- 0:06SPEAKER_00: I'm I'm celebrating.
- 0:08SPEAKER_00: Are you eating you're done with dinner?
- 0:09SPEAKER_00: Are you playing Scrabble?
- 0:10SPEAKER_00: What are you doing?
- 0:12SPEAKER_01: No, I'm celebrating because we just finished Scrabble and guess who won?
- 0:17SPEAKER_00: And you didn't win because you only won one time.
- 0:19SPEAKER_00: You won?
- 0:20SPEAKER_00: I won.
- 0:20SPEAKER_00: Did she let you win?
- 0:23SPEAKER_00: Um I won.
- 0:24SPEAKER_01: Did you learn some words?
- 0:25SPEAKER_01: What happened?
- 0:26SPEAKER_01: How did that happen?
- 0:27SPEAKER_01: I I I think ultimately I just got luck of the draw and I just got better letters.
- 0:35SPEAKER_00: Better letters, that'll do it.
- 0:37SPEAKER_00: If you're not if you're a bad player and you get good letters, you can win one out of every 15-20 games.
- 0:43SPEAKER_00: That's what I learned.
- 0:44SPEAKER_01: Yeah, I mean if you get if you get better letters and and and your opponents your opponent gets crappy letters.
- 0:52SPEAKER_00: Um and then maybe you get a triple word or something.
- 0:56SPEAKER_01: Yes, I I um I had a seven-letter word.
- 1:00SPEAKER_01: I had a triple word.
- 1:00SPEAKER_01: Oh, what was your seven-letter word?
- 1:03SPEAKER_01: Um what was it?
- 1:08SPEAKER_00: It was You should be able to remember that, bruv.
- 1:12SPEAKER_01: Rebranded?
- 1:16SPEAKER_01: Reb Okay, I can't I don't remember.
- 1:21SPEAKER_00: Rebrand is seven letters.
- 1:23SPEAKER_01: Well, pla you know, I was using letter a letter that was there too, also, so Oh.
- 1:30SPEAKER_01: Yeah, yeah.
- 1:31SPEAKER_00: So Well, you know what you should do is take a picture of your games.
- 1:35SPEAKER_00: Every time when it's over, take a little snapshot, and it'll be in your phone, and then you can kind of relive it.
- 1:40SPEAKER_01: Yeah, I should.
- 1:42SPEAKER_00: You know, because then you can tell me about it and tell me what your seven letters.
- 1:46SPEAKER_00: I mean, if you get a seven-letter word, bruv.
- 1:48SPEAKER_01: Well, a lot of times we when we do a seven-letter word, we write it down.
- 1:51SPEAKER_01: So I think it's somewhere.
- 1:52SPEAKER_01: I mean, I think you know.
- 1:55SPEAKER_00: Yeah, you should write it down.
- 1:57SPEAKER_01: But yeah.
- 1:59SPEAKER_01: What's up with you?
- 2:01SPEAKER_00: I'm just getting off work and driving home, and it's it's after 10 here, which is really rare.
- 2:06SPEAKER_01: Usually your restaurant's still open.
- 2:08SPEAKER_01: I thought maybe they shut it down because you caused a stink, and you pick it in.
- 2:14SPEAKER_00: Well, I did I wanted to go to CNN, but I didn't, so I haven't gone public yet with my story.
- 2:20SPEAKER_00: So they haven't closed us down yet.
- 2:22SPEAKER_00: So I worked tonight.
- 2:24SPEAKER_00: I actually worked, which you know, I go I usually would go in from like 6 30 to 8.
- 2:31SPEAKER_00: And tonight I went in from 6 to 10, if you can believe it.
- 2:35SPEAKER_00: And I I I just I it went pretty good.
- 2:38SPEAKER_00: I talked to a bunch of customers.
- 2:40SPEAKER_00: I never made a pizza, I never poured a beer, I never busted a table.
