- 0:18Speaker 2: higher proof espidine captures the tewar in essence of its transparent,
- 0:23Speaker 2: expressive native spirit. Great on the rocks or in a cocktail.
- 0:26Speaker 2: Pick up a bottle for this weekend at your local
- 0:28Speaker 2: wine and liquor store today. Feel better, Feel all right,
- 0:36Speaker 2: feel tallenger under the weather.
- 0:41Speaker 1: There is ladies and gentlemen. The shifty eye.
- 0:44Speaker 3: This.
- 0:46Speaker 2: Shifty eye make himself not trustworthy building.
- 0:51Speaker 4: The shifty eyed sneak that runs the that runs the
- 0:55Speaker 4: Wine Academy of Utah.
- 0:59Speaker 5: We have any started sampling yet.
- 1:03Speaker 6: I knew it would make him mean.
- 1:05Speaker 4: Whine Academy at Utah dot com. I've had one sip
- 1:08Speaker 4: of this stuff. I'm ready to go to now.
- 1:12Speaker 6: See now, Jimmy has turned me into a Mescale fan
- 1:15Speaker 6: over at Tequila.
- 1:16Speaker 3: You know it's something else.
- 1:18Speaker 5: Misscal is definitely an up and coming spirit and here
- 1:22Speaker 5: to stay.
- 1:22Speaker 3: This is Zenkudo. This is a new spirit on the market.
- 1:26Speaker 3: For us.
- 1:27Speaker 5: Uh, this is delicious. It's got the subtle smoke coming through.
- 1:31Speaker 5: It's the Espadeen is the agave we're using here, and
- 1:37Speaker 5: that they it is known as the mother of all
- 1:39Speaker 5: at gaves.
- 1:40Speaker 3: And this for alcohol by volume, nice and smooth. Love
- 1:45Speaker 3: the label.
- 1:46Speaker 5: It's got a mosquito on it, and that's what Zenkudo
- 1:50Speaker 5: interprets in Spanish mosquito. Yeah, it means mosquito. They have
- 1:54Speaker 5: a few different styles of this. This particular bottle that
- 1:57Speaker 5: I'm holding is yes, available right now in the wine stores.
- 2:02Speaker 5: Great neat on its own. I got a cub or
- 2:05Speaker 5: two in there for you exactly. You can make a
- 2:08Speaker 5: mexical and Negroni out of it, or other style cocktail
- 2:11Speaker 5: should you wish. A Negroni has equal parts of sweet
- 2:16Speaker 5: removeth and red bitter liqueur.
- 2:19Speaker 3: I prefer the cappelletti. The cappelletti is red.
- 2:23Speaker 2: Have turned me into a Cappellidi fan.
- 2:25Speaker 6: Yeah, we converted some people this nice party this week.
- 2:29Speaker 1: They loved it, very nice.
- 2:30Speaker 3: And then the dole in sweet remove.
- 2:32Speaker 5: I like the French remooth in this because it's a
- 2:35Speaker 5: bit more or basic.
- 2:36Speaker 3: Want me to make you one. It's a bit more
- 2:41Speaker 3: Why do we have you here? Yeah, what's going on?
- 2:46Speaker 1: Have another drink, Jimmy.
- 2:48Speaker 3: Here's another part.
- 2:50Speaker 6: But people who like tequila for some reason, I haven't
- 2:55Speaker 6: tried mescal.
- 2:56Speaker 1: I don't really care for tequila, but I like this.
- 2:58Speaker 1: But once you discover mess hell, you go what have been?
- 3:03Speaker 6: I mean, tequila is great, but there's just something about mescal.
- 3:06Speaker 6: It's it's just got that different feel. And I credit
- 3:09Speaker 6: Selena Gomez.
- 3:11Speaker 4: You know, we should have a package of her oreos
- 3:15Speaker 4: with with mescal.
- 3:18Speaker 3: A little little lot here. I can do this because
- 3:21Speaker 3: this spas.
- 3:23Speaker 1: And that's just the.
- 3:26Speaker 5: So now this is Capelletti Capelletti's a red bitter of liqueur.
