- 0:31Hi, Shaypalaz.
- 0:33Welcome back to ColorTotty.
- 0:35Today, I have an amazing guest.
- 0:37She's a chef.
- 0:39She owns and just opened her newest restaurant.
- 0:43And I'll let her talk about all of those great things.
- 0:46Olivia Austria, welcome to ColorTotty.
- 0:49Thank you for having me on your father's sofa.
- 0:52My pleasure.
- 0:53Cosino.
- 0:54I love it.
- 0:54This is like a new touch with the blankets.
- 0:57I'm on about the blanket and the rest.
- 0:59This is vacation for me right now.
- 1:01It is.
- 1:02I'm loving it.
- 1:03Well, I want to talk to you about so many things.
- 1:07And the one thing I need to talk to you about
- 1:10is your new restaurant, because Zoli and I have experienced it.
- 1:15And we love it.
- 1:16We love the last location.
- 1:17We love the new location.
- 1:20And I want you to just kind of tell us when did you open?
- 1:25When did you open it?
- 1:26Nine days ago.
- 1:27Ninety.
- 1:27Yeah, nine days ago.
- 1:29And how had that?
- 1:29That's why I'm enjoying the laying on the sofa so much.
- 1:32I feel like I haven't even been off my feet for like a while.
- 1:36How has the opening been?
- 1:38It's been amazing.
- 1:39Like, really amazing.
- 1:41I feel very blessed.
- 1:44We, you know, like I'm kind of like I don't want to jinx it.
- 1:47So, you know, like it's been really good.
- 1:50It's been really, really good.
- 1:51Like, because I'm like so superstitious, you know,
- 1:57I don't want to rock the car or the feedback
- 2:01has been better than I expected.
- 2:05And, you know, I opened a few restaurants in my life.
- 2:08I mean, I'm a restauranter.
- 2:09It's not my first row day or another second, another third.
- 2:12Nor will it be the last.
- 2:15And this is, I'm going to say probably the most successful
- 2:21in its own way, opening other restaurants,
- 2:25especially on the six weeks of time
- 2:29that I've ever experienced or being part of or done.
- 2:36I think, you know, in the restaurant industry,
- 2:39especially at the beginning or when you open such,
- 2:42you know, a venture, there's different level of success.
- 2:47Success in the restaurant business can be, you know,
- 2:49a measure of the three years that you've been open.
- 2:52Kind of success that I'm talking about is when you feel
- 2:56the vibration of your patrons and your guests are connected
- 3:01with your front of the house staff connected
- 3:03with your kitchen.
- 3:05And there's just this, this happiness floating
- 3:09that is not only there for day one,
- 3:12but last on the second day of service,
- 3:15then the third day and that every person that works in there,
- 3:19you know, feel like and share with you, you know,
- 3:22that they just felt something special.
- 3:24And that's how, for me, at least, I feel successful.
- 3:29Well, tell the viewers what kind of restaurant is this?
- 3:33A good one.
- 3:35What kind of food is this?
- 3:36So, you know, like, I've been called a kosher queen.
- 3:40So it's a kosher restaurant.
- 3:43Glad kosher, not kosher style, kosher restaurants.
- 3:45So actually, certified.
- 3:48Mashquia, Rabbi on the phone, Rabbi, can I know you can't kind of,
- 3:53you know, like, but what if, no, you can't, okay.
- 3:57That kind of restaurant.
- 3:58Also the kind of restaurant or, you know,
- 4:00where you close on Friday and Saturday,
- 4:04and which is, you know, like, can be a,
- 4:08can be traumatic in the hospitality industry,
- 4:11where, you know, most of the nights where people
- 4:13like to go out is Friday, Saturday.
- 4:14So that kind of kosher, right.
- 4:18So it is a French, as per my accent, you know,
- 4:22I'm from Paris.
- 4:23My team in the kitchen is solely from Paris.
- 4:27And we are French and the restaurant we gave it,
- 4:31this time, a Mediterranean twist,
- 4:35which allows me to explore flavor of the sauce of France,
- 4:41bring, you know, like the tapas five at the bar,
- 4:45bring the pesto flavor, the pine nuts,
- 4:49play with our breads, and bring the olives
- 4:53and the preserve lemon while the austro brasserie
- 4:58that presides, you know, like a maison austro,
- 5:01which I just opened was more of a Parisian, you know,
- 5:07Parisian slash bistro restaurant.
- 5:10So this time, it's more of a voyage, you know,
- 5:14through the Mediterranean border via Paris,
- 5:19via Normandie, via, you know, the south-east part of France.
- 5:25I noticed that your menu is slightly different
- 5:29from your last restaurant.
- 5:31Yes.
- 5:32But you did keep a few things that I love.
- 5:34The reason it's different is because these restaurants
- 5:37actually really make my signature.
- 5:41It's me total freedom.
- 5:44Maybe with with austro brasserie,
- 5:47I did not have the conceptual freedom I should have had.
- 5:51And this one is really chef or chef Olivier Austro
- 5:57that, you know, I mean, I own in my life,
- 6:00maybe five restaurants, I ran operation, you know,
- 6:04not only from the kitchen, but from the front of the house.
- 6:07I was general manager at Soho House for Chaconis.
- 6:11I was the food and beverage director for the Savoie Hotel.
- 6:14I managed, you know, Luzou in Wilhelber.
- 6:18Like, I've done a lot of things, you know, like,
- 6:21from the operation point of view.
- 6:26And I'm really hands on.
- 6:28I also have a degree in marketing, I have a business degree.
- 6:33I start working in kitchen in my father's restaurant
- 6:37when I was in college, washing dishes.
- 6:40I've been a chef for a long time.
- 6:43I was on the food network.
- 6:45I, you know, want several awards in the past two decades.
- 6:50A lot of things have happened in my life and in my career
- 6:54that have led me to this point to take full control
- 6:58and being giving the ability to, you know,
- 7:01speak up through my food and through my choices of food
- 7:05and my menu design.
- 7:07That's why it's different.
- 7:08And that's why I think it's really on point.
- 7:10Because this time around, no one is getting in my way.
- 7:14Yeah, I definitely feel like your new restaurant
- 7:18is much more your personality.
- 7:21Yeah.
- 7:22And it's very rare to see someone who's the chef,
- 7:27the owner, working in all of the areas of the restaurant
- 7:31and really being hands on.
- 7:33That is something that's very hard to come across.
- 7:37So a therapist would probably educate me
- 7:41and say I'm a control freak and I should back off.
- 7:45I don't, I hate micromanaging.
- 7:49The reason I'm so hands on, it's because this time,
- 7:52this is time for, you know, like the restaurant
- 7:54is called Mesoostro.
- 7:56But you are facing and looking at Oostro Global.
- 8:01Oostro Global is a company, a corporation
- 8:05that is developing all the location as we speak
- 8:10or the concept we're going to tackle catering,
- 8:13we're going to tackle different cities
- 8:15from New York looking at Paris location,
- 8:18looking at developing a lot more than just, you know,
- 8:21that one restaurant.
- 8:22I'm, you know, like in bed with people
- 8:26that are extremely intelligent, extremely successful
- 8:31in a developing kind of way.
- 8:34And this venture is very different for me.
- 8:37The way I tackle it is I am really making myself
- 8:42available to coach my team.
- 8:45I have a full force team of managers and maturity
- 8:49and executive chef that I'm coaching and leading to success
- 8:54for me to replicate that to the next location
- 8:58and to the next location and so will they.
- 9:01So my executive chef will become, you know,
- 9:04a corporate chef and everything will fall into play,
- 9:08you know, to the dot and perfectly.
- 9:10So right now, you know, I am not micromanaging.
- 9:14I'm just hands on because I want everyone
- 9:17to have the tool to succeed.
- 9:19I want to take someone with me and be like,
- 9:24I'm going to teach you everything I know.
- 9:27It's up to you if you're going to receive it and take it
- 9:30and make it your own.
- 9:31But I'm not going to micromanage everybody.
- 9:35But, you know, everything I'm always going to do
- 9:37is my, my child, like everything.
- 9:41My shoes are my children.
- 9:43My bags are my children, you know,
- 9:45when I'm talking about my dogs.
- 9:47My children, my children are my children.
- 9:49And my restaurant and my business are my children.
- 9:51Like, it's my responsibility to make it shine.
