4: lose sleep about it. It's cool.
- 12:21Speaker 3: Well, on that note, uh, whenever we're talking about practice
- 12:25Speaker 3: and somebody was asking why is every practice not the same,
- 12:29Speaker 3: It is the same, Like the format is the same.
- 12:32Speaker 4: So you're gonna have you know, your individual drills.
- 12:34Speaker 3: Which kind of self explanatory there, you're gonna go to
- 12:37Speaker 3: your certain position. You're gonna have seven on seven. You're
- 12:40Speaker 3: gonna have inside run. You're gonna have team where everybody
- 12:43Speaker 3: comes together. Inside run is going to be to nine
- 12:46Speaker 3: on seven period, Right, so you hear nine or seven
- 12:49Speaker 3: inside runs the same thing, but it's gonna be different
- 12:52Speaker 3: because on a sub day, like a third down day,
- 12:56Speaker 3: seven oh seven is gonna look different. Inside run is
- 12:58Speaker 3: probably gonna be some gun runs. Team's gonna be a
- 13:01Speaker 3: lot of third down situations. Like on the other day,
- 13:03Speaker 3: it's all those things are gonna be first and second
- 13:05Speaker 3: down situations. So it's the same theme seven or seven
- 13:09Speaker 3: inside run nine on sevent team, but it's gonna be
- 13:12Speaker 3: different players in and out, different personnels, and different plays
- 13:16Speaker 3: are being gone.
- 13:16Speaker 5: Yeah, situationally, everything is always different, and you got to
- 13:19Speaker 5: think there's there's a lot of plays to install, both
- 13:22Speaker 5: offensively and defensively. So the first usually the first two
- 13:25Speaker 5: weeks of training camp is all install days. So day
- 13:28Speaker 5: one of install, I mean it's base base defense, base offense.
- 13:32Speaker 5: Are base plays, things that we can always fall back on,
- 13:36Speaker 5: things that we are gonna run that we will expand
- 13:39Speaker 5: upon with different formations and different you know, motions and
- 13:43Speaker 5: shifts and things like that to get Then you go,
- 13:45Speaker 5: day two, let's install third and short yep, well yeah
- 13:49Speaker 5: there's there's third down install. But as the offense continues
- 13:53Speaker 5: to install packages, the defense continues to install packages. So
- 13:56Speaker 5: one day might be Day one might be cover three
- 13:59Speaker 5: and cover four, next day's Cover two like and then
- 14:02Speaker 5: of course let's work on our zone pressures. Then third
- 14:04Speaker 5: down comes. You're working down third packages. So the defense
- 14:07Speaker 5: starts working thing. There's just you you slowly. You don't
- 14:10Speaker 5: install everything in one day. It slowly comes to you
- 14:13Speaker 5: over one to two week period. That's what training camps
- 14:16Speaker 5: are for. And so there are days that are more
- 14:19Speaker 5: set up for defenses to win and days more set
- 14:22Speaker 5: up for offenses win.
- 14:24Speaker 3: All right, when we come back, well it is Thursday,
- 14:26Speaker 3: it's gonna be the nine to fifteen segment.
- 14:28Speaker 4: You know what that means.
- 14:29Speaker 3: It is Chef Michael Johnson getting to your munchie questions.

- 16:33Speaker 4: And I forgot you got big fancy intro and all,
- 16:35Speaker 4: what here is Chef Michael Johnson's intro. We gotta play
- 16:38Speaker 4: it it.
- 16:39Speaker 1: Get ready to tantalyize your taste buds and leave this
- 16:42Speaker 1: segment hungry. This is Monkey's with executive Chef Michael Johnson.
- 16:47Speaker 3: I mean, if anybody deserves an intro, Chef Michael Johnson,
- 16:53Speaker 3: our guy executive chef over at LSU, Chef, it is
- 16:56Speaker 3: always our pleasure.
- 16:57Speaker 4: Hope you're doing well. I hope you enjoy watching the
- 17:00Speaker 4: boys get it done there.
- 17:01Speaker 6: In Omahall, oh, man, that was exciting. Huh.