- 3:30Speaker 5: Rivals is a spirit based Capelletti's a wine bass. I
- 3:34Speaker 5: prefer that because it's got a bit more of a mouthfeel.
- 3:36Speaker 3: The Swede sweede for mooth. The franchise like because it's
- 3:41Speaker 3: more herbaceous.
- 3:41Speaker 5: You could use an Italian swede for mooth, but it's
- 3:45Speaker 5: just got too much caramelization and things going on with it.
- 3:48Speaker 5: You're gonna overwhelm some of the subtle nuances, not only
- 3:51Speaker 5: from the red bitter liqueur, but also from the smokiness
- 3:54Speaker 5: of the mescale itself.
- 3:56Speaker 1: So what do we know about this company?
- 3:58Speaker 5: The family owned, generational family are working in the fields.
- 4:03Speaker 5: They're located down there in Wahaka area and very artisanal
- 4:08Speaker 5: and they which means their hands on the product. You know,
- 4:12Speaker 5: they're not it's not a big manufacturing these this is
- 4:15Speaker 5: still small production. In fact, on the back of the
- 4:18Speaker 5: label it says A lot zan Za z A n
- 4:23Speaker 5: dash zero zero.
- 4:25Speaker 3: One, So likely the first batch.
- 4:29Speaker 1: Yeah, you're telling me that that bottle is how much?
- 4:32Speaker 3: Fifty three bucks? Fifty three? Yeah? Is that what I have?
- 4:38Speaker 5: It's a big bottle, big bottle, some fifty mil Uh.
- 4:42Speaker 5: It's a it's a crafted product. It's fine, it will
- 4:45Speaker 5: last for a while. Yeah, well.
- 4:49Speaker 4: It depends. Yeah, sure it is Pride Weekend. Yeah, so
- 4:54Speaker 4: that's it's made by the Zappothech family. Yeah, sixth generation
- 4:59Speaker 4: and they Yeah, it's sit down in Wahaca where they
- 5:02Speaker 4: have apparently very big mosquitoes.
- 5:05Speaker 6: Yeah.
- 5:05Speaker 2: Is that actual size on the label.
- 5:08Speaker 1: That's an awful looking.
- 5:12Speaker 3: I like.
- 5:13Speaker 1: I like the label. It's the labels great label.
- 5:16Speaker 3: It'll stand out on your barshelf.
- 5:20Speaker 5: Sustainability and also they've got a nice QR code down
- 5:25Speaker 5: there for additional information. A lot of great videos through
- 5:29Speaker 5: their website and uh just a real heartfelt. Uh it's
- 5:34Speaker 5: just there's a lot of realism going on with this company.
- 5:38Speaker 3: They are definitely hand their hands on and.
- 5:43Speaker 5: Uh uh they've got as I said, lot one and
- 5:46Speaker 5: the Zancuro Mezcal Artisanal. This is the Espadine gave that's
- 5:52Speaker 5: the mother of all the gaves.
- 5:54Speaker 3: And this is great neat.
- 5:56Speaker 4: If I got it, if I must have misread this
- 6:00Speaker 4: sixth generation Zapotech distiller. So it's not the it says
- 6:05Speaker 4: down here Zappo Tech family, but I think it's the
- 6:07Speaker 4: family lives in Zapotech Wahaka. It's the Morales family. Yeah,
- 6:12Speaker 4: Carlos Morales.
- 6:13Speaker 5: Uh uh mescallera and uh yeah, what a title. But
- 6:21Speaker 5: you're right, you know, mezcal is a product that a
- 6:26Speaker 5: style of an agave based spirit out of Wahaka. You
- 6:29Speaker 5: mentioned tequila that's got to be out of Jalisco, and
- 6:32Speaker 5: you're using a different agave that's the Azul or blue
- 6:37Speaker 5: Weber agave typically and uh you do.
- 6:41Speaker 3: Also somebody just asked this the other day.
- 6:43Speaker 5: You can yes, age mezcal also an oak barrel for
- 6:47Speaker 5: that repisado kind of style. And then there's a pachugas
- 6:52Speaker 5: where you'll hang protein in the tank for a definite
- 6:56Speaker 5: for a secondary yeah, yeah, yeah, abbot venison. Yeah, and
- 7:03Speaker 5: you'll just yep, and you can even do uh snake
- 7:09Speaker 5: they snake.
