Transcript
- Margaux: The glitter is almost never the problem. The problem is that you were 4 minutes late. Dana: That is a personal attack and I would like to hear more. Margaux: Welcome to The Monégasque Table. Today: why edible glitter doesn't stick, why it's a timing problem rather than a product problem, and what to do when you've already missed the window. Dana: Because I have missed the window. Twice, on the same batch of cupcakes, which felt like the universe making a point. Margaux: Here's the answer up front. Shimmer sticks to icing that is still wet and glossy. Once the surface has set and dried, it takes far less, and the rest goes on the counter. So if you sprinkled onto a tray that had been sitting out, nothing was wrong with the jar — the surface stopped being sticky before you got there. Dana: So it's a race. Margaux: It's a window. And the useful part is what to do when you've lost it, because you don't have to re-ice anything. You switch methods. There are 2 standard ways to get shimmer onto a cake and most people only know the first one. Dana: I know the shake-it-out-of-the-jar one. Margaux: That's the one everyone knows, and it only works inside the window. Dana: Explain why the surface matters that much. It's powder on frosting. How fussy can it be? Margaux: Think about what the powder actually is, because it's not sugar and it doesn't behave like a sprinkle. This pigment is almost insoluble in water. It's chemically stable, it's acid- and alkali-resistant, and it's heat-stable. It does not melt into a surface, it does not dissolve into a surface, and it does not react with one. Dana: So it never becomes part of the frosting. Margaux: Never. It sits on top, held there mechanically — by tack, by moisture, or by fat. Which means the entire question of whether it sticks is a question about the surface, not about the powder. When people say "this glitter doesn't work," what has almost always happened is that they applied a non-sticking material to a non-sticky surface and expected chemistry to bail them out. Dana: Okay. So inside the window — wet, glossy, freshly piped. What's the technique? Margaux: Loose application, from a small dish rather than the jar, held reasonably high so it falls evenly rather than landing in a pile. And you want less than you think. The guided serving is 0.1 grams — that's a pinch — and on a cake that pinch covers far more ground than people expect. Most over-glittered cakes are 1 heavy-handed shake, not a design decision. Dana: Why a dish and not the jar? Margaux: Two reasons. Control, and moisture. Every time a warm hand or a damp spoon goes into a jar you're putting humidity into it, and clumping in a shimmer powder is almost entirely a moisture-control problem. A clumped jar applies unevenly no matter how good your technique is. Decant, work from the dish, and whatever's left in the dish is the only thing you've exposed. Dana: Right — the window's gone. The buttercream has crusted, the cookies set an hour ago. What's method 2? Margaux: You stop sprinkling and you start painting. The category method is to mix a small amount of the powder with a few drops of a clear, high-proof spirit until it's about the consistency of paint, and then brush it on. Dana: Alcohol. On a cake I'm giving to children. Margaux: It evaporates. That's the entire reason it's used rather than water — it carries the pigment onto the surface and then it's gone, and it doesn't sit there softening the sugar underneath. Water does the opposite: it sits, it softens, and it can drag colour to places you didn't want it. Dana: Is there a version for people who don't keep high-proof spirits in the house? Margaux: There's a third method, and it's the one I'd give you for a set surface if you want dry hands and no liquid at all. Dry-brushing. Load a soft brush with the powder, tap the excess off — that tap is the whole trick and nobody does it — and then swipe it across the surface. On a set, firm surface that works beautifully, because a firm surface is exactly what a brush needs to push against. There's also airbrushing, but that's an equipment purchase and a different conversation. Dana: Wait. Hold on. You've just contradicted yourself and I want to collect. Margaux: Go on. Dana: You opened by telling me the surface has to be wet and glossy or the glitter won't stick. Now you're telling me dry-brushing works best on a firm surface that's already set. Those are opposite instructions, and you gave them to me 3 minutes apart like they were the same advice. Margaux: That's