- 0:17Speaker 4: I'm the drink can feel all right, feel down, drounder.
- 0:22Speaker 3: The weather.
- 0:24Speaker 4: To feel alright.
- 0:25Speaker 1: Well. Here he is the ruthless, the ruthless, the ruthless
- 0:30but benevolent at the same time. Despot who runs the
- 0:35Wine Academy of Utah. He's Jimmy Santangelo. Here he is
- 0:40Wine Academy of Utah dot com. He's poured us a drink.
- 0:43What do we go in the morning?
- 0:45Speaker 4: Yes, I have your I have your holiday cocktail right
- 0:48here for you. This is Clearwaters Sophie's gin brand new
- 0:53to the market. Get it at their distillery over there
- 0:55in Pleasant Grove. This is a type of gin that
- 1:00old world meets New world. You've got the old world
- 1:03London dry style, but then you've got those more herbaceous
- 1:08and floral and citrusy aromatics, botanicals and essences blended in.
- 1:14Speaker 3: There's nothing in here but tonic water.
- 1:16Speaker 4: Yeah, this is just a gin and tonic. Yeah yeah, yeah,
- 1:20it's it's so, this is their gin I got. I
- 1:24got a can of tonic that I had on hand, Shasta,
- 1:29nothing but the best.
- 1:31Speaker 1: Super tasty.
- 1:33Speaker 3: Yeah.
- 1:34Speaker 4: Yeah.
- 1:35Speaker 2: I usually don't care for a gin and tonic because
- 1:37a tonic usually overpowers the gin. But this, the flavors
- 1:40are just right where they need to.
- 1:42Speaker 1: You could squeeze the lime into it.
- 1:44Speaker 4: Do a little lime. Uh and uh, what I like
- 1:46about this A lot of the the citrus peel juniper.
- 1:51So juniper is the main thing that makes a gin,
- 1:54you know, and people will be like, oh, what's juniper?
- 1:56It's that if you ever smell a gin and it
- 1:58smells like a Christmas tree more or pine needles.
- 2:01Speaker 1: That's juniper's And that's one thing I really like about gin.
- 2:06And a lot of people don't like that about gin.
- 2:09Speaker 4: Yeah, the it can be strong and it's very pronounced aromatically,
- 2:15and that could be a turn off to some people
- 2:18for sure. But this I would also I would also
- 2:22love to see this in a French seventy five. That
- 2:25cocktail we might have spoken about that before.
- 2:27Speaker 1: This is tempered. That juniper is tempered with other sort
- 2:32of I don't know what they put in it.
- 2:34Speaker 4: Yeah, they're putting in citrus peel, cardimen, a little bit
- 2:37of you know, I don't have their botanical list, but
- 2:39this is more of the aromatic characteristics that we get.
- 2:43And I do get almost like this little black licorice
- 2:46thing in there. Now I taste it. It neat and that
- 2:49might be overemphasized with the tonic, the quanine, that kind
- 2:54of black licorice flavor, but it's certainly in there, and
- 2:58I even get like a little bit of resinan bark.
- 3:01It's really good, last going.
- 3:04Speaker 2: I don't love gin, but like CARRY said, this is
- 3:08this blends perfectly key.
- 3:10Speaker 4: When you make your gin and tonics is when you
- 3:13put your you got to put your gin in first,
- 3:16so a two count or two ounces, one ounce, whatever
- 3:20you're doing for friends and family at home. Then you
- 3:22load it up with ice. Then you float in your
- 3:26tonic or your component just to the shoulder though like
- 3:30a finger or two below the top, and then take
- 3:34your straw stirstick and stir it. Now you're combining the
- 3:37carbonation in there. Clearly, this won't be a shake and
- 3:40drink with carbonation and then you add your expression of
- 3:43a lime or otherwise and you stir that down and
- 3:47you realize that through the ice melt your wash line,
- 3:51your melt line will come up. A lot of people
- 3:53always bring it right to the top, and then it's
- 3:56not really balanced and it's not mixed, and it tastes
- 3:58too strong. Well, it's because you didn't combine the components correctly.