- 9:55And whether I'm not going to be there that night,
- 9:58or I'm going to be, you know, like I'm going to be there,
- 10:00or I'm not, or I'm going to be in Dubai or in Paris
- 10:03and London or wherever we're going to go next,
- 10:06I want everyone to shine on their own.
- 10:11And for me to be the mob that's far away,
- 10:14but proud of the children at home.
- 10:17That's why I'm, so I'm hands on.
- 10:20So how do you have quality control
- 10:23if you're going to expand in different areas,
- 10:25such as catering?
- 10:27And like, that's something which consistency is so key,
- 10:31especially in the restaurant business.
- 10:33Even if you go to a restaurant and there's a chain,
- 10:36they could have different levels of quality.
- 10:38So how does that have to work?
- 10:39So that comes with two things that are very simple
- 10:43and that are actually going back to what I just said
- 10:46and the first thing.
- 10:47Number one, stay true to yourself.
- 10:49Don't let anyone, whether it's an investor or this or that,
- 10:52telling you what to do.
- 10:53Stay focused if you know, you know, you know, you know, you know.
- 10:58So I think at 50 years old, I'm almost 51,
- 11:02surrounding myself with people who are also in this industry,
- 11:07we know.
- 11:08We know when it comes to food.
- 11:10And we know how to duplicate and to execute quality
- 11:15on a plate.
- 11:16So that you need to stay true to yourself.
- 11:19Don't sell out.
- 11:20Don't let anyone come in your way and dictate
- 11:26what you shouldn't, shouldn't do.
- 11:28Stay true to yourself.
- 11:29So that's number one.
- 11:30And surround yourself with the right people.
- 11:36Surround yourself with the right people
- 11:38who are going to be, you know, cheering
- 11:41from the sideline for you.
- 11:44Surround yourself with the right people
- 11:46that are going to be amazing chef.
- 11:49So you can focus on marketing or you can, you know,
- 11:52work together and you can create something magical together.
- 11:56And, you know, like, get each other's feedback
- 12:00and, you know, make food babies.
- 12:04That's how you duplicate greatness.
- 12:07And that's how you stay on point.
- 12:10Don't go too fast, make it happen,
- 12:13and just keep on creating.
- 12:14I am very lucky.
- 12:16The people that are with me at Maison Hostel
- 12:19have been with me for years.
- 12:21Oh, that's, that's special.
- 12:23Because sometimes restaurants have high turnover rates.
- 12:26And a lot of people don't also get like the right training.
- 12:29But like, I don't think a family.
- 12:32What it is because, but it's something in restaurant,
- 12:34I want to say this, you know, like, I mean,
- 12:36everybody's on Instagram, everybody's on LinkedIn,
- 12:39everybody read the quotes and everything.
- 12:42Look, we all know, like being a bad boss
- 12:44is the worst, like, you know, good leader, you know,
- 12:47you can, you know, to be a good leader
- 12:49is to look at yourself in the mirror
- 12:51and see the face of others that work for you,
- 12:53smiling at you and cheering again from the sideline.
- 12:58I think I'm a good leader.
- 13:03I think I really want people to succeed on their own.
- 13:08And again, I dislike, I dislike micromanaging people.
- 13:14And which here, we will therefore each other.
- 13:17And yeah, there've been with me from the beginning,
- 13:20which, yes, there's a lot.
- 13:22I mean, this is going to be a little bit
- 13:23of a controversial question.
- 13:25But you obviously own a kosher restaurant,
- 13:28but you also have experience in the non-cosher industry.
- 13:32How different is it running a kosher restaurant
- 13:36versus a non-cosher restaurant?
- 13:38I mean, it's very, well, the running the operation
- 13:41in the business, a little bit different
- 13:44because of the cost, the food cost is different,
- 13:48then you have to have a rabbi on site.
- 13:51So like from the technicality of it,
- 13:53you know, your labor cost is completely different.
- 13:56And you need to also, you know, have the certification
- 14:00so your labor cost and your flat monthly charge,
- 14:06just that is different because you need to take
- 14:09all that in accountability.
- 14:11Then also what I was saying, you're not open Friday
- 14:14and Saturday, which is most of the time
- 14:17where people like to go out and where you make the most money.
- 14:21Then you have all the high holidays where you close.
- 14:24So you work less, it's more expensive
- 14:27and you make less money.
- 14:28That's the big difference.
- 14:29Now, from a chef point of view, you know,
- 14:32I made Alia, I'm Jewish.
- 14:35My grandfather was a rabbi.
- 14:37I grew up religious, I, you know,
- 14:40me personally, you know, I eat kosher meat.
- 14:45I try to drink kosher wine.
- 14:47I try to go to temple, I mean,
- 14:49I go to temple on high holidays.
- 14:51I try to go to temple on Shabbat, here and there.
- 14:55Hello, Habbat with wood.
- 14:59But my, you know, my grandfather was a cantor,
- 15:02my grandfather was a rabbi.
- 15:04Like I grew up like that.
- 15:06So I know what's kosher.
- 15:07I used to eat kosher when I lived in Israel.
- 15:09It was so easy, you had to be like a moron
- 15:12not to take advantage of.
- 15:14You can go to Burger King and eat kosher, so why not?
- 15:17So I did the whole, the two things that is that.
- 15:19And my grandparents were very religious.
- 15:22Then I went away when I really, you know,
- 15:25started opening my restaurant, you know, prior to COVID.
- 15:29I went away from kosher.
- 15:32It's very different, but it's the same.
- 15:34If you love food and your chef and your good boss
- 15:37and your good leader, it's the same passion.
- 15:40It's just small work and less money.
- 15:42Like that's all it is.
- 15:43Like that's literally all it is.
- 15:45But at the end, it's a meatball, I think, to do that.
- 15:49And I do think that, especially in the last two months
- 15:53I've counted my blessings, because I did open
- 15:58mesonostro in like almost less than two months.
- 16:01And I've counted my blessing.
- 16:03And I think if I wasn't doing kosher, maybe, you know,
- 16:07I don't want to become all like a spiritual,
- 16:09but maybe God wouldn't have blessed me the way he did.
- 16:13So I think I'm exactly where I'm supposed to be.
- 16:19Now, I'm pretty sure a lot of people have this question.
- 16:25And I think I might debunk a myth here,
- 16:29but is non-cosher food, especially a great steak, or something?
- 16:34Is it necessarily better, or does it taste better,
- 16:37or does it really just boil down to the right chef,
- 16:40the right ingredients?
- 16:41I don't know why, but I think just growing up,
- 16:44we just assumed like non-cosher things just taste better.
- 16:48I don't know why.
- 16:49Have you ever had non-cosher food?
- 16:52To find out kosher.
- 16:53OK, well, I mean, like, no, I mean like, like,
- 16:56like, try for us, like, has the try for us never.
- 16:59Have you ever had a...
- 17:00I mean, you know what?
- 17:01But you know what?
- 17:02We have had issues in the kosher industry
- 17:05where you've had caterers serve not kosher food,
- 17:09and they were caught.
- 17:10So like, for all I know, I probably could have had it,
- 17:12but I don't know.
- 17:13Have you ever had to have shrimp or nori stew?
- 17:15No, no.
- 17:16And trust me, I have friends who have tried
- 17:19to convince me to try, and I'm like,
- 17:21I don't even know how to eat it.
- 17:23I wouldn't even know what to do.
- 17:25Like, like, a lobster.
- 17:26I wouldn't even know what to do with it.
- 17:28So my answer to that, does it taste different?
- 17:32Oh.
- 17:33Like, something that could be kosher, like...
- 17:35No, chicken.
- 17:36Well, it's not chicken.
- 17:38So it comes down to the chef.
- 17:40So really, oh, yeah, yeah.
- 17:42Look, I'm going to tell you a little secret about me.
- 17:45I mean, your food is outstanding.
- 17:48I'm going to tell you a little secret about me.
- 17:50I don't really eat in a lot of kosher restaurants
- 17:55beside mine, because beside a few restaurants
- 18:02that are like amazing, I think it's bad.
- 18:09It's bad.
- 18:10It's chewy, they don't want to cook the meat.
- 18:13They don't know what to do.
- 18:14I could see the lack of just skills and like real experience.
- 18:19Yeah.
- 18:20Yeah.
- 18:21Because what's interesting about like the kosher industry
- 18:24is you go to a pizza shop and then they also have sushi
- 18:27and then they have bagels and it's like,
- 18:28what the hell is going on here?
- 18:30Like, I feel like with non kosher establishments,
- 18:34unless they're like, I don't know, maybe like an olive guard
- 18:36and probably has like, or like cheesecake factory
- 18:39has like a million options on their menus.
