• 0:01
[upbeat rock music] I like the intro music. [laughs] It's new as of last week.
• 0:19
Yeah. It's, uh, it's just a riff from Inside of Fat Bottomed Girls that my buddy's band does or did. [laughs] Which we can't really use the real stuff because of copyright stuff, but- Sure, sure...
• 0:31
this passed, uh, this passed the copyright, uh, deal 'cause it's just sort of a riff. Anyway, hey everybody, it's Full Spectrum Cycling. This is show number 288, I believe is what we're doing today.
• 0:46
So, you know we've been doing this for a little while. Yeah. Uh, sometimes we have Tony. Great. We still have Tony. Sometimes we have JK, but just JK's hat's the only thing here today. Yep, that's what made it here.
• 0:57
And, uh, Joan, joining us today in place of JK is Joe. How's it going, Joe? Ah, it's going well, going well. Thanks for inviting me. So, I don't know, typically we, [laughs]
• 1:09
we just talk a little bit about stuff around Milwaukee a little bit, and then we talk a little bike stuff, and our guest talks about why they're, what they do, where they're riding, stuff like that.
• 1:20
What kind of bikes they have. Sort of, uh, sort of a free f- free-flowing stream of consciousness [laughs] sort of an idea. Sounds good. Sounds good. Kind of like what I would say it, it is, I guess. Um,
• 1:32
I mean, big news to me today, I don't know if it's big news to, uh- Oh, bullshit news is what it is...
• 1:37
to Tony, too, is that our, one of our favorite local bars that has a lot of good live music, Promise, has closed down. Which- Abruptly... abruptly, yeah. There wasn't e- really any kind of, uh, pre...
• 1:51
W- we didn't know it was coming, basically, so yeah. What a night. All it boils down to is fuck landlords. Yeah. That's sort of s- Um-... what it's sounding like, is they couldn't negotiate a new- Right...
• 2:00
lease and, and, uh, so. I never got down there. Um, they got Derek, um, uh, what was his name? Um, um, Pritzl played there. Okay.
• 2:11
Like on Tuesday nights, um, like every Tuesday, and I, I never got down there and that's the one place- Well, it was only there-... I haven't been... two years. Yeah. Yeah. About, yeah. Yeah.
• 2:20
We saw a lot of local bands that our friends are in. It was a good place to go check it out. WRC had a benefit there one night. Yeah. Yeah. Just, we don't need less live music events. Venues, right.
• 2:29
We need more live music venues. [laughs] Provided they're not Live Nation. Right. Yeah, and that's the thing, is getting stuff that's like, uh, local music, not $100 to go, you know. Agreed. Agreed.
• 2:42
It's just, stuff is getting so expensive on the bigger venues. Well, both Fa- Falcon Bowl is now doing a lot of that. Yeah. That's true. They've really stepped up their game in a big way.
• 2:50
Um- I just found out a fun fact about Falcon Bowl is- Mm. Mm... behind the main stage in the ballroom, there's a speakeasy. Oh, no way. And it's big enough for like 15 people. It's got a full bar.
• 3:01
My buddy Paul was telling me about it, I'm like, "You gotta be kidding me." He's like, "Oh no, it's really cool." So, uh, Gibson manages the place now and I've- Yeah. Yeah...
• 3:07
known Gibson forever, so I'm gonna get over there and be like, "Dude, let me see that." Yeah. So is it just- Well-... it's, it's not currently in use? Um, it is rentable. Oh, interesting. Um, so yeah.
• 3:18
That would be kind of cool. It's behind the stage. It's behind the stage. Nice. Nice. But pretty cool. I'm like, that- [laughs]... that is a very big venue that you don't realize is as big as it is until you're...
• 3:26
you know. Right. And how many... There's bowling lanes in the basement- Yep... and all sorts of other stuff going on. It's eight lanes, six lanes. Yeah. Eight lanes. Well, Gibson, they ran Commie Bar for- Yeah.
• 3:34
Yeah, yeah... five years. That was great. I loved that place. [laughs] I was one of the first, um, mug members and- Nice... I just happened to have 200 bucks on me and they're like- The Commie Bar? [laughs] Public House.
• 3:44
The p- yeah, Public. Yeah, I know. Were you a, were you a f- lifetime member? Yeah. Oh yeah. Did you get a mug? Yeah. Me too. Yeah, and they never returned it. Where's your mug? They never- Did you get it? Yeah. Oh.
• 3:51
Did, did they come to your house, return it? Uh, no. I, I... Well- Like years after they close up, somebody calls me up one day, finds my phone number, and says, "Hey, I got a mug." And well, I just- That's cool. He-...
