Hugh Allen is the chef of Yiaga, a tasting-menu restaurant set in Melbourne’s Fitzroy Gardens. Born and raised in Melbourne, Allen began his apprenticeship at 15 at Neil Perry’s Rockpool Bar & Grill, before moving to Vue de Monde. He then staged in Paris at Le Cinq and Le Pré Catelan, and spent more than three years at Noma in Copenhagen, including its Mexico and Australia pop-ups and the opening of Noma 2.0.
