Latest / The Monégasque Table / Edible Glitter and FDA Rules: What Approval Really Means
Transcript
- Margaux: About 1,000 times every month, somebody types the same question into a search bar: does the FDA approve edible glitter? Here's the answer. No. It never has. Not one jar, not one brand, not ever. And by the end of this episode, I want that no to be the most reassuring thing you hear all week. Dana: That's quite a promise, Margaux, because right now I'm not reassured. I put this stuff on my kids' birthday cakes. And you just told everyone listening that the government never signed off on it. Margaux: Welcome to The Monégasque Table. Today we're reading the safety rules out loud — what the FDA actually does, what it doesn't do, and what an honest jar looks like when you flip it over in the aisle. Dana: Then get to the reassuring part fast, please. Margaux: Here's the answer up front. The FDA doesn't approve glitter — and it doesn't approve cakes, or ketchup, or the cereal you ate this morning either. That's not how American food rules work. What the FDA actually does is keep a public list of color additives — the pigments themselves — with rules for which foods each one can go in, and how much. It also registers the facilities food comes from. So: ingredients get listed. Facilities get registered. Products never get approved. Which means any label promising government approval is claiming a credential that does not exist. For anyone. Ours included. Dana: Hold on, though — flip that around. If no glitter can be approved, then no glitter can fail, either. You've kind of just told me nobody is checking anything. Margaux: Somebody is checking something — it's just not the thing you'd guess. They check the pigments. Sparkle Lab moment. May I? Dana: The lab is open. Margaux: The list lives in Title 21 of the federal code, and 3 section numbers do most of the work in the shimmer world. Section 73.350 — mica-based pearlescent pigments, the mineral flakes that put the sparkle in nearly every edible glitter. Section 73.200 — iron oxides, the earthy pigments behind golds and bronzes. Section 73.575 — titanium dioxide, the bright white. Each entry names the foods that color is allowed in, and each carries a cap. Mica-based pigments top out at 1.25% of the food's weight. Titanium dioxide at 1%. That's the system: named pigment, named foods, hard ceiling. Dana: Okay, I want to argue with that number. A cap that small sounds like a confession. If this stuff were genuinely fine, why would the law ration it down to a rounding error? Margaux: Because a cap is what being listed means — every color on that list has one, including the dyes in the frosting tub you already own. The limit binds the company making the food, not you and your spoon. And hold it next to a real serving: the guidance on a jar is a 0.1 gram pinch. Spread through a whole drink or across a whole cake, that's a tiny fraction of the ceiling. A cap isn't the law flinching. It's the law doing its normal, boring job. Dana: Boring is honestly all I want from food law. Margaux: (laughs) Then you'll enjoy how small the honest brag is. Those sections cover ingredients — so the strongest truthful sentence any glitter brand can say is "made with FDA-listed color additives." That's it. That's the whole flex. Anything grander on a label — approved, certified, endorsed — is a costume. Dana: Hang on, though. "Made with FDA-listed color additives" is also just words. Anybody can type that sentence onto a label. Why does your sentence count when the costume doesn't? Margaux: Because that sentence is checkable, and the costume isn't. A listed additive has a public section number — you, personally, can read 73.350 tonight for free. "Listed" points at a page that exists. The approval stamp points at nothing. Only one of those can be caught lying. Dana: Which brings me to the thing I've been holding since the cold open. All this section-number talk assumes I'm somebody who reads federal regulations for fun. I'm in a store. There's a toddler in my cart negotiating hard for marshmallows. Nobody is looking up part 73 on their phone in the baking aisle. What am I actually supposed to do in 10 seconds? Margaux: That's the round you win, Dana — cleanly. Nobody should need a legal citation to buy sprinkles. So here's the 10 second version. Flip the jar. No ingredient list at all? Back on the shelf, done. If there is one, look for pigment names from the food world — mica-based pearlescent pigments, iron oxide, titanium dioxide, the FD&C colors. If the label leans on "non-toxic," remember that's a crayon word, not a food word. And if you see "for decoration only" anywhere — that's not a style note. That's the product telling you it isn't food. Dana: The jar confesses. You just have to read the right line. Margaux: Better than I said it. And this is worth taking seriously, because the mix-up isn't hypothetical. The FDA has investigated real cases where shimmer dust that was never meant to be eaten ended up on food people ate. Decoration-only powder, sold near the edible kind, in nearly identical little pots. Dana: See, that's the part that makes me genuinely angry. Because that's not a mom being careless. That's a shelf working like a trap. Margaux: And the reviews back you up. In an analysis of about 2,400 category reviews, 9.5% of the negative mentions were people discovering that the sparkle they'd bought wasn't edible at all. They found out after the party. Dana: Okay. Land this somewhere useful. What does it look like when a brand handles this properly? Margaux: Two things. The pigments are named right on the label — no mystery. And when you ask for the paperwork, paperwork shows up. That's the standard we hold ourselves to: after over 400,000 orders across the US, Canada, and the UK, people still ask us what exactly is in the jar, and the answer lives in documents — our spec sheet cites section 73.350 for the mica and 73.200 for the iron oxides, plus the matching European rulebook, EC 1333/2008. Not glamorous. But "ask me for the paperwork" is a sentence you can only say when the paperwork exists. Dana: Alright. Honest segment. Who should skip all of this? Margaux: Two skips today. If nobody's going to eat your project — a display cake, tree ornaments, a photo prop — skip edible glitter completely. Craft glitter is cheaper and photographs the same; just keep it off the food. And if what you're after is a certificate saying a government approved your glitter, save yourself the hunt. That paper doesn't exist for any brand, and anyone offering it is handing you a prop. Dana: Scorecard. I came in rattled — you opened the show by telling me my cake sparkle was never approved by anybody. Where I've landed: it was never going to be, because the FDA doesn't approve products at all — it lists pigments and registers facilities, and that no covers every brand equally. The real tell was never a stamp on the front. It's the ingredient list on the back. A cap like 1.25% is the rulebook working, not the rulebook worried. And my keeper: "for decoration only" means not food — no matter how sparkly the shelf looks. Margaux: That's the whole episode in 4 lines. If you're stocking a baking shelf for the year, the MONÉGASQUE 12 color gift set is on Amazon — 12 luster dust shades, sifter caps built in. Dana: Next time on the show — the question my group chat keeps sending me. Where can you buy edible glitter that's actually edible? Because apparently the answer is not "wherever they sell glitter." Margaux: The shopping map episode. Bring your skepticism. Quick note before we go — this show is produced by the team at Monégasque, with AI-crafted hosts, and every number you heard was checked by humans against the documents. See you at the table.