• 4:02
shows up at my house and I'm like, and I've got it ever since. [laughs] Is... So my story there was Shay, one of the original founders- Mm-hmm...
• 4:10
calls me up on the phone and she's like, "Hey, we're trying to drum up sor- uh, support for the Public House. Will you become a lifetime member?" And I'm like, "Well, what's the deal?"
• 4:20
She's like, "200 bucks, you get your own mug, and you get a dollar off every pint." And I just, I looked at her, I'm like, "Well, that's a losing venture for you." Yeah.
• 4:31
[laughs] She's like, "Well, we might only be open for a year." I'm like, "That's still a losing venture for you-" Yeah. "... 'cause, you know." Right. Well, it was 40 bucks, you know, a year. A year.
• 4:38
And then I, I think I did it right away, and then, um, Gibson goes, "Hey, well, you know, we've only got a few mugs left. You know, you wanna get in on the lifetime thing." And so I'm like, "How much?"
• 4:47
"Well, you go $160." I'm like, "Oh sure, okay. You know, I have-" Yeah... "I have the money. I'm in." Boom, I get a mug, and- I- I did, I did the one-year thing, and then they didn't need memberships after a while.
• 4:58
It- Like when I was across the street, I didn't- Yeah. There wasn't- Well I guess you could, I would've still got the dollar off or whatever, but yeah. My, uh, my mug actually says Fat Burger, my bike name.
• 5:07
Oh, is that right? [laughs] Mine says- I love it... Joe Mama. [laughs] Nice. [laughs] So we're talking about Milwaukee a little bit, a little bit of venue stuff. Uh, here's, here's...
• 5:17
Milwaukee is part of a national trend. Did you see this? Beers cl- I think it was WP-... breweries closing. Yeah. It's like- Mm... it's not a good trend. [laughs] No.
• 5:25
Apparently it's a nationwide thing where we had- Well-... somewhere close to 40 local craft brewer, brew- breweries, however you say that word. [laughs] Um, and we're losing them.
• 5:37
I don't know if the- Well, but here's the deal. Some of them shouldn't be in existence anyway. Probably true. Their beer is not worth selling. Nobody, I think, that owns a brewery started...
• 5:49
They started out with a lot of money- Yeah... from somewhere, and then they run it for a while, and then they don't have any more money. It's sort of like running a bike shop.
• 5:57
Didn't, uh- [laughs] Didn't, didn't Penske d- It's just a thing. [laughs] Yeah, right? It's an expensive hobby. How do you, how do you make a- Right... how do you make a million dollars in a bike shop?
• 6:04
Start with two million. Start, start with two million, yeah. You know? [laughs] Absolutely. Penske, Penske said, "There's a lot of money in auto racing. There has to be, 'cause I lost it all there."
• 6:13
[laughs] It's, it's... Yeah. It just, uh, something happened. He was trying to... Uh, they were working on getting F1 back at Indian. Mm. It's now not gonna happen, but I don't know exactly the whole thing.
• 6:22
I just saw a blurb on it. Um, so we got Joe here. He's our special guest. Yeah. Special. Uh, Joe, Joe rides quite a bit. Yes. What are you riding? What kind of bikes you got?
• 6:34
Um, I've got two specialized, uh, 29ers, mountain bike. I've got a Trek 88 steel frame. I've got a, uh, old Tarmac, um- Nice... SL4 Pro. Um, they replaced my, uh, original Tarmac.
• 6:50
You know, one reason I buy Specialized is they, you know- Like, they warranty... guarantee, they guarantee the frame. So I got a whole new bike for the, the price of a Gruppo. I mean, it- Was it, uh, carbon? Yeah. Huh.
• 7:01
They replaced everything. It was like- They broke or? Yeah. The fracture down at the bottom bracket. Um, there- That's what carpet fiber does... yeah, there were, you know, cracks in the, in the, uh, rims.
• 7:11
And so I took it in. The rims too? Yeah. Wow. So, yeah, everything. It was, it was like- Joe, Joe rides hard. Yeah, I do. Yeah. I ride very hard.
• 7:17
Um, so [laughs] the only original thing on her is the seat post and the, um, and the handlebar stem. [laughs] So is, uh, is one of the mountain bikes a fat bike? I, uh, I have a fat bike also. Oh, also a fat bike. Yeah.
• 7:30
Mm-hmm. Okay. Yeah, I- Ro- Rocky Mountains? Yeah, Rocky Mountain. Yeah. Mm-hmm. Yeah. Blizzard. I think that Tristan sold to him.