- 17:05Speaker 3: Which, Hey, which one of the guys on the baseball team,
- 17:08Speaker 3: because they're not a normal baseball team. They're built a
- 17:10Speaker 3: little different. I mean that like actual body type who
- 17:14Speaker 3: puts down the food. Like does Bear Jones live up
- 17:17Speaker 3: to the nickname?
- 17:18Speaker 6: Yeah? You know, I mean I think they all eat
- 17:20Speaker 6: pretty well, brother, you know, I mean sincerely, I'll say this,
- 17:26Speaker 6: you know, not that he eats more than one person
- 17:28Speaker 6: or another. But we see Daniel Dickinson in there a lot,
- 17:32Speaker 6: and he comes in for breakfast religiously, and man, I
- 17:36Speaker 6: can't say enough good things about that kid. He's so
- 17:38Speaker 6: respectful and just just characters there, you know, and all
- 17:42Speaker 6: the guys are. But I see him in particular a lot,
- 17:45Speaker 6: and we have conversation quite a bit. Just a great kid.
- 17:49Speaker 4: Yeah, it certainly looks like it as well.
- 17:51Speaker 5: Yeah, chef the I was wondering, So you got a
- 17:53Speaker 5: lot of feed athletes daily, see a lot of them.
- 17:56Speaker 5: Athletes love to take care of their body. I think
- 17:58Speaker 5: in college they get a little bit low so than
- 18:00Speaker 5: you do as you age. But I'm sure you've seen
- 18:02Speaker 5: it all, like all the health fads, different diets, the ketos,
- 18:07Speaker 5: you know, carnivore, whatever it is. What's one athlete like
- 18:12Speaker 5: just obscure, weird diet from an athlete that you've ever
- 18:16Speaker 5: seen or had to deal with as a chef.
- 18:19Speaker 6: Yeah, I mean we and I don't ever use names.
- 18:22Speaker 6: If we did have one guy and I wouldn't say
- 18:24Speaker 6: this was a diet but more than a more of
- 18:26Speaker 6: a like a food insecurity. But he would only eat
- 18:29Speaker 6: Ramen noodles even while we were on the road, you know,
- 18:33Speaker 6: like pregame. He wouldn't eat the food that the hotel
- 18:36Speaker 6: would prepare. He would only eat ramen noodles because that's
- 18:40Speaker 6: what he was comfortable eating. And there was a sadness
- 18:43Speaker 6: to it. You know what I mean, Like I tried
- 18:44Speaker 6: and tried and tried, and you know, it just is
- 18:48Speaker 6: how he was he was raised. And then you have
- 18:50Speaker 6: the other end of the spectrum where you have kids
- 18:53Speaker 6: that are super adventurous and you know, like we served
- 18:58Speaker 6: octopus the other day and we had some kids trying octopus,
- 19:00Speaker 6: you know, like it we we pushed the envelope for
- 19:03Speaker 6: the ones that will try, and then you have to
- 19:05Speaker 6: you know, like build comfort and trust with the ones
- 19:08Speaker 6: who don't to try to open them up to you know,
- 19:12Speaker 6: not necessarily new foods, but it's just eating, eating well
- 19:15Speaker 6: and eating properly because you know, kids come from all
- 19:18Speaker 6: different backgrounds, and you know, you have to prepare yourself
- 19:22Speaker 6: for for all of that, and then anything in between
- 19:25Speaker 6: we try.
- 19:25Speaker 5: Are we talking like old school like college kid ramen
- 19:28Speaker 5: noodles like the the Marishian whatever that the bag with
- 19:32Speaker 5: a chicken.
- 19:33Speaker 6: Flavor Maruchin or something like that.
- 19:36Speaker 3: Yeah, yeah, yes, you used to go to a flight
- 19:39Speaker 3: of those puppies hashtag munchies. Follow up from three weeks
- 19:43Speaker 3: ago at a well known steak place, I ordered the
- 19:46Speaker 3: steak one thirty internal weight just glared at me for
- 19:49Speaker 3: the longest five seconds gave me a hard time then delivered.
- 19:53Speaker 4: A perfect steak. Yeah, I don't know what hell we're
- 19:57Speaker 4: talking about here.
