- 0:55today's show is gonna be a good one
- 0:58we are with Mitchell the owner of three
- 1:02restaurants here in Rutherford County now
- 1:05five senses five on black and steakhouse
- 1:10five welcome good to be here thanks for
- 1:14having me we we're excited man I
- 1:19I've been,
- 1:19me and Derry both have been in this
- 1:21town since we were knee high to a
- 1:22bullfrog.
- 1:23So you have always been somebody that I
- 1:27have looked at from a restaurant
- 1:28standpoint to kind of emulate.
- 1:32Your restaurants are amazing,
- 1:33all three of them.
- 1:36I haven't actually been able to dawn the
- 1:38doors of the newest one.
- 1:40um but you have some incredible looking
- 1:46food there that I am dying to discuss
- 1:50yeah and fun playing to to check out
- 1:52so um but to start with why don't
- 1:55you introduce yourself let everybody know
- 1:57who you are and and and uh just
- 2:01a a quick snippet of how we got
- 2:03here
- 2:03all right i'm mitchell murphy uh born and
- 2:06raised in paris tennessee um sometimes
- 2:10i'll stop with the paris and people think
- 2:11wow that's what you should do you should
- 2:13work that yeah absolutely with that
- 2:15northwest tennessee yeah but still that's
- 2:18only to the train deer
- 2:21But grew up in Paris, Tennessee,
- 2:22went to school at UT Knoxville,
- 2:24and got lucky,
- 2:27got a job at the Tomato Head in
- 2:29Knoxville, Tennessee.
- 2:29I don't know if you're familiar with that
- 2:30at all.
- 2:31Great pizza place, and it...
- 2:34opened my eyes to what food was.
- 2:36I grew up pickiest kid.
- 2:38I ate pepperoni pizza.
- 2:39I ate a hamburger with mustard and that's
- 2:42it.
- 2:43Some fries.
- 2:44And I did not venture out much.
- 2:45My mom, grandmoms were both great cooks.
- 2:48But that opened my eyes to the food
- 2:50world.
- 2:50And this restaurant, Tomato,
- 2:52had lamb sausage and tofu and pesto and
- 2:56hummus and all this stuff I'd never even
- 2:58heard of.
- 2:58And I just fell in love with everything
- 3:01restaurant.
- 3:02kitchen the front of the house the
- 3:04customer employee relationship the hustle
- 3:08and bustle of it the rush on a
- 3:09friday night and i was what twenty twenty
- 3:13one when i did that and i'm forty
- 3:15nine now and that's that's all i've done
- 3:17but i ended up moving to murfreesboro i
- 3:20went to the culinary institute of america
- 3:22in hyde park new york and ended up
- 3:24moving to murfreesboro in two thousand and
- 3:27two december and uh
- 3:31get a job at as the executive chef
- 3:33at b mcneil's restaurant which is where
- 3:36five on black is now yeah i was
- 3:38going to bring that up if there was
- 3:39a connection there somehow so that's kind
- 3:40of cool no no connection necessarily i've
- 3:43always loved that building yeah but uh
- 3:45moved here to be executive chef i wasn't
- 3:47ready i had no business being being in
- 3:49charge of the kitchen at that point i
- 3:51was twenty six twenty five or twenty six
- 3:55and uh but take a leap of faith
- 3:58and and uh i sure did learn a
- 3:59lot
- 4:00I learned a whole heck of a lot,
- 4:02uh, about a whole lot of stuff.
- 4:05And, uh, so, you know,
- 4:06if I'm going to work this hard,
- 4:08you know, let's,
- 4:08let's see if we can do it on
- 4:09our own and things worked out.
- 4:11And my sister and I opened five senses
- 4:13in November of two thousand four.
- 4:15And so you were here for two years
- 4:18before you, yeah, I was here.
- 4:19I had,
- 4:19I was at B McNeil's for eleven months.
- 4:21Okay.
- 4:23And then, uh, decided,
- 4:25I think I could do this on my
- 4:26own.
- 4:28And ended up while we were building five
- 4:30senses,
- 4:31I went to work for Jody phase on
- 4:35at twelfth and Porter and cafe one, two,
- 4:36three in Nashville,
- 4:38which at that point he was at the
- 4:40end of his run.
- 4:42And are you familiar with Jody?
- 4:45I mean, I don't,
- 4:46I'm not going to emulate myself after him
- 4:48and have nine,
- 4:49nine operations like he did, but he,
- 4:51at one point as a height and the
- 4:53early to mid nineties,
- 4:54he had nine different operations running
- 4:55around Nashville.
- 4:57And he was a kingpin of Nashville.
- 4:59Unfortunately, you know,
- 5:00kind of saw him on the, you know,
- 5:01tail end of his success.
- 5:03And I helped him just kind of keep
- 5:06things in order a little bit and learned
- 5:08a lot about, again, about, you know,
- 5:14how to make things right and get things
- 5:16on the, moving back in a good path.
- 5:18But then we opened up,
- 5:20I was there for about six months,
- 5:21opened up Five Senses, like I said,
- 5:23November of before with my sister.
- 5:26and uh she kept me in line i'm
- 5:28a chef i'm back of the house i'm
- 5:30fly by the seat of my pants and
- 5:32she kind of kept everything on the
- 5:33straight and narrow getting us opened and
- 5:36and we opened up tomato tomato in which
- 5:40is a little pizza place where the alley
- 5:41is now alley on maine did a little
- 5:45uh meeting three down at the cannon county
- 5:47arts center didn't didn't work out there
- 5:50too well either so i was one for
- 5:52three at that point
- 5:55and took a long break, started catering,
- 5:57doing a lot of catering.
- 6:00One of our first big catering gigs was
- 6:02at Bonnaroo Music and Arts Festival.
- 6:04Oh, wow.
- 6:05Like for the artists?
- 6:07We did VIP for the first year.
- 6:09And then we grew at our tenth year,
- 6:12which was two thousand nineteen,
- 6:13which our last year.
- 6:15We were doing VIP and artist hospitality
- 6:18and any of the fancy fundraising things
- 6:20they did.
- 6:20We did a fundraiser for Bob Weir.
- 6:23We did a...
- 6:25Um, fundraiser for Niles Rogers, um,
- 6:29fundraiser for, uh, the edge from you too.
- 6:31Oh, we got to go hang out and,
- 6:33you know,
- 6:34rub elbows with those folks down there.
- 6:35And that was a lot of fun,
- 6:37a lot of fun,
- 6:37something totally different off the wall.
- 6:39Nothing, nothing you'll ever do like that.
- 6:42You know, another time it was,
- 6:46it was a lot of fun staff.
- 6:48We closed the restaurant down for a week,
- 6:49week and a half,
- 6:50took the whole staff down there.
- 6:51We took about eight people down there to
- 6:52work.
- 6:54Lord knows I couldn't keep up with them
- 6:55all night long.
- 6:57It's like, man,
- 6:58I just hope they don't get any phone
- 6:59calls in the middle of the night.
- 7:01That's like the high school football coach
- 7:03on a travel game.
- 7:04Like, oh, man.
- 7:06There's too many fun things for restaurant
- 7:08people to get into down here.
- 7:11But for the most part,
- 7:12we were pretty safe.
- 7:15Twenty nineteen,
- 7:15we opened up Steakhouse Five.
- 7:18And then last year, August of twenty four,
- 7:22we opened up Five on Black.
- 7:24And that's that's my first venture with a
- 7:25partner, Raul Espinoza and his wife, Bree.
- 7:30Raul worked in Los Angeles during the
- 7:34pandemic,
- 7:35and he ended up getting a job in
- 7:37the kitchen and serving at Steakhouse Five
- 7:40and came to me, said, hey, man,
- 7:41I got an idea.
- 7:42I want to open a restaurant.
- 7:43I need a little help.
- 7:44And I said,
- 7:46let's see what we can do.
- 7:47And we opened up five on black and
- 7:48him and his wife run it day to
- 7:49day.
- 7:49I just left from a meeting down there.
- 7:50I go down there and have a meeting
- 7:52once a week.
- 7:53And so it's a whole new venture.
- 7:55I'm trying to figure out doing this for
- 7:56what?
- 7:57Twenty, nearly thirty years.
- 7:59I'm trying to figure out how to work
- 8:00smarter, not harder.
- 8:02I'm not good at that.