- 2:43SPEAKER_00: Okay, but I talked to a lot of customers, and then I wrote an email to a couple managers, which took me about 30 minutes.
- 2:52SPEAKER_00: I wrote that on my phone while sitting out front of the restaurant and and concentrating on pizza.
- 2:59SPEAKER_00: Yeah.
- 3:00SPEAKER_00: And and the title of the email was The Art of Pizza.
- 3:03SPEAKER_00: And I'm trying to figure out how to train go ahead.
- 3:11SPEAKER_00: No, I mean, everything that we learn, we're always constantly learning.
- 3:15SPEAKER_00: I'm still learning the art of pizza.
- 3:17SPEAKER_00: Oh I mean, we're all still learning every day.
- 3:19SPEAKER_01: What'd you learn?
- 3:20SPEAKER_01: What's what's like give me, give, give me a little bit of a little bit of a well.
- 3:22SPEAKER_00: So the biggest the thing I'm trying to that have been that uh uh problem solving is one of my big things.
- 3:28SPEAKER_00: I love problem solving.
- 3:29SPEAKER_00: I do it all the time, and I feel like I'm really good at it.
- 3:32SPEAKER_00: And some problems are obviously harder than others.
- 3:34SPEAKER_00: Well, this problem has gone on for a long time, and it's very difficult.
- 3:38SPEAKER_00: And I've taken come at it from all different angles, and I still haven't solved it.
- 3:41SPEAKER_00: So I'm I'm I'm in I'm I'm asking these guys and my managers, I'm like, I need you guys to help me solve this.
- 3:46SPEAKER_00: Think about this for a couple weeks, let's get together and let's see if we have any good solution.
- 3:50SPEAKER_01: You gave them a thought grenade, a thought grenade.
- 3:53SPEAKER_00: A thought grenade.
- 3:54SPEAKER_00: And the thing is, just by giving them the thought grenade, it's gonna improve things, yeah, right?
- 3:59SPEAKER_00: Because now they know what I'm thinking about and they got to think about it, and then we got to talk about it, and so let's see what happens.
- 4:06SPEAKER_00: But what happens is when you're spinning a medium pizza, a 14-inch pizza, right?
- 4:11SPEAKER_00: Spinning it, you pick it up, you spin it real quick, then it spins out real evenly, you throw it on the peel, you sauce it, cheese it, drop it, cook it, comes out, you pick up a slice, it's perfect.
- 4:22SPEAKER_00: It's crispy, stiff, no flop, because it's small.
- 4:27SPEAKER_00: Right.
- 4:27SPEAKER_00: And it got spun out.
- 4:29SPEAKER_00: Now you take an 18-inch pizza and you pick it up and you start to spin it, and you've got to get it as big.
- 4:36SPEAKER_00: And what tends to happen is you over-stretch that pizza.
- 4:39SPEAKER_00: And as you're about to get it a little bit, you want to make sure it's big enough, and so you over-stretch it, and your knuckles are on the edge while you get it settled down on that peel, and then you size it down to the peel, you downsize it, and then you sauce it and cheese it and cook it.
- 4:55SPEAKER_00: And when it comes out and you pick up a slice, do you know what happens?
- 4:58SPEAKER_00: It it bends, it bends because the thinnest spot is at the edge.
- 5:03SPEAKER_01: But you got to fold it, right?
- 5:04SPEAKER_01: Don't you fold it like New York?
- 5:06SPEAKER_00: You can fold it, but it still shouldn't do that.
- 5:08SPEAKER_00: You should be able to spin it just the right size.
- 5:10SPEAKER_00: Oh, I see, not oversize it.
- 5:12SPEAKER_00: But if you go in there and you say, Hey man, you're oversizing it a little bit.
- 5:16SPEAKER_00: I want you to not do that.
- 5:17SPEAKER_00: Don't don't stretch it at the edge.
- 5:19SPEAKER_00: And you walk and they say, Okay, cool, man.