- 19:58Speaker 6: Yeah, well they will look at you like that. We
- 20:00Speaker 6: we were talking about cooking the steak to the proper temperature.
- 20:04Speaker 6: And it's it's a little it's kind of you know,
- 20:06Speaker 6: like everybody's everybody's you know, interpretation. A lot of times,
- 20:12Speaker 6: even chefs included, you know, like what what medium looks
- 20:17Speaker 6: like and and realistically it's you know, like it realistically
- 20:22Speaker 6: is determined by temperature and what that looks like when
- 20:25Speaker 6: it reaches that temperature and whether it's rested or not.
- 20:27Speaker 6: So you become familiar with people ask me all the time,
- 20:30Speaker 6: and you know, how long do you cook the steak for?
- 20:32Speaker 6: You cook it until what's done? You know, you cook
- 20:35Speaker 6: it until it's to the temperature that you're looking for.
- 20:37Speaker 6: And so you can avoid some of that. Well, you're
- 20:40Speaker 6: supposed to be something that you know, like I think
- 20:43Speaker 6: the chef will understand, but you know, there's the people
- 20:46Speaker 6: will look at you strange, like look this particular sob,
- 20:49Speaker 6: you know what I mean. But if you're the paying customer,
- 20:52Speaker 6: you know, like if you want to get it right
- 20:53Speaker 6: and you don't want to worry about it, become familiar
- 20:56Speaker 6: with the temperature.
- 20:57Speaker 5: Yeah, chef, this music background like got me thinking about
- 21:01Speaker 5: drinking some like nice red wine.
- 21:03Speaker 4: Are you like when you cook at home? Do you
- 21:08Speaker 4: do wine pairings you like? Do you base it like
- 21:10Speaker 4: on the protein that you're eating?
- 21:12Speaker 3: Like?
- 21:12Speaker 4: What wine? Are you?
- 21:12Speaker 3: Just? Like?
- 21:13Speaker 4: Man? I like red wine or like white wine, whatever
- 21:15Speaker 4: it is.
- 21:16Speaker 6: I mean, if I'm cooking fish and I want to
- 21:19Speaker 6: drink wine, I'm definitely gonna have it with, you know,
- 21:21Speaker 6: like a pinot or a or a you know, a
- 21:25Speaker 6: white I'm not I'm not, you know, I drink wine
- 21:28Speaker 6: that I like, you know what I mean. I don't
- 21:31Speaker 6: like dry white wines. I don't like dry wines in particular,
- 21:35Speaker 6: So I'm gonna pair it with something that I that
- 21:37Speaker 6: I like. Saviagnon Blanc honestly is a pretty broad stroking
- 21:42Speaker 6: white wine that will go with chicken or seafood really easily.
- 21:46Speaker 6: And so I've I've become accustomed to drinking Savignon blanc
- 21:50Speaker 6: over over a lot of other white wines. And then
- 21:53Speaker 6: you know, reds. I have particular white wines that I like,
- 21:56Speaker 6: like a medium bodied red, like a petite sera or
- 22:00Speaker 6: something of that nature, with heavier meats and fattier meats
- 22:05Speaker 6: and red meats and such. So I definitely enjoy And
- 22:09Speaker 6: you know, I like when I'm cooking at home, I
- 22:11Speaker 6: like to enjoy wine while I'm while I'm cooking, it
- 22:14Speaker 6: just kind of mellows you, and I think to some degree,
- 22:18Speaker 6: also while you're tasting the wine, you're building the flavors
- 22:21Speaker 6: of the dish and compliment whether it's whether consciously or unconsciously,
- 22:26Speaker 6: you know what I mean. It it just lends itself
- 22:30Speaker 6: to the palate.
- 22:31Speaker 4: Yeah, also makes you feel pretty Yeah, it does.
- 22:33Speaker 6: It does. It's weird anxiety of cooking.
- 22:37Speaker 4: Yeah, hashtag munchies.
- 22:39Speaker 3: If you were to cook coach Jay Johnson a steak
- 22:42Speaker 3: to celebrate, what cut would it be and what would
- 22:45Speaker 3: your sides be?