- 18:41They have everything.
- 18:42No, because I think cheesecake factory,
- 18:45cheesecake factory, they are not going to serve you sushi
- 18:52and what do they serve?
- 18:53Like, what's their salad and?
- 18:55No, but what is like their cuisine?
- 18:57The French is the taste.
- 18:58I mean, America.
- 18:59It's an American.
- 18:59America is what I mean, American.
- 19:02And I've never been to the olive guard in my life.
- 19:05I mean, let's not forget I grew up in Paris
- 19:07and was taking at a very long age.
- 19:09He's costing Americans.
- 19:12Disgusting American food.
- 19:15By the way, I'm sure it's bomb when it's like,
- 19:18you're just really hungry.
- 19:20And it's relatively cheap I'm assuming.
- 19:22I've never eaten there in my life, so I have no idea.
- 19:25At all of a garden.
- 19:25I've never been.
- 19:27Like, if I'm going to choose a place to go to,
- 19:28it's not going to be all of America.
- 19:30If I have the choice with olive garden
- 19:32and the fish sandwich at McDonald, I'll be a McDonald.
- 19:38Am I getting sued by olive garden, you think?
- 19:41No, it's an opinion.
- 19:43And you're not getting paid.
- 19:44I need to talk to my hotel name right now, didn't we?
- 19:47Didn't you text my husband?
- 19:49We get to cut it out if it's a problem.
- 19:51No, like, no.
- 19:53No, I just find it funny how kosher places, like,
- 19:59I guess because if you already are paying to have a mosque
- 20:02and a rabbi and a hashqah, you might as well
- 20:05just like pack in all of the items on a menu.
- 20:08And also, when you're bringing, like, 10 kids into feed,
- 20:11not everybody wants pizza, some bagels, some sushi.
- 20:15And it's just kind of like, when you...
- 20:17So I'm going to tell you, I have, like, the soul thing
- 20:19that I call the Shabbat boy kosher club.
- 20:23OK.
- 20:24The Shabbat boy kosher club.
- 20:26So first of all, because you haven't asked me,
- 20:28so I'm going to ask myself my own question.
- 20:31Is it hard to be a woman Jewish that Eshkenazi
- 20:35that grew up in a solar-lead Jewish home,
- 20:39very, you know, like, more religious than not?
- 20:43Cover with tattoo, OK.
- 20:45Owning a kosher restaurant.
- 20:48How is that for you?
- 20:49Like, ask me.
- 20:50OK, like, I...
- 20:51Exactly.
- 20:52Exactly.
- 20:54Well, the topic is, the topic is, I'm fighting all the time,
- 21:01the kosher Shabbat boy's club.
- 21:04The kosher Shabbat boy's club is also the people
- 21:11who are kosher Bajinah.
- 21:15And they sit, you know, like, and this one guy at the table
- 21:19is going to be, you know, like, in real estate.
- 21:23And he has this place that's like a restaurant.
- 21:25And then the guy at the end of the table is like,
- 21:28oh, my cousin, my cousin from Mercedes, he's a chef.
- 21:32He should come.
- 21:33And the next thing you know, the guy was living in, you know,
- 21:38like, at the beach and doing, you know,
- 21:40flipping burgers on the, you know, like, on Mote Shabbat
- 21:44is coming, he's a chef, and they're opening a restaurant.
- 21:49And then this one, think he's a restaurant,
- 21:51the other one is a chef.
- 21:52And then the Shabbat boy's kosher club has been formed.
- 21:56And they have grill, and then they're
- 21:58showing grill meat, and then they're serving it.
- 22:02And then they're like, oh, yeah, but like,
- 22:04the restaurant over there, my friend Shlomo, he owns,
- 22:07and he's always packed, he has sushi,
- 22:10and boom, they put sushi on the menu, right.
- 22:12And then, but then, you know, like, the sionatic
- 22:15are coming out that Pokeballs thing.
- 22:18Or also, there's the ice cream shop
- 22:21that seemed to be doing good and boom.
- 22:24And here we go.
- 22:25And everybody's a chef.
- 22:27Everybody's a chef, and then, like, the food fads come along,
- 22:30and then everyone thinks they know what they're doing.
- 22:32And it's the boy club.
- 22:33It's always the boy, it's always the Shabbat boy club.
- 22:35Now, do you find, because you cook authentic French,
- 22:40we cuisine, we don't cook, we cuisine, cuisine.
- 22:44Yeah, I think we don't just choose a steak on a grill.
- 22:48It's cuisine.
- 22:50It's hours of prep, hours of designing sauce and menu,
- 22:54everything from scratch.
- 22:56We make our own bread, our own brioche, our own everything,
- 22:59our own dress, like, everything.
- 23:01There's no Cisco delivery at my restaurants.
- 23:04Like, we make everything.
- 23:05So, yes, our main labor cost sometimes can suffer from that.
- 23:09But it's worth it, because we deliver with cuisine.
- 23:15Do you find that people who eat strictly kosher
- 23:20don't necessarily have a palate for certain things
- 23:24that are authentic, and they're just used to like
- 23:27a certain type of food.
- 23:30I remember with your older restaurant, you made your own ketchup.
- 23:34And I was like, I can't get you to this ketchup.
- 23:37It's good, but I'm not used to it.
- 23:39I know.
- 23:41So, I'm sure there is a lot of love and labor,
- 23:44but I'm sure with other people who just aren't used to
- 23:51find that.
- 23:51OK, but it's OK.
- 23:53So, first of all, I think my audience is actually very
- 23:58educated in food.
- 24:00And maybe when I started in the kosher, kosher a few
- 24:07years ago, it was more of a kind of like love hate moment.
- 24:13But I think people know they're going to get really good
- 24:19food coming to Meso-Austral.
- 24:21I think the very loyal, and I think they're wonderful.
- 24:28And I think a lot of them are developing some know and some
- 24:32are developing their palate with us as the year and the
- 24:37trajectory of the restaurant and the food is growing.
- 24:42And I think it's actually like a wonderful moment.
- 24:47Yesterday, we had that table, and it was so lovely.
- 24:50It was the grandfather, the grandmother, the daughter,
- 24:53and the two granddaughters.
- 24:55And so, they were like eating, and the two granddaughters
- 25:00were probably 16.
- 25:01So, first of all, they asked to take a picture with me, which
- 25:04I'm a huge igomaniac, and I love those moments.
- 25:07So, I take a picture, and then the mom calls me, the grand
- 25:11macron's me, she's like, I just want you to know.
- 25:13We just had your cana halohange, which is a dark haloh
- 25:17orange duck.
- 25:18She's like, my husband loves dark.
- 25:21He will probably tell me to never make dark again at my
- 25:25house after he has your dark.
- 25:27It doesn't even, my dog doesn't even taste like dark, and I
- 25:30just realized that.
- 25:31Those moments are priceless.
- 25:36Those moments are priceless.
- 25:37And I don't think I would necessarily have them if I
- 25:42wasn't bringing something spectacular and new to the plate.
- 25:47So, the downgrade is OK.
- 25:49Like, a lot of people are going to be like, I want regular
- 25:51cake shop.
- 25:52And I'm going to be like, no, get used to that, or maybe
- 25:55I'm going to cave right now.
- 25:57I am regular cake shop.
- 25:57I know.
- 25:58I caved.
- 25:58I had that last week.
- 26:00I totally caved.
- 26:01But I appreciate it.
- 26:02But it was just for you, sweet boy.
- 26:06But I think it's kind of like a part of the magic, you know?
- 26:12Yeah.
- 26:13And sometimes it's looking.
- 26:17Let's not romanticize the restaurant industry.
- 26:23It's hard.
- 26:24It's horrible hours.
- 26:26You tired.
- 26:28A lot of time, your night and your day get
- 26:31tuned by one person who's going to be rude and
- 26:35create size of food.
- 26:37And it's going to screw you on higher day, vibe,
- 26:43module.
- 26:45And they don't respect what you do.
- 26:48They don't care.
- 26:49They hate you.
- 26:50Like, they have like, it's horrible.
- 26:54It's not only me, it's everybody.
- 26:56Yes, the fact that I'm a woman tattooed this.
- 26:58And I'm not part of the Shabbat Boys Club.
- 27:01Makes it sometimes harder because a lot of people
- 27:04they come and they already want to dislike me and what I do.
- 27:08And that they're only horrible.