- 8:04through it i'm just going to keep working
- 8:05harder yeah no let's try to let's try
- 8:08to do something smart for once in this
- 8:09business and um and it's it's it's been
- 8:14it's been great they they they're doing a
- 8:16great job they're exceeding for somebody
- 8:18who's as most restaurant chefs are kind of
- 8:22control freak and i get that and it's
- 8:24hard to let go and so this is
- 8:26my first step in letting go and and
- 8:28luckily
- 8:30It's with two people, uh,
- 8:31role and his wife who've been very
- 8:34successful in letting me,
- 8:35letting me do that.
- 8:36Um, it's been, it's been a,
- 8:38been a great experience so far,
- 8:39so I don't know what's next.
- 8:41We'll figure it out.
- 8:42So go ahead.
- 8:43No, I was gonna say you got, uh,
- 8:45five census over in Georgetown and then,
- 8:48um, what's the other one?
- 8:52The other one's all what I always forget.
- 8:53Steakhouse five over the fountains and
- 8:56then, uh,
- 8:57five on blacks over off downtown.
- 8:59we got a catering kitchen right we i
- 9:01could have walked here i looked it up
- 9:02today i was like where's this ridgely road
- 9:04at man i got to drive all the
- 9:05way across town to go to this thing
- 9:08two minutes walking from where i was at
- 9:10nice awesome do that so yeah so you
- 9:17went to school at ut what'd you go
- 9:20to school for ut
- 9:22Food science and technology.
- 9:24Food science and technology.
- 9:26So you have wanted to be around food
- 9:29pretty much your whole life then?
- 9:31Yeah,
- 9:31my family had a country ham business back
- 9:36in the day.
- 9:37And that's what I was going to do
- 9:38was kind of go back and go into
- 9:41the family business.
- 9:43Since I was twelve years old,
- 9:45I was in the back there rolling hams
- 9:47up in paper and putting them in the
- 9:48bags.
- 9:49getting salty cuts all over my hands.
- 9:51And that's what I, family business,
- 9:54that's what I wanted to do.
- 9:55I didn't know any different.
- 9:57And I was a junior at UT.
- 9:59My dad, mom called and said, you know,
- 10:02we've sold our share of the business.
- 10:04I said, well,
- 10:07what am i supposed to do now thanks
- 10:10for putting me in on that yeah so
- 10:12my first my first summer where i didn't
- 10:15really have any path in of what i
- 10:17was going to do in life i got
- 10:18a job in a restaurant so still food
- 10:21and uh like i said i just be
- 10:23one i fell in love with it and
- 10:26the lady maha steve of five um
- 10:30Just was the most awesome,
- 10:32awesome restaurant person you could ever
- 10:36work for.
- 10:38And she had three at one point,
- 10:40three tomato heads, one in Maryville,
- 10:41one out Westtown in Knoxville.
- 10:43But she now has a Westtown and the
- 10:45main one downtown.
- 10:46But she had opened up a place called
- 10:49Lula in Market Square.
- 10:52And she was an innovator.
- 10:54So in Market Square, downtown Knoxville,
- 10:56when I was there in the mid-nineties,
- 10:59It was the place where there was nothing
- 11:02going on.
- 11:02It was empty.
- 11:03It was a ghost town.
- 11:07We would set bread out,
- 11:08and we'd bake bread every day.
- 11:09We would set bread out at the end
- 11:10of the night,
- 11:11be able to come by and grab it
- 11:12at the end of the night,
- 11:13have some food.
- 11:15It was the only business that was in
- 11:16that whole shopping center.
- 11:17Now it's this bustling economic area of
- 11:19downtown Knoxville.
- 11:20She opened up Lula,
- 11:21which was a healthy California Mexican
- 11:24restaurant with tofu and all this stuff
- 11:27way ahead of her time.
- 11:28Knoxville wasn't ready for that in the mid
- 11:29nineties, late nineties.
- 11:31And didn't laugh, but man,
- 11:33I learned how to,
- 11:35how she operated multiple places and how
- 11:38she was able to keep the thing with,
- 11:41with operating multiple places is keeping
- 11:43your staff happy.
- 11:44Like, oh, they're, they're spending,
- 11:46they're, they're,
- 11:47he's more focused over there at that one
- 11:49than us, you know, or, you know,
- 11:51people get,
- 11:51maybe get a little jealous or whatever,
- 11:53but really learned a lot from her and
- 11:55how to operate multiple places,
- 11:58how to not do what everybody wants.
- 12:03Like everything she did was different.
- 12:07There wasn't,
- 12:09would she serve pepperoni pizza at tomato
- 12:11head?
- 12:11Yes, she would,
- 12:11but it wouldn't be anywhere near the most
- 12:13ordered thing.
- 12:15It would be, like I said,
- 12:16lamb sausage with zucchini or, you know,
- 12:20back then it was roasted red peppers,
- 12:22which were very odd for this area of
- 12:24the country.
- 12:25So I just learned a whole lot about
- 12:27restaurants from her.
- 12:29Just not always going with the flow and
- 12:31everything.
- 12:31Just fall in line.
- 12:32Yeah.
- 12:32Yeah.
- 12:33You ever find yourself now that you've got
- 12:35three units kind of treating them like
- 12:38siblings, like, okay,
- 12:40I spent a little bit of time here.
- 12:42I better go there tomorrow.
- 12:43And like, you know, because like,
- 12:45and that's something I've thought about.
- 12:46I'm not in the restaurant or hospitality
- 12:48business, but when I think about,
- 12:50you know,
- 12:55but when i think about that just that
- 13:01share of time i think a lot of
- 13:04us think it's just uh well as long
- 13:07as i have you know whatever i need
- 13:08in the kitchen ready to go you know
- 13:10don't let one run out of product or
- 13:12this or that but then you're managing i
- 13:14mean literally you triple your employee
- 13:17base you know to go to three units
- 13:18or more i don't know like once you
- 13:20start shuffling some of that so uh
- 13:23the the sibling rivalry thing kind of came
- 13:26to my mind because like me a lot
- 13:28of siblings just fight for time you know
- 13:29everybody wants that kind of thing so it's
- 13:32interesting that you brought that up that
- 13:33that's as long as you keep everybody happy
- 13:35you'll be fine uh and i think you
- 13:37can almost narrow that down to not even
- 13:39multiple units but just in in any
- 13:41operation yeah yeah because i look i i
- 13:45i've had people uh approach me at work
- 13:49and and literally think that i'm spending
- 13:51more time with someone else than i am
- 13:53them on developmental things and they want
- 13:57and you've only got one unit right you
- 13:58know what i mean so like and and
- 14:00even in my past life when i did
- 14:02have multiple you okay yeah it's the same
- 14:03thing right it's it's you know you get
- 14:05a gm here that thinks you're spending more
- 14:08time like i'm spending more time with
- 14:09dairy than i am mitchell and why am
- 14:11i spending more time with dairy does
- 14:12charlie not like me
- 14:13Did I do something?
- 14:14Why is he not around?
- 14:16You know, when it's typically,
- 14:17and he can probably attest to this as
- 14:19well, in my opinion,
- 14:21the less time I'm spending with you means
- 14:25I like you more.
- 14:27See, that's how I see it.
- 14:29Because now I trust you.
- 14:31And I think you can take care of
- 14:32it.
- 14:33You're handling business.
- 14:34I don't need to hang out with you.
- 14:35I don't have to babysit you.
- 14:37I'm trying to turn you loose.
- 14:38If I'm spending more time with you,
- 14:40then I probably...
- 14:45right there's probably things you need to
- 14:46hold your hand coming through there so
- 14:49that's i think any business i mean
- 14:50restaurants especially i mean every is not
- 14:53every business a people business when it
- 14:55comes down to it and how how the
- 14:57staff of any business interacts with with
- 15:00the customers um and how you could i
- 15:03mean
- 15:05that's what's made us successful.
- 15:06It's not what I do.
- 15:07It's that we've been able to put good
- 15:09people in positions and let them do their
- 15:11thing.
- 15:11And then they can kind of train what
- 15:15you know,
- 15:15I might want them to do or how
- 15:17to do it.
- 15:17Or, uh, they kind of take,
- 15:19take what they've learned from me and then
- 15:21they start doing it down the line.
- 15:23I think that's how it, how it goes.
- 15:24Something I've been telling people a lot
- 15:26recently.
- 15:27And I think the more I,
- 15:28the longer I own my business, um,
- 15:31the more it's becoming relevant.
- 15:33And I think you're hitting a nail on
- 15:34the head hospitality.
- 15:37is way more important than the food.