- 22:46Speaker 4: And then what wine would you pair with that?
- 22:49Speaker 3: Yeah?
- 22:49Speaker 6: I mean, honestly, I would cook him some beef cheeks,
- 22:52Speaker 6: something really special, you know what I mean, Like something
- 22:55Speaker 6: that he probably hasn't had before, and took a lot
- 22:58Speaker 6: of time and energy to get it there, right, you know,
- 23:01Speaker 6: slow and low. I mean, a steak is pretty simple
- 23:04Speaker 6: and easy, and I'm sure he would enjoy it. But
- 23:06Speaker 6: I'm probably gonna make something that takes a lot of
- 23:08Speaker 6: energy out of me to put into it that when
- 23:12Speaker 6: when eaten and consumed, it's like, my god, what did
- 23:15Speaker 6: I just eat? You know? And I think I think
- 23:17Speaker 6: beef cheeks is along that line, like it takes some preparation,
- 23:20Speaker 6: takes some time to cook, you know, it requires the
- 23:25Speaker 6: the energy of the chef, you know what I mean?
- 23:28Speaker 5: Jeff hashtag munchies here. It's a good one because I've
- 23:30Speaker 5: done this before. I'm zero and three on cheesy scalloped potatoes.
- 23:35Speaker 5: Potatoes are never done in the allotted time. Given any
- 23:38Speaker 5: secrets or advice on these.
- 23:40Speaker 6: Yeah, so slice them thinner. And you also want to
- 23:43Speaker 6: steam your potatoes. Blanch your potatoes. And when I say that,
- 23:47Speaker 6: a lot of people when they blanch them or steam them,
- 23:49Speaker 6: they take them too far. But before you put the
- 23:53Speaker 6: potatoes into the into the pan, you really should slice
- 23:56Speaker 6: them and dunk them into a steaming pot of water
- 23:59Speaker 6: to saw from them up, and then put them in
- 24:01Speaker 6: a colendar and let them steam dry. And you're not
- 24:04Speaker 6: trying to cook them to where they'll break. You're trying
- 24:06Speaker 6: to cook them to where they're more flexible. A lot
- 24:08Speaker 6: of people cook their potatoes cut their potatoes really thick,
- 24:11Speaker 6: so you're gonna have to cook it a little bit longer.
- 24:14Speaker 6: But you really need to blanch your potatoes ahead of time.
- 24:18Speaker 6: That's that's something a lot of people don't realize. And
- 24:20Speaker 6: also when you blanch them and then steam dry them,
- 24:23Speaker 6: you're removing a lot of the liquid out of the
- 24:25Speaker 6: potato because another another real common error is you put
- 24:30Speaker 6: raw potatoes into the pan and they start leaching water
- 24:33Speaker 6: out as they cook, and your your your put your
- 24:37Speaker 6: dish turns out soupy and watery. And so if you
- 24:41Speaker 6: partially cook them, you're actually going to allow them to
- 24:44Speaker 6: steam dry, and then the liquid from the from the
- 24:47Speaker 6: cheese sauce or your morne or whatever whatever whatever your
- 24:50Speaker 6: creamy liquid is is going to actually absorb into the
- 24:53Speaker 6: potatoes and help soften them as well.
- 24:55Speaker 3: You know, I'm going to act like I knew what
- 24:58Speaker 3: chef was talking about, but go South asked the question,
- 25:00Speaker 3: did he say beef cheeks? Chef, I'll be honest with you,
- 25:04Speaker 3: said beef cheeks earlier, and I'm like, yeah, beef cheeks, Yeah.
- 25:10Speaker 6: Yeah, yes, beef cheeks. It's kind of like poor cheeks.
- 25:13Speaker 6: But beef. It's the it's a cheek cut from the cow, right,
- 25:17Speaker 6: and it takes some preparation.
- 25:18Speaker 4: Yeah, talking about like face cheeks, about cheeks here, everybody's.
- 25:23Speaker 6: Thinking of it comes from the fore end.