- 27:10That's why people have like this intention of like coming in
- 27:13and like making you miserable.
- 27:14And a lot of time, it's also woman.
- 27:16Really?
- 27:17Yeah, it's not only men, psych a lot of women.
- 27:20That's terrible.
- 27:21Especially like women, like we should know like trying to
- 27:25break into any industry, especially that's male dominated.
- 27:28It's not an easy task.
- 27:30And that's how it is.
- 27:31Like, I mean, I'm not, you know, and I love you so far.
- 27:34I only speak the truth.
- 27:35That's why you invited me.
- 27:37That's why you invited me.
- 27:38I'm not going to sugarcoat anything.
- 27:41Don't sugarcoat anything.
- 27:41It's hard.
- 27:43It's, it's hard.
- 27:46It's maybe only one person of the chef end up with, you know,
- 27:51my name, the bank.
- 27:53It's difficult.
- 27:54And I just came from my doctor to get beat wherever shots.
- 28:00And some weird shots that I'm carrying in my bag.
- 28:02I'm supposed to do tomorrow morning.
- 28:04I, if I get arrested later, I don't know.
- 28:06But, but don't do that to get arrested.
- 28:14But for the same way that one table and that one person can
- 28:21really show you off, that one woman yesterday or the other
- 28:28night, and I've only been, look, I've only been open in eight
- 28:31days.
- 28:32This woman came.
- 28:34They used to go to the other location, they come.
- 28:37And very rarely just lovely people, lovely people.
- 28:42They see, they're quiet.
- 28:43They eat a lot.
- 28:46The husband is a Fuji.
- 28:47And then at the end, she comes and she comes
- 28:50seeming in the kitchen.
- 28:51And she grabs by me by the hand.
- 28:53She's like, I came here.
- 28:55I was miserable.
- 28:57My son, he's handicapped.
- 28:58He's away.
- 28:59I'm worried.
- 29:00She's like, I feel completely happy.
- 29:04She's like, I feel so relaxed.
- 29:06This is what I do, what I do.
- 29:10So the hate from the boys club, the dislike from this one,
- 29:15also the fact that we're surrounded, you know,
- 29:18like by anti-semitism and everything, the fact that I'm tired,
- 29:22the fact that I'm, you know, I wish I could watch a good TV show
- 29:26that I go home around 8 p.m. at night.
- 29:29How do you know with my husband, watch TV and everything,
- 29:32travel when I want?
- 29:34Yes.
- 29:35But this woman I made happy.
- 29:37So it's priceless.
- 29:39Have you ever had to throw anybody out of your restaurant?
- 29:41Yes.
- 29:42Good rude.
- 29:43What did they do?
- 29:44They were rude.
- 29:45To your staff or to you?
- 29:47Well, first it always starts with my staff.
- 29:50And then usually it's like, I mean,
- 29:53I hate to say about those moments I like, my.
- 29:56Yeah.
- 29:57You like kind of wait for those moments.
- 29:59Not that you want that.
- 30:00No, I don't wait for those moments.
- 30:02But if you cross the line being rude with my staff,
- 30:05chances pick a night where I'm not in the building.
- 30:09Got it.
- 30:10And I've done it in the course of the world
- 30:11and I've done it before too.
- 30:13What I left the line in my other restaurant that I had,
- 30:17because I saw serve being, you know, like coming in the kitchen
- 30:21and I could see that she looked not OK.
- 30:24And I said, what happened?
- 30:25She didn't know what she wouldn't tell me.
- 30:27And then I flew off my line to get to the table
- 30:31and make them leave.
- 30:32I'm very protective.
- 30:35I can't stand people who are like rude.
- 30:39I hear that.
- 30:40Especially when it's your staff, because they're also like,
- 30:43you don't even know, I guess you don't know the dynamic.
- 30:45How would I set people like, don't?
- 30:47Don't go after a bus.
- 30:49Don't go after like a server.
- 30:52Yeah.
- 30:52People like be kind.
- 30:53If you want to call me on the table, it's like, yeah, yes.
- 31:01So I obviously love your blue cheese and end-eye salad.
- 31:04And I order it every time.
- 31:06And that's something you can never take off the menu.
- 31:08I'm very aware that's why it's not off.
- 31:11Because I was like, podcast, end-eye blue cheese,
- 31:15podcast, not kidding.
- 31:16But I feel like that's always how I want to start my meal.
- 31:19And then my husband gets the baguette with the truffle butter
- 31:25and what else do we get?
- 31:28Anyways, we get a lot of stuff.
- 31:30But I keep, I order the same things.
- 31:33I'm not very experimental when it comes to your menu,
- 31:37only because I'm just picky.
- 31:39So you get that in that house.
- 31:40I don't think it's because you're picky.
- 31:42It's because I seek you know exactly what feeds you
- 31:44and makes you happy.
- 31:45So why wouldn't you get it?
- 31:47As long as you have chocolate mousse.
- 31:51Always.
- 31:53And I've always.
- 31:54And a good steak, I'm happy.
- 31:55Always.
- 31:56And I like to make you happy.
- 31:59Yeah, and I was going to bring up that point
- 32:01where I noticed, so you make everything from scratch.
- 32:05And the one thing that really blows my mind
- 32:07is you make your own blue cheese.
- 32:10That's obviously not real blue cheese.
- 32:13And it tastes so real and so good.
- 32:18And I'm pretty sure you're not going to give away
- 32:19your secret.
- 32:20Nope.
- 32:21But I've eaten at a million vegan restaurants
- 32:24and they still couldn't perfect it the way you have.
- 32:28Oh, well.
- 32:30What other fake cheeses do you make besides the fake blue cheese?
- 32:32You do all of it.
- 32:33Feta, Parmesan, feta, blue.
- 32:37And right now we actually working on like something
- 32:41completely different that I cannot really speak about.
- 32:45But I'm also working on a cookbook.
- 32:48And though I am not going to, I'm not
- 32:53going to give up my way of making the cheese
- 32:56and the butter and the stuff.
- 32:58But in the cookbook, you'll have ways.
- 33:02We are working very hard on manufacturing our butter.
- 33:06We open inside the restaurant, Maison Astro IP3,
- 33:11which means, you know, a little store in French.
- 33:15We are about to launch all our good baskets
- 33:18are closing the food.
- 33:20Oh, you're a merge.
- 33:21I got this.
- 33:22Oh, I'm so excited.
- 33:23I mean, I love merge.
- 33:25Why don't you expect me to come out with merch?
- 33:28Yeah, I would.
- 33:29Like, I would.
- 33:30Yeah.
- 33:31So this is like a whole brand.
- 33:33It's not just a restaurant.
- 33:34It's like a lifestyle.
- 33:36Yes.
- 33:37French, yummy.
- 33:38I started, like, you know, I'm importing, like,
- 33:41lean in from the south of France.
- 33:44Like, we have the totes.
- 33:46We have, like, we have so much coming.
- 33:49Like, it's really a lot.
- 33:50And I, like, I love it.
- 33:52I'm going to Paris and Normandy in a couple of weeks
- 33:57to, I have interesting meaning to develop brands.
- 34:02What's cool?
- 34:03OK.
- 34:04I want to play a game with you.
- 34:06Oh, you're very.
- 34:07It's this or that.
- 34:09And I have your many prints at the house here.
- 34:11And I highlighted the things that I would ask you.
- 34:15Would you choose this?
- 34:16Or that?
- 34:19Tuna tartar or wagyu steak tartar?
- 34:23Wagyu steak tartar.
- 34:24Why?
- 34:25Because it's my, I love raw meat.
- 34:27Me too.
- 34:28I wanted to be a butcher when I was a little girl.
- 34:30I could see that.
- 34:31I wanted to be a butcher.
- 34:33Like, I love raw meat.
- 34:35I like my meat.
- 34:36Blue.
- 34:37I like, you know, like, I'll steak tartar, ice-closed,
- 34:42with the steak tartar.
- 34:45How do you serve it in your restaurant?
- 34:47We do it side table.
- 34:50So, you know, we have the wagyu, ground wagyu.
- 34:53And then they mix the shallots, the cornichon.
- 34:57We add a truffle, a little bit of truffle, Ioli.
- 35:00Addijon mustard, they mix it, they serve it
- 35:03with a little bit of chise and our brioche cross-tini.
- 35:07It's so good.
- 35:08It's so good.
- 35:09I've had it.
- 35:09And I want to have it again.
- 35:12So maybe we should have brought it.
