Latest / The Monégasque Table / Edible Glitter on Royal Icing: Fixing Patchy Coverage
Transcript
- Dana: 3 dozen cookies for a paid order, and 11 of them came out looking like someone had breathed on them wrong. Same jar, same hand, same 20 minutes. Margaux: Welcome to The Monégasque Table. Today: why shimmer goes on royal icing in patches, and how the people who do this for money get it even. Dana: Because "it sticks" and "it looks good" turn out to be two completely different problems, and nobody warned me about the second one. Margaux: Here's the answer up front. Patchy coverage is almost never the glitter. It's that the icing was drying unevenly while you were working, so parts of the surface were still open and parts had already closed. The fix is not more glitter. The fix is to shrink the batch you have in front of you, and to stop shaking the jar directly at the cookie. Guides that teach this for a living say the same 2 things: sprinkle while the icing is still wet and glossy, and use a fine sieve if you want it even. Dana: A sieve. Like a tea strainer. Margaux: Like a tea strainer. Shaking from the jar drops the powder in clumps and streaks, because the jar releases it in slugs. A sieve breaks it into a fall. That single change is the difference between a cookie that reads as finished and a cookie that reads as sprinkled on. Dana: Walk me through what actually happened to my 11 cookies. I want to know which minute I lost them in. Margaux: Flooded royal icing doesn't dry all at once. It skins over from the edges and from the thinnest places first, and the middle of a thick flood stays open longer. So if you flood a dozen and then start glittering at the first one, by cookie 7 or 8 the earliest ones have crusted at the rim and are still wet in the centre. You dust the whole tray at once, and you get exactly what you described — shimmer in the middle, nothing at the edge, and it looks like the product failed. Dana: It looked like a batch problem. It was a queue problem. Margaux: It was a queue problem. And that's why the pros work in threes and fours, not in dozens. Flood 3, dust 3, flood 3, dust 3. It feels slower and it isn't — you stop re-doing cookies. Dana: Right, here's my round, and I think you're going to have to concede it. I do 6 dozen on a Saturday. If you tell me to work in threes, you have just added an hour to my day, and my whole margin is in that hour. What do I actually do? Margaux: That's the round you win, and there's a real answer that doesn't cost you the hour. Stop trying to glitter the flood at all. Flood everything, let the whole tray set properly, and then come back and pipe your detail — the outline, the lettering, the dot pattern, whatever the design is — and glitter only that, while the piping is fresh. You get the wet surface on your schedule instead of the icing's, the coverage is even because a piped line is a small uniform surface, and the design reads better. Shimmer on every square millimetre of a cookie is a sugar cube. Shimmer on one element is a decision. Dana: So the answer to "how do I glitter 72 cookies evenly" is "don't glitter 72 cookies." Margaux: Correct, and I'd argue that's the professional answer rather than the shortcut. It's also cheaper, which we'll come to. Dana: What about the tray I've already ruined. The 11. They're dry, they're patchy, and I'm not re-flooding them. Margaux: There's a rescue and it comes with a warning in capital letters. A decorating-supply guide that teaches this method mists dried royal icing with high-proof grain alcohol and then rolls the piece in glitter. The alcohol brings the tack back for a few seconds and then flashes off. Their instruction, and they shout it, is do not use water instead of the alcohol — water pits royal icing. You'd trade a patchy cookie for a pocked one. Dana: Water wrecks it. That's counterintuitive. Water is what I use for everything else. Margaux: Which is exactly the trap, and it's the reason surfaces get their own rules rather than one rule. There's a second version of the same rescue if you'd rather not have a spray bottle of grain alcohol on the bench: thin fresh royal icing with water to about the consistency of honey, brush it where you want the shimmer, and use that as the glue. That's the guide's own recommendation for dried icing. The glue is icing, so it disappears into the cookie. Dana: And if I just spray glitter at a dry cookie and hope? Margaux: The same guide is blunt about it — glitter put onto a fully dried cookie is very likely to wipe away. It'll look right on the tray and wrong in the box. Dana: Tell me about the powder itself, because I've been assuming all of these jars behave the same and I'm no longer confident. Margaux: They don't, and the number that separates them is particle size. Luster dust runs 5 to 25 microns. That's fine enough to sit down into the surface and read as a sheen — it's what you want on a flooded cookie or a piped line. Flake glitter runs 50 to 500 microns, so it sits proud and throws individual points of light. On royal icing a large flake gives you sparkle, not shine, and if you were expecting shine you'll read that as patchy too, even when the coverage is perfect. Dana: So half of "patchy" might be me buying the wrong texture. Margaux: A real share of it, yes. And dose matters less than people think. The serving figure printed on the drinks side of these listings is 0.1 grams — a pinch. Cookies aren't drinks and that figure isn't a measured cookie dose, so treat it as scale rather than instruction. But the scale is the point: this is a pinch product. More powder does not fix uneven powder. It just costs more and grits up the bite. Dana: Who should skip the whole thing? Margaux: 3 skips. If you're doing matte, if the design is a soft buttercream or a deliberately flat royal-icing look, shimmer fights it and you should leave it alone. If you're shipping cookies in a box that will slide around, dust the piped detail and not the flood, because a fully dusted flood transfers onto the bag. And if you're buying a jar for one cookie order and you have no other use for it, skip it — half a jar left in a drawer is money you spent on nothing. Dana: Dana's Scorecard. I came in thinking I'd been sold a bad jar. Where I landed. One: patchy is a queue problem — icing skins from the edges, so work in threes and fours or don't glitter the flood at all. Two: the professional move is to flood everything, set it, then pipe fresh detail and glitter only that, which is faster and looks better. Three: a sieve, not the jar — the jar drops it in slugs. Four: for icing that's already dry, high-proof alcohol or thinned royal icing as glue, and never plain water, because water pits it. My caveat, and I'm keeping it: the technique guidance here is decorators' craft knowledge, not a lab result, so test it on one cookie before you test it on an order. Margaux: Kept, and that's the right way to hold it. The footnote: the MONÉGASQUE 7 gram luster dusts are on Amazon at $9.99 — that's about $1.43 a gram, and at pinch doses a 7 gram jar outlives most cookie seasons. Dana: Next time, the surface nobody's application guide covers. Do you put edible glitter on meringue before it bakes, or after? Margaux: Before — and the reason why is the whole episode. One note before we go: this show is produced by the team at Monégasque, with AI-crafted hosts, and every number you heard was checked by humans against the documents. See you at the table.
