- 0:00Speaker 1: Wondering what wine is to get for Thanksgiving and friends
- 0:02Giving this year? Well, Camus conundrum have you covered? Camous
- 0:05conundrum has been complimenting dinner table since the eighties and
- 0:08is available today to compliment yours. Get some today, felt
- 0:15the drain, feel all right?
- 0:18Speaker 2: Field talent under the weather, feel all right?
- 0:23Speaker 3: Well? Here he is the benevolent and somewhat fascistic. What
- 0:29fascistic despot of the Wine Academy of.
- 0:34Speaker 2: Utah doesn't describe him very well.
- 0:36Speaker 3: He's benevolent. He's the benevolent despot of the Wine Academy
- 0:41of Utah.
- 0:41Speaker 4: You've got popcorn all over the place over here.
- 0:45Speaker 3: Piece right there, one piece of popcorn on the floor.
- 0:49See there he goes. There he is, there, he goes
- 0:52being a despot. Right Uh. He he runs the Wine
- 0:55Academy of Utah, Wine Academy of Utah dot com. Jimmy
- 0:59Santangelo is here and he's given us wine.
- 1:02Speaker 4: Yes, we have conundrum. Famed Wagner family. This is Camus conundrum.
- 1:08Both the white and the red they're blends. These wines
- 1:11are a go to period. They are such a fun
- 1:15wine selection to choose and bring over to friends houses.
- 1:20Great for Thanksgiving. Why because this white, this blended white.
- 1:23It's Chardonay, Sevion, blanc, semon Vignier blend. They blend different variations,
- 1:29and you had different varietals year to year.
- 1:32Speaker 5: I knew it was a blend, but I didn't realize
- 1:33it was that involved.
- 1:35Speaker 2: Yeah, it's and they're only getting better. These guys. They
- 1:38I like this white. So this is the deal.
- 1:43Speaker 4: It was years ago a couple of winemakers came together
- 1:46at the table with Chuck Wagner of Camus Cabernet Sevion fame,
- 1:51and they would blend unique great varieties that was basically leftovers,
- 1:57blend them together, saying hey.
- 1:58Speaker 2: How would this do well.
- 2:00Speaker 4: It became a tradition, and then it became so fun
- 2:03that they would bottle it. And then they were like,
- 2:06you know, this is so good, we should probably sell it,
- 2:09and they have and they do like mad scientist stuff.
- 2:13So yeah, it's really fun. This is going to go
- 2:16great with the bird. You know, you have your you know,
- 2:20the breast meat, the stuffing the great that's a lot
- 2:23of saltiness, but you don't need anything too big, rich
- 2:26and red.
- 2:27Speaker 2: So this white goes really well.
- 2:30Speaker 3: Do you just smack my lips.
- 2:32Speaker 5: It's delicious.
- 2:33Speaker 3: Yeah, what tell me?
- 2:36Speaker 2: How do they fifteen bucks?
- 2:38Speaker 3: By the way, do they keep it the same? You
- 2:41know you're doing these blends, how do you keep it
- 2:44consistent or does it change taste.
- 2:47Speaker 4: From That's a great question, and it's all in the
- 2:52name here. It's a conundrum of what's in there. So
- 2:55they're very playful with that. But if you were another
- 2:58wine maker, what you doing As you're sourcing from a
- 3:01b and you're making a blend, whether it's or red
- 3:04or white, you source from further from where you're at,
- 3:07so you're not relying on the exact weather pattern in
- 3:10your neighborhood. So you're able to be like, yeah, man,
- 3:14this year was great for cabs have in my backyard,
- 3:17but the last year it was terrible. Is a real
- 3:20wet year. But the Murlau I get up north was fantastic.
- 3:24So that blend of Merlau might be more from the previous.
- 3:28Speaker 3: You will notice a little different in taste, you can.
- 3:31Speaker 2: And they all have their style, their signature style that
- 3:35they want to do.
- 3:36Speaker 4: They being wine makers, there's a signature style there. But
- 3:41we don't see vintage variation as much as the Europeans
- 3:46do because we source from a broader area and we
- 3:48have the benefit in many of our wine regions or
- 3:52Ava's warmth heat, and we're not afraid to use oak
- 3:57new oak. Well, we'll spend that cast ust to help
- 4:02stabilize and help be consistent, because you know, you can
- 4:06open up.
- 4:06Speaker 2: When I think we featured, maybe we haven't.
