At 74, George Sarris still dons his apron at 7 AM every day at The Fish Market in Birmingham — a Greek-meets-Southern seafood institution he’s owned for 43 years. Despite aching legs and decades of hard work, he vows to keep going until he can’t, celebrating his 75th birthday in December. Raised in poverty in Greece, he came to America in 1969 with his mother and sister, promising her they’d open their own restaurant — a dream he fulfilled in 1983.