• 7:35
Yeah, Tristan, yeah, Tristan, uh, Klein, when he had his place down on, um, uh, is that Freshwater Way? Where the- That's where the last place they were at, yeah. Yeah. That's...
• 7:44
Well, he was moving from there to South Second Street, or f- no, First Street, when he went from there to there. So he was unloading his inventory, and he's like, "You know, do you want?" Yeah, for sure.
• 7:53
And then the guy, he's like, "Sure." [laughs] That's the perpetual game of bike shop ownership. I never thought I needed, I never thought I needed a fi- a fat bike because I, I could do anything I wanted to do- Oh...
• 8:00
on my regular bike. And then- Me. Yeah. But then, you know- Me... I'm trying to stay in shape for the Birkelander and, uh, you know, you know, these brown winters, you know. And you're like, "Okay. All right.
• 8:09
We can get a little bit of snow, get a little bit of ice. Get a little bit of grease." I'm like, "Eh, you know, why not?" You know, he gave me a good price on it, and I ride that bike more than I ever thought I would.
• 8:17
And- So are you doing, uh, the ski Birkie or the fat bike Birkie, or? Uh, the ski. Okay. Yeah, I've always done the ski. Um, I've retired from that, um, several years ago. It's just, uh, there's not enough time to train.
• 8:28
Yeah. Well, there wasn't enough snow last year- Yeah... to do the Birkie either, so. Yeah, that was crazy. [laughs] Yeah. I, I think this year they're doing a lot better. We, we'll have, uh,
• 8:35
Seely Dave on pretty soon and give us an update on the snow, but it seems to be just snow globing every single day just about. So once they- Yeah, lightly too, which is beautiful...
• 8:44
once they get a base, that stuff really packs in nice, and, uh, hopefully they'll be able to do both the Birkie and the fat bike Birkie this year. Yeah, that would, that would be good.
• 8:52
That'd be fun to try the fat bike Birkie. Um, uh, I might do the Nokimin. I don't know. I gotta talk to these guys on- The what?... on Thursday. Uh, Nokimin. What's that? It's up in Marquette. Okay.
• 9:02
It's a point-to-point, like the Birkelander. It's a marathon ski race. Okay. Um, they do a half and they do a full. Um, I would do the half just 'cause I've only gone once. It's like, come...
• 9:12
I'd ski more miles in that race than I would all year combined. Yeah. So, you know, why wouldn't- Around here you can really only go out to, uh- Yeah... Lapham Peak, right?
• 9:20
It's the only place that- And that's where I've gone. Yeah. And you get on the hamster track on the manmade stuff, and, you know, that- Boring... you know, boy, exactly.
• 9:27
You might as well go to the Pettit Center and race around, you know. [laughs] Yeah. Somebody had an aerial shot of, um, Cascade, Alpine Valley, and Devil's Head,
• 9:38
and there's snow on all of them, 'cause they make snow obviously. Right. Right. Yeah, that's, uh- Uh, a, a good buddy of ours is actually the hill guy at Alpine Valley. Yep. Yep. Uh, but there's no snow anywhere else.
• 9:47
It's only on the runs- Yep... basically. Yeah. There's no snow in... I m- we're in, I think they called it the snow donut, is what they're calling it.
• 9:55
[laughs] And come, uh, Friday, it's gonna be 40 degrees again, which is gonna not help at all for that. Yeah. Oh, well, they got snow south of us. They got snow north of us. They got snow west of us.
• 10:03
They got snow east of us, but we're just in this little chunk of mid-central- Uh-... Wisconsin that's not snowy. Well, I get updates from Colorado from all the resorts, and they're getting hit well. Heavy, yeah.
• 10:14
You know, seven, eight inches- Yeah, for sure... every other day. I mean, so, you know, good for them. You know, they, you know, they need it. Um- Well-... you know, that's their, their livelihood...
• 10:22
I was, I was talking to Ron next door at Amorphic, the brewer- Mm... and the owner. And I was talking to him, 'cause he had a Steamboat shirt on. Oh, yes. No.
• 10:29
And he's a snowboarder, and I'm like, "Uh, so you going to Sneebo- Steamboat this year?"
• 10:32
And he's like, "Actually, my girlfriend did a bunch of research, and we're all going to France because it's gonna be cheaper to fly to France, to go to this resort-" No way. "...
• 10:44
and to come home than it is to go to Colorado." Wow. [laughs] Yeah. That says, that says something.
• 10:48
And it's one of the only resorts in France that allows off course, uh, uh, up re- You can, so you can do trees, and you can do things like that. Oh. Yeah, yeah.