- 35:13I feel like, actually, yeah.
- 35:14Maybe we'll go tonight.
- 35:16Maybe you should.
- 35:17And maybe you should.
- 35:18Maybe we should have to frost any.
- 35:19Maybe I'm just hungry.
- 35:21Yeah.
- 35:21I'm probably hungry.
- 35:22I didn't eat anything today besides a protein shake.
- 35:24OK.
- 35:26The veal chop?
- 35:27Oh, easy.
- 35:28Or?
- 35:29Or nothing.
- 35:30Genshup is my favorite thing on the menu.
- 35:31We're pleased to ask your question.
- 35:33I mean, I wasn't asked between that or the duck, but.
- 35:35Veal chop.
- 35:36Really?
- 35:37It's my favorite thing.
- 35:38Why?
- 35:38What makes it special?
- 35:39Oh, my god.
- 35:39It's just the best.
- 35:41How do you prepare it?
- 35:41No, it's not a question of how do you prepare it.
- 35:44So I marinated.
- 35:46So it's a very sourced of France
- 35:48way of doing the veal chop.
- 35:50So we grind sundry tomatoes, a little dijon mustard,
- 35:56tarragon, garlic, all our fine herbs,
- 36:00herb the province and everything.
- 36:02And then we ground it.
- 36:03And then we rub it on the veal chop.
- 36:07We sous vide the veal chop.
- 36:09So it literally infuse the flavor.
- 36:13And then we grill the veal chop.
- 36:16It is so good and so tender.
- 36:18I want it right now.
- 36:20This is my favorite thing on the menu.
- 36:21So definitely try it.
- 36:22We only got the duck last time, and he loved it.
- 36:26I'm not really a duck person.
- 36:28Quac, quac.
- 36:30I have a sensitivity to certain meats.
- 36:32Like veal.
- 36:34If it's very gamey, I can't.
- 36:37Listen to me.
- 36:38I'm the same way.
- 36:39If I tell you this is like unbelievable.
- 36:42OK, well, I'm going to have to try it.
- 36:44Oh, my god.
- 36:44I love the veal.
- 36:45I'm very hungry.
- 36:47One more thing.
- 36:51Your signature mousse or the lemon mousse?
- 36:54My signature mousse.
- 36:55You ask me very easy question.
- 36:58I mean.
- 36:59But because you think that I would order.
- 37:01For me enough, you pinpoint the three things
- 37:04that are my favorite part.
- 37:06Really?
- 37:06Yeah, because I'm stuck tough, tough is my thing.
- 37:10I can actually eat raw meat without,
- 37:12I shouldn't say that because it makes me like some kind
- 37:14of freak over.
- 37:15I could eat raw meat without any seasoning.
- 37:18Oh, that's intense.
- 37:19Yeah, OK.
- 37:19What about like carpathia?
- 37:20Do you do with me carpathia?
- 37:22Yeah, I have an amazing carpathia.
- 37:24Well, yesterday I was hungry.
- 37:26I went in the kitchen.
- 37:28I took some carpathia meat.
- 37:30We was across Cheney and that's it.
- 37:31And then like a line cook on the lines.
- 37:34Like, you're not going to put any dressing
- 37:36and any truffles or anything.
- 37:38I'm like, what, what, no.
- 37:41Like that's it.
- 37:42Roll meat, baby.
- 37:45Do you have any advice for anybody
- 37:47in the kosher restaurant industry?
- 37:49Like, have you been to a kosher restaurant
- 37:51and you're like, they're just not doing a right?
- 37:53Any advice you can give them?
- 37:55I just had to be a better restaurant, a better owner,
- 37:59how to improve the general kosher restaurant industry.
- 38:04Because I'm pretty sure there are a lot of things you can say.
- 38:07Yeah.
- 38:08I can say things, but you're the expert here, not me.
- 38:13Could it be just service?
- 38:15Because service is something that I feel like not just
- 38:18kosher restaurants lack, but a lot of restaurants lack.
- 38:22Wouldn't you say that the service on my restaurant
- 38:25is amazing?
- 38:26Yes.
- 38:27To the point where I think my glasses filled with water
- 38:30like three times before I even ask.
- 38:32Which, by the way, I love that because that
- 38:35means that someone's paying attention
- 38:37and they're taking initiative.
- 38:38I'm sorry, that's just like everything.
- 38:40It's like, I want to say nothing.
- 38:48I want to say best of luck to the other pressurists, right?
- 38:53I want to say if you're not going to be critical,
- 38:56I'll be critical.
- 38:56No, I'm going to be critical.
- 38:58No, of course I can be critical.
- 38:59What I'm going to say is it's a lot.
- 39:06It has to do a lot with, again, the Shabbat boys food club.
- 39:14A lot of the restaurants hire the cousin of the cousin
- 39:18of Moshe that is coming from New York.
- 39:24And oh, sure, you can manage the restaurant.
- 39:27Bring your sushi and your pizza.
- 39:31I think people are also looking for cheap labor.
- 39:38And I see it's rare when you have restaurant that you care.
- 39:44I have very good friends in the industry.
- 39:48I don't want to name them.
- 39:50They will know who they are in the kosher.
- 39:53But the reason I'm not going to name them
- 39:55is because the other one, I really don't like the other one,
- 39:59you suck.
- 40:01But those two restaurants or three restaurants,
- 40:05and one is actually owned by a woman that I really care for.
- 40:09And she's really good.
- 40:11They have the same bottom lines that I have
- 40:19and the same attention to details that I have and everything.
- 40:25But not everybody has the same.
- 40:30I can tell that you're really passionate
- 40:32and you love your restaurant.
- 40:33I'm a restaurant, too.
- 40:34Yeah.
- 40:35I don't talk to people.
- 40:36It's not a business, it's your passion.
- 40:38No, it's a business.
- 40:40Now, in this phase of my life, it's a business.
- 40:44But I'm also, again, remember what I say, I'm surrounded
- 40:48by people who are not restaurant.
- 40:52Who know they're not restaurant, who are amazing people
- 40:55that are visionary and genius in other aspects
- 40:59and marketing and everything.
- 41:01And those people, they allow me to develop my ideas
- 41:06and my creativity.
- 41:07And together, we can turn a passion project into a business.
- 41:14It takes a village to get to that point.
- 41:18I am, again, 51.
- 41:20I know I look really good and much younger.
- 41:22But that said, it's true at that age
- 41:26where things need to be built not only for a passion project.
- 41:34But still, it's not a business.
- 41:35Just like when I get, you know, like I'm
- 41:39going to love having more than one venue,
- 41:43because I get to be passionate about all of them
- 41:46that keeps your life, you know?
- 41:49It's like today, my favorite child, no, you are.
- 41:54No, you are.
- 41:55No, no, you are.
- 41:56And it's like it keeps me motivated and exciting and everything.
- 42:00If not, it just becomes bloke.
- 42:05Well, obviously food is your passion.
- 42:07But besides for food, what are other things
- 42:12that you enjoy?
- 42:13Is it art, travel, anything?
- 42:17What do you like out of the restaurant world?
- 42:20So I'm a little bit of a shopaholic.
- 42:22Me too.
- 42:23I know that.
- 42:24That's a sister.
- 42:28And I like nice things, you know?
- 42:32I mean, I'll be in the know of the newest.
- 42:37I know.
- 42:37I see you with your new, new, new music.
- 42:38All you are, too.
- 42:39And then I go buy them and actually I don't like doing that.
- 42:41I never turned them.
- 42:42I return them.
- 42:43I return them because Zoli looked at me.
- 42:45He's like, you're literally going to wear them twice.
- 42:48And then you're just going to forget about them.
- 42:50That's so bad.
- 42:51And I was like, you're right.
- 42:52I should invest that money.
- 42:54And I'm really, yeah, no.
- 42:56I'm really, so I love fashion.
- 43:00And I love shopping.
- 43:06What I love to do, which is going to surprise
- 43:09a lot of people who don't know me,
- 43:12I love to be home with my husband, my kids, my dogs,
- 43:18and cook.
- 43:21I like to cook shabbat dinner.
- 43:24Sometimes I have like 20 people at my house.
- 43:26I love it.
- 43:27Not for holidays, just because.
- 43:31And I like to just watch TV and just chill.
- 43:37Like I'm a home, but like, I'm a home body.
- 43:41Like I'm very boring outside of work.
- 43:44I'm just boring.
