- Brad Peters: Welcome to the Recipe for Results. This is your podcast extra for certification in the hotel, restaurant, and bar industry, brought to you by HRB Universal. This is the brief on the Miami Surf Safe Food Protection Manager exam in course. This HRB Universal program is an ANSI accredited certification that's absolutely crucial to keep food businesses legally compliant and customers safe. Honestly, think of it as the ultimate driver's license for kitchen management. First, let's cover the logistics. It's happening in Miami, Florida on July 27, 2026, costing $129 for just the exam or $179 to add the review course. So what exactly are you paying for and how does the day unfold? Well, second, expect a rigorous format. This isn't a from scratch class. Self-study beforehand is required. You'll tackle a fast-paced four-hour lecture starting at 8:45 AM. Grab a quick lunch. And hit a two-hour digital exam at 2 p.m. on your own device or a provided Amazon Fire tablet. It's kind of like a high-speed cram session right before a massive college final. It reviews the material, but you gotta do the homework first. Finally, compliance is key. Under FDA Food Code Section 210.12, your designated person in charge must be a certified food protection manager on duty at all times. Since the National Restaurant Association developed this curriculum based on actual industry challenges, You might ask, is this just bureaucratic red tape? No way. It's really about building a lasting real-world culture of food safety. To sum up, this certification requires self-study and a full day of testing in Miami, but it's totally essential for FDA compliance.
