- 0:11Speaker 1: filming and selling child pornography in Michigan. These are just
- 0:15Speaker 1: some of the heinous migrant criminals caught because of President
- 0:19Speaker 1: Donald J. Trump's leadership. I'm Christy nom the United States
- 0:23Speaker 1: Secretary of Homeland Security. Under President Trump, attempted illegal border
- 0:28Speaker 1: crossings are at the lowest levels ever recorded, and over
- 0:31Speaker 1: one hundred thousand illegal aliens have been arrested. If you
- 0:35Speaker 1: are here illegally, your next you will be fined nearly
- 0:39Speaker 1: one thousand dollars a day, imprisoned, and deported. You will
- 0:43Speaker 1: never return. But if you register using our CBP home
- 0:46Speaker 1: app and leave now, you could be allowed to return legally.

- 0:57Speaker 2: Sponsored by the United States Department of Homeland Security.
- 1:00Speaker 3: Let's talk about liquor license because that's something that a
- 1:03Speaker 3: lot of people have. I've seen restaurants getting taken out
- 1:06Speaker 3: because of liquor like like they might lose their liquor
- 1:08Speaker 3: license and then they're not making enough money. How much
- 1:11Speaker 3: revenue like percentage wise, comes from a liquor license and
- 1:17Speaker 3: how hard is it? What's the challenges and actually getting
- 1:20Speaker 3: a liquor license and maintaining a liquor license.
- 1:22Speaker 4: So I have quite a few of those, but it's
- 1:26Speaker 4: it's in the city that I operate in is not
- 1:31Speaker 4: that challenging. You just have to qualify, and you have
- 1:35Speaker 4: to qualify in two ways. Your location has to qualify
- 1:38Speaker 4: and you have to qualify. So obviously, you know, you
- 1:42Speaker 4: couldn't have a listal license before and do like reckless
- 1:45Speaker 4: things with it.
- 1:47Speaker 5: You got to be responsible.
- 1:48Speaker 4: And then obviously you have to have the capital to
- 1:53Speaker 4: build your restaurant because they want to know that you're
- 1:55Speaker 4: actually you can actually build a restaurant that you're applying
- 1:59Speaker 4: for the liquor license. And the challenges sometimes is that
- 2:03Speaker 4: you know, when you're applying for the license, you're actually
- 2:05Speaker 4: building the restaurant at the same time, so you're actually
- 2:08Speaker 4: spending money while you apply for the license. The cost
- 2:11Speaker 4: of the license is not a lot of money. It's
- 2:14Speaker 4: only forty five hundred per bar right in New York City,
- 2:18Speaker 4: So that's that's not hard, but finding a location that
- 2:24Speaker 4: can be licensed can be a challenge because the liquor
- 2:29Speaker 4: authority don't want too many licenses unless it's zoned differently.
- 2:34Speaker 4: They don't want too many licenses or too much alcohol
- 2:37Speaker 4: being sold on the same block area, right, because it's
- 2:41Speaker 4: unless it's like a zone. It's zone like a Times
- 2:44Speaker 4: Square or like Bourbon Street, yeah, or things like that,
- 2:49Speaker 4: then then it's different or like Hell's Kitchen has has
- 2:55Speaker 4: a different zone. But other places and I'm assuming it's
- 2:58Speaker 4: the quality of life. They don't want too many liquor
- 3:01Speaker 4: licenses on one block. I believe it's like four might
- 3:05Speaker 4: be the max or something like that. I'm not sure.
- 3:09Speaker 4: But your location has to qualify, so it can't be
- 3:13Speaker 4: too close. I think it's the fire from your foot rolls.
- 3:16Speaker 4: You gotta be five hundred feet away from a school,
- 3:20Speaker 4: a church, and other entities that are in the Yeah,
- 3:27Speaker 4: things like that. You can't be like you can't walk out,
- 3:29Speaker 4: and then there's the nightclub, or you can't walk out,
- 3:32Speaker 4: then there's you know, things like that. You're selling the
- 3:36Speaker 4: liquor store, so you know they tried to so, so
- 3:40Speaker 4: in that essence, the actual location needs to qualify. As
- 3:45Speaker 4: well as you qualify when you get the liquor license.
- 3:48Speaker 6: When you created a chapals, obviously you gotta have food clothes,
- 3:51Speaker 6: but there's also a part of it that you have
- 3:52Speaker 6: to market to make sure that people know that it's there.
- 3:55Speaker 6: And so I'm wondering was there a marketing budget or
- 3:57Speaker 6: was it the power of the relationships that you had,
- 4:00Speaker 6: you know, cultivated throughout your career that helps inside that marketing.
- 4:04Speaker 4: So it was a combination of both. It's the power
- 4:09Speaker 4: of social media, right, So just one person or a
- 4:14Speaker 4: few people that influencers, taste makers, people that just love
- 4:20Speaker 4: the brand and you know and love.
- 4:23Speaker 5: What we do.
- 4:24Speaker 4: Can we fuse you know, our you know culture, whether
- 4:28Speaker 4: you know entertainment, music, food, fashion, We kind of fused
- 4:32Speaker 4: it together to create Brooklyn chop House. So when people
- 4:36Speaker 4: get that experience, you know, they share it. And once
- 4:40Speaker 4: they share that experience, people may say. Even today, we're
- 4:44Speaker 4: getting a lot of people in Times Square like we
- 4:47Speaker 4: just came here to see a play and to go
- 4:50Speaker 4: to Brooklyn Chop House. So we're getting after after you know,
- 4:54Speaker 4: being opened, the brand being open five years now, we're
- 4:57Speaker 4: getting people from out of state that's coming in town.