- 4:03Speaker 1: Uh so uh, gin and tonic. Uh. They used to
- 4:07drink this because they thought it warded it off malaria.
- 4:10But that's not true.
- 4:11Speaker 4: Yeah, I've never had and I've never had, Yeah, the
- 4:17quinine pill and then the citrus, the lime. And then
- 4:22everyone was issued a flask or a five hundred mil
- 4:26or I forget three hundred milli liter of either rum
- 4:30depending on the territory or gin. And when those British
- 4:34sailors and army guys, soldiers, can you imagine, so you know,
- 4:44the quantie pill tablet is so bitter that you were like, okay,
- 4:49let's dissolve it, crush it, dissolve it in the gin.
- 4:52And then I have the citrus peel or the citrus line.
- 4:55I had a whole thing a lime, and I would
- 4:58squeeze it in there and you could just eat the
- 5:00I'm regular and then drink it.
- 5:02Speaker 1: You wouldn't get scurvy.
- 5:03Speaker 4: But yeah, there's a couple of great stories like that.
- 5:07Speaker 1: Now, gin and vodka, A lot of people and I
- 5:11used to do this, say you should they put it
- 5:13in the freezer, right, but you really shouldn't do that.
- 5:16Speaker 4: Should do what happens when you over chill an alcoholic product.
- 5:21What you're muting are the harsh characteristics that that product has.
- 5:27So for example, if you put vodka in the freezer
- 5:32and have that same vodka that wasn't in the freezer
- 5:34side by side with a dram with a shot, oh man,
- 5:38the one the freezer is so smooth and like, oh
- 5:40my god, I just love this stuff. Where and they
- 5:42both came out of a plastic bottle stuff and then
- 5:47you have it neat on its own without being cold.
- 5:51Speaker 1: Excuse me?
- 5:53Speaker 4: Do you have all those characteristics coming through that A
- 5:56little bit more metallic, a little bit this, a little
- 5:59bit that that aren't pleasant? So by putting.
- 6:04Speaker 2: But I like the sensation, you know, whether it affects
- 6:07the flavor or not, I don't know. I like the sensation.
- 6:11Speaker 1: Exactly. Just take a shot.
- 6:15Speaker 4: Some gin in.
- 6:17Speaker 1: But you know, but it's hard to find room in
- 6:18the freezer when you're buying handles, that's true. And do
- 6:23we know who's so? Do we know who Sophie is?
- 6:27Speaker 4: They're writing up there, they're writing up the storyline with
- 6:30the Sophie and uh, we've got this. Yeah, we have
- 6:34a dog with a crown on her head. So I
- 6:39just love these guys. We're down there, so.
- 6:42Speaker 2: It's so cool. They're doing such good work and they're
- 6:45in Utah County.
- 6:45Speaker 1: I just love that. No, is that is that available
- 6:47at the not yet?
- 6:49Speaker 4: It's being distributed, but it is widely available at their not.
- 6:53Why it's it's available at their distillery and they're distiller.
- 6:57Super cool. They have a great tasting room you can
- 6:59go in there, as you've pointed out before, Bill, they
- 7:02have their Cigar Humidor area. And then the Wine Academy
- 7:06of Utah. We do monthly events there as well.
- 7:09Speaker 5: All right, well we're back again with the benevolent despot,
- 7:16the man who runs the Wine Academy.
- 7:19Speaker 1: Of Utah with an iron fist. That's right, it's Jimmy
- 7:22sand You won't put up with your crap, No, Jimmy
- 7:25Santangelo Wine Academy of Utah dot com. We've got some
- 7:29questions for you, Jim, but you've got a lot of
- 7:32events coming up too. I got one big one.
- 7:34Speaker 4: I'm going to Scotland again next year in June twenty
- 7:37one June of twenty twenty five. It's called the Yoga
- 7:40and Whiskey Retreat, Scotland twenty twenty five with a partner
- 7:44of mind, Kim Dastrips. She's a logo meditative and a
- 7:47yoga instructor famed in our area. Charity takes people to
- 7:50Tuscany and Ireland doublin that kind of a thing a
- 7:54Tory Utah down south and we did this trip last year.