- 4:08Speaker 4: The KMUS Caberny Sevon, the parent of this Conundrum, their
- 4:12fiftieth anniversary of cabsav came out and it's the twenty
- 4:18twenty two vintage.
- 4:19Speaker 2: It's ready to go right out of the bottle.
- 4:22Speaker 4: I mean it'll improve with age. And this is an
- 4:24eighty dollars bottle, seventy five dollars bottle. And typically if
- 4:28you buy that kind of cost of a wine from Europe,
- 4:31a Bordaux or something, you need to sit on it
- 4:33for three, five, ten.
- 4:34Speaker 2: Years for it to really open up and develop.
- 4:37Speaker 3: So when you say so, it might change a little
- 4:41bit different in taste, but the signature remains the same.
- 4:44Does that mean, for instance, this Conundrum white has a
- 4:49kind of a slight acidity to it, a kind of
- 4:52secrecy kind of that's is that the signature?
- 4:55Speaker 2: So what we have here is no oak aging.
- 4:58Speaker 4: You've got the Bay foundation, you have your shard Nay,
- 5:03then you have the acidity to come through of your
- 5:05sevum blanc. You have the florality of the semion, and
- 5:10then the orchard fruit, peaches and cream of your vieuner.
- 5:14So this wine, to the Wagner family is like a
- 5:18blank slate to an artist. They're really coloring in their own.
- 5:25Speaker 3: Well, we're back. Jimmy Santangelo, the benevolent Despot of the
- 5:30Wine Academy of Utah, Wine Academy of Utah dot com.
- 5:34He's the he's a one man show there. He doesn't
- 5:36know people.
- 5:39Speaker 2: Peeps. Yeah, yeah, but but you're right.
- 5:43Speaker 4: It's uh, it's a lot of fun, you know, being
- 5:45a small business guy here in our community doing something
- 5:48so fun with engaging.
- 5:49Speaker 2: I'm in front of.
- 5:51Speaker 4: Like you guys, you're in front of millions of people
- 5:53every morning.
- 5:54Speaker 2: I'm in front of hundreds of people. But like I
- 5:55got to see him.
- 5:58Speaker 5: That's a nice space shift there.
- 5:59Speaker 4: Yeah, it's a nice space. And all our events that
- 6:03we do. Just last night we're at the Leonardo Museum
- 6:06did Thanksgiving wine tasting where Tracy Aviary just did something
- 6:11at the ruin Bar.
- 6:12Speaker 2: That was a lot of fun.
- 6:13Speaker 4: So you can find us at all our events at
- 6:15the windyicem Utah dot com.
- 6:17Speaker 2: But this conundrum red Blend.
- 6:19Speaker 3: We're going to talk about that now.
- 6:21Speaker 4: Yeah, you're spilled, so z infidel Pat Cab sab. This
- 6:33is providing a nice, complex, light hearted, dynamic red. This
- 6:39is a go to wine if you're going to somebody's house,
- 6:42like an what are they making for dinner?
- 6:44Speaker 2: Again?
- 6:44Speaker 4: You know, if you're it's gonna cover it. And uh,
- 6:48this is also good with the bird because you know
- 6:51when I eat especially Thanksgiving or I go out to
- 6:54dinner and there's all these beautiful components on the plate,
- 6:57I like making like.
- 6:58Speaker 2: The perfect bite right, perfect fight, you know.
- 7:01Speaker 4: And if you have a little bit of cranberry, you
- 7:03got the turkey, the gravy, a little stuffing, a touch
- 7:07of mashed potatoes. Man, you top that with the cranberry.
- 7:10Like I said, boom, this wine's gonna come fright.
- 7:12Speaker 5: Here's the thing, Jimmy, every time I think to myself,
- 7:14I'm not a red wine drink. You bring in a
- 7:18red wine.
- 7:18Speaker 1: You just have to have the right one.
- 7:20Speaker 3: And they're fabulous, and you know this one is interesting
- 7:24to me because it has a little bit of that
- 7:27panic to it, but it also has a sweetness to it,
- 7:33which I really like.
- 7:35Speaker 2: Yeah, they do what I'm looking.
- 7:37Speaker 4: Here is the alcohol. Yeah, that's gonna do it. It's
- 7:40keep away from open foot No. Fourteen point six percent
- 7:43alcohol by bomb.
- 7:44Speaker 2: So uh.
- 7:45Speaker 4: Wines typically are thirteen to five. As they go up
- 7:48a little higher in alcohol, that richness really comes out.