- 25:27Speaker 4: Everybody was thinking. Everybody's thinking of hashtag munchies. How would
- 25:33Speaker 4: chef cook a chant clear? I'm sorry, what was that
- 25:37Speaker 4: chant to clear?
- 25:38Speaker 3: How would you h how would you cook that? It's
- 25:40Speaker 3: a fancy ros as we talked about last week?
- 25:44Speaker 6: Oh oh oh yeah yeah yeah, yes, well roasted? Yeah no,
- 25:52Speaker 6: so you know that that's a rooster and and and
- 25:55Speaker 6: really realistically you don't cook them so you know, slow
- 25:59Speaker 6: and low, you're have to loosen them. That that's the
- 26:01Speaker 6: meat up. But you know, for for all intents and
- 26:04Speaker 6: purposes today, we're just gonna call it roasted.
- 26:07Speaker 4: Yeah, okay, all right, fair enough.
- 26:09Speaker 5: Uh, Chef, I have like really been on this this
- 26:12Speaker 5: Asian food cook. I'm trying to make different dishes at
- 26:15Speaker 5: my house. I'm curious as to how you would do
- 26:19Speaker 5: at home, Like what sauces would you use in like
- 26:22Speaker 5: a just a standard like we'll go like a beef
- 26:24Speaker 5: for a chicken stir fry situation.
- 26:26Speaker 6: Yeah, So I'm I'm a huge fan of yuzu. And
- 26:29Speaker 6: it's like this citrusy, soy sauce and I don't know, man,
- 26:34Speaker 6: it's just one of the things that I really love.
- 26:36Speaker 6: It's not it's not saturated with MSG. It doesn't have
- 26:39Speaker 6: all the nonsense and bs in it that you, you know,
- 26:42Speaker 6: have come to love the flavor of. But it's not
- 26:44Speaker 6: really good for you. I really like uzu and it
- 26:47Speaker 6: and it's and it it brightens up just about any dish.
- 26:50Speaker 6: And you you can get it at ethnic stores just
- 26:55Speaker 6: I mean there's ethnic stores all over the city that
- 26:57Speaker 6: you can get usu. You can order it online from Amazon.
- 27:01Speaker 6: But it's one of the things that I really like
- 27:03Speaker 6: to break the dish with.
- 27:04Speaker 4: It's kind of what's the difference between uzu and ponzu sauce?
- 27:09Speaker 5: Uh?
- 27:09Speaker 6: What I think the fruit that's going into it? Yeah, uh.
- 27:14Speaker 6: And and I think zu also has fermented rice in it.
- 27:18Speaker 6: Perhaps I'm not, but they're very they're very similar. Yeah,
- 27:24Speaker 6: I'm sorry, ponzus soy in it. Uzu is not not soy.
- 27:29Speaker 6: It's uh. It is fermented rice wine or rice vinegar,
- 27:34Speaker 6: and it has the uh, citrusy flavor in it as well.
- 27:38Speaker 6: And Honestly, both of them are really great seasonings for it.
- 27:44Speaker 4: Jeff. We appreciate your time every single week.
- 27:47Speaker 3: Incredible insight as always continue feeding the squads because the
- 27:52Speaker 3: squads right now are thriving and you do a fantastic
- 27:55Speaker 3: job and we appreciate it every single week, sir.
- 27:58Speaker 6: Sure take care guys.
- 27:59Speaker 4: Thanks ye oh man.
- 28:04Speaker 5: I know I hadn't been doing this munchie segment for
- 28:06Speaker 5: very long. I got hungry every time, so we used
- 28:10Speaker 5: to do it at seven thirty.
- 28:12Speaker 3: Like when I first, like five six years ago, when
- 28:15Speaker 3: I got on OTB for you know, the first time
- 28:17Speaker 3: we did it at seven thirty and I told Tea,
- 28:20Speaker 3: I was like, we got to move this.
- 28:22Speaker 4: Say what do you mean.
- 28:22Speaker 3: I go, I'm starving and it's seven forty six. Like,
- 28:27Speaker 3: if we do it at nine fifteen, I can see
- 28:29Speaker 3: the finish line. I can get through some food. But
- 28:31Speaker 3: if we do this at seven thirty, I can't.