- 43:46I think you do so much during the day
- 43:50that not only did you earn to just go home and chill,
- 43:54but your brain is always working in 10 different places.
- 43:58So by the time you get home,
- 43:59I don't expect you to like, or I don't think anyone would
- 44:02expect you to have more energy to go do something else.
- 44:05I just like to, it's not like it's like, I don't know,
- 44:08I always, I've always enjoyed being home.
- 44:12Yeah.
- 44:13My daughter who's 23, she's very much like that too.
- 44:17I don't know, I just, I'm chill like,
- 44:20I don't need to be showing up like 20 new restaurants
- 44:25and be seen or I have nothing to prove.
- 44:28I don't need, you know, I don't follow trends.
- 44:31I'm my own person.
- 44:33I like to do nothing.
- 44:35I'm boring.
- 44:36I like to shop on the internet.
- 44:39That new life, that new ship or ship jacket I just got
- 44:43is going tomorrow.
- 44:45I'll send you pictures.
- 44:46I see jealousy.
- 44:47I am jealous.
- 44:48I see, I see.
- 44:48It's fine.
- 44:49It's OK.
- 44:50I did a little shopping.
- 44:51Like I love, I don't know.
- 44:53I like simple things.
- 44:55I like being able to live only the restaurant
- 44:59and tell my husband, let's grab sushi.
- 45:01I don't know.
- 45:01That's fine.
- 45:02And going to pajamas, I love to go out in PJ.
- 45:05I do too.
- 45:06Sometimes it weird looks.
- 45:08Yeah, but who cares, right?
- 45:09I go for like that home-lashy look, you know?
- 45:12Oh my god, you just stole my line.
- 45:15I, my style is homeless.
- 45:20No, I say, what is it?
- 45:23Say it in French.
- 45:24No, I say hobo, I call myself hobo-jappy.
- 45:31Hobo-jappy.
- 45:31Hobo-jappy, yeah.
- 45:33OK, I see that.
- 45:34Like, you'll sink my jeans up dirty, but they're not.
- 45:38But they're not.
- 45:39And my sneakers are supposed to look like that
- 45:42because they're golden-goose.
- 45:43Right.
- 45:44And like, yeah, that's my...
- 45:46I think it's like the effortless chic, if you know, you know,
- 45:49look, like, because I'll wear something
- 45:51and then tell me, like, why are you wearing something faded?
- 45:54I'm like, I love my mother, but she doesn't get certain things.
- 45:58That's why is it faded?
- 45:59Why are there tears in it, supposed to look like that?
- 46:01Yeah, it's a, yeah, yeah.
- 46:02It gives a personality.
- 46:04Yeah, I mean, that's why I'm a hobo-jappy.
- 46:07When you're home and you cook, do you cook something
- 46:10you would cook at the restaurant?
- 46:11Or does your cooking change when you go home?
- 46:15It changes mostly to a very Jewish.
- 46:17Really?
- 46:18Yeah.
- 46:18So, what do you make like brisket and mutzeable chili?
- 46:22Really?
- 46:22Yeah.
- 46:23Yeah.
- 46:25That's so funny.
- 46:26Yeah, I mean, I'm a brisket kind of...
- 46:29I'm a brisket kind of...
- 46:30Yes.
- 46:30Of course.
- 46:31I chefify it and I friendship fire.
- 46:34Okay.
- 46:35So it's better than y'all.
- 46:37Did you make chicken soup with mothables?
- 46:39Yeah.
- 46:40And like, do you make it just like total classic style?
- 46:44Yeah.
- 46:45My brisket's so good.
- 46:47I come and I speak onions and...
- 46:51I'm sure.
- 46:52Yeah, no, it's really good.
- 46:53Yeah, it's really good.
- 46:55Yeah.
- 46:56But I love...
- 46:57Yeah.
- 46:58And I like to cook Chinese food at home.
- 47:00Really?
- 47:01How do you make Chinese food?
- 47:02By...
- 47:03I mean, how do you make French food?
- 47:05I don't know.
- 47:06Okay, well...
- 47:07I make the same things.
- 47:08Like, I mean, you make...
- 47:09You make Chinese food.
- 47:10I make Chinese food.
- 47:11I have...
- 47:12Maybe...
- 47:13A huge cabinet.
- 47:14Like, I mean, like one of my main cabinets in my kitchen
- 47:18that is full of Chinese sauce and Chinese ingredient and spice.
- 47:22Wow.
- 47:23I see Chinese food is so easy.
- 47:26But you make like real Chinese food or like...
- 47:29Yeah.
- 47:30I don't...
- 47:31I mean, like, I've been told...
- 47:32Real Chinese food is not the same as the Chinese food
- 47:34that you get at takeouts.
- 47:35Yeah.
- 47:36I'm like kind of confused.
- 47:37Like I said, first of all, I grow up in Paris.
- 47:39Right.
- 47:40Not in Miami.
- 47:41Not in Miami.
- 47:42It's up China, but like...
- 47:43Some of the best Chinese food I've ever had were in Paris.
- 47:45Chinese food in Paris sounds like just funny to me.
- 47:47I don't know why.
- 47:48Oh my god.
- 47:49They have good Chinese food in Paris, like the best.
- 47:51I don't know.
- 47:52When we go to Paris, we go to the same like three places
- 47:54and we get the order of the same things
- 47:56because you can't have foie gras in these days.
- 48:01Yeah, I know.
- 48:02That's like...
- 48:03Yeah.
- 48:04I don't know what I am.
- 48:05Yeah.
- 48:06But...
- 48:07I have that.
- 48:08Actually, we've got a mirror on your menu.
- 48:09Sometimes I do.
- 48:10Okay.
- 48:11And it's up to get like, but we're getting for season.
- 48:14And I'm bringing a foie gras, a wagoo and foie gras burger
- 48:21in the next few weeks.
- 48:22Yes, ma'am.
- 48:23Oh, yes.
- 48:25My god, we're going to be there so often.
- 48:27We actually, what I want Ms. Oostro to be,
- 48:30compared to anything I've done before,
- 48:32is a very accessible restaurant.
- 48:36A very comfortable for people to have lunch,
- 48:38sandwich, a good soup, a good salad, and really relax.
- 48:42At night, still, you know, being able to have a good steak
- 48:46or the end-eye salad becomes November 1st.
- 48:49We also are going to have a weekly chef,
- 48:52our oat cuisine menu,
- 48:54which every week I will design a menu
- 48:57with four courses.
- 49:01And a wine pairing can be added or not, you know,
- 49:04to that menu.
- 49:05That's going to be oat cuisine.
- 49:07Oat cuisine is not fine dining.
- 49:10It's oat cuisine.
- 49:11We are going to take it to the next level.
- 49:14You're going to see some foie gras.
- 49:15You're going to see some item that, you know, like,
- 49:18we're going to cut and cook in a very unique way.
- 49:20We are going to take it to the Michelin star, you know,
- 49:23plating and everything.
- 49:24We are going to do, on those dishes,
- 49:28we're going to bring the tweezers out.
- 49:30And this is going to be fine dining.
- 49:32It will be, we will have a limited amount of this option
- 49:38weekly and every week it changes.
- 49:40Have you ever tried to get a Michelin star?
- 49:42There's no trying.
- 49:43You just work hard.
- 49:44They have that process.
- 49:46Work.
- 49:47I don't even know how it works.
- 49:48I mean, we'll see.
- 49:50OK.
- 49:51I mean, right now, you know, I just want best chef in Miami.
- 49:54Wow.
- 49:54I just learned today I was nominated for best chef
- 50:00over all restaurant, whatever, you know,
- 50:02by the Miami, her older, whatever.
- 50:04So we'll see, you know, but I just
- 50:05want best chef in Miami.
- 50:08So we know we love your restaurant.
- 50:11Can you say or recommend, not recommend,
- 50:15but what are restaurants that you like in Miami
- 50:17that you can like see like kosher?
- 50:19Kosher, not kosher either.
- 50:22I mean, because I've been to a few not kosher restaurants
- 50:26in Miami, in Miami.
- 50:28And we'll go for like work meetings and like, you know,
- 50:32like all these things.
- 50:33And like, there's certain restaurants
- 50:35that are just absolutely beautiful.
- 50:37But then when like, they serve and the service,
- 50:41it's just like, horrible.
- 50:42Yeah, it's like, yeah.
- 50:44And like, the prices aren't like great either.
- 50:47Yeah.
- 50:48What's your favorite restaurant?
- 50:50Beside mine, besides yours.