- 5:21SPEAKER_00: And then you walk away and you look back 10 minutes later, they're not doing anything different, they're still doing it the same way.
- 5:27SPEAKER_00: And you say, Hey man, careful I want you to do it this way.
- 5:29SPEAKER_00: And I and there's been times when you go and you get mad and you get pissed, and that really doesn't work.
- 5:35SPEAKER_00: That just makes everybody in a bad mood, turns the whole kitchen into a you know, into a kitchen nightmares.
- 5:41SPEAKER_00: But and then I try so lately I'm trying the nice effect, and that's not working.
- 5:46SPEAKER_00: And I'm I'm like, I won't say how what my question to the my thought grenade is this, which is a good term I've never heard.
- 5:55SPEAKER_00: How do we make people want to get better?
- 5:57SPEAKER_00: How like are you can you do this as a manager?
- 6:01SPEAKER_00: And if who's the best one in the kitchen?
- 6:03SPEAKER_00: And can we get other people to want to be better than them?
- 6:06SPEAKER_00: And how do we get people to be want to be better?
- 6:08SPEAKER_00: Like, what do we do?
- 6:09SPEAKER_00: How do we get people to want to get better?
- 6:11SPEAKER_00: How do we get people to want to get better?
- 6:13SPEAKER_00: I don't know.
- 6:14SPEAKER_01: I don't know.
- 6:14SPEAKER_01: All these years, I still don't know.
- 6:16SPEAKER_01: Yeah, that's tough.
- 6:18SPEAKER_01: Managing people's tough.
- 6:19SPEAKER_01: I've always told employees that I've had is I always said, treat treat this business like it's yours.
- 6:27SPEAKER_01: And uh what would you do if you're but I don't know that that really sinks in.
- 6:31SPEAKER_00: Like that, you can say that, but it doesn't mean anything.
- 6:33SPEAKER_01: I mean, I'm not, you know, um, yeah, I don't I I don't ever claim to be a you know good at that at managing people, but um but it's how I think about it.
- 6:44SPEAKER_01: You know, if I'm if I'm like my my my the thing I hate the I hate the phrase, I'm just gonna say it out loud.
- 6:55SPEAKER_01: I hate the phrase, it's not my job.
- 6:57SPEAKER_01: I just hate it.
- 6:58SPEAKER_01: Well, of course you do.
- 6:59SPEAKER_01: I just hate it.
- 7:00SPEAKER_01: And that's the stupid phrase.
- 7:02SPEAKER_01: Uh you know, I I I'd rather someone just go, okay, what would I do if this was my business?
- 7:08SPEAKER_01: Like what would I do?
- 7:09SPEAKER_00: Like just my Yeah, so so I my phrase is not, I mean, so instead of think of it as like your business, because to me that's kind of bounces off your brain a little bit.
- 7:18SPEAKER_00: It's hard to do that, right?
- 7:19SPEAKER_00: My phrase is is more like get good at what you do.
- 7:23SPEAKER_00: Yeah, be you know, be the best at what you like.
- 7:25SPEAKER_00: I try to get through their mind to get good at what you do.
- 7:28SPEAKER_00: It doesn't matter, like when I was washing dishes, I was the best damn dishwasher you ever saw.
- 7:33SPEAKER_00: I was fast, I was clean, I was like, now that I can wash dishes fast, I'm gonna wash dishes and not get wet.
- 7:38SPEAKER_00: Right.
- 7:38SPEAKER_00: And I would spend the next six months trying to wash dishes and never even get wet.
- 7:43SPEAKER_00: And so because I just wanted to master the job.
- 7:45SPEAKER_01: Yeah.
- 7:46SPEAKER_00: And like, and that I think if you can, if you can, and I guess you can't teach people to do that, but if you could, if you could teach them to get good at what they do, it doesn't matter what they're doing, if they're bringing people up, if they're washing dishes, if they're making pizza, if they're cutting pizza, they're if
