Reserve - The Cheeseboard Becomes an Orchard
There is mint at the front of this cup, then the soft apple of chamomile, but something else is holding its own beneath the surface. Musky, earthy, a little like old leather or a cellar, it sits so low in the flavour that it becomes the floor the rest of the cup stands on. The smallest thing in the blend can be the one you notice last, and sometimes the note that doesn’t seem to belong is the one that changes everything.