• 10:56
He did say the difference is, though, is if you hurt yourself in the trees in France, you get out. There's no one gonna help you. Yeah. [laughs] Whereas in Colorado, you, patrol will come in and- Sure...
• 11:08
potentially help you. I lived in Colorado for two years and worked at a resort, so. Yeah, yeah, yeah. Did you never had to rescue anybody? Never had to rescue anybody.
• 11:15
Uh, Molly, really funny story is, is Molly had, um, boots with titanium laces. They had crank laces. Okay. And we were doing a, a back c- a back country run.
• 11:30
Um, I'll get into that story later when we're not, 'cause it's long. Um, and all of a sudden I saw her, like, looking at me, and one of her laces broke. Is that stupid Boa system? Uh, exactly.
• 11:40
Uh, and- Those things are dumb... and one of them broke, and then I'm like... She's like, "I'm gonna try to get out of the, out of the trees safely," because obviously your binding is loose and everything now.
• 11:48
Your boot is loose. Mm-hmm. And by the time she got out of the trees, which was, like, another 20 yards, the other lace broke. Wow.
• 11:56
Well, the idiots that designed these snowboard boots didn't realize that titanium is brittle when it's cold. Huh. So they had to replace her, her laces with stainless steel Okay.
• 12:05
Yeah Uh, but I remember taking the boots to Boulder Ski Deals, and I walk in and the guy sees me and he runs into the back. And I'm like, "Oh, is he afraid of me or what?"
• 12:13
He comes back out, he's like, he has a pair of these stainless steel- [laughs] He knew right away. [laughs] He's like, "I know exactly what happened here."
• 12:18
That's kind of like I called, uh, 'cause j- I know you weren't in the shop yet, but, uh, Jake from The Bike Fed brought his Photon-equipped bike and was saying that it, it's not engaging.
• 12:29
He, like, when it's real cold, he'll pedal and nothing happens. And it doesn't drive the bike under human power either, so he can use the throttle and go, but not... So I called those guys at, uh,
• 12:39
at where we get the stuff at Electrify Bike, and, and Adam's like, "Yeah, we've been getting a few of those calls lately. The, the grease inside on the sprag clutch gets hard." Hard "...
• 12:49
and then it doesn't let them pawl, the pawls en- engage." So hopefully we can get that fixed. Yeah. Or- Change out the grease... relubrific- Yeah... it. We used to get that with, uh, Alfine hubs too. Yeah. Shimano.
• 13:02
When it was super cold, it wouldn't, yep, shift right. Yeah, we'd use, uh, automatic transmission fluid in there. Yep. ATF, baby. [laughs] Yeah, it actually did well. They finally shifted when it was below zero.
• 13:11
That was kind of their... These are actually even down into the, like, 30s or 20s. It's, I don't know if it's a s- a, a problem with all of them, but it's enough where he knew what I was talking about right away.
• 13:22
[laughs] Right. Yes. You know it's an issue when [laughs] they know immediately when you start describing it. Oh, yeah. Oh, yeah. So, uh, Joe works up in Sheboygan, which is about a hour car drive north of here. Yes.
• 13:33
Mm-hmm. Have you ever ridden your bike up there to go to work? I have several times. I m- I, probably twice a year I ride back from work. So I'll, you know, hopefully get the tailwind then and, uh- Yeah...
• 13:43
you know, keep- Hey, it's all downhill... pedaling home. Uh, theoretically. [laughs] Like, this much. Yeah, it's, it's pretty flat down on, along the lake shore there.
• 13:51
I used to do it when they had the, uh, Toad race in Sh- in, uh, Shorewood. Okay.
• 13:55
So I'd, you know, jam down on a Thursday and, um, you know, s- ride into the bike race, and I think three hours and 15 minutes was my best time. Ooh. And it's, it, it's crazy. Um, it's 58 miles from my house to the shop,
• 14:11
you know, one, you know, point to point. One way. Yep, yep.
• 14:13
And then when I ride the bike and I just take a slightly different route, you know, hugging the lake shore and coming on the, um, Interurban Trail up to Port Washington and coming straight down Lake Shore, it's 58 miles.
• 14:26
Wow. Yeah. So- That's, I think, what mine was this year- Yeah... when I ti- when I faced it. It's, it's exactly the same- Yep... distance. Um, you know- That-... that's one of my better...
• 14:34
I think I averaged, um, you know, almost 20 miles an hour, so. Well, that must not have been on the fat bike. No, it was not my road bike.
• 14:40
[laughs] So I- But the fatty I'll ride, you know, at Terry Andry, you know, Park, you know- Oh, it's so beautiful... get on the beach, and there, there's a lot of beach this year.