- 28:33Speaker 5: But you're also a little bit more hungry at nine
- 28:35Speaker 5: to fifteen. I got usually leave the show and I'm
- 28:39Speaker 5: star I go straight too. Well, I bring a protein bar.
- 28:42Speaker 4: Look at you. Yeah that's a pro yeah, pro move.
- 28:46Speaker 4: You always got to keep a protein bar on your person.
- 28:53Speaker 4: Beef cheeks. Beef cheeks people from the face, not the butt.
- 28:57Speaker 4: On that note, we'll take a break more OTB when come.
- 29:00Speaker 1: Back off the bench.
- 29:04Speaker 4: Beef cheeks. It's good.

- 30:34Speaker 3: Okay, like I said, it ain't.
- 30:37Speaker 4: You lived in Wisconton? Yeah six years. Did you ever
- 30:42Speaker 4: hear mansion rhyme with the Wisconsin before? Like that? Whose
- 30:51Speaker 4: are Ryan? It does if you go Wiscnton, it does. Taylor,
- 30:56Speaker 4: you got to keep up with me on this camera.
- 30:58Speaker 4: I'm up and down. Yeah, I know, unpredictable. You're you're
- 31:02Speaker 4: you're up and down a lot. It's fidgety. It's fidgety. Well,
- 31:10Speaker 4: then three hours is a long time, yes, you know.
- 31:12Speaker 4: I'm also I don't want to be standing a g
- 31:14Speaker 4: as well. I want to do a little bit of both.
- 31:17Speaker 5: At my office by my high office I got one
- 31:19Speaker 5: of those tables that pushed the button goes down.
- 31:23Speaker 4: Oh yeah, standing.
- 31:26Speaker 5: If I go standing, sitting, I'm up and down wearing
- 31:29Speaker 5: that motor out too. It's like every forty five minutes
- 31:34Speaker 5: going up and down.
- 31:37Speaker 3: I don't think anybody that's ever listening to your own
- 31:39Speaker 3: radio for the last seven years they.
- 31:41Speaker 4: Have no no trouble believing that they're not shocked. Nope, squirrel.
- 31:47Speaker 4: I mean it's it's good for your body too. Condo
- 31:49Speaker 4: in Toronto, that's a good one too. It's better than mansion.
- 31:53Speaker 4: And I think it's kind of goaded.
- 31:57Speaker 2: Going.
- 32:00Speaker 3: Yes, well there are sixth grade. I got one of those.
- 32:05Speaker 3: I got every gray ball. I know you got them
- 32:07Speaker 3: covered lingo, I got it.
- 32:14Speaker 5: It is kind of wild one people people out there like, uh,
- 32:20Speaker 5: when your kid gets to like third grade, you start
- 32:23Speaker 5: hearing some of the slang.
- 32:25Speaker 4: It's like, what what'd you say? I feel like it
- 32:30Speaker 4: could be much worse bad like just now it's cringey,
- 32:33Speaker 4: but it could be much worse.
- 32:34Speaker 3: Like there was things that I felt like we said
- 32:36Speaker 3: in the in the old nineties that I'm glad my
- 32:39Speaker 3: kids don't say.
- 32:40Speaker 4: Anybody's kids out there say like, Ohio yep and skibvity. Yeah,
- 32:44Speaker 4: they went through that phase for sure. Yep. I got
- 32:49Speaker 4: definitely that the old man like, what is that? I
- 32:51Speaker 4: don't know what that means? Can't look it up? Jamie asked,
- 32:56Speaker 4: are y'all too good for motown? No, we can definitely
- 32:58Speaker 4: have a motown day good for most kidding me. My
- 33:02Speaker 4: favorite motown A little bit a deeper cut.
- 33:06Speaker 3: I guess Bill Withers Grandma's hands favorite motown song, A
- 33:12Speaker 3: little bit off the beaten path there.
- 33:17Speaker 5: When I was growing up, I had I don't know
- 33:18Speaker 5: if you'll remember this from like the infomercials they.
- 33:21Speaker 4: Used to be on.