- 50:52And not kosher, not kosher.
- 50:56I had an event at Mother Wolf.
- 50:58Oh, yeah.
- 50:59And the ambiance was just amazing.
- 51:05OK, I'm not going to lie.
- 51:07They prepared a steak.
- 51:09And I don't know if it was just the lighting,
- 51:12but it looked like it was AI.
- 51:14It looked so perfect with the flaky salt.
- 51:18And they had some like sauce on this.
- 51:21And I was just like, and I was like a couple of drinks in.
- 51:24And I'm like, should I?
- 51:27I'm like, I'm not going to do it.
- 51:28I'm not going to eat it, but it looks so good.
- 51:30It looks so good.
- 51:31And they look at Zoli, because Zoli was with me.
- 51:33And I'm like, Zoli?
- 51:36And he's like, hava.
- 51:40And I'm like, it's Zoli.
- 51:41Look at it.
- 51:41It looks perfect.
- 51:42I can't do it.
- 51:43If I die tomorrow, like I love you guys so much.
- 51:46Like as a couple, I feel like I'm almost mad
- 51:49that I wasn't with you at that moment.
- 51:52And it was funny, because we are going there
- 51:54together and relieving it.
- 51:57The problem is we need to bring a gory
- 51:59who's going to alter that spec.
- 52:01So we were sitting at a table.
- 52:03And we were like at a really push-posh table.
- 52:05We were with people from FPjorn.
- 52:08We were there with a couple of other people.
- 52:11And everyone looks like they're just like really enjoying it.
- 52:13Wow, this is incredible.
- 52:15And I'm just like, Zoli, we are missing out.
- 52:19But just like, remember that, we're missing out.
- 52:22But I think the service, just the way they work.
- 52:26And it was at least 150, 200 people who were there.
- 52:30The service was incredible.
- 52:32The ambiance was incredible.
- 52:34We had a couple of cocktails.
- 52:36Really good.
- 52:38And I think that, I mean, there was just something
- 52:41like special about it.
- 52:43Yeah, I talked.
- 52:45And that's just a place that, like, just for the-
- 52:46Even if you want to go there for just a drink,
- 52:48it's worth it.
- 52:49What about food-wise?
- 52:51In the non-cosher.
- 52:53Food-wise in the non-cosher?
- 52:55I mean, it wasn't certified kosher, but it's vegan planta,
- 52:59which closed all their locations.
- 53:02That was a place that Zoli and I would go all the time.
- 53:05Yeah, yeah, yeah, you loved it.
- 53:07Perfect, yeah.
- 53:07Specifically, the one in South Beach.
- 53:09The one in Coke and Coke and Coke, wasn't the perfect one.
- 53:12No, no, no, no, wait.
- 53:14Oh, no, it was, I'm like, oh my god.
- 53:16But Casa Dona is beautiful.
- 53:18But I feel like a lot of these Miami restaurants,
- 53:20they all, like, kind of look and feel the same.
- 53:22Yeah, like, carbon, Casa Dona, what else?
- 53:26There's like, yeah.
- 53:28So I-
- 53:30So do you want me what your favorite ones are?
- 53:34Or what's like one you just, like, really appreciate,
- 53:37whether it's the decor of the service, something they got right?
- 53:43Any kosher?
- 53:45It's honestly, it's really hard to answer that question.
- 53:49Oh my god, it's so-
- 53:50Maybe in New York, I couldn't think of a few.
- 53:53But it's hard to, like-
- 53:55I mean, I love Balthaza in New York.
- 53:58Okay.
- 54:01That's it.
- 54:07Well, even fast food.
- 54:08Let me talk about fast food.
- 54:09I will say one thing.
- 54:10Oh, no, yeah, okay.
- 54:11Fast food.
- 54:12Fast food, like, like, if on Friday and lunchtime,
- 54:17you will often find me at Pitaloka.
- 54:20Pitaloka?
- 54:21It's on 41st straight.
- 54:22Okay.
- 54:23It's been there forever.
- 54:25They're like, you know, it's like a kosher fast food.
- 54:29Okay.
- 54:30And the owner knows I'm coming.
- 54:32He has baguette on the side and then make me, like,
- 54:36this baguette, kefta, Moroccan spicy sandwich.
- 54:40And I really enjoy that.
- 54:42It makes me very happy.
- 54:44That sounds yummy.
- 54:45I'll be side by it.
- 54:51Yeah?
- 54:53Happens to be in Brickle now.
- 54:56We have kosher take out that they opened up.
- 55:00Il gabiano?
- 55:02Very good restaurants.
- 55:04Where is that?
- 55:05It's in Breacard.
- 55:06Wow.
- 55:07Very good.
- 55:11But you don't know that's it.
- 55:12You know what's interesting?
- 55:14I went to an incredible restaurant.
- 55:16I can't remember.
- 55:17Oh, yeah, in New Orleans.
- 55:19Because my son goes to Chile now.
- 55:21Okay.
- 55:22And so we took him a few weeks ago to three weeks ago.
- 55:26He's like three years, but it was three weeks ago to Chile.
- 55:30And we had an amazing meal in a restaurant
- 55:33called La Petite Grofri.
- 55:35It was a ten.
- 55:37Yeah.
- 55:39It was a ten.
- 55:41The bread, the, in this crew, I was going to say a bad word,
- 55:49but this crewed up the service.
- 55:51You can say they forgot to bring the wine and this and that.
- 55:55And it was so good.
- 55:56And the vibe was so good that he didn't face me.
- 55:59I didn't pull a Karen.
- 56:02I wasn't like, it was just perfect.
- 56:04It was very good.
- 56:06Do you have any worst restaurant experiences
- 56:08that you'll just never forget?
- 56:09Like the worst one you ever had?
- 56:12I have so many.
- 56:13We would have liked to do an episode about that.
- 56:16It's like one that traumatized you.
- 56:19I mean, I cannot be traumatized because I expect.
- 56:23I have so sadly, like, very small expectations.
- 56:27Can I tell you my traumatic story?
- 56:28I want to hear.
- 56:30This was at a restaurant when I was living in LA.
- 56:32It doesn't exist anymore.
- 56:34Was it French?
- 56:36I think so.
- 56:38Was it look-t-four?
- 56:40No, look-t-four, OK.
- 56:42I don't need it.
- 56:43OK.
- 56:44I think I ditched school.
- 56:45And we were sitting and eating like a cheese fondue
- 56:48with sliced granny smith apples and baguette.
- 56:52And I'm eating a do I want to hear?
- 56:54And was there an animal?
- 56:57It was a very large insect in the fondue.
- 57:01And I'm like about to eat it.
- 57:03And then I see like the cheese fondue just like starting
- 57:06to melt away from this insect.
- 57:08And I go to the waiter and I'm like, excuse me,
- 57:11there's like a really big fly.
- 57:13Like, it was a fat.
- 57:14It almost looked like a beat.
- 57:15It was like, it was like this big.
- 57:18And I almost stuck that in my mouth.
- 57:20And I was like, from now on, if I can't see exactly
- 57:22what I'm eating, I can't eat it again.
- 57:24Like, unless it's like moose or something
- 57:27where I can lay.
- 57:28I can't.
- 57:29It was gross.
- 57:30So they were apologetic.
- 57:32They took it off the bed.
- 57:33So you have, yeah, they should have come
- 57:34the entire meal.
- 57:35So you know, like I worked in a couple of restaurants,
- 57:38I will not name anything because I would get sued.
- 57:41OK.
- 57:42Do you see?
- 57:44But let's put it this way.
- 57:47There is some places in Miami with very high rent
- 57:56in very posh environments where there is rat shoes.
- 58:03Oh, yeah.
- 58:04Oh, oh, I'm not like this.
- 58:07No, I've heard.
- 58:08Like, no, like, like, like, like, like, like, like, like,
- 58:11like, no, no, no, like the kind that in the morning
- 58:16I found in the fryer oil, like, is this
- 58:20in kosher establishments?
- 58:21I will not say anything.
- 58:23Well, that's a problem with kosheros
- 58:26if there's rats and deep frowners.
- 58:28Sing about it.
- 58:29I mean, I've seen it on TikTok.
- 58:30I've never worked in a kosher restaurant.
- 58:33That's what I'm going to say.
- 58:34Oh, OK.
- 58:35I've seen takeout places where people on TikTok
- 58:38will show like they found, like, mice in their front fries
- 58:42and stuff like that.
- 58:45Wow.