- 7:57This year we're extending it a day. It's nine days,
- 8:00eight nights. We start in Edinburgh, go up through Saint
- 8:02Andrews birth place at Golf up through the Cliff's Edge
- 8:07along Scotland, settling into the Space side and then over
- 8:10to Inverness, back down to Obah and then scoot back
- 8:14over to Edinburgh. So all inclusive, everything but airfare and
- 8:18it's a lot of fun.
- 8:20Speaker 1: That's great.
- 8:20Speaker 2: You can travel with Jimmy Scotland.
- 8:23Speaker 1: And do yoga ye and watch Jimmy.
- 8:25Speaker 4: Do yoga downward dog for a dram All.
- 8:29Speaker 2: Right, let's begin with Zaye Hellozane.
- 8:31Speaker 1: Hi Jane, what's your question for Jimmy?
- 8:35Speaker 4: Good morning, Jimmy. I was wondering what kind of good
- 8:37cigars to go with Thanksgiving dinner, something I would suspend
- 8:41with such a big meal. You can go with a
- 8:44little lighter like a Connecticut rap, so a lighter wrap Madura,
- 8:49or with the with the Dominican Republic, not Madure, but
- 8:53a Dominican Republic field. You can also do if you're
- 8:56a cigar smoker and you're gonna have a nice a
- 9:00glass of whiskey or a smoky Scotch or your favorite
- 9:05strong spirit, then you match that that with the strength
- 9:10of the cigar with being a Madura style rap. Go
- 9:13down a beehive cigar shopping the boys down there, tell
- 9:16them Jimmy, Sanya and the boils will take care of you.
- 9:19Speaker 1: You know, you know, Zaying. One thing to avoid though,
- 9:24do not pull out the cigar and light it up
- 9:26in the middle of Thanksgiving dinner at the table while
- 9:29everybody's eating their turkey, and then there's Zane puffing on
- 9:32a big, bad stoky. People are not gonna like that.
- 9:35Speaker 2: I like it, all right, all right, thank you?
- 9:41Speaker 1: All right.
- 9:41Speaker 2: Let's see here's a text question. I don't have a
- 9:45ton of money for Christmas presents this year? Can you
- 9:48recommend a Thanksgiving cocktail that is guaranteed to start a fight?
- 9:52Speaker 1: I don't two go together.
- 9:54Speaker 4: I know I don't make you mad, so then you
- 9:58get out of giving presents.
- 10:00Speaker 1: Don't give don't answer that question Christmas, I don't want
- 10:04to fight.
- 10:04Speaker 2: If you can find a copy of the Radio from
- 10:07Hell cookbook from long ago, yeah, we have my sangria.
- 10:13Speaker 1: Recipe in that, and that's.
- 10:15Speaker 6: Will it make people laying?
- 10:16Speaker 2: That is a friendship ending sanga I had. I had
- 10:21a couple of friends of mine who'd known each other
- 10:23all their lives, and after a party with the sangria,
- 10:26they didn't speak to each other for six months.
- 10:29Speaker 1: Carry suggestions. You can find a copy of that there.
- 10:32Speaker 3: I like this question, and I've wondered this my own self.
- 10:35Speaker 1: Jimmy, can you.
- 10:37Speaker 6: Over chill wine and ruin it? I left my rose
- 10:40in the car last night at twenty nine degrees.
- 10:43Speaker 4: Oh, and you would be okay? Bring it down, put
- 10:47it in the refrigerator, don't put it on the counter.
- 10:48Put in the refrigerator, it'll come back down to ten. You know,
- 10:52we spoke of this earlier while putting vodka or in
- 10:54the freezer, muting those delicate characteristics. Same thing applies to
- 10:58wine generally here in the state, we drink our white
- 11:01wine's too cold and our red wine's too warm. These
- 11:04cellar temperatures were established in the seventeen and eighteen hundreds
- 11:08where they didn't have HVAC systems, the convenience of penal
- 11:11forest air in your home temperature controlled homes. So you
- 11:15want your reds a little chillier than you're accustomed to,
- 11:18So excuse me, pardon me. What you do is take
- 11:22your white wine out of the fridge about twenty minutes
- 11:24before serving it and put your red wine in the nuts.
