- 0:00SPEAKER_00: What's new?
- 0:02SPEAKER_00: Good morning.
- 0:06SPEAKER_00: I got you.
- 0:06SPEAKER_00: I got you.
- 0:07SPEAKER_01: What's your update on you you were you were going to town on this um restaurant restaurant person?
- 0:14SPEAKER_00: Did did you I'm gonna have to put you on speaker whether you like it or not.
- 0:20SPEAKER_00: Alright, so sound quality be damned.
- 0:23SPEAKER_00: I've gotta um put you on speaker for a minute.
- 0:26SPEAKER_01: Okay.
- 0:28SPEAKER_00: So that I get to the bottom of this.
- 0:31SPEAKER_01: You tell me when you're ready.
- 0:32SPEAKER_01: We've already wasted 30 seconds.
- 0:34SPEAKER_00: No, we're not wasting.
- 0:35SPEAKER_00: This is part of the the this is part of the um this is part of the uh oh my gosh, this is all part of it.
- 0:44SPEAKER_00: This is part of the build-up, bro.
- 0:46SPEAKER_00: Bro.
- 0:48SPEAKER_00: Oh my gosh.
- 0:49SPEAKER_00: So they they they they have to uh I don't even know what to say.
- 0:55SPEAKER_00: They have to um write stupid like they like when they when they when they inspect, they have to check a certain box.
- 1:03SPEAKER_00: Yep.
- 1:03SPEAKER_00: And they try to find the box that closely is closest resembles whatever the problem is.
- 1:10SPEAKER_00: Right.
- 1:13SPEAKER_00: And I was I was mad because they got they got they they write oh they just write the they write stuff okay, uh like uh I'm I'm almost there.
- 1:24SPEAKER_00: I should have been more ready.
- 1:26SPEAKER_00: Just just compose yourself.
- 1:28SPEAKER_00: Okay, so here's the deal.
- 1:30SPEAKER_00: It's not a good thing.
- 1:33SPEAKER_00: When we buy a pizza, a pizza prep table, it comes with a 20-inch cutting board on on it.
- 1:41SPEAKER_00: Of course.
- 1:42SPEAKER_00: And you slide your you slide your you and then you have your toppings, and you slide your pizza peels along the cutting board to top, and then you drop them in the oven.
- 1:52SPEAKER_00: Bada bang.
- 1:53SPEAKER_01: That's how it happens.
- 1:55SPEAKER_00: We drop our pizzas off of a wooden peel into an oven stone.
- 1:59SPEAKER_00: We don't put them on a screen, we don't put them on, we don't like some people make their.
- 2:04SPEAKER_00: I've seen people online make their pizzas right on the cutting board, and then they pull them onto a peel, a metal peel, and then slide them into the oven.
- 2:12SPEAKER_00: That's there's a lot of ways to do it.
- 2:14SPEAKER_00: The way we do it is we make it on a peel, we slide it into the oven right onto the stone.
- 2:20SPEAKER_00: The right way.
- 2:21SPEAKER_00: On the bottom of our pizzas is is flour, and that flour is what helps it slide into the oven, and that flour is gonna burn in that oven over time, and it's gonna turn the stone black, and it's gonna darken up the bottom of your pizza as it cooks.
- 2:36SPEAKER_00: Right.
- 2:36SPEAKER_00: You have an oven brush and you're brushing out the excess flour now and then, but you're still dealing with a black stone and a wooden peel.
- 2:46SPEAKER_00: Sure.
- 2:46SPEAKER_00: Just by nature.
- 2:48SPEAKER_00: And so when you put that wooden peel back on your white cutting board, any little, any little nick or cut or anything in that cutting board is gonna take on a little bit of that blackness.
- 2:59SPEAKER_00: We're not making anything on that cutting board.
- 3:02SPEAKER_00: That cutting board is just a surface to put your peel on, and the cutting board doesn't get black by any stretch of the imagination, and you can wipe it off.
- 3:10SPEAKER_00: But if you set a peel down, you're gonna get a little bit of flower dust, black flower dust on that peel on that cutting board.
- 3:17SPEAKER_00: Of course.
- 3:18SPEAKER_00: So they they check 22-02-4.
- 3:24SPEAKER_00: Observed qua observed uh colon, food contact surface soiled with food debris, comma, mold-like substance or slime, period.
- 3:37SPEAKER_00: And then they add black staining on cutting boards on reaching cooler on cook's line, and then uh asterisk, asterisk, repeat violation, asterisk, asterisk.
- 3:50SPEAKER_00: So the thing they have to check says that we have a content food contact surface.
- 3:55SPEAKER_00: First of all, that is wrong.
- 3:58SPEAKER_00: Food is not coming in contact with that cutting board surface, and then it says soiled with food debris.
- 4:07SPEAKER_00: Well, that may be true if it's if it's burnt flour, mold-like substance or slime.