- 58:46I don't want to talk about that.
- 58:47We don't talk about that.
- 58:48But on top of it, I'm a huge animal lover.
- 58:52Yeah.
- 58:52And like, I feel bad for the mice.
- 58:54Yeah.
- 58:55I don't want them to know.
- 58:56It's not a good way to go.
- 58:58I don't want anyone.
- 58:59I don't want any cute animal to die.
- 59:01Yeah.
- 59:01Like, I don't want to.
- 59:02That big ugly one.
- 59:03But look, the truth is, no, of course,
- 59:08I have a favorite restaurant in Miami.
- 59:10How can I not?
- 59:11No.
- 59:12Of course.
- 59:13Uh, it's, uh, Joelle Robuchon, Latelier.
- 59:18What?
- 59:19To Michelin Star.
- 59:20OK, well, I don't even know what you just said.
- 59:22Well, it's my favorite chef in the world.
- 59:25OK.
- 59:26Joelle Robuchon.
- 59:28Joelle Robuchon.
- 59:29Very good.
- 59:30Very good.
- 59:31Very good.
- 59:32His restaurant is called Latelier.
- 59:35Where is it?
- 59:36Design district.
- 59:37Oh, right here.
- 59:38And it is the best.
- 59:40I mean, he doesn't have one.
- 59:41I mean, he passed away a few years ago.
- 59:45He was the most rewarded Michelin chef in the world.
- 59:50And it's the only two Michelin Star restaurant in Miami.
- 59:55And it's the best food you ever have in your life.
- 59:57Wow.
- 59:58I'm going to check it out.
- 59:59I should, but OK.
- 1:00:02Translate the menu for the Yashivish oilum, basically,
- 1:00:05for all the people who don't speak French, even like myself.
- 1:00:09I'm going to say something.
- 1:00:11Try to figure out what I'm saying.
- 1:00:13And then tell me what it is.
- 1:00:15Because I'm sure people come into your restaurant
- 1:00:17and say these.
- 1:00:18And you're like, what the hell are they saying?
- 1:00:21OK.
- 1:00:22I can't even say the first word.
- 1:00:23Go for it.
- 1:00:24Proven, Proven, call fish de lute.
- 1:00:29Oh, yeah, OK.
- 1:00:31Good job.
- 1:00:32I understood.
- 1:00:33OK.
- 1:00:34John Lee, it's Proven, Sal, fish de lute.
- 1:00:37It's a fish soup.
- 1:00:40So it's just like a...
- 1:00:42It's not just...
- 1:00:44It's a Proven, Sal...
- 1:00:45So what's in it?
- 1:00:46Is it a powder?
- 1:00:47Is it a soup?
- 1:00:48Is it...
- 1:00:49OK, well, we're going to have to come.
- 1:00:51OK.
- 1:00:51Next.
- 1:00:52Dock, really, really...
- 1:00:54Oh my god.
- 1:00:55She murdered my...
- 1:00:56Diffrante, it's crocheting on front.
- 1:00:58You're fired.
- 1:00:59Actually, I should join my black listing you on my resume.
- 1:01:03You are joining the black one.
- 1:01:05What is it?
- 1:01:06It's duck, it's duckriette.
- 1:01:08Ducriette?
- 1:01:09Diffrante, what's the last word?
- 1:01:11Let me tell you something, we don't lady.
- 1:01:15Tonight, when you come, I might give you a haircut.
- 1:01:18No, please don't.
- 1:01:19OK.
- 1:01:20Next one.
- 1:01:21Black card.
- 1:01:23OK, got the first two words right.
- 1:01:25Proven, Sal...
- 1:01:26Cocquette?
- 1:01:27Cocquette.
- 1:01:28Cocquette.
- 1:01:28Like, fixing up the same branch.
- 1:01:31It's a bit yet, OK.
- 1:01:32Do you... do you...
- 1:01:34I don't speak any more.
- 1:01:35I don't speak any more.
- 1:01:36At least, ridiculous accent when you go to French restaurant.
- 1:01:39Maybe they actually put the fly in your cheese.
- 1:01:44Maybe.
- 1:01:45Because they hate me so much.
- 1:01:46Maybe you went to that restaurant
- 1:01:48and we're mocking the accent.
- 1:01:51And they were like, no, I just don't have to say it.
- 1:01:53You were flying it.
- 1:01:54But, you know, you know, when Americans say designer labels,
- 1:01:58like L'envant, by God, I know.
- 1:02:01Louis Vuitton, it doesn't sound good with American accent.
- 1:02:03So, I have to say it with a French accent.
- 1:02:05But do you...
- 1:02:06I know the designer.
- 1:02:07Say it properly.
- 1:02:08Say it to me, all of the designers.
- 1:02:11Without mocking the French.
- 1:02:12Bah, pardon, what?
- 1:02:14Balmain.
- 1:02:15Balmain, OK.
- 1:02:16L'envant.
- 1:02:16Yeah.
- 1:02:17Saint Laurent, OK.
- 1:02:18Louis Vuitton, OK.
- 1:02:20But that's with a French accent.
- 1:02:21Yeah, I mean...
- 1:02:22That's the only way you can say it.
- 1:02:23And it sounds good.
- 1:02:24Well, I mean, it's like...
- 1:02:25What else?
- 1:02:26What else?
- 1:02:27I mean, New Mill is New Mill.
- 1:02:28New Mill is New Mill.
- 1:02:30Givenchy.
- 1:02:31OK, very good.
- 1:02:33It really hurts my soul when people murder...
- 1:02:38Cartier.
- 1:02:41Laurent Piano.
- 1:02:43So, what else?
- 1:02:44It's Cartier.
- 1:02:48Cartier.
- 1:02:49See, I can do it.
- 1:02:51Louis Lose.
- 1:02:55Oh, my God.
- 1:02:57OK.
- 1:02:57Louis Vuitton?
- 1:02:58You are watching it.
- 1:02:59I can't even...
- 1:03:00It's just a one-word thing.
- 1:03:02Boo.
- 1:03:04Boo La Baisse.
- 1:03:07She's going to murder me in the kitchen tonight.
- 1:03:10What is that?
- 1:03:11Boo Yab Baisse.
- 1:03:12Boo Yab Baisse.
- 1:03:14Baisse Baisse.
- 1:03:16Boo Yab Baisse.
- 1:03:18Do your best.
- 1:03:19Boo Yab Baisse.
- 1:03:21Boo Yab Baisse.
- 1:03:22Boo Yab Baisse.
- 1:03:23OK.
- 1:03:24Boo Yab Baisse.
- 1:03:25Dart Tatine.
- 1:03:27Oh, my God.
- 1:03:28Why are you doing this?
- 1:03:29No, no, that's one.
- 1:03:30Tatant.
- 1:03:31Tatant Ho.
- 1:03:33Tatant, tatant, tatant.
- 1:03:35That's the stuff I make sure we give you a roach
- 1:03:39in every issue of it.
- 1:03:40She's going to poison me there.
- 1:03:41For sure.
- 1:03:42If you're watching and I don't come back,
- 1:03:44I'm dead in her kitchen.
- 1:03:45Yes.
- 1:03:47Financière.
- 1:03:49Financière.
- 1:03:50OK, I was close.
- 1:03:51Can't you like, do, like, choose that as soon as you see
- 1:03:55and then pronounce it?
- 1:03:57What is it?
- 1:03:57First of all, what is that?
- 1:03:58Financière?
- 1:03:59Yeah.
- 1:03:59It's amazing, Almond Cake.
- 1:04:01Oh, it sounds like I love this finance guy.
- 1:04:04That's how we call it.
- 1:04:06Financière.
- 1:04:07Financière.
- 1:04:07So it's not a dish.
- 1:04:10It's amazing.
- 1:04:11Speaking of pastries, oh, I'm going to present to you
- 1:04:14a pastry and then we've got to wrap up.
- 1:04:16Have you ever had one of these before?
- 1:04:18Oh, my God.
- 1:04:19It's like some Ostrichers.
- 1:04:21Is it like a donut kind of thing,
- 1:04:23like full of powder or something?
- 1:04:27A donut?
- 1:04:28What is this thing?
- 1:04:29It's a chocolate chip cookie.
- 1:04:30Oh, yeah?

- 1:05:18I don't like store-bought cookies.
- 1:05:22I'm not just like the only cookies I like
- 1:05:25is the big dollop of a fudge on top.
- 1:05:28And then I just bite the fudge off and I throw out the stuff.