- 7:52The ripeness of the fruit is emphasized. And that's good. Yeah,
- 7:56because it's playful, especially with food, but also.
- 8:00Speaker 2: Good on its own, and it balances the white out. Uh.
- 8:04Speaker 5: Here's the first question, and and this is I'm glad
- 8:08that they asked this. It seems like a stupid question,
- 8:10but I'm.
- 8:10Speaker 2: Glad that Oh sure, Yeah.
- 8:12Speaker 5: Can I buy simple syrup somewhere? Or do I need
- 8:15to make it?
- 8:16Speaker 2: Oh? It is a good question. Can It's super simple
- 8:20to make it?
- 8:20Speaker 4: However you buy it, it's a syrup. Sorry, Harmon's. Harmon's
- 8:30has at and many grocers may. But I'm just visualizing
- 8:34because my office is in right downtown, the Harmons Downtown
- 8:37there has a beautiful they kind of really developed. So yes,
- 8:43you can, you can buy simple syrup.
- 8:45Speaker 3: But but it's easy to make the.
- 8:47Speaker 4: One to one ratio. Take a handful of sugar, handful
- 8:51of water, combine it together and heat it up, melt
- 8:54it down.
- 8:54Speaker 2: You're good to go.
- 8:55Speaker 3: So you can make your own.
- 8:57Speaker 5: Let's see, here's another text question. Hi, Jimmy, I don't
- 9:00drink wine, but I've been invited to a dinner party
- 9:03where they're having try Tip steak, and I need to
- 9:05know what would be the best model to take.
- 9:08Speaker 4: You know, I would take this this conundrum, and this
- 9:10is why the with try Tip it's not as so
- 9:15when you pair wine with red meat, you think about
- 9:18the marble, leaness of it, how fatty that steak's going
- 9:21to be.
- 9:22Speaker 2: Is it a prime rib I'm a bone, really meaty
- 9:25and fatty and highly.
- 9:26Speaker 4: Marked, or is it more of a sirloin the try
- 9:29Tip kind of is in there?
- 9:30Speaker 2: Or is it a filet mignon.
- 9:32Speaker 4: Now they're all meat, they're all red beef, but there's
- 9:35different wines to go with each because the leanness of it.
- 9:39So Try Tip. Actually, honestly, this happens to be a
- 9:43great wine that we would pair with that.
- 9:46Speaker 2: Yeah, and it's this is so Both these.
- 9:50Speaker 4: Wines are on sale this month. The Whites fifteen bucks
- 9:53and this is nineteen bucks.
- 9:55Speaker 1: Such a great pick, delicious wine.
- 9:58Speaker 2: I would buy, don't buy one by Yeah for sure.
- 10:02Speaker 5: Let's see. I'd like to try wine that doesn't make
- 10:06me want to immediately spit it out. I'm a recovering
- 10:09Mormon and I know nothing about wine except the one
- 10:12red that I had tasted. It tasted like dried clothes,
- 10:15something a little too too much.
- 10:17Speaker 4: Yeah, so we I love when people are, hey, I'm
- 10:20not a wine drink or I'm new to wine, that
- 10:22kind of thing that Mascottadasti's always a fun one to
- 10:25make a recommendation with. And then you also have if
- 10:29you want to do Reds, going to the Pina Noir
- 10:32or just yesterday we celebrated Bourgelat Nouveaux. It's a it's
- 10:38a wine that comes out the third Thursday in November
- 10:42and it just was released, not just in Utah but internationally,
- 10:46like on the planet. It arrives in everyone's retail stores
- 10:50the third Thursday, and it's.
- 10:52Speaker 2: Fruit from just this past harvest. So these grapes were plucked.
- 10:57Speaker 4: Like September October and they're in your glass at your
- 11:01dinner table today.
- 11:02Speaker 5: Very very they just they just put it out on
- 11:04the floor at the liquor store.
- 11:05Speaker 3: Yeah, so you have to got a call yesterday. You
- 11:07have to you have to suck it up off the floor. Hi, Demitro,
- 11:14what's your question for Jimmy?
- 11:16Speaker 6: Hi? My ex is coming over from Thanksgiving and he
- 11:21wants to have an old bottle of wine. A Chateau
- 11:26letter on a Sauterness from nineteen ninety seven.
- 11:32Speaker 2: Yes, saw turn yep. Is it a white small bottle.
- 11:37Speaker 6: It's a small bottle and it's reddish.