- 15:42And I think,
- 15:44I'm glad somebody that owns upper scale
- 15:48and fine dining says the same thing
- 15:50because mine is not upscale and not fine
- 15:52dining.
- 15:53but i don't think it really makes a
- 15:54difference you can have mediocre food if
- 15:57you have exceptional service absolutely
- 15:59you know like we call it undeni i
- 16:01call it undeniable hospitality right and
- 16:04and uh in our in a investor pitch
- 16:07a couple of weeks ago i stood on
- 16:08stage in front of fifty people or so
- 16:12and i told them all the same thing
- 16:14i my goal is is not to have
- 16:16the best barbecue in the world
- 16:18My goal is to have my guests leave
- 16:20my restaurant, sit in their car, and go,
- 16:22holy shh.
- 16:23That's the best damn service I've ever had
- 16:25in my life.
- 16:26Are they really that nice?
- 16:27Yeah.
- 16:28And if they're questioning,
- 16:30are my people really that nice,
- 16:33then we did our job.
- 16:34We did the right thing.
- 16:35Those people are going to come back and
- 16:36see us.
- 16:37I think that's the reason a lot of,
- 16:39not a lot,
- 16:39but the majority of restaurants that don't
- 16:43make it is they don't.
- 16:45they concentrate too much on the food or
- 16:47they concentrate too much on where the
- 16:48location is or whatever it is.
- 16:51It is such restaurants are so simple,
- 16:54but they're so hard to,
- 16:56but the simple part is if you can
- 16:58actually understand and commit to the fact
- 17:00that they're there for the experience,
- 17:03they can get food anywhere.
- 17:05And you get food wherever you,
- 17:07you treat them good.
- 17:08You know, their name, you, you make, you,
- 17:10you, they come back.
- 17:11That that's all successful restaurant
- 17:13takes.
- 17:14I mean,
- 17:15then you gotta watch your food costs.
- 17:16You gotta watch your labor costs.
- 17:18But if you have customers that you treat
- 17:19so well,
- 17:20that they continually to come back in
- 17:22nonstop year after month, after month,
- 17:24year after year,
- 17:25you're gonna be successful.
- 17:26Cause they're going to bring somebody with
- 17:26them.
- 17:28And this,
- 17:28I don't know if this is a gloat
- 17:30or a shameful thing on me.
- 17:32I'm going to pitch it to you the
- 17:33way, uh, I've eaten at, uh,
- 17:38steakhouse five, I think three times,
- 17:40two or three times.
- 17:41I can't remember.
- 17:42I've never paid.
- 17:48I bet the table with somebody with a
- 17:56bigger wallet in mind.
- 17:56And so I'm like, and they're always like,
- 17:58oh, well let us pick it up.
- 17:59I'm like, fine, go ahead.
- 18:02I haven't argued that one yet.
- 18:03So, but I could tell you now,
- 18:05I still remember my first experience
- 18:07there.
- 18:07Uh, and the, the, the waiter was this.
- 18:10tall handsome kind of italian looking
- 18:12middle eastern kind of guy i don't know
- 18:13i mean uh and he was i mean
- 18:17just on top of it didn't miss a
- 18:19beat and was right on like just and
- 18:22i there was something that came from the
- 18:23kitchen uh incorrectly i'm not gonna say
- 18:26wrong but incorrectly and he's like so
- 18:28sorry and before we could like even fully
- 18:30address it next one's on the plate you
- 18:32know whatever it was and i was like
- 18:33this is that that was exactly what you
- 18:35said
- 18:37They knew exactly what they were doing
- 18:38that night.
- 18:38It had no, like there was no shuffle,
- 18:41no way.
- 18:41Oh, oh, how we fix this.
- 18:43They were on it.
- 18:44Uh, so, and like I said,
- 18:46that was my first time and I still
- 18:48remember it more than the other times,
- 18:49but I've never paid at your restaurant.
- 18:51Let's let's take a quick break and we'll
- 18:56talk about how you've made Mitchell money
- 18:58instead of.
- 19:31All right.
- 19:32Welcome back, guys.
- 19:33I'm your man, Charlie.
- 19:34We always have our illustrious co-host,
- 19:36Mr. Derry, with us still.
- 19:37Thanks for sticking around today, Derry.
- 19:40Did you expect me to leave early?
- 19:42I don't know.
- 19:42We took a little break.
- 19:43I didn't know if you wanted to.
- 19:45You stuck around.
- 19:46Thanks.
- 19:47I'll go next door.
- 19:47Come back in thirty minutes.
- 19:49It is your season.
- 19:49I didn't know if you were doing something
- 19:51special.
- 19:53I thought we almost made it to an
- 19:54episode without a reference.
- 19:55We will never make it to an episode.
- 19:58So for those of you who don't know,
- 19:59we hadn't brought it up in a while,
- 20:01but it is fall.
- 20:03We need to visit this.
- 20:05This is Derry's season.
- 20:07He identifies as a fall and autumn
- 20:10individual.
- 20:14That was a season I was going to
- 20:16guess.
- 20:18Yes.
- 20:19I had a one in four shot.
- 20:20That's what I was going to guess.
- 20:21Oh, man.
- 20:22All right.
- 20:23Well, here we are.
- 20:24On that note, now I am leaving.
- 20:28Y'all enjoy the rest of this episode.
- 20:30That was about the best response I could
- 20:32have ever gotten.
- 20:33Golly.
- 20:34Outstanding.
- 20:34Thank you, Mitchell.
- 20:35I appreciate that.
- 20:35I was waiting.
- 20:36I appreciate the support.
- 20:39I told him I've never paid his restaurant.
- 20:41That's good.
- 20:44All right,
- 20:45so let's let's rewind just a smidge you
- 20:55started five senses in oh four.
- 20:58Is that right?
- 20:59Oh four Okay,
- 21:00so two thousand and four twenty one years
- 21:02ago.
- 21:02I
- 21:03We're youngins.
- 21:05We got our restaurant going.
- 21:07You're kicking butt.
- 21:10That was the first fine dining restaurant
- 21:14in Rutherford County, right?
- 21:15Pretty much, yeah.
- 21:17There were some nicer restaurants.
- 21:18Do you count the Parthenon?
- 21:23that's kind of the older school kind of
- 21:24like I would think that would be
- 21:25considered an upscale restaurant
- 21:27especially at the time then that's what I
- 21:30was going to say put it in that
- 21:31era and that kind of thing and you
- 21:33know and it is but I definitely like
- 21:37George did an amazing job yeah I think
- 21:39that's the one place that people would
- 21:40compare when we opened up five senses that
- 21:43was okay there you go and oh man
- 21:50oh my gosh
- 21:52Jack Barakat had, uh...
- 21:55Milano's.
- 21:56He had Milano's out by the mall.
- 21:59Right.
- 21:59By the Home Depot over there.
- 22:00Right.
- 22:01And that was what a lot of people,
- 22:04when we opened up,
- 22:05considered to be the best place in town.
- 22:07Got it.
- 22:15Got it.
- 22:15Got it.
- 22:15Got it.
- 22:16Got it.
- 22:16Got it.
- 22:16Got it.
- 22:16Got it.
- 22:17Got it.
- 22:20Got it.
- 22:21Got it.
- 22:21Got it.
- 22:21Got it.
- 22:21Got it.
- 22:21Got it.
- 22:24five on black opened or not five on
- 22:26black steakhouse five opened in nineteen
- 22:29twenty nineteen.
- 22:30OK, so fifteen years later.
- 22:33Now,
- 22:33you said you had a couple of spots
- 22:36in between there.
- 22:38But there was about a ten year spot
- 22:40in between there that you went with just
- 22:42staying with with five senses, right?
- 22:48Take me back to the moment you woke
- 22:49up and go, you know what?
- 22:51I need a steakhouse.
- 22:54Well, you know, restaurants are,
- 22:58I was listening to one of your podcasts
- 22:59earlier today and, uh,
- 23:02talked about how you don't, um,
- 23:06anybody who gets in the restaurant
- 23:08business to be rich,
- 23:10it's in the wrong business.
- 23:12Yes, sir.
- 23:13And I remember, so there's, uh, uh,
- 23:16I was in Nashville and one of the
- 23:18chefs I idolize in Nashville is depicate.
- 23:20Okay.
- 23:22I was going to say Zola,
- 23:23but it's Etch.
- 23:24She had Zola back before she,
- 23:27back in the late nineties,
- 23:28early two thousands.
- 23:29And Zola was this,
- 23:30Zola was this beacon of Nashville
- 23:32restaurants.
