Scientists may have uncovered why we can’t resist fatty foods—and it’s not the same for everyone. A brain protein called OPA1, found in hunger-regulating cells, plays a key role in appetite and fat metabolism. In male mice, fatty foods like soybean oil boosted OPA1 levels, but not in females. Mice lacking OPA1 ate more, gained weight faster, and especially overindulged in fats when given a choice—highlighting stark sex-based differences.