• 14:48
Um, it's, it's really, really good shape. Definitely gotta get out there soon and check that out. We have to see if there's any shoving.
• 14:55
I love riding on that ice shove when there's just enough to bring it onto shore that you can just kind of- It's starting. Is it? Yeah. Yes. It, it's just starting, but it's, it's still a little... Unless you have studs.
• 15:06
Yeah. Mm. If you have studs, you're good, but, you know, I don't and so. Well, usually they get enough, uh, like, enough- If you got-...
• 15:12
sand in the water that, that kind of churns up and it kind of embeds itself in the ice. Right. That can be real sticky, too, which is kind of cool. Well, I, I- But studs are the best...
• 15:21
well, I wiped out twice trying to go over a creek cross on that, 'cause all of a sudden- Oh, and that's moist... all of a sudden you see that- That'll get you wet...
• 15:26
all of a sudden you see that, that sand and ice mix, and you think you're good to go, and all of a sudden [exhales heavily] [laughs] - Oh Airdyne... slap back in. I'm like, "Oh, man."
• 15:34
And you know, I shouldn't be getting hurt on the- Yep... sand. [laughs] Do you, do you have, uh, studded tires? I don't and I, I- Speak of which. You know. Studded tires are on sale.
• 15:43
45 North, who's always sold those damn studs for 259? 249? I don't remember. They were very expensive, but, uh- What? A, a tire? A tire. Yeah. Come on. That's like- They, they're much better now...
• 15:53
that's like a tractor tire cost. Well- But, I mean [laughs]...
• 15:55
when, when I, when I, when they, when they came out with two tires that were gonna be, cost me 500 bucks, I'm like, "That's more than I pay for snow tires on my car." Right. I can't do it.
• 16:03
They're not that way so much anymore. I think these retail for 139 bucks for a four-inch, 240 studs,
• 16:10
but they're, they can be on sale a little bit now because- But wasn't it back in the day you could just take quarter-inch sheet metal screws and- Oh, yeah... drive them in from- Sure...
• 16:17
the inside and- I mean, if you wanna-... duck, duck tape 'em... goof around with a whole set [laughs] Yeah, right. [laughs] That's fun, though. That was, that was the old school, like, 30 years ago.
• 16:25
[laughs] I actually had a, a, a guy gave me a set of handmade where he had taken screws, screwed them through the inside with a nut, and embedded the nut into the stud.
• 16:36
So I had, like, this long of studs on these 26-inch... I had them on the stump jumper I'm riding tonight. Oh, man. Huh. You could- Wow... you could ride on the side of a snowbank- [laughs]...
• 16:47
and come back down and be like, "That just happened." They also weighed, like- 54... four pounds a tire. Sure, sure. 52 pounds for the tires. Yeah. And then that's all rolling weight then, too.
• 16:56
Yeah, but then you don't ever wanna be on pavement with that, either. [laughs] Right. Oh, no, no, for sure not. Yeah, I think Jake is- They were fun, 'cause you hit the skid and you could spark.
• 17:03
[laughs] Little carbide in there. Yeah. Um, Joe, you, so Sheboygan. Yeah. We've been talking about Sheboygan. Yeah. And you obviously work up there. I do.
• 17:11
What, tell us, tell, tell our listener what you do up there in Sheboygan. Okay. I, I manage the meat department at the Slow Food Market, which is in downtown Sheboygan. It's part of the Trattoria Stefano group.
• 17:22
Um, I was chef at the Trattoria for 26 years, and then when we opened up the store, I segued over to the, over to that property.
• 17:30
Um, I've been making sausages and, you know, cutting meat and doing all the preparation for, you know, all the restaurants through all that time, um, kind of as a side gig to being a chef and then working in the kitchen and creating the food there.
• 17:43
So, um, it was always a passion of mine, you know, working with, with meats and foods and sausages. Um, so, you know, now that's kind of what I'm doing predominantly.
• 17:53
I smoke all the meats, make all the bacon, do all the charcuterie- Bacon... for, you know, the store and, uh, and supply the restaurants with their needs. And that's, um- And you're considered a f- a full
• 18:05
I, I think I read this, like a full animal butcher? Like you take- Well, we do whole animal butchering... you start with a full, whole an- whole animal, that's what it is... yeah, yeah, whole animal butchering.
• 18:12
Um, um, I'm not like the main guy. I have a, a young gentleman, uh, Alex Wright. Uh, he breaks down the, the whole animal.
• 18:20
Um, I can take on pigs and lamb and stuff like that, 'cause, I mean, I'm gonna be 65 in two months- Fuck, you're old... so it's hard for me to wrestle these big-ass pieces of beef, you know?