the round you win, and it's the single most confusing thing in this whole area — I should have separated them from the start. They're 2 different jobs. Loose glitter needs tack, because nothing else holds a flake in place; a set surface has no tack, so it falls off. A brush doesn't need tack — it needs resistance. A soft brush on wet buttercream just gouges a channel into it. So it isn't "wet or dry," it's "which tool," and the tool is decided by which surface you've already got. Dana: Say that as a rule I can keep in my head. Margaux: Sprinkle wet. Brush dry. Paint when you want it exactly somewhere. Dana: Sprinkle wet, brush dry, paint when you want it exactly somewhere. That's the first time this has made sense. Dana: What about fondant? Because fondant isn't wet or crusty, it's — leathery. Margaux: Fondant is a set sugar surface, so it's brush territory, and it takes dry-brushing very well because it's firm and smooth. The one to think about differently is chocolate, because chocolate is fat rather than sugar, and this powder is thirsty for fat. The Gold luster dust absorbs 70 to 90 grams of oil per 100 grams of powder. Dana: What does that mean in the kitchen? Margaux: It means on a fatty surface the powder soaks in a little rather than sitting proud, so the sheen goes softer and deeper instead of glinting. It's not a failure — a lot of people prefer it on chocolate. But if you dust chocolate expecting the same sparkle you get on royal icing and it comes out muted, that's why, and going heavier won't fix it. You'd switch to painting. Dana: And the difference between the fine one and the flaky one? Margaux: Particle size, and it decides which technique even makes sense. Luster dust is roughly 5 to 25 microns — that's fine enough to behave like a paint pigment, which is why brushing and painting are its methods. Flake glitter runs 50 to 500 microns. Those are visible individual flakes, they don't blend into a wash, and they want a tacky surface or a liquid to sit in. Dana: So half the people complaining that their glitter won't brush on smoothly bought flakes. Margaux: And half the people complaining they can't see any sparkle bought the fine one. Same jar size, same price bracket, completely different job. Dana: Who should skip this whole episode? Margaux: Two people. If you decorate with flakes on wet icing and it's working — you're done, this is 10 minutes of confirming your habit. And if what's actually happening is that your jar has gone solid, this isn't a technique problem and no method will rescue it. A caked jar applies unevenly whatever you do; that's a storage conversation, not an application one. Dana: Can I add a third? If you're dusting something that's about to go in a hot oven and then be handled, don't judge the result until it's cooled and settled. I've panicked at the 5 minute mark more than once. Margaux: Fair, and the powder itself is heat-stable, so time is genuinely on your side there. Dana: Dana's Scorecard. I came in convinced I'd bought a bad jar. Where I've landed. The pigment doesn't dissolve or melt into anything, so sticking is entirely a surface question — that reframed the whole thing for me. Sprinkle wet, brush dry, paint when you want it exactly somewhere, and I won that round because those instructions genuinely do contradict each other until somebody separates them by tool. Fondant takes a brush; chocolate drinks the powder, 70 to 90 grams of oil per 100, so expect a softer sheen there. Fine dust at 5 to 25 microns is for painting; flakes at 50 to 500 want tack or liquid. And work from a dish, not the jar, or you'll wreck the jar being efficient. Margaux: I'd sign that. Footnote for anyone whose problem is that they've only ever owned flakes: the MONÉGASQUE Gold luster dust in the 7 gram size is on Amazon at $9.99 standard — that's the fine-particle end, the one that dry-brushes and paints, from a line that's shipped over 400,000 orders across the US, Canada and the UK. Check the listing for current pricing. Dana: Next time, something with an actual deadline attached. A friend has asked me to do the dessert table for a gender reveal, which means 1 colour, 1 date, no second attempt, and a room full of people photographing it. What do I buy and when do I buy it? Margaux: The palette question is the easy half. The calendar is the half people get wrong. Quick note before we go — this show is produced by the team at Monégasque, with AI-crafted hosts, and every number you heard was checked by humans against the documents. See you at the table.
