- 0:05I found one of America's best croissants at Butter and Crumble in
- 0:08San Francisco. Written by Drew Mugeri. This article is being read by
- 0:14an automated voice, generated by Everlet. Quick, name the best croissant
- 0:20filling. If you're a basic American like me, you only encounter basic
- 0:23croissant flavors chocolate, almond, and ham and cheese. These are the norm,
- 0:29and they do the job well, if you're hungry, and want to
- 0:32feel ten percent more French, but surely you've thought there must be
- 0:35room for more filling, than that in the American croissant repertoire. Surely
- 0:40there must be a like fourth thing we can put into one.
- 0:43Reader, I'm pleased to report that I have found one such worthy
- 0:47croissant filling, and it's nothing you'd guess off the top of your
- 0:50head. But take one bite of it, and you'll know I'm right.
- 0:54The croissant in question is dubbed brown butter cornmeal twice baked, and
- 0:58the bakery that’s sells it is San Francisco's Butter and Crumble, owned
- 1:02by chef and self dubbed girl boss Sophie Smith, who spent extensive
- 1:06time over in France to learn the nuances of laminated pastry, which
- 1:10is pastry that's been rolled many times over to have alternating layers
- 1:13of dough and fat, as you've tasted in puff pastry. PhillO Dough
- 1:17and Croissants. Once Psmith had mastered her lamination techniques, she brought them
- 1:21back stateside, along with an unholy amount of French butter, and started
- 1:26cranking out a rotation of breakfast goods so luxurious and tasty that
- 1:30her business now gets A line of foodies waiting outside every day
- 1:33its open. I decided to be one such foodie on one such
- 1:37morning. For my time I was rewarded with deliriously overstuffed Cruffins, caramelized
- 1:42peach sticky buns, croissants stuffed with greyed a marshmallow fluff, and the
- 1:46aforementioned cornmeal thing. I will describe the experience of eating these foods
- 1:51to you. However, you'll have to wait just a moment to savor
- 1:53it all, just as I did. Butter and Crumble is located in
- 1:57North Beach, in a building that once served as home to the
- 2:00legendary Tante Marie Cooking School. I arrived at eight AM, an hour
- 2:05before opening time, and fifteen minutes after you're allowed to line up,
- 2:08per the bakery's seven forty five AM rule. My promptness paid off
- 2:13with me occupying the twentieth ish spot, too far from the storefront
- 2:17to get a look at the goods inside, but close enough that
- 2:19I didn't have to heed the signs. The many, many signs, posted
- 2:23farther away from the shop that instructed people where they could and
- 2:27couldn't stand. B C does such big business that the store's owners
- 2:32have to actively manage the lines so as not to piss their
- 2:34neighbors off. On this morning I did not see anyone disobey the
- 2:38postings, but a few people arriving after me did bring a bit
- 2:41of camping gear. A couple next to me laid a blanket out
- 2:44on then sidewalk so they could sit down. Standing struck me as
- 2:48more comfortable, but to each their own. Two dudes sat patiently waiting
- 2:51in golf chairs, possibly reading infinite jest while doing so. Possibly not.
- 2:56I can't remember. More and more people arrived, until the line crossed
- 3:01Stockton Street, where it the made a left and continued out of
- 3:04view. A B and C staffer came out to greet the line
- 3:07and more urgent, to politely ask us to adhere to a ten
- 3:10item ordering limit, with no more than three of any one item.
- 3:14No one objected, because no one wanted to get kicked out of
- 3:17the line and miss out on any of the goodies. I know
- 3:20I didn't, which was why I stayed firmly anchored in my little
- 3:23spot for an hour and change. BNC had yet to post its
- 3:26daily menu to its Insta page, so I wasn't sure what I'd
- 3:29be able to order, much less know what I'd want. When workers
- 3:32finally posted a paper menu outside the front door, the woman in
- 3:36front of me in line kindly guarded my spot so that I
- 3:38could go eyeball my choices. This was not an easy menu to
- 3:42parse. BNC's selection relies on you, the customer, to already know the
- 3:47definition of words and phrases like frangipane, diplomat cream, and eggplant. Keep
- 3:51in mind that I hadn't had breakfast yet, So I had to
- 3:54interpret this menu using equal parts coffee and guile. This is the
- 3:58kind of place where orderer's remorse is a real danger. You think
- 4:02ordering the Cronut is the way to go, and then you see
- 4:05someone indulging in a mind blowing Cruffin at the next seatover and
- 4:08realize that's what you should have gotten, and then you feel like
- 4:11a dummy. That's a rough moment for any of us. So I
- 4:15became worried that might happen to me this morning. The a funny
- 4:19thing happened to ease my angst. The bakery doors opened. When the
- 4:23line started moving and the B and C storefront came into my
- 4:25view, I was treated to The sight of an automated pastry roller
- 4:29flattening out a gigantic slab of French butter. Just butter. The pastry
- 4:33laminating process on full display. Nothing that came out of that roller
- 4:37could possibly have sucked. I knew I was in good floured hands.
