- 0:22will permanently close its doors on Sunday after a fifty year run.
- 0:26Co owner Sabra Stepak confirmed to SF Gate that the bakery's last
- 0:30day of service is Sunday. Stepak spoke candidly about the difficulties of
- 0:34running a bakery in a highly competitive market like Berkeley, where it
- 0:38often feels like three bakeries are opening every month and employee turnover
- 0:42is high. The increase in the cost of ingredients and utilities has
- 0:46added to the longtime challenges plaguing this beloved bakery on Russell Street
- 0:51in Elmwood. It's something that's going on with all small businesses, Stephack
- 0:56said. Chocolate has increased three times. My P G and E has
- 0:59gone up like seventy per cent. Oaklandside was first to report news,
- 1:03and ever since the Bakery has been slammed, Stepak said. On Friday
- 1:07Nabilum had a line from eight to eleven AM and ran out
- 1:10of pastries. We've probably had our most viable days in ten years,
- 1:14probably three times more than we usually sell, she said. Nabalim Bakery
- 1:19and Pizzeria opened in nineteen seventy six as a collective owned by
- 1:22Adele Cole, Nora Chamberlain, Susan Talpers, and Lynn McMasters, according to the
- 1:27San Francisco Chronicle Nabalim Bakery quickly grew in popularity as locals lined
- 1:33up for its assortment of multigrain breads, cakes, and muffins. In nineteen
- 1:36seventy eight, the San Francisco Chronicle highlighted the bakery's cheese bread. The
- 1:41business began with the our co owners, and later added three more
- 1:45collective members, by nineteen seventy eight, the Chronicle reported. I feel being
- 1:51a partner here is the greatest accomplishment of my life, Cole told
- 1:54the Chronicle in nineteen seventy eight. Getting a new business going and
- 1:58on its feet is amazing when you consider all of us and
- 2:01our backgrounds. We've been appreciated from the beginning. I like the atmosphere
- 2:06here, it's warm and friendly, kind of a neighborhood center. Over the
- 2:10years, the bakery faced bouts of financial difficulties that threatened closure. Nabalam
- 2:15anticipated closing in 2004 after accumulating 30,000 in debt from rising workers
- 2:21compensation fees to bad business decisions, the Chronicle reported. Amid the uncertainty,
- 2:28six customers supported the business with five hundred dollars certificates for baked
- 2:32goods, while Nabalum Bakery planned to offer gourmet pizza and host live
- 2:37music performances to stay afloat, the Chronicle reported. Nabalam survived, but eventually
- 2:42closed in july twenty fifteen, following the departure of four collective members
- 2:47who left within three months. Berkeleyside reported that their exit had made
- 2:51it challenging for the remaining collective members to keep the doors open.
- 2:55Six months later in twenty sixteen, Julia Elliott and Sabra Stepak purchased
- 3:00the business and became the sole owners. Elliot, who had previously worked
- 3:04at Nabalum and spent twelve years working at the Cheeseboard Collective, introduced
- 3:09an assortment of gourmet pizzas that became staples to the historic bakery's
- 3:14menu. Stepak said that she and her co owner are open to
- 3:17selling the nostalgic bakery they've have known since middle school. Her immediate
- 3:22plans are to look for a job and take a three month
- 3:24long nap. We've agonized over it, and we just can't do it
- 3:28any more, she said. We're exhausted.