- 23:33I mean,
- 23:34really when we opened up here a year
- 23:36later, Watermark opened up in Nashville.
- 23:39And that's what set the Nashville
- 23:41restaurant scene off Watermark,
- 23:44was this glitzy place down in the gulch,
- 23:46this new place.
- 23:47But before then,
- 23:47Nashville had no notoriety as far as
- 23:50restaurants.
- 23:51So I loved Deb Paquette.
- 23:53And I remember the one thing, the one,
- 23:55I mean, I remember this,
- 23:56still see it to this day.
- 23:57She's back there,
- 23:58the owner of what I consider the best
- 23:59chef in Nashville,
- 24:00the best restaurant in Nashville.
- 24:02We took some people up there and ate
- 24:04one night.
- 24:04And she's back there on all fours.
- 24:07and it's in a kitchen that's half the
- 24:08size of this room's your kitchen scrubbing
- 24:11the low boy out at the end of
- 24:12the night and i'm like man she said
- 24:15yeah you know you know you don't get
- 24:17in this business to be to be wealthy
- 24:19one day i was like so what took
- 24:23me so long getting back to what took
- 24:24me so long to to opening up steakhouse
- 24:27five after you know two two ventures that
- 24:31didn't work out i didn't lose a ton
- 24:33of money they weren't huge investments
- 24:36You know, it doesn't love it.
- 24:37That was a, there was, there was many,
- 24:40many,
- 24:40many days where after I'd been had five
- 24:43sentences open for seven years now,
- 24:46it's part of the reason I was in
- 24:47this position because I had lost some
- 24:49money on the other places, but I would,
- 24:51there were days I would check my bank
- 24:52account five times a day to make sure
- 24:54a check wasn't bouncing.
- 24:55I had a little bit of reserve over
- 24:56here.
- 24:56If I needed to transfer some in.
- 24:58Yeah.
- 24:59So really seven,
- 25:00eight years into five cents, I was like,
- 25:01man, this,
- 25:03we're not going to make it now after
- 25:04seven, eight years, I say one or,
- 25:05you know,
- 25:05get through the first three or four years
- 25:06and you'll be all right.
- 25:07Right.
- 25:07So everybody,
- 25:08you make it four or five years.
- 25:09You're good.
- 25:10So no,
- 25:10that's not true at all in the restaurant
- 25:12business.
- 25:13And, uh,
- 25:14so it took me a while to get
- 25:15up some gusto to try to do something
- 25:17again.
- 25:18And I had to get some money back
- 25:19in the bank too.
- 25:21And then just something kind of clicked
- 25:22about, or so, um,
- 25:26One of the main things is I just
- 25:29took a leap and had a really key
- 25:32employee.
- 25:33I said, look,
- 25:33I need you to do more.
- 25:35I'm going to pay you.
- 25:35I don't know how I'm going to pay
- 25:37you, but I need you to do more,
- 25:39and I'm going to pay you to do
- 25:40it.
- 25:41And it was the best thing that ever
- 25:43happened to me.
- 25:45She ended up being running,
- 25:47being the general manager over the
- 25:48restaurant and catering.
- 25:50She has her own wedding event coordination
- 25:53business or event coordination,
- 25:54not just weddings business now.
- 25:56And so, you know,
- 25:59after three or four years,
- 26:00five years of that, I was like, man,
- 26:01maybe I am ready to do something else
- 26:03again.
- 26:03I felt fairly good financially.
- 26:07And the other big thing is at that
- 26:08point,
- 26:10there was no other upscale restaurant in
- 26:14Murfreesboro.
- 26:14I thought, man, this is like year twelve,
- 26:18thirteen, fourteen.
- 26:20There's not another kind of competition
- 26:22type restaurant that's come in since then.
- 26:25So I said, well, let's do another one.
- 26:29and it just so happened that scott gravy
- 26:31who's the developer for the fountains came
- 26:33in and said hey you do are you
- 26:34looking at doing another restaurant and i
- 26:36said no absolutely not get out of here
- 26:39and then i called him back the next
- 26:40day i said well maybe wait maybe maybe
- 26:43i am uh and and that's when we
- 26:45decided to do the steakhouse so why why
- 26:49not do another five senses
- 26:53Uh, I don't think,
- 26:55I think it's difficult to replicate.
- 26:58We change our menus a lot.
- 26:59Right.
- 26:59We try to do local stuff.
- 27:01We try to do seasonal stuff.
- 27:02I think it's difficult to replicate.
- 27:03Well, maybe not.
- 27:04Maybe it's the wrong question.
- 27:07So, uh,
- 27:09are you familiar with Connor concepts, uh,
- 27:11chop house and, and, uh,
- 27:13their sister sister concept.
- 27:14So they have,
- 27:15they have two restaurants that are pretty
- 27:18much identical, uh,
- 27:20um but one leans on you know heavy
- 27:23proteins i.e steaks and chops and stuff
- 27:26like that with the chop house and then
- 27:29their sister concept is more seafood why
- 27:33not do something similar to that with five
- 27:37senses um i think a lot of it
- 27:41goes back to being a hands-on and it
- 27:43may be something i look at
- 27:46in the future.
- 27:47But at that point I still,
- 27:49and I still, to this day, I love,
- 27:52I love restaurants.
- 27:53I love work.
- 27:54I still work way too much.
- 27:57Can you sit on Mitch?
- 27:57Why don't you sit back and see,
- 27:58you know, smell the roses,
- 28:00enjoy it a little bit.
- 28:01I enjoy it on Friday night at seven
- 28:03o'clock when the restaurant's full and I'm
- 28:05back there
- 28:06helping out,
- 28:07they tell me to get out of the
- 28:07kitchen now.
- 28:08I'm like, get out of the way.
- 28:10But I'm still like, no,
- 28:12I have the right to stand in here
- 28:13if I want to stand in here.
- 28:15But I am in the way most of
- 28:16the time.
- 28:16Probably not quite as fast as you used
- 28:18to be.
- 28:18Not near as fast.
- 28:20But I still love it to this day.
- 28:21And I just like the hands-on.
- 28:23I think replicating a place is not just
- 28:27what I want to do or multiple...
- 28:33places of the same style of cuisine.
- 28:38Steakhouse and Five Senses are both kind
- 28:40of upscale, but they're very different.
- 28:43The blessing for me,
- 28:44and I don't know how this happened.
- 28:46is that Steakhouse Five, Five Senses,
- 28:49and Five on Black are all three different
- 28:51clienteles.
- 28:52Yeah.
- 28:52They're not, you could go, I mean,
- 28:55it is just all,
- 28:55they're all three different and it's
- 28:56great.
- 28:57And I hope that.
- 28:59Do you find Five Senses is more born
- 29:04and raised Murfreesboro?
- 29:06Yes.
- 29:07And the rest of them are a little
- 29:09bit more implant?
- 29:12Yeah, I would say that.
- 29:13Yeah.
- 29:14Stakehouse five is definitely more expense
- 29:16account, like you're well aware of,
- 29:19and business meetings.
- 29:24Business meetings, like this week there,
- 29:26and we didn't know this.
- 29:27Gosh,
- 29:27I wish we could do better at this.
- 29:29There's some sort of automotive convention
- 29:31at Embassy Suites this week.
- 29:33Oh, okay.
- 29:34We had thirty-three reservations going
- 29:36into Monday night.
- 29:37We ended up doing ninety-eight people at
- 29:40Stakehouse Five.
- 29:41All parties of seven or eight people that
- 29:44were in for this convention,
- 29:45this automotive convention,
- 29:45Embassy Suites, came in again last night,
- 29:48different groups.
- 29:50Some came to Five Senses last night.
- 29:52There's a bunch more larger party
- 29:54reservations tonight.
- 29:56So Sagos Five is where business people
- 29:59come in, people in town, people visiting,
- 30:01conventions, dinners, business dinners,
- 30:03pharmaceutical dinners, stuff like that.
- 30:05Five Senses is much more neighborhood-y,
- 30:08regulars,
- 30:09and they all have their regulars, but...
- 30:11very much for our, you know,
- 30:13regular kind of,
- 30:14it's almost like a cheers bar.
- 30:15Yeah.
- 30:16It's a neighborhood.
- 30:17He plays,
- 30:17people drive their golf carts up there.
- 30:20Part that is comical element.
- 30:22If you've ever been in that area because
- 30:23of the neighborhood, excuse me,
- 30:25the neighborhoods behind it.
- 30:26And you'll see somebody cruise up, right.