- 33:22Speaker 5: I had the CD like oldies but goodies, like volume
- 33:26Speaker 5: one through twenty yep, had all of them.
- 33:29Speaker 4: Used to love it. We used to get in Tyler, Texas.
- 33:32Speaker 3: We used to get ninety I think it was ninety
- 33:34Speaker 3: eight point seven or ninety eight point one there.
- 33:37Speaker 4: Kay, love your oldies eight point seven K love. This
- 33:42Speaker 4: was an oldies. Love was a Christian station here it is. Yeah,
- 33:47Speaker 4: not in Dallas, Texas in the nineties. A lot of
- 33:50Speaker 4: heathens out there, huh so.
- 33:52Speaker 5: Yeah, oldies but goodding. That's like when I was growing up,
- 33:54Speaker 5: I was kind of like you. I know, you're kind
- 33:56Speaker 5: of like an old soul when it comes to music,
- 33:58Speaker 5: because you're like old soul plus R and B. Yep,
- 34:01Speaker 5: that's my two, that's you.
- 34:02Speaker 4: That's me.
- 34:03Speaker 3: I was too, but for like sixties and seventies, a
- 34:06Speaker 3: lot of Casey, a lot of Casey Casem and my Yeah,
- 34:10Speaker 3: growing up you you.
- 34:11Speaker 4: Liked the hits. I get it.
- 34:13Speaker 5: They still play Casey case which is you ever hear
- 34:16Speaker 5: it like they play like old obviously old episodes?
- 34:21Speaker 4: Well, I mean not clearly.
- 34:22Speaker 3: You can put it in AI now and Casey Casem's
- 34:24Speaker 3: voice could probably just pop on out.
- 34:26Speaker 4: What's it like?
- 34:26Speaker 3: There's like a couple of those and maybe y'all know
- 34:29Speaker 3: because you'll been in this business a while too now,
- 34:31Speaker 3: Like Spider Harrison's a.
- 34:32Speaker 4: Name that you always hear, like Spider gotta be eighty.
- 34:36Speaker 4: Guy's been doing it for a long time. Casey case Delilah,
- 34:39Speaker 4: like we still like still us too.
- 34:42Speaker 3: We were trying to get a laundra a segment but
- 34:44Speaker 3: T Bop shut it down where it was like deer
- 34:48Speaker 3: a Landra instead of Dear Delilah whatever they call it.
- 34:51Speaker 2: And I give people life advice, yeah, because I'm the
- 34:53Speaker 2: person be taking life advice.
- 34:55Speaker 3: Exactly, and she pairs a song with it Kindah but
- 34:59Speaker 3: not Delilah.
- 34:59Speaker 5: You've ever listen to her, So I grew up, we
- 35:01Speaker 5: listened to her a lot. We'd always like laugh and
- 35:03Speaker 5: like you wouldn't laugh at the story. So that's like
- 35:05Speaker 5: a little a little more of it, but like you know,
- 35:08Speaker 5: it's kind of funny sometimes, but you have to beginning
- 35:11Speaker 5: of the show, she's pretty straight laced, but.
- 35:13Speaker 4: Like towards the end of the shows. It's probably because
- 35:15Speaker 4: it's a long show for her and a lot of
- 35:17Speaker 4: calls coming in.
- 35:18Speaker 5: But we always would joke like the songs she's playing
- 35:21Speaker 5: don't have anything to do with like the callers, Like, no,
- 35:23Speaker 5: I think she's just drinking a glass of wine.
- 35:25Speaker 4: Like every every partial break.
- 35:27Speaker 3: Buddy, the whole show. I lost, I lost my business,
- 35:31Speaker 3: I have nothing. Okay, that's one scenario. Uh, my husband
- 35:35Speaker 3: is cheating on me, he's going away with someone else.
- 35:39Speaker 3: That's another scenario. I lost my house in a tornado.
- 35:43Speaker 3: So all those three scenarios, right, you know what you're
- 35:45Speaker 3: getting when beneath my wings, every single one of them.
- 35:48Speaker 3: She's got a perfect song for you, y'all.