- 4:59Speaker 4: That they heard about it, or they heard someone celebrated
- 5:03Speaker 4: there that was you know, a significant you know, personal
- 5:08Speaker 4: or celebrity or artists or athlete, you know, celebrated at
- 5:12Speaker 4: the restaurant. And they see the social media because it's
- 5:17Speaker 4: not really like the news, it's.
- 5:19Speaker 5: Just social and people posting how much.
- 5:23Speaker 6: They This episode is brought to you by P and

- 8:13Speaker 2: Sponsored by the United States Department of Homeland Security.
- 8:15Speaker 4: Joy they experience how much they enjoy the food. They're
- 8:18Speaker 4: taking pictures of the food, and you know, that's really
- 8:23Speaker 4: what has spread the word around it and in the
- 8:28Speaker 4: relationships obviously, you know help. You know, I come from
- 8:31Speaker 4: a promotion promotion background, so I used to I left
- 8:35Speaker 4: this part of I used to throw parties as well,
- 8:37Speaker 4: like one two big parties a year, so you know,
- 8:40Speaker 4: I had a small you know network of people that
- 8:44Speaker 4: came to support. But it's not just that, it's just
- 8:47Speaker 4: the brand is standing on its own and you know
- 8:51Speaker 4: the experience of when you know they come there. The
- 8:55Speaker 4: two most important things obviously the food. People like the food.
- 8:58Speaker 4: But you know, you want to have a good experience
- 9:00Speaker 4: in a nice place.
- 9:02Speaker 3: Yeah, like I said, you know, they see me there
- 9:04Speaker 3: probably at least once a week. So yeah, doing my
- 9:08Speaker 3: promotional purposes. So let's ask you. Let me ask you this.
- 9:12Speaker 3: So you said the two biggest costs that you could
- 9:15Speaker 3: control our food and labor. Yes, you talked about food
- 9:18Speaker 3: and talk about labor.
- 9:19Speaker 4: Okay, so labor you have to be able to control,
- 9:23Speaker 4: to schedule correctly, know your market, right, So I don't
- 9:29Speaker 4: open for lunch, right. Lunch at one point prior to
- 9:32Speaker 4: COVID was a big seg daytime part, a big segment
- 9:36Speaker 4: of the business. But right now it's not as big
- 9:40Speaker 4: in certain markets as it used to be because it's
- 9:44Speaker 4: the traffic isn't the same.
- 9:46Speaker 5: The traffic change.
- 9:47Speaker 4: People aren't working, people aren't working as much from the office.
- 9:52Speaker 4: Maybe it's three and two right, or maybe it's all
- 9:56Speaker 4: at the Maybe it's all at the office. So I mean, sorry,
- 10:00Speaker 4: all at home. So what happens is you have to
- 10:04Speaker 4: know your you know, traffic patterns, you have to know
- 10:07Speaker 4: how to schedule. And that's a huge cost because obviously,
- 10:13Speaker 4: you know, there's a lot of a lot that goes
- 10:14Speaker 4: into labor, and you know, New York, New York City,
- 10:18Speaker 4: you know requires that you know, you do it the
- 10:22Speaker 4: right way. So, you know, we we pride ourselves on
- 10:26Speaker 4: having quite a few employees that help us execute. When
- 10:29Speaker 4: you're busy, you need more employees. So, but when you're
- 10:32Speaker 4: not busy, there's you know, some slow times you have
- 10:35Speaker 4: to know how to you know, control your schedule.
- 10:38Speaker 6: What are some other costs that associated with the business.
- 10:41Speaker 6: Obviously said food and labor, but there's other costs that
- 10:45Speaker 6: people probably aren't aware of if they're trying to get
- 10:47Speaker 6: into the space that they probably should be aware of
- 10:49Speaker 6: and prepare for if they're going.
- 10:50Speaker 5: To Yeah, so I think knowing your location.
- 10:54Speaker 4: You know, you heard the term location, location, location, knowing
- 10:58Speaker 4: the right location or the concept that you're doing right.
- 11:03Speaker 5: So, for instance, you might not.
- 11:05Speaker 4: Want to open up subways in your neighborhood when everyone's
- 11:11Speaker 4: at work during lunch, right because the subways is primarily
- 11:16Speaker 4: a sandwich is primarily a lunchtime item. So you might
- 11:19Speaker 4: want to position your franchise or your brand.
- 11:24Speaker 5: If you.
- 11:27Speaker 4: If you focus on lunch, you might want to put
- 11:30Speaker 4: that there an office complex where people at work where
- 11:34Speaker 4: people need to grab lunch. Right, So it's all location, right,
- 11:39Speaker 4: So I think that, and you know, obviously negotiating the deal,
- 11:43Speaker 4: and you know, try not to have high rents, which
- 11:46Speaker 4: is tough in certain markets. That's a non controllable cost
- 11:53Speaker 4: because that's a fixed cost.
- 11:55Speaker 5: Right.
- 11:55Speaker 4: So you have fixed costs that you have to obviously
- 11:58Speaker 4: be aware of, you from garbage to electric to you know,
- 12:03Speaker 4: rent and you know, cleaning services and things that you
- 12:08Speaker 4: must have as.
- 12:10Speaker 5: Far as running a restaurant.
- 12:12Speaker 4: So you have the fixed costs, and then you have
- 12:15Speaker 4: things that are in your control that you must control
- 12:20Speaker 4: else it hurts your bottom.
- 12:21Speaker 3: So you've got the variable costs and fixed costs.
- 12:25Speaker 5: Insurance you're putting that.
- 12:26Speaker 4: To insurance would be a fixed cost because you can't
- 12:29Speaker 4: you can't control an insurance rate.
- 12:38Speaker 1: An illegal alien from Guatemala charged with raping a child
- 12:42Speaker 1: in Massachusetts. An MS thirteen gang member from Al Salvador