- 30:28Where'd they come from on a golf cart.
- 30:29And you realize that it connects,
- 30:30you know, it's great.
- 30:32So house is over.
- 30:33Yeah.
- 30:35They can have one more drink and they
- 30:36don't have to worry about driving.
- 30:37That's exactly right.
- 30:37Yeah.
- 30:39I've seen a golf cart crash out going
- 30:41over that bump, getting back in.
- 30:43I've seen golf carts crash.
- 30:44I bet.
- 30:45Well,
- 30:45you got two or three different adult
- 30:49beverage places over there.
- 30:51So, I mean,
- 30:51I'm sure that you can make the rounds
- 30:52and have a good time.
- 30:54So being in restaurants for twenty five
- 30:58plus years, thirty years,
- 31:03what would be one piece of advice that
- 31:06you would give someone just starting out?
- 31:09whether it's restaurant advice or business
- 31:11advice,
- 31:12but what is the one piece of advice
- 31:14you would give someone just starting out
- 31:16in business?
- 31:19Well, the thing is to say,
- 31:21don't do it.
- 31:24Don't dare open a restaurant.
- 31:25Don't.
- 31:25But...
- 31:27I think people underestimate if they want
- 31:30it to succeed, whatever business it is,
- 31:32the,
- 31:33the initial work of those first three or
- 31:35four or five years.
- 31:36And it's, you know, like I said,
- 31:38people talk about restaurants and you get
- 31:39back to the first year,
- 31:40you're going to be all right.
- 31:40That is just not the case in any
- 31:42business, much less restaurant.
- 31:44It takes,
- 31:44you have to commit every thing you got
- 31:47for five years.
- 31:48Your family has to understand.
- 31:50yeah yeah thank thank the good lord i
- 31:54have a wonderful wife that's on you know
- 31:56golly how many wives or husbands are going
- 31:59to stick around their significant other if
- 32:00they open up five restaurants two of them
- 32:02don't make it you know you're never home
- 32:05on valentine's new year's eve mother's day
- 32:08sunday friday night saturday night
- 32:11Oh, I could come home.
- 32:11Let's go have a date night.
- 32:12I got a call.
- 32:13I can't make it home tonight.
- 32:14You know,
- 32:15I got this party that came in.
- 32:16So-and-so called out, you know,
- 32:19so people want to really know my secret.
- 32:21It's probably having a wife that lets me
- 32:23do what I do.
- 32:24Honestly, I woke up the other day.
- 32:27normal day was planning on taking the most
- 32:29of the day off.
- 32:31Um,
- 32:31I had to go in for a couple
- 32:32hours, but was planning on,
- 32:34that is a day off.
- 32:34You only got to go in like what?
- 32:35Six, eight, four, five, six hours.
- 32:38I was planning on taking that quote
- 32:40unquote day off.
- 32:41Right.
- 32:41So, and,
- 32:43and I get a message at ten forty
- 32:46and we open at eleven.
- 32:48Oh, geez.
- 32:48You already know where this is going.
- 32:51Like I'm not even in the world.
- 32:53I know what this is going.
- 32:54And my opener's not there.
- 32:55Yeah.
- 32:59What?
- 32:59Why'd you wait till ten forty to call
- 33:00me?
- 33:01Why'd you wait till twenty minutes
- 33:02beforehand?
- 33:03So that's the first thing I said when
- 33:05I walked into my cook's.
- 33:07No one noticed that the front of the
- 33:09house people weren't here yet.
- 33:12At least the friars on,
- 33:13like you can drop the stuff in and
- 33:14do what you gotta do then though.
- 33:15I mean, like, I,
- 33:16like I'm calling frantically lock the
- 33:19front door,
- 33:19make sure that nobody's coming in,
- 33:21like put a note up.
- 33:24We'll be open by.
- 33:25Like, sorry.
- 33:26Yeah.
- 33:31So I got two people, two,
- 33:32two different parties standing in front of
- 33:33my restaurant at eleven o'clock yanking on
- 33:36the front door.
- 33:36I'm like Tasmanian devil flying through
- 33:40the whole place.
- 33:41And I go up front of my guys,
- 33:42give me just a few more minutes.
- 33:43I'll have us open,
- 33:44but we are not ready yet.
- 33:47yeah so it's it's it's to be understanding
- 33:51is incredible because when you fly up to
- 33:54your wife and say hey not gonna be
- 33:57with you today no we had plans sorry
- 34:00gotta go and and they i mean their
- 34:03options are to not be with you or
- 34:07be understanding yeah and i am i'm just
- 34:10like you i am beyond blessed to have
- 34:13a wife and kids that understand that i
- 34:15may not make it to a birthday
- 34:16party right kids do you know I may
- 34:18not make it to the baseball game you
- 34:20know there's there's been it the one time
- 34:25I missed a baseball game I once in
- 34:30in my life I've missed a one baseball
- 34:33game that didn't have to do with work
- 34:37and it was the only time that I've
- 34:41ever looked at my son and saw the
- 34:43disappointment
- 34:46Never have I seen him disappointed that I
- 34:48wasn't there because I had to go to
- 34:49work.
- 34:50But the one time I went fishing broke
- 34:55his soul.
- 34:58And I will never, ever do that again.
- 35:01But it's amazing to see a now-fourteen-
- 35:05and twelve-year-old go, Okay,
- 35:08I know you got to work, Daddy.
- 35:10That's fine.
- 35:11We'll come get some wings after the game.
- 35:13And it'll be fine.
- 35:14He'll tell me about the whole game.
- 35:15yeah yep but yeah i got two i
- 35:18got two kids i got a uh a
- 35:19nineteen-year-old now and a
- 35:21fourteen-year-old and they they're as
- 35:23understanding as the wife is yeah and they
- 35:25have to be and uh i mean i
- 35:29know yours too like that there at least
- 35:31is an element there that they they've
- 35:33always kind of understood yeah dad works
- 35:35yeah and i think that's why
- 35:37works fine don't skip out to go you
- 35:40know whatever you're gonna go hang out on
- 35:45a boat yeah i was on your uh
- 35:49do your kids want to be in the
- 35:50business not at all nothing you want to
- 35:52have nothing to do with it they love
- 35:55going to eat at nice restaurants
- 35:57Yeah.
- 35:58I mean, the,
- 35:58the amount of money that my oldest son,
- 36:00he's, has,
- 36:01has spent on eating out and his life
- 36:03is more than most normal people will
- 36:06spend, you know, in a life,
- 36:08but he loves it.
- 36:09So he loves everything about restaurants,
- 36:11but doesn't dare want to be working in
- 36:14one.
- 36:14You don't want to be a part of
- 36:15it.
- 36:15Yeah.
- 36:15Yeah.
- 36:17I say he's grown up in him.
- 36:18He's, he's had years of seeing, uh, again,
- 36:20you know,
- 36:21not seeing dad home on Friday nights and
- 36:23missing his band concerts and whatever it
- 36:25is.
- 36:25Uh,
- 36:27but it's just whatever the business is
- 36:29it's pouring yourself into it for four or
- 36:31five years if if you if your end
- 36:35goal is to be really successful in that
- 36:37you have to lay the groundwork and put
- 36:40in whether it's you know operational
- 36:42controls staffing whatever it is to be
- 36:46able to enjoy it so i was like
- 36:47okay i'm gonna i'm gonna work my tail
- 36:49off for fifteen twenty years and hopefully
- 36:52get to the point where i'm at year
- 36:54twenty one
- 36:56I enjoy it now.
- 36:57I enjoy what I do.
- 37:00But for twenty years, I had no life.
- 37:02The grind.
- 37:02That's it.
- 37:03I had nothing.
- 37:07I think it's important to define what you
- 37:11would call success.
- 37:13Because like you've said a couple of
- 37:15times, and I've said it before too,
- 37:17we didn't get into this to be rich.
- 37:19Yeah.
- 37:21I got into this business to leave a
- 37:23lasting positive impact in our community
- 37:26and have a legacy, right?
- 37:28I want my grandfather's name to live on
- 37:30as someone that made an impact in the
- 37:32world.
- 37:33So how would you define success as a
- 37:35restaurant owner?
- 37:38My biggest enjoyment in what I do is
- 37:44seeing people that have worked with us,
- 37:47worked for me,
- 37:48go on to be successful in their own
- 37:50situation.
- 37:52Whether it's in the restaurant world or
- 37:54outside the restaurant world.
- 38:00Can I do some humble brags?