• 18:30
[laughs] But it's a, that's a young man's game, you know? But, uh- For sure... I mean, I can... Once, once it gets broken down into subprimals, I can go from there.
• 18:37
Um, but again, with a whole animal, it's not like the whole animal comes in, not even split, 'cause nobody has, um, um, docks and- The, the saws and stuff like that anymore, yeah...
• 18:47
yeah, or, or trucks that can carry, um, you know, whole sides of beef. Yeah, that's heavy. Yeah. Yeah, that- People don't realize how heavy it is. [laughs] Yeah, that shit just doesn't happen.
• 18:54
Nobody has, you know, uh, carcass trucks like that anymore. So it comes to us in like eight pieces, and then we take it- Okay... down from there.
• 19:02
Um, but we, you know, we search out, we get all the really great unusual cuts that you can, uh, you know, use and utilize just like a, like any other steak piece.
• 19:11
Um, a lot of lean cuts that come from the shoulder, which is the chuck, um, from the hind end, from the rounds. Um, you know, and the middle pieces are, of course, are the, the, the primo. Primo.
• 19:23
You know, you get your strip steaks or tomahawk steaks and your ribeyes- Tomahawk steak... and tenderloin and the high- I go to, I go to Milwaukee-... skirt... Steak House once in a while.
• 19:31
They have a beautiful, uh, bone-in filet. It's not a tomahawk quite, but it's got a good chunk sticking out of there. Oh, yes, yes, uh- It's tasty. Yeah. Very tasty. Yeah, I mean- I-...
• 19:41
a bone-in filet is, it's, it's like a, the porterhouse. It's way better. You know? Yeah. You know, when you get the strip steak with the tenderloin, and you get the, you know, you get the bone in between.
• 19:49
So depending on where you, you're cutting on that end of the tenderloin, you know, you get more. Then it becomes a T-bone at the very tail end- Yeah... of it.
• 19:57
But a lot of guys will take that strip off, leave the bone on the tenderloin, and cut it that way. And that's where you get your tomahawk from? No. Well, the tomahawk comes from the ribeye. Oh, okay.
• 20:06
So you, you basically, you just leave the big, long bone on it. Just- You know, and trim it back down, and then, you know, you, you, you'll cut like a one, one-bone piece that's weighs around 32 ounces or so.
• 20:18
So is that- It just looks cool, you know? Yeah. 'Cause it looks like a tomahawk. Yeah. I mean, does it like- To me, you're just paying for a lot of bone, you know? Yeah.
• 20:23
[laughs] You, you just wanna be a Neanderthal and beat your wife with it or something. Right. [laughs] You know? [laughs] Now, I have been to Slow Food. I have been in Joe's, into Joe's shop, and it's...
• 20:34
As a guy who grew up with a dad who was a butcher and a sausage maker, uh, it's pretty fantastic. That's interesting. My cousin's a butcher, too. It's like- Okay... what the hell's going? Butchers all over the place.
• 20:43
Sure. Oh. And look- You know what? Look, Joe, let me see. Looks like you still got all 10 fingers. Yeah, I got all 10. [laughs] My dad did, too. I got them. My dad did, too, you know? I got them.
• 20:51
Yeah, I, I- There, it's, uh-... build knock on wood, man. I've been very fortunate... even though there's no hills between here and Sheboygan really- We're there. [laughs] We, we are at the top of the hill.
• 20:58
Top of the hill. [laughs] Let's talk about beer today. Top of the hill- Go ahead... is when we get to the top of the hill, stop and have a beer. Yeah, stop and have a beer. Oh, sweet. Okay. [laughs] Tonight's beer is
• 21:06
Amorphic DDH Fluffy Logic- Double dry hopped... Kush. The new one? The new Crush. Crush. You keep saying Kush- I keep calling it Kush... 'cause you- Oh, so it's a new Fluffy. I don't smoke weed. Oh, nice.
• 21:17
[laughs] Um, but yeah, this is along the lines, I mean, this is his ongoing slightly modified double dry hopped IPA. Mm-hmm.
• 21:28
Um, besides being a hell of a cyclist, Ron is also, quite frankly, he's by far the best brewer in the city right now. I'm, I'm, I'm with you on that. And I'm pretty certain he's- He is... he's state or better. Yeah.
• 21:40
Well, like go win some a- well, they have won awards. Yeah. Yeah. I mean, it, it is- And-... this is outstanding... well, well, he had hands down, I think, Milwaukee for sure, you know? Yeah.