- 35:50Speaker 2: Give me a glass of wine in a segment, and
- 35:53Speaker 2: I will ruin so many lives.
- 35:55Speaker 7: No doubt, including including She'll she'll get up there and
- 36:01Speaker 7: she'll be like, you know, my husband left me, and
- 36:04Speaker 7: my dog died and all those She's like.
- 36:06Speaker 4: I have the perfect song for you. Here's some Motley cruise.
- 36:09Speaker 4: That's the most random thing. Here's fireworks by Katy Perry. Yeah,
- 36:15Speaker 4: but well, back in the day, it used to be
- 36:16Speaker 4: pretty cheap plastic. Wait, okay, give me somewhere out there
- 36:22Speaker 4: was a big one that she played.
- 36:23Speaker 3: She used to play somewhere You'll heard a song that
- 36:25Speaker 3: wasn't when Beneath My Wings on Delilah, Like that's the
- 36:30Speaker 3: only one I ever heard.
- 36:32Speaker 5: It's like, you know, it's like eight now if you're
- 36:36Speaker 5: driving at like nine p m. Just like a little
- 36:38Speaker 5: comfort radio.
- 36:41Speaker 3: All right, you're a landra give me a little if
- 36:44Speaker 3: I'm you know, going through something at work and I
- 36:49Speaker 3: got some new around me, and the new is just
- 36:52Speaker 3: like always here. And I've been stuck with him for
- 36:55Speaker 3: so many years, so many and uh, he can't sit still.
- 37:00Speaker 3: He continues to move around, and I'm just trying to
- 37:03Speaker 3: find the song to help me find strength, Like what
- 37:05Speaker 3: what should I play?
- 37:08Speaker 2: Coworker bothering you? So are we trying to? Are you
- 37:15Speaker 2: trying to?
- 37:15Speaker 4: Like, you know, I'm trying to get in a good mood, Elandra,
- 37:18Speaker 4: I'm just trying to.
- 37:19Speaker 2: I got you.
- 37:20Speaker 3: I'm just trying to, you know, forget about current times
- 37:23Speaker 3: and try to see the fairness. She hasn't had enough
- 37:27Speaker 3: white wine.
- 37:28Speaker 2: I haven't. I haven't had any wine at all.
- 37:30Speaker 4: I wish I did.
- 37:30Speaker 2: But hang on, give me two seconds.
- 37:35Speaker 4: Sho Yes, that's perfect.
- 37:46Speaker 3: I mean not only I got a beer around this
- 37:48Speaker 3: guy in huddles around this guy three different variations of
- 37:54Speaker 3: radio shows. Take this job shop, we really loves me?
- 38:00Speaker 4: At any moment, I feel like he's just gonna walk
- 38:02Speaker 4: out that door. Oh what a great song. I hadn't
- 38:06Speaker 4: heard that song in a long time.
- 38:07Speaker 2: I feel like we haven't done a country day, an
- 38:09Speaker 2: wal either.
- 38:09Speaker 3: That's true, that's true. Maybe tomorrow. Tomorrow feels like a
- 38:12Speaker 3: good day to go all country.
- 38:15Speaker 4: That's it, Elanda. That didn't take long at all. I
- 38:18Speaker 4: mean I was like six seconds you had Yeah, well done, Elandra.
- 38:25Speaker 2: I didn't even need a glass of wine.
- 38:26Speaker 3: What day?
- 38:28Speaker 4: What day of the week should Wednesday feels like a
- 38:30Speaker 4: good deer, Elandra? Day, and we'll take Yeah, that's a
- 38:37Speaker 4: really good seg.
- 38:37Speaker 3: Look, we'll take We'll take the best one that we
- 38:39Speaker 3: see that day inside the chat on Twitter verse whatever. Yeah,
- 38:44Speaker 3: and we'll give Alandra the problem. We'll go to break
- 38:47Speaker 3: and then she'll come back with a song. With the
- 38:50Speaker 3: song helping you out like that, T Bob just holding
- 38:56Speaker 3: a Landra back.
- 38:59Speaker 2: I've been trying to get this the only reason why
- 39:01Speaker 2: I wasn't successful.