- 11:41Speaker 2: Oh okay, yeah expensive.
- 11:46Speaker 1: Yeah.
- 11:47Speaker 5: I think he's got a lot of nerve making an
- 11:49order like that.
- 11:51Speaker 3: Frankly, Yeah, why don't you tell him to bring his own?
- 11:56Y d yo b buddy.
- 11:57Speaker 2: It's a tough crowd over here. Yeah.
- 12:00Speaker 6: Fifteen years ago I bought a wine collection in an
- 12:03auction for my private school and it was in that
- 12:07collection and it's the last of it, and I don't
- 12:12I think it's too sweet. You brought it over last year.
- 12:14I wanted to have.
- 12:15Speaker 2: It, and yeah, it'll be a sweet wine.
- 12:18Speaker 4: It's a sut turn it's from southern Bordeaux, and uh,
- 12:23the give it a slight chill. Don't get it too
- 12:27you know, uh, yeah, yeah, I get it cold for you.
- 12:30Careful extracting the cork. But if the cork breaks or
- 12:34if it's brittle, that's okay. If the cork drops into
- 12:40the wine, that's okay. Just put a straw down there
- 12:42to prevent the cork from blocking the pouring and just
- 12:46pour it all out into a separate decanter, or just
- 12:49use that to pour into the glass.
- 12:51Speaker 2: Strain it may, but it'll be a sweet wine.
- 12:55Speaker 4: And for Thanksgiving at your apple pie or you know,
- 12:58your pumpkin pie.
- 12:59Speaker 2: It's oh, that sounds great.
- 13:03Speaker 3: What time you deserved, right?
- 13:08Speaker 5: You know our rule? Is it a good wine?
- 13:10Speaker 3: Yeah, it's good enough, good enough.
- 13:15Speaker 6: Yes, I wanted to come in. A friend of mine
- 13:18knows Jimmy. His name is dary Lidkey, and he's the
- 13:22chef now at a place called bar Avin in solid Yeah.
- 13:28Speaker 2: Yeah, absolutely, yeah. He used to be the chef over
- 13:32a ten Angel. Love that guy.
- 13:33Speaker 3: Okay, thanks to.
- 13:37Speaker 5: Quickly, Danielle.
- 13:39Speaker 6: Go ahead, Hi, I'm in California and we had a
- 13:43winery here that unfortunately closed after COVID. They used to
- 13:46do a sparkling zin. Really sounds insane. It was like
- 13:51one of the greatest things I've ever had, and I've never.
- 13:53Speaker 5: Been able to find anything.
- 13:54Speaker 3: Close to it.
- 13:56Speaker 6: I don't know if you could direct me somewhere.
- 13:58Speaker 4: These a sparkling chiraz out of Australia that might reflect
- 14:02similar flavor characteristics.
- 14:05Speaker 2: Was it a red bubbly or was it a.
- 14:08Speaker 4: Yea yeah, yeah, I was right, So this sparkling chiraze
- 14:11would do the trick. They had had it at the
- 14:14wine store. I don't recall seeing it as of recently,
- 14:18but just because I wasn't looking for it.
- 14:20Speaker 2: So I'm not sure if we still.
- 14:21Speaker 3: In California, and are you in California? No?
- 14:25Speaker 2: Yeah, yeah, oh yeah.
- 14:27Speaker 4: So there is an off dry one from Clito Chiari.
- 14:34It's a Grosboro so it's a Lambrusco. So look for
- 14:38Lambruscos out of Italy. Similar characteristic but they are slightly
- 14:42off dry. Nice, good luck, Thank you.
- 14:46Speaker 3: Thanks Danielle.
- 14:48Speaker 5: All Right, so, Jimmy, you've got a couple of things
- 14:50happening with Ken Sanders.
- 14:51Speaker 4: It looks like Ken Sanders. Yeah, we're doing something called
- 14:54literary libations. We're interviewing Ken Sanders. We're having a pairing
- 14:58beverage with this interview. It's going to be live recorded,
- 15:02and then for future broadcasts. It's gonna be a lot
- 15:05of fun at Leonardo Museum. You can go to windekenem
- 15:07Utah dot com for more information. It's going to be
- 15:10on Saturday, November thirtieth, so Thanksgiving weekend.
- 15:13Speaker 3: I'll put that on my calendar. Put that's an old
- 15:18friend of mine.
- 15:19Speaker 5: There you go, Thank you, Jimmy, everybody Wine. Academy of
- 15:24Utah dot com.