• 21:47
Um, I mean, there's a lot of good brewers around the state, but you know, he- He's-... uh, he'll match up with those guys, too. Yeah, absolutely. Have, have you talked to him about cycling since he started this brewery?
• 21:56
[laughs] And how he used to ride 8,000 miles a year? No, it's like- And now he's riding about 4,000 or less [laughs] because- Oh, man... he's just got so much time going into the brewery.
• 22:03
He's got that cool-ass gravel grinder bike. Ooh. That's some- Gravel. [laughs] Hey, speaking of gravel, you gotta check this thing out.
• 22:09
I don't, I'm pretty sure they must have an Android version, too, but Wolf Tooth has a tire pressure recommendation app for your phone. [laughs] I heard about this.
• 22:20
It told me I should have 2.4 pounds in my fat bike tires, and I'm like, "No, thank you." I can't do that. So, uh, it's not- 2.5... I'm not going there. You can't steer it. Four. [laughs] Maybe. Four is tough.
• 22:30
I mean, on- Yeah... on soft, soft sand or snow. Yeah. Maybe four. Because when your- I'm six... when your tire is, is so low pressured- Yeah...
• 22:39
especially, I mean, especially on sand, snow is so variable it's weird, but like Lake Michigan sand, if you're in that four or five pound range- Mm... the actual steering of your bike changes. Mm-hmm.
• 22:51
And that's actually a good thing in the soft conditions. So it kinda just changes where you're, um, what, what I'm trying to say here is, uh, it makes it better.
• 23:00
Not to, not only do you float better, but it actually steers better. Mm-hmm. And then obviously when you're on harder stuff, you want a little more air because otherwise it's like going this way, going that.
• 23:08
Yeah, it's like having a flat tire on your car. [laughs] Exactly. [laughs] Car just keeps going, veering off the road. Oh, shit. Yeah.
• 23:14
Um, well, yeah, I, I'll, I'll run, uh, generally I'll run like six up f- six up front and seven or eight in the back- Mm-hmm... depending on conditions. It's kinda where I am for- Yeah, it's-...
• 23:24
especially when it's, you know, packed. Like the river trails here get packed down- Mm-hmm... pretty good. Yes.
• 23:29
You don't, you don't really need the flotation quite that you would need if it was just- Speaking of river trail, I've been out there twice a week for the past two. It's about as good as it gets. Yeah.
• 23:39
So anybody- Temperature's right... here locally listening, and you're a, you know, Eastsider, River Westener, get out there and go on that trail and- Strongman Sam sent us a, sent me a picture of, uh, the,
• 23:51
the, uh, dam at Klutch Park. Damn. And it's nearly rideable. Um- That river's not gonna be rideable for a bit now. I know, for not much longer, but yeah. I rode up that years ago with Schilbowski and John Trusky. Yep.
• 24:06
Uh, that's a surreal experience. Yeah. There's water on both sides of you. Mm. You're riding up a waterfall Yep And it's like, I, at any moment you're like, "I'm going in." Yeah, Lunz and I- That's steep...
• 24:17
I don't know, were you on the... I, I did it with Lunz a c- a time or two, and it- Riding up the falls at Klutzsch? Yeah. Yeah. That's a steep drop. And it's- Dude, it's fun. It was, it was- So much fun...
• 24:26
yeah, I gotta find a picture, because there's, there's like a hole under it and water flowing- Yeah... and stuff and as long as the snowmobiles can go, I figure we're okay. Yeah, that's all I said. Yes, yeah, yeah.
• 24:35
[laughs] But I, I, I haven't seen that yet this year. No. No. Uh, but he- It's just about froze over. I, I was at Klutzsch, uh, Monday and it's still flowing pretty good there.
• 24:45
You can't ride there yet, but, um, like all those trails that, you know, um, Metro Mountain Bikers have, uh, developed in Klutzsch Park. No, it's fun. You know, I call it the North 40. Yeah.
• 24:56
So I go out, I do a big loop on the river trail and then head out there and- Uh, he said it's just starting to get there. Yeah. Oh, okay. Yeah. All right. Like, that's not just starting to get there.
• 25:04
It needs to be a lot harder than that. Right. Yeah. Right. Yeah, no, that's got a long way to go. That's- Do you, uh, do you ride a- at night a lot, Joe, when it's dark out? Not, I'm not a big night rider. Okay.
• 25:14
Um, uh, I have, but I don't usually ride. One of our, well, I still, I think I still have a couple sets of lights from Light & Motion. Remember those guys, Tony? Mm-hmm, oh. Yeah, who's now out of business. 35 years.
• 25:26
They, he, they mentioned some stuff about the political climate not being, um, good for US-based manufacturers, and they do make stuff in the US and I think after 35 years they just had enough trying to be competitive with stuff overseas, which is a shame- Hmm...