- 38:01Yes, of course.
- 38:02Very good.
- 38:03I like humble brags.
- 38:06So there's been two, let's see here.
- 38:10At the time,
- 38:11there was only one chef who had had
- 38:16a James Beard Award in Nashville,
- 38:17and that was Tandy Wilson at City House.
- 38:21His first two kitchen managers,
- 38:23his first kitchen manager,
- 38:26when he opened up,
- 38:27was my sous chef here.
- 38:29He came and got my sous chef.
- 38:32His second sous chef after that guy left,
- 38:35he came and got my next sous chef.
- 38:37So I was the only person when James
- 38:41Boyd Beard came and got chefs from my
- 38:43restaurant to be his kitchen managers.
- 38:45The only two-star Michelin chef at the
- 38:48time in Nashville was Jean-Georges at
- 38:51Drucy and Dar.
- 38:53Yeah, Drucy and Dar.
- 38:56His first opening kitchen manager there,
- 38:58he came and got from my kitchen.
- 39:01His second kitchen manager came and got
- 39:03from my kitchen.
- 39:05That makes me more happy that we're doing
- 39:09something right with whatever we're doing
- 39:12that people want to come and take our
- 39:15people.
- 39:17What is it we're doing?
- 39:18That makes me more happy than being full
- 39:20on a Friday night and having...
- 39:21you know, whatever,
- 39:23a twenty five thousand dollar weekend or
- 39:26having some radio or, you know,
- 39:28newspaper article written about us or
- 39:30anything like that.
- 39:31That makes me happy.
- 39:34One of the most successful restaurants in
- 39:36New Zealand right now is owned by Alex
- 39:39George from Woodbury, Tennessee.
- 39:42Worked at my pizza place,
- 39:44worked with me five or six years.
- 39:47He's he's as it's a,
- 39:49it's a hot chicken restaurant in New
- 39:50Zealand.
- 39:54I can't remember the name of it now,
- 39:56but he's, he's,
- 39:58he was last time I spoke with him,
- 40:02he was about to open up a second
- 40:03location.
- 40:04That's awesome.
- 40:05That's awesome.
- 40:05Yeah.
- 40:06Stuff like that.
- 40:07That's what excites me.
- 40:09Yeah.
- 40:09That, that success to me.
- 40:10Cause you play a part in that story
- 40:13and, and some point down the line,
- 40:15they're all gonna be like, well,
- 40:17I remember when I was at, you know,
- 40:18five cents.
- 40:19I remember when I was at steakhouse five
- 40:20and that, that,
- 40:21that you built into their storyline
- 40:23somewhere.
- 40:25And I think that's a phenomenal part of
- 40:27what you get to do when,
- 40:28because so much about the hospitality
- 40:30industry is who's walking out my door.
- 40:33Uh,
- 40:34as far as the sale and the who's
- 40:35at the table and whatever,
- 40:37but then when you're developing those
- 40:38people and you've got that as your
- 40:40background, you're like, golly,
- 40:41like there are no large competitors,
- 40:42their friends, you know,
- 40:43that kind of thing.
- 40:44Yeah.
- 40:44That, that, that's an impressive, uh,
- 40:46feat that a lot of people would,
- 40:48would skip over a mess.
- 40:49So.
- 40:49i think it ha you know you listen
- 40:51to anthony bourdain talk about who who
- 40:53staffs the kitchens in the you know that
- 40:55you don't hear about whether it's uh you
- 40:59know ex-addicts or whatever it is it's
- 41:02it's it's a motley crew in the back
- 41:04of the house in front of the house
- 41:05for that matter too but they're the people
- 41:08that work in restaurants are so real
- 41:10they're they're just real people they show
- 41:13up and they
- 41:14cook food i mean food is such such
- 41:17such sustenance it's so necessary for
- 41:19living and they're such a part of that
- 41:22and and you you feel that from the
- 41:23customers hey man somebody passed away in
- 41:27somebody's family we want you to come cook
- 41:30the food for our family that night yeah
- 41:32there's that money's not involved in that
- 41:35that's that's a man that's this is a
- 41:37personal thing
- 41:38And then, Hey man,
- 41:40can you bring so-and-so we did,
- 41:41they are so awesome when they come over
- 41:43to our house and cook, cook for us.
- 41:45The staff,
- 41:46I love the staffing and the comradery of
- 41:48restaurants as much as anything about
- 41:51restaurants.
- 41:52I love that.
- 41:52A lot of us can have that, um,
- 41:56that comradery when we become a regular
- 41:58somewhere.
- 41:59Yeah.
- 41:59So when, when Kurt was over on,
- 42:02was station grill before they moved.
- 42:03Yeah.
- 42:05Uh,
- 42:06I frequented over there and I got to
- 42:07know everybody, whatever.
- 42:08And I actually thought about this day
- 42:09because one of the barkeepers back there,
- 42:13she would like,
- 42:15there was a certain point in the night
- 42:17that we all knew each other and you'd
- 42:19come walking out of the restaurant.
- 42:20Like, did you wash your hands?
- 42:21And we're like, well, yeah,
- 42:22nobody ever said, no,
- 42:23I didn't wash my hands.
- 42:24So,
- 42:25cause they knew she was going to ask,
- 42:27but then she'd like call you on the
- 42:28car, but let me smell your hands.
- 42:30I'm like, all right, that's weird.
- 42:31But she knew if you did or not.
- 42:34And that there's a certain amount.
- 42:36And so now here I am years later,
- 42:39there's times I catch myself washing my
- 42:40hands and I'm drying them off.
- 42:41You're like, that's hilarious.
- 42:42Like it still comes back to me.
- 42:44And that's a story from, you know,
- 42:45however long ago.
- 42:46And cause you do develop that.
- 42:47So you get those relationships that you're
- 42:50not going to get anywhere else because
- 42:52it's a plate of food.
- 42:52Because like you said, when, when,
- 42:54who am I going to call?
- 42:55Uh, that it's important time,
- 42:57whether it's a celebration or a passing of
- 42:59loved one or whatever, like you said,
- 43:01the money's not involved there because
- 43:02there's a relationship that's been built
- 43:03and bonded.
- 43:04And that means a lot more than,
- 43:05than anything else at that point.
- 43:07So I just,
- 43:08that's funny that some of us just know
- 43:10each other too well.
- 43:13you uh you got a good mac and
- 43:15beans for us today i think so i
- 43:16don't know we had uh i was thinking
- 43:18about this you're you're classically
- 43:20trained you've got all this great uh
- 43:23background and and higher end restaurant
- 43:25well first let me mac or beans is
- 43:27our this or that segment you go to
- 43:30the barbecue joint are you getting mac and
- 43:33b mac and cheese or the barbecue baked
- 43:35beans i uh geez man i was just
- 43:40gonna say mac and cheese for sure
- 43:43I do love a good bowl of beans.
- 43:45I'd have to go Mac and cheese.
- 43:46All right.
- 43:47There you go.
- 43:47That's my only two options.
- 43:51Yeah.
- 43:52Mac and cheese.
- 43:52Okay.
- 43:53Yeah.
- 43:54I love some pasta and a good creamy
- 43:56sauce.
- 43:59I, at, at, at tomato head and not,
- 44:00when you say it like that,
- 44:01it just sounds so much like one of
- 44:03my, and man, I just, I,
- 44:07it's just so funny.
- 44:07Restaurants are so funny.
- 44:08I mean, I don't,
- 44:09I don't know anything different.
- 44:10That's all I've known.
- 44:11And, uh,
- 44:12I did after I worked at tomato head,
- 44:14I did an internship in Mexico and, uh,
- 44:18and, uh, for, uh, Kellogg cereal.
- 44:24Kellogg,
- 44:24we still going for Kellogg's cereal.
- 44:31That was the most.
- 44:32So I'd been in restaurants for three,
- 44:34I guess at the point two years and
- 44:37went to work at Kellogg's cereal is just
- 44:39the most corporate of the corporate of the
- 44:40corporate.
- 44:41I'm like, my God,
- 44:43I can get me back in the restaurant
- 44:45as soon as I can get back in
- 44:46there.
- 44:47Didn't want anything to do with that.
- 44:48So, uh,
- 44:50I,
- 44:50one of the ladies I worked with at
- 44:52tomato had said, man,
- 44:53we all these different cheeses.
- 44:54I never heard of these cheeses, man.
- 44:56Mitchell,
- 44:57somebody tells me that they don't like
- 44:58cheese.
- 44:59I don't trust them.