- 4:13SPEAKER_00: This is not a mold-like substance, it is not slime.
- 4:16SPEAKER_00: We have no mold, no slime in the entire kitchen.
- 4:20SPEAKER_00: So I take offense and and uh you know to that to that, and I and I write to them, and I'm like, you guys, why do you like why do you like that?
- 4:30SPEAKER_00: If somebody reads this, they're gonna think we have mold or slime in our kitchen touching food, and none of that is true.
- 4:35SPEAKER_00: Right, it's just not true.
- 4:37SPEAKER_00: What do you want us to do?
- 4:38SPEAKER_00: We can't cover the thing with metal.
- 4:40SPEAKER_00: It would be, it would, there's a lot of reasons why it would you can't just cover the cutting board with metal, you don't want that slip of slippery of a surface anyway.
- 4:49SPEAKER_00: I don't, and then and then I I uh I they there's so many things like that where they have the stupidest thing that they have to check, and it makes no sense on what the problem is, and then it looks like you've got all these problems you don't have.
- 5:02SPEAKER_00: You can read, I I was reading them today.
- 5:05SPEAKER_00: I wanted to read them for the I wanted to read some of the local ones today so you could I could talk about how stupid they were.
- 5:12SPEAKER_00: But I I'm driving right now to a massage, so I can't do that maybe on another day.
- 5:17SPEAKER_00: But I'll tell you that that like you can tell when you read one, and it's like this is at 58 degrees, this is at 56 degrees, this is at 58 degrees.
- 5:27SPEAKER_00: You're like, okay, their cooler doesn't work, right?
- 5:31SPEAKER_00: And then you can tell other things when they say things that are just completely nonsensical or whatever.
- 5:36SPEAKER_00: Like the guy, like they said that uh like our the guy that we had, he had an apron on and he had gloves on, and his apron was bunching up on the side a little bit, so he reached to his apron to straighten it, and then they're like, Oh, you didn't put new gloves on.
- 5:53SPEAKER_00: He's like, I just straightened my apron, or you know, or whatever, but they want you to replace and give him a chance to replace his gloves before they said, Oh, you didn't replace your gloves.
- 6:06SPEAKER_00: It's just like people don't live that way.
- 6:09SPEAKER_00: You don't straighten out your apron and then and then replace your gloves.
- 6:13SPEAKER_00: What you do is you walk around with clean hands, and if you touch anything, you wash your hands and you wear gloves when you need to wear gloves.
- 6:19SPEAKER_00: And if you touch a clean apron when you're wearing gloves, you don't have to change your gloves every time you touch your apron because your hands aren't just floating in the air.
- 6:28SPEAKER_00: I mean, the whole thing is just so ridiculous.
- 6:30SPEAKER_00: But then you can't just go and make a Facebook rant about how stupid it is.
- 6:35SPEAKER_00: You can't go to CNN or the BBC and say this is a ridiculous thing, then these guys can shut you down.
- 6:42SPEAKER_00: Then it's like you can't do that.
- 6:44SPEAKER_00: You have to just pretend like this is all normal and what they write is normal.
- 6:48SPEAKER_00: But you want to tell the public, hey, you know, this is some bullshit.
- 6:52SPEAKER_00: This is bullshit.
- 6:53SPEAKER_00: If you want to look at a report and all the food's out of temp, they got a broken cooler.
- 6:57SPEAKER_00: If they don't have any soap or hot water or or their hand sink is blocked, they're not washing their hands.
- 7:03SPEAKER_00: Other than that, there's a bunch of bullshit that they're talking about.
- 7:06SPEAKER_00: I don't have any slime or mold in my kitchen.
- 7:08SPEAKER_00: That's total bullshit.
- 7:10SPEAKER_00: Well, you're you're and I told him as much.
- 7:13SPEAKER_00: I told him, I wrote him an email, and I told him as much.
- 7:16SPEAKER_00: And you know what the guy said?
- 7:17SPEAKER_00: He wrote me back.
- 7:19SPEAKER_00: He wrote me back the the the the uh I'm not gonna say anything because he might listen to this podcast.
- 7:25SPEAKER_00: Probably.
- 7:26SPEAKER_00: But he said, I said, what do you want me to do?
- 7:29SPEAKER_00: What do you suggest that I do?
- 7:31SPEAKER_00: I said, What, you know, I said to him, I said, okay, so what do you suggest we do to remedy the situation?
- 7:38SPEAKER_00: We won't don't want to keep we want this to keep coming back as a repeat violation.
- 7:43SPEAKER_00: But as a pizza place that drops pizzas in an oven using wooden peels, is there any idea you have to keep us from getting this violation besides having someone rebuild the equipment?
- 7:55SPEAKER_00: I'm not sure what you want us to do.
- 7:57SPEAKER_00: Like this equipment is how we buy it, we have to rebuild the equipment.