- 7:10Speaker 1: Turkey, I want to snake protein.
- 7:15Speaker 5: But this pt and that that softens the smoke, but
- 7:19Speaker 5: it's more for this was a ceremonial kind of a technique,
- 7:24Speaker 5: and you do see some of those. There are a
- 7:26Speaker 5: few bars in town that really emphasize special ordering. You hang,
- 7:30Speaker 5: you hang the protein right inside the still so you
- 7:33Speaker 5: secondary ferment. You send it through distillation twice or third
- 7:38Speaker 5: time again after the product's finished, and as it comes up,
- 7:42Speaker 5: it not only cooks proteins, but you're now getting these
- 7:44Speaker 5: additional connagers out from that protein. What do you do
- 7:48Speaker 5: with the protein when it's I'd like to think in
- 7:51Speaker 5: ceremonial purposes, they're they're applying it off and and ingesting
- 7:54Speaker 5: it and eating it. I would, I would suspect, and yeah,
- 7:59Speaker 5: it's pretty cool put you in this.
- 8:02Speaker 1: There are a lot of cats on my neighbors.
- 8:05Speaker 3: No more.
- 8:07Speaker 5: What I like about the reason I'm bringing that up
- 8:09Speaker 5: is this has such a fine, subtle smoke, but it's
- 8:13Speaker 5: it's it's definitely there. It's so characterful and I know
- 8:16Speaker 5: I'm using the words subtle and so characterful and it
- 8:18Speaker 5: might be contradictory.
- 8:20Speaker 3: It's this is just layered and complex, really messcal.
- 8:23Speaker 5: This is a really I'm super glad response, right, I
- 8:28Speaker 5: mean I've had I was gonna say, I've had a
- 8:30Speaker 5: few messcals and you've you've given me what was I
- 8:32Speaker 5: thought my favorite message?
- 8:33Speaker 6: Okay, this one is now my new favorite messcal and
- 8:36Speaker 6: this was.
- 8:36Speaker 3: New to our market, right yeah, brand new. Yeah. Yeah,
- 8:39Speaker 3: that's a good one, really good.
- 8:41Speaker 4: So again it's what is it called the.
- 8:45Speaker 3: Zancudo Zancudo Mescal. This is a great label.
- 8:49Speaker 5: It's easy to find, It's distributed throughout the wine stores
- 8:55Speaker 5: and uh fifty nine bones. So it's one that's going
- 8:58Speaker 5: to be great. Neat on the rocks or as we
- 9:01Speaker 5: just prepared a cocktail for you, a simple Negroni style cocktail,
- 9:05Speaker 5: equal parts sweet, remove your red, bitter liqueur and missus.
- 9:09Speaker 1: I just love it on the rocks. Look for the
- 9:11Speaker 1: mosquito on the labels.
- 9:12Speaker 3: Yeah great.
- 9:15Speaker 2: So what what events do you have company?
- 9:18Speaker 5: You know this Sunday where a clearwater distilling doing a
- 9:20Speaker 5: cigar uh, and spirits pairing. We're featuring the Josephine that's
- 9:24Speaker 5: their Aquavie or Odovi. And then next Thursday we're at
- 9:29Speaker 5: Tracy Aviary for Wine Takes Flight our Cellar Club where
- 9:32Speaker 5: it's a multi course wine dinner.
- 9:34Speaker 3: Followed by jazz on the lawn. So that's a fun one.
- 9:38Speaker 3: Go to. Yeah, that's gonna be a good one.
- 9:39Speaker 5: Go to winicataviewta dot com for more information or those
- 9:42Speaker 5: respective businesses for ticket sales.
- 9:45Speaker 3: That's great. Thanks guys, enjoy your weekend. Be safe. I
- 9:50Speaker 3: hope everyone grabs a boll of this mescal. Do enjoy
- 9:53Speaker 3: all week and long.
- 9:54Speaker 1: Thank you.
- 9:55Speaker 4: It's TAngelo, the iron fisted Dictator at Wine Academy if
- 9:59Speaker 4: you jaw dot com.