- 4:40I ful made it to the front door and felt like Shackleton
- 4:43after traversing South Georgia Island. The inside of B and C was
- 4:47bright and spacious, with ample waiting room for people who had ordered
- 4:51coffee, plus a shelf of crocent dog toys. The pastries listed on
- 4:55Then menu all ranged between five and nine dollars, so I didn't
- 4:58worry too much about price when making my choices. Instead I followed
- 5:02my beer gut. A peach cobbler bun topped with creme fraiche and
- 5:06oat crumble? Yes, I'd have that. A chunky monkey cruffin. Stuffed with
- 5:10like four different things and topped with a different kind of crumble.
- 5:13Butter get two of those. A s'mores painsuisse? I didn't know what
- 5:17a painsuisse was, but the word s'mores alone told me I had
- 5:21to have it. Then there was that brown butter cornmeal, twice baked
- 5:25croissant, which sounded just weird enough to be good. I ordered all
- 5:29of that. Plus a prosciutto and cheese croissant, so that savory items
- 5:33would get at least one representative in the mix. Didn't have to
- 5:37wait long for my prize box after ordering, and let me tell
- 5:40you, you get ample sized pastries for your money at Butter and
- 5:43Crumble. One chunky monkey cruffin would have been enough to feed a
- 5:47birthday party. The outside of it exploded with the salty uncuousness of
- 5:51that steam rolled butter, but I would hit pay dirt at the
- 5:54Cruffin's center, where I was treated to a bonanza of deep breath,
- 5:58brown butter chocolate fudge, banana caramel, banana diplomat cream, sounds dirty, and
- 6:03walnut crumble lurking inside. That one was a contender for best in
- 6:07box, no doubt. Sampled more. The ham croissant was tasty, certainly butter
- 6:11than the kind available at Burger King, but my sweet tooth demanded
- 6:15something far more evil. So I quickly moved on to the s'mores
- 6:18pain swissy, which was really a s'mores croissant, with a crust that
- 6:22was ribbed for her pleasure. As a rule, s'mores themed desserts are
- 6:26never better than an actual s'more, and such was the case here.
- 6:30The marshmallow fluff to its credit is still stuck to my fingers
- 6:33a month later. The I dug into the peach cobbler bun and
- 6:37the thick squiggle of creme fraîche topping it. This was a good
- 6:40ass sticky bun, because of course it was. The tag team of
- 6:44brown sugar and butter will always remain undefeated. I could taste that
- 6:48French butter monolith in everything. These were pastries made with great fussiness,
- 6:52but also great love. Better and Crumble wants to spoil you with
- 6:57indulgence, and everything the serve succeeds in that mission. But it was
- 7:01the last item I sampled that was the truest revelation. This was
- 7:05the brown butter cornmeal twice baked croissant. I'd saved this one for
- 7:09last, because most everything else I'd ordered more all of the traditional
- 7:13features I usually look for in a pastry chocolate, fancified frosting, caramelized
- 7:18goose. The cornmeal croissant was a different animal, and thus took lower
- 7:22priority. This was a traditional croissant filled with another deep breath, brown
- 7:27Butter cornmeal frangipane, caramel, and vanilla corn custard, then topped with sweet
- 7:32corn cream and a cornmeal crumble. This was how I learned that
- 7:35a frangipane was a kind of almond cream. There is no better
- 7:39way to learn this particular lesson. Because not only was the cornmeal
- 7:43pudding croissant, I'll call it that from here on out for the
- 7:46sake of space, the best item I ordered from Butter and Crumble
- 7:49and Crumb, it was also one of the best croissants I've ever
- 7:52eaten, be it here in America or over in Europe. The cornmeal
- 7:57flavor was much more subtle than the menu description suggested, and the
- 8:00cream and crumble combination on top gave me the same crunch, plus
- 8:04the same Yay, there's extra frosting rush that I require from any
- 8:08one thousand five hundred calorie breakfast. To my knowledge, no one comes
- 8:12to butter and crumble for one specific item on their menu. But
- 8:15if anything from Sophie Smith deserves to go viral among snobs, it's
- 8:19this one. It's the corn pudding croissant that needs to step off
- 8:23the foodie runway and break into every chain bakery and grocery store
- 8:27across the country. And I hope that butter and crumble helps to
- 8:30make that happen. I'll remember that croissant, and I hope that, one
- 8:34day, I can take my kids to some nearby, lesser bakery to
- 8:37eat another one. I might even be willing to wait in line.