- 11:27Speaker 1: Now, what if you, like, Gina, what if you have
- 11:29a wine fridge? Yeah?
- 11:31Speaker 6: What temperatures? Seriously, you know what what temperature should fridge
- 11:36be said at?
- 11:36Speaker 1: That's the question?
- 11:37Speaker 4: Yeah? So you want fifty five and sixty five?
- 11:40Speaker 1: Okay, ah, aren't you there? You go? Let's see. Does
- 11:44it hold a lot of wine? Gina?
- 11:48Speaker 3: About ten bottles?
- 11:49Speaker 4: Wow?
- 11:50Speaker 2: What's your favorite red and white wine? Something to drink
- 11:53with dinner? Just to have a glass just your go
- 11:55to basic wine.
- 11:56Speaker 4: Do you have a favorite, yes, and we just featured
- 12:01it last week.
- 12:02Speaker 1: The Conuldrum, the blend the red blend well in the
- 12:06white too. Actually that one.
- 12:08Speaker 6: I like the White Conundrum better than the Red. If
- 12:10I'm going to pick one of those two, I prefer
- 12:12the white.
- 12:13Speaker 4: No, not a bad idea. The White Conundrum is really
- 12:15good and the red those are just what I call
- 12:18tabletop ones. Countertop ones. You should always have one on them.
- 12:21Speaker 3: Can get and tonic too.
- 12:25Speaker 2: Oh, it wasn't our Sangaria recipe.
- 12:27Speaker 1: It was our Long Island iced tea recipe.
- 12:32Speaker 2: And it's in the cookbook though, so if you can find.
- 12:34Speaker 1: A copy of that, I don't think I have a
- 12:35copy of that anymore. I got one somewhere anyway.
- 12:40Speaker 2: Let's see any recommendations that you have thoughts on Thanksgiving.
- 12:44Speaker 4: Yeah, you know, Blais is the red wine. That's the
- 12:47go to. Also Peina No War you want to check
- 12:49out for your reds George Dubwaff Boglais Nouveau just got
- 12:54released last Thursday. That's always a great go to red
- 12:58for Turkey Day, with a slight ill. Your white wines,
- 13:02there's a clever little vignier out there by Yo Lumba,
- 13:05an Australian producer. The conundrum that we just spoke of
- 13:09would go really great with the turkey Bird this this
- 13:12holiday season. And yeah, get into the wine stores early,
- 13:18kind of do your shopping online, kind of think through
- 13:21with their app what you want to get, it'll show
- 13:23if it's available at the store. So then you got
- 13:25a list. If you're gonna go in, uh and just
- 13:28kind of wander about. And there's so many people there
- 13:30you might get a little frustrated and anxious. So but
- 13:34the staff's there to help you. They're loading it up,
- 13:36they're doing everything they can, so they're busy making sure
- 13:39you have the products on the shelves to select from.
- 13:42So be prepared before you go in.
- 13:44Speaker 1: I was gonna I was gonna serve that pizza Hut wine.
- 13:48The pizza Hut wine. It's too You got to buy
- 13:51two bottles, two bottles for twenty five bucks and it's
- 13:54a it's a tomato wine and it tastes like and apparently, hey,
- 13:58nobody pizzas like the hut here.
- 14:00Speaker 4: But all right, do they open the bottle for you
- 14:03like they used to cut the first slice, I'm not true.
- 14:06Speaker 1: That's right, that's right.
- 14:09Speaker 2: They did the first back when they had restaurants.
- 14:13Speaker 1: They weren't restaurant. Thank you, Jimmy, Thank you guys.
- 14:18Speaker 4: Pardon the coughing, but enjoy your holiday weekend. Everyone, be
- 14:22safe and if you have any questions, going to win
- 14:23Amy utah dot com, go yeah, go.
- 14:25Speaker 2: To Wine Academy of Utah dot com and look for
- 14:27events that Jimmy has coming up and you could attend them.
- 14:32Speaker 1: Feel better, drain, Feel all right,