- 45:00I don't, I don't know about them.
- 45:03fair enough so makes sense the pile of
- 45:06cheese with some cream and some pasta man
- 45:07i'm pretty sad so the other part is
- 45:09you like i said you've got this background
- 45:11with finer dining higher upscale stuff
- 45:14whatever uh but when it comes down to
- 45:17it i need to know on a saturday
- 45:21afternoon or saturday evening we're
- 45:23getting ready all right you still want the
- 45:25little hole in the wall choke compute kind
- 45:28of joint or do you still want to
- 45:29go high-scale dining
- 45:32What am I doing after, after I eat?
- 45:34I don't know.
- 45:35That's between you and the wife.
- 45:37That's a good caveat.
- 45:39I like that.
- 45:40Because it's a valid point.
- 45:43Okay.
- 45:43Yeah, man.
- 45:44I don't know.
- 45:45Because if you're, you know, I mean,
- 45:48just hanging out and watching a movie and
- 45:50putting some sweats on,
- 45:51that could be a totally different meal
- 45:53than if we're going out on the town.
- 45:55If I've got money and I got some
- 45:57money in the bank.
- 45:57All right.
- 45:59I love spending money on food and drinks
- 46:03and eating out.
- 46:04So I'd go high end.
- 46:06If I, if, if, if there's,
- 46:07if I got plenty of money to burn.
- 46:08Yeah.
- 46:08Yeah.
- 46:09I don't think enough people understand.
- 46:11It's not about the money part there.
- 46:12There is something about.
- 46:15being out and enjoying that atmosphere.
- 46:18I've spent,
- 46:19I've spent amount of monies on food.
- 46:20That's disgusting.
- 46:21It's stupid.
- 46:22And to me, it's, I don't, it's,
- 46:24I don't, the money's not,
- 46:26it doesn't matter, right, man.
- 46:27I can't get this experience anywhere else.
- 46:32Any.
- 46:33think i gotta pay for it yeah but
- 46:35i can't get this anywhere right and my
- 46:38thing was especially if you're with
- 46:39friends or you know there's five or five
- 46:41six of you got a small group you
- 46:43can't develop that in any way let me
- 46:46tell you a story so ten years ago
- 46:48i took my wife to a place called
- 46:50perry's
- 46:52Not the one in Franklin.
- 46:54This was in Birmingham, Alabama.
- 46:57My boss at the time had taken me
- 46:59there to give me some bad news.
- 47:01So he wanted to buy me a nice
- 47:02bottle of wine,
- 47:03a big old juicy steak and spend some
- 47:05money on me and give me a nice
- 47:08meal thinking that that would ease the
- 47:11blow.
- 47:13And the food was amazing,
- 47:14but it wasn't even the food.
- 47:15It was the service.
- 47:16It was the experience.
- 47:17It was just the whole thing.
- 47:19You walked in and had this, you know,
- 47:21ninety pound tomahawk steak that was
- 47:23sitting in the corner.
- 47:24You, too, can have this.
- 47:27And, you know,
- 47:28the martinis were just right where they
- 47:31should be and everything was delicious.
- 47:33I was like, man,
- 47:34I got to bring my wife here.
- 47:35This is great.
- 47:36So that year for our anniversary.
- 47:41my direct supervisor was like, Hey,
- 47:44take your wife to Perry's,
- 47:46put it on your card,
- 47:48expense the whole thing,
- 47:49stay at the Marriott, do the whole,
- 47:51you know, on us,
- 47:52we'll take care of it,
- 47:54you gotta bring her here.
- 47:55Because I had been talking about it like
- 47:56every time I saw him.
- 47:58So that's what we did.
- 48:00We drove down to Birmingham,
- 48:02we got a room,
- 48:03we did the whole thing.
- 48:04Perry's was pretty much across the street,
- 48:07right?
- 48:07So we go to dinner,
- 48:09we have just this amazing meal.
- 48:12Service was impeccable.
- 48:13Hey, Mr. Ebelin,
- 48:14anything else we can get for you?
- 48:15You know, the whole deal.
- 48:17Excuse me.
- 48:21Fast forward to the next year,
- 48:23we do the same thing.
- 48:24It's the exact same experience.
- 48:25It's wonderful.
- 48:28The next year, we moved to Tennessee.
- 48:32We're back home.
- 48:34Cool.
- 48:35Two years later,
- 48:36what do they open up in Franklin?
- 48:39Perry a Perry's yeah awesome it's right
- 48:42off a forty hit on six sixty five
- 48:45go up and exit there you go Moore's
- 48:46Lane boom let's go have let's go have
- 48:48a nice dinner we're stoked stoked that
- 48:54year for the anniversary we went somewhere
- 48:57else next year
- 48:59let them work the bugs out it's a
- 49:00brand new restaurant we're going we're so
- 49:04excited we go we go in they give
- 49:08us our table the servers hey mr.
- 49:11Evelyn miss Evelyn understand you guys are
- 49:14celebrating the anniversary great
- 49:17We order our dinner.
- 49:18They got a huge,
- 49:19thirty six ounce pork chop.
- 49:21My wife wanted a steak,
- 49:23so she got a steak.
- 49:24We got some tartar.
- 49:25The whole deal.
- 49:27None of it was right.
- 49:28Oh, geez.
- 49:31And that server panicked.
- 49:36I mean, he total meltdown.
- 49:41And at that point, one mistake happened,
- 49:44two mistake happened,
- 49:45three mistake happened.
- 49:47Okay, now four.
- 49:49Now there's nothing right.
- 49:51The whole dinner was awful.
- 49:54Food was probably just as good as it
- 49:57was in Birmingham.
- 49:59But from the moment that happened,
- 50:01the experience changed, right?
- 50:04So now she doesn't want to go back
- 50:05there.
- 50:09But I guarantee you,
- 50:09if I call her right now and say,
- 50:10hey, pack your bags,
- 50:11we're going to Birmingham.
- 50:12Y'all going to Perry's in Birmingham,
- 50:13ain't you?
- 50:14She'd be like, no, let's go.
- 50:14Let's make it happen.
- 50:17Right?
- 50:19And it would have nothing to do with
- 50:20any of the dollars.
- 50:21Right.
- 50:22And everything.
- 50:23It would cost me more money to go
- 50:25to Birmingham than it would to do here,
- 50:27right?
- 50:28But it's all about the experience.
- 50:30It is.
- 50:31And that experience that we had there will
- 50:33never top anything that Perry's could ever
- 50:36do ever.
- 50:36But when I was that regular there,
- 50:38and I mean,
- 50:39I wasn't spending a ton each night,
- 50:40but you couldn't like,
- 50:42but about the experience when they saw me
- 50:44coming.
- 50:46knew where i was gonna sit if it
- 50:47was open and before i'd sit down there's
- 50:50a water and a napkin and a spoon
- 50:52and it was and it was every time
- 50:53and i didn't even and it just and
- 50:56that you realize then you've kind of
- 50:57bonded with somebody and then there's a
- 50:59story to be shared and there's a this
- 51:00or that and then you realize somebody's
- 51:02broken up with somebody now we're all
- 51:04sharing it you know and it's just you
- 51:06all start connecting all because of
- 51:08what initially was just a simple plate of
- 51:10food or i just stopped in or whatever
- 51:12and and that's where life happens across
- 51:14when that table and you're breaking bread
- 51:16and it's just a beautiful spot so look
- 51:18i've always said that there's three
- 51:19reasons why you're dining in a restaurant
- 51:21i'd love to see if you disagree with
- 51:22me or not and please feel free to
- 51:24um value convenience or relationships
- 51:32I think those are the three reasons that
- 51:34people go to eat, right?
- 51:36The value and convenience is the only
- 51:40reason McDonald's is still in business.
- 51:42It is not a culinary delight.
- 51:45It is not, right?
- 51:47i've had cardboard with more flavor right
- 51:50i mean their black coffee is pretty good
- 51:51i don't know it's got a lot of
- 51:52flavor it's just i don't know where the
- 51:55flavor is coming from yeah right but you
- 51:56know and then you go to you can
- 51:59go to some of these extremely high-end
- 52:01restaurants i.e what we were just talking
- 52:03about right and and not have a good
- 52:06experience right so and then the
- 52:08relationship is always is always to me the
- 52:11number one driver
- 52:12if you can know someone's name and make
- 52:15them feel special every time they walk in
- 52:17your doors then they're always going to
- 52:18come back they may not eat in your
- 52:20restaurant every single day right they may
- 52:22not be able to afford that they may
- 52:24not want to they may want to get
- 52:25some variety in life right but they will
- 52:28be a regular guest of yours so just
- 52:30my opinion maybe i'm right maybe i'm wrong
- 52:32who knows well i haven't had the
- 52:34opportunity to go to five on black yet
- 52:37I'm looking forward to it.