• 25:40
'cause they really are nice lights. They're phenomenal lights.
• 25:44
And I think they, I don't know if they were still headquartered in Monterey, which might have something to do with how much [laughs] stuff costs, but- [laughs] Right... uh, yeah, it's too bad to see those guys go.
• 25:53
It just, it's like every time you open the bike news- Another, yeah... paper, something's going away and- Is that, like, a recent closing? Yeah, just, like, j- they just announced it.
• 26:03
That's, yeah, like today or yesterday. And what's the other company, um, that does the really cool anodized cranks? They're gone now, too. Um. Who are they? Oh, crap. Let me see if I can find them. Oh.
• 26:14
Really sad 'cause they had some great-looking components that were also really reliable.
• 26:19
Well, if you wanna go find some anodized cranks from someone from a long time ago or something, might go to that Brazen Dropouts- Yeah, coming up... swap meet coming up, uh, basically Saturday. This- This coming?
• 26:31
Yeah, this coming. Hmm. The 18th or whatever, so yeah, 18th, whatever Saturday is. Where's that at? It's in Madison. I don't know if it's at the Alliant Center this time. It usually is. But that's, it's big. Hmm.
• 26:41
It's one of the biggest in the Midwest. It's huge, yep, yep. Might be a good place to go find some stuff you might need. Oh, I don't have it. I thought I had it here, but I don't. No worries. We can talk about it later.
• 26:55
Uh- I do- What else? Is there anything else on here that's really exciting? Uh- I s-... stuff we can talk about next week. Um.
• 27:00
A while ago I sent you a pretty neat interest- uh, article of, uh, Hackaday where someone took a, an old bike hub, electric hub, and turned it into a water wheel to generate electricity. I saw that. That was pretty cool.
• 27:16
That's interesting. Like, I like people that do weird shit like that. Where do you have enough water flowing to do that? River. Paul, Paul K. from the River West 24, he's got a river right out the side of his house.
• 27:25
Oh, okay. His, his cottage up in the Driftless region. Oh, right on. And I already talked to him. I'm like, "Dude, why are we not doing a microhydr- hydro for your, for your house?"
• 27:33
You can get them, they generate 450 watts of power to four kilowatts. Wow. Like- Well, that would be sustainable [laughs]... free power, dude. Why not do it? Yeah. You have the water right next to your, your cabin.
• 27:45
I'm all about free power. Free power. I've gone down a rabbit hole with sand batteries now. I'm always thinking about weird shit. Yeah, Tony's, Tony's got a weird streak in his brain there. Some solar.
• 27:54
He's got some solar. [laughs] All right, Joe, well- Well... uh, anything else you wanna leave us with, bikes, bike-wise or otherwise? Uh, great to have you on the show. Uh. Well- Get these fucking alleycat boost sticks.
• 28:04
[laughs] The plugin sticks, yeah. Um. Do you guys ship those nationwide? No, we do not. [laughs] Uh, [laughs] but we can get, you can get them at Draft and Vessel. That's, uh, the one, uh, place that does sell them.
• 28:15
One local. Um, I'm trying to develop more of a, the larger, um, accounts for other people that do it. I know Tony at, uh, Husky was inquiring about them 'cause the guy that he was using, uh, went out of business.
• 28:27
Ooh, those were good, too. So he had to find one out of business, yeah. Uh, c- well, the guy used to get all his spent grain and he- Oh, sure, sure... fed his animals with it.
• 28:34
So he was, you know, patronizing him, getting the snack sticks from him. Um, you know, he's obese, so, you know, he, you know, he wanted to maybe get them from me. Um, so that would be the next place that I would go to.
• 28:46
All right. I, I'm all, all about microbrewery. I mean, when I started doing this, that was my whole mind thought. 'Cause like, you know, I know all these microbrewers and, you know- Sure...
• 28:54
then it's the perfect snack stick for a- Absolutely... drink of beer, you know? Yeah. Yeah, absolutely. You know, and it's a no-brainer.
• 29:00
I just need to up my game as far as volume goes and get some people to help me make these things. Get Ron, get Ron to get them going. [laughs] That's a- Yeah, really... Slacker or Alan.
• 29:10
Maybe somebody wants to carry some sticks. Some sticks. Yeah. All right, everybody. Some sticks. Well- We did it... thanks for sitting through this thing with us again. Yeah. Yeah.
• 29:19
And, uh, we'll be back next week to sh- I- I think, uh, JK will be back next week, too. Hopefully.
• 29:27
  [upbeat music]