- 52:38Like,
- 52:38y'all's Instagram page there is perfect.
- 52:40I don't know who's run that.
- 52:41Well done.
- 52:41I have nothing to do with it.
- 52:43Okay, well, whoever is,
- 52:44they're killing it.
- 52:45They're doing a fantastic job.
- 52:46Because, first,
- 52:48I've never had a bad experience at either
- 52:50one of your other two places.
- 52:51Especially the ones when I didn't have to
- 52:52pay.
- 52:53But at Steakhouse Five.
- 52:55But...
- 52:57But at five senses and it is a
- 53:00very different vibe.
- 53:01Do not go to one thinking it's the
- 53:02same as the other.
- 53:03So I do want to hit the public
- 53:05with that,
- 53:05but what y'all are doing there is good.
- 53:08And I'm not just pumping you full
- 53:09sunshine.
- 53:09Like it's a truly good experience,
- 53:11which now makes me want to go to
- 53:13five on black and not to mention the
- 53:15fact that it looks like it's a whole
- 53:16different experience as well.
- 53:18And like I said,
- 53:19whoever's doing their social media page
- 53:20with their question, what, um, uh,
- 53:25did you,
- 53:27create that menu with your partner?
- 53:29Or was that more your partner?
- 53:31And you just said, Hey, I like this.
- 53:33I like that.
- 53:34What do you think about adding this?
- 53:35How did that how did that menu come
- 53:37around?
- 53:37No,
- 53:37it's I'd say it's ninety ninety five
- 53:40percent him and what they wanted to do.
- 53:45And then I would come in with like,
- 53:46you know,
- 53:47don't want to have you don't want to
- 53:49get in carrots for this one dish right
- 53:52and not use them anywhere else let's let's
- 53:54find a way to use this uh and
- 53:57on another dish or hey it's been my
- 53:59experience that man i can't give away not
- 54:02enough i'm just thinking iceberg wedge
- 54:05right nobody orders an iceberg wedge in
- 54:06this town of course obviously they do
- 54:08right stuff like that it's like man let's
- 54:11I have,
- 54:11I've had zero success trying to sell that.
- 54:14Let's not,
- 54:14let's try to be more efficient with some
- 54:16of the foods we're doing.
- 54:17Yeah.
- 54:18And I think that's what happens to a
- 54:18lot of people with,
- 54:19I want to open up a restaurant.
- 54:20Here's what I want to do.
- 54:21Here's what I want to do.
- 54:22Have on the menu,
- 54:22this and that and this and that.
- 54:23Right.
- 54:24Well, when it comes down to it,
- 54:25you got to turn that,
- 54:26that idea into a business and make it
- 54:28work from a monetary standpoint.
- 54:30And that's where you have to cut some
- 54:32stuff out, combine some things,
- 54:33shrink some things,
- 54:35maybe grow a section of the menu bigger.
- 54:38Um,
- 54:38but I was much more of the tweaking
- 54:40the things than coming up with the menu
- 54:42there.
- 54:42Yeah.
- 54:43More consulting than driving.
- 54:45Cause it's not stuff that I would
- 54:47necessarily, uh, I mean, I,
- 54:50I am proud of myself for being as.
- 54:53hands off as i have been and letting
- 54:55them do it uh obviously it takes them
- 54:58putting forth the effort and knocking it
- 55:00out of the park from day one to
- 55:02give me the confidence that it's going to
- 55:03be okay but like we had they wanted
- 55:07to do one of the things that day
- 55:08was like nacho they want to do these
- 55:10wonton nachos why are we doing i love
- 55:12corn tortillas why are we doing wontons
- 55:15with nachos you take away the gluten
- 55:16situation because you got flour and the
- 55:18wontons so
- 55:21you got a dish that you know gluten-free
- 55:23people can't can't have or whatever but it
- 55:26was this and he wanted nacho cheese sauce
- 55:28and stuff and we had just got back
- 55:30from dc and we had eaten at several
- 55:32of jose andres's restaurants yeah the
- 55:34world central kitchen guy uh he had this
- 55:38little pepper from peru uh one of his
- 55:41restaurants was a chinese peruvian uh
- 55:44fusion thing
- 55:46Ahi Amarillo.
- 55:47Ahi Amarillo.
- 55:49So it's a little yellow pepper that's
- 55:50spicy and sweet and tangy.
- 55:53And man,
- 55:54I've never tasted anything like it.
- 55:57It tasted like nacho,
- 55:59the canned tubs of nacho cheese sauce,
- 56:02but it was a pepper, fresh pepper,
- 56:03a little sour cream in there.
- 56:05Knocked my socks off.
- 56:07I said,
- 56:07so when we came back and get ready
- 56:09to do this, like,
- 56:10let's find out where the heck we get
- 56:12these.
- 56:13Luckily top men on Amazon.
- 56:15There's a thousand of them.
- 56:16Um, but you,
- 56:18you would never know to look for them.
- 56:20It just happened.
- 56:21So happened that clearly they're a popular
- 56:22thing.
- 56:24Nobody had ever heard of,
- 56:25that's not in Murfreesboro,
- 56:26Ahi Amarillo and stuff.
- 56:27So that's our sauce on the nachos,
- 56:29and it tastes like nacho cheese sauce,
- 56:30but it's a thousand.
- 56:31It has that familiar flavor,
- 56:34but it's different.
- 56:36And it's cool,
- 56:36and there's a story about it.
- 56:38That's kind of what I would do.
- 56:40Yeah, that's awesome.
- 56:40I love that.
- 56:41I love that.
- 56:41Yeah.
- 56:44Mitchell, look, man,
- 56:45I appreciate you coming to hang out with
- 56:47us for sure.
- 56:47If people are trying to,
- 56:50if they want to get ahold of you,
- 56:51make reservations at the restaurants,
- 56:53come see all the things.
- 56:54How can they do that?
- 56:56Man,
- 56:56I don't even know how they do that.
- 56:58Uh, what do you do?
- 56:59You go online, uh,
- 57:01I don't have a great way to do
- 57:03that.
- 57:03I don't know.
- 57:04Search five senses restaurant.
- 57:07We're on the socials.

- 57:35Five on black is open Sunday brunch,
- 57:37close Monday, the other,
- 57:38and then open Tuesday through Saturday
- 57:40dinner only except for Sunday brunch.
- 57:42And then five cents at steakhouse five

- 57:48Um,
- 57:49And that is,
- 57:50so we do a date night on Monday

- 58:03Monday night is our most consistent
- 58:05busiest night of the week at five cents.
- 58:07It's every single week.
- 58:08We'll do over a hundred people on a
- 58:09Monday night at a high end restaurant.
- 58:11That's awesome.
- 58:12Which is unbelievable.
- 58:13It's a good deal.
- 58:14It's only eighty bucks right now.
- 58:16One, uh, you get split an appetizer,
- 58:18split a dessert and you get two entrees.
- 58:19It's a great, great deal.
- 58:21Um,
- 58:23But it's been,
- 58:24it was little things like that.
- 58:26Figuring out little tweaks of how you can
- 58:27bring people in without just saying.
- 58:29That is an incredible deal.
- 58:31Yeah.
- 58:31I didn't know you were doing that stuff.
- 58:32Yeah.
- 58:33We do a date night and then,
- 58:35and take his wife and pay for it.
- 58:36You could, Hey,
- 58:38don't tempt me with a good time.
- 58:41Wednesday night, five of black,
- 58:42you get four courses.
- 58:50I was reading today saw some stuff going
- 58:54on and this gentleman was referring to
- 58:57just currently in his life being caught up
- 58:59in a struggle and the guy's response was
- 59:02there is no growth in the stagnant and
- 59:07when when you are just
- 59:08comfort there's no growth there struggle
- 59:11comes from pressure struggle or growth
- 59:14comes from pressure growth comes from
- 59:16tearing down to build back up growth comes
- 59:18from putting yourself in uncomfortable
- 59:20situations and so if you're going through
- 59:23struggle it's not always a negative a lot
- 59:25of times you could be growing to come
- 59:27out to the other side you'll know what
- 59:28to do if that's why you know tell
- 59:29me you love them
- 59:30Awesome.
