• 1:31
the-restaurant-guys_2_12-07-2025_133724: You don't, you don't know how the show's gonna go.
• 1:33
the-restaurant-guys_2_12-07-2025_133724: Alright, so I wanna talk about, though it's kind of a wintry feel.
• 1:37
the-restaurant-guys_2_12-07-2025_133724: I, read about, the furthest north fine dining restaurant in the world.
• 1:42
the-restaurant-guys_2_12-07-2025_133724: Oh, that was a cool article.
• 1:43
  the-restaurant-guys_2_12-07-2025_133724: Yeah, it's haha.
• 1:45
  the-restaurant-guys_2_12-07-2025_133724: Oh, it's, it's a cold, it was a cold article.
• 1:47
the-restaurant-guys_2_12-07-2025_133724: So I'm gonna tell some things about it to our listeners.
• 1:50
the-restaurant-guys_2_12-07-2025_133724: And Mark, you can, uh mm-hmm.
• 1:51
  the-restaurant-guys_2_12-07-2025_133724: This is kind of.
• 1:52
the-restaurant-guys_2_12-07-2025_133724: My, my little thing and you can, you can tell me what you think as we go.
• 1:55
the-restaurant-guys_2_12-07-2025_133724: So Hu said, this is, um, an article by Jeffrey ue, I think is how you pronounce his name.
• 2:01
the-restaurant-guys_2_12-07-2025_133724: He writes for today, he has his own substack.
• 2:04
the-restaurant-guys_2_12-07-2025_133724: It's a great article and he talks about his visit to Hue, the world's northernmost fine dining restaurant.
• 2:10
the-restaurant-guys_2_12-07-2025_133724: It is at the southern limit of the area and this is what defines the Arctic Circle.
• 2:14
the-restaurant-guys_2_12-07-2025_133724: I did not know that the, it's the area in which the summer solstice for one day, the sun does not set.
• 2:22
  the-restaurant-guys_2_12-07-2025_133724: And the winter salts.
• 2:23
the-restaurant-guys_2_12-07-2025_133724: This, it does not rise.
• 2:24
the-restaurant-guys_2_12-07-2025_133724: And so the, the Arctic Circle is where for at least 24 hours, you get full sunshine and that defines the Arctic and the Antarctic circle.
• 2:33
the-restaurant-guys_2_12-07-2025_133724: By the way, this writer's great.
• 2:34
  the-restaurant-guys_2_12-07-2025_133724: I'm one paragraph in.
• 2:35
  the-restaurant-guys_2_12-07-2025_133724: I learned something.
• 2:36
the-restaurant-guys_2_12-07-2025_133724: I was gonna say what I, what?
• 2:37
the-restaurant-guys_2_12-07-2025_133724: You know what I love about this show?
• 2:39
the-restaurant-guys_2_12-07-2025_133724: The restaurant guys get to learn things.
• 2:41
the-restaurant-guys_2_12-07-2025_133724: I know when we do this show, we are smarter for having done this show.
• 2:44
the-restaurant-guys_2_12-07-2025_133724: So you fly up to Svalbard.
• 2:46
the-restaurant-guys_2_12-07-2025_133724: Uh, and then you go take a three hour plane ride to the town, which I love the name of Long Yen.
• 2:54
the-restaurant-guys_2_12-07-2025_133724: Why, why do you think that is?
• 2:56
  the-restaurant-guys_2_12-07-2025_133724: Right?
• 2:57
the-restaurant-guys_2_12-07-2025_133724: Now you may, you may ask what, what sort of, uh, constraints or things define their cuisine.
• 3:03
  the-restaurant-guys_2_12-07-2025_133724: Um, well.
• 3:05
the-restaurant-guys_2_12-07-2025_133724: Nothing fucking grows up there.
• 3:07
  the-restaurant-guys_2_12-07-2025_133724: That's one thing, uh, that's a problem.
• 3:09
the-restaurant-guys_2_12-07-2025_133724: Well, no, they're growing seasons like six weeks, right?
• 3:11
  the-restaurant-guys_2_12-07-2025_133724: Yeah.
• 3:11
the-restaurant-guys_2_12-07-2025_133724: Some, some incredibly short period of time to grow things, which is a shame'cause they get all that sunlight for, for half a year.
• 3:18
the-restaurant-guys_2_12-07-2025_133724: Well, so they used to eat polar bears.
• 3:20
the-restaurant-guys_2_12-07-2025_133724: They no longer allow that.
• 3:22
the-restaurant-guys_2_12-07-2025_133724: However, the polar bears still will eat you.
• 3:24
the-restaurant-guys_2_12-07-2025_133724: So, so they have warning signs about that.
• 3:26
the-restaurant-guys_2_12-07-2025_133724: Um, I, I've told you this before, I, I do enjoy eating things that would otherwise eat me.
• 3:32
  the-restaurant-guys_2_12-07-2025_133724: Yeah, yeah.
• 3:32
the-restaurant-guys_2_12-07-2025_133724: Well, you can't have the polar bear.
• 3:33
the-restaurant-guys_2_12-07-2025_133724: So there thought to be poisonous.
• 3:35
the-restaurant-guys_2_12-07-2025_133724: I don't know if that's true or not, that's just in this article.
• 3:37
the-restaurant-guys_2_12-07-2025_133724: He doesn't elaborate, but he said, um, when they used to eat polar bears, you would have to sign a release saying, if I get sick from this polar bear, I do not hold you liable.
• 3:45
the-restaurant-guys_2_12-07-2025_133724: And, uh, a sign from 1939 still hangs on the wall that he set restaurants.
• 3:49
  the-restaurant-guys_2_12-07-2025_133724: Right?
• 3:49
the-restaurant-guys_2_12-07-2025_133724: Well, kind of like, you know, if you've left the fish out too long, maybe, maybe, uh, I, I know some restaurants that maybe should.
• 3:55
the-restaurant-guys_2_12-07-2025_133724: Should put that on the menu.
• 3:57
  the-restaurant-guys_2_12-07-2025_133724: That's very funny.
• 3:58
  the-restaurant-guys_2_12-07-2025_133724: That's very funny.
• 3:58
the-restaurant-guys_2_12-07-2025_133724: Alright, so what do they do for food up there?
• 4:01
the-restaurant-guys_2_12-07-2025_133724: So there's six to 12 weeks of growing season, no fresh produce.
• 4:04
the-restaurant-guys_2_12-07-2025_133724: Most of the year they work with local hunters and fishermen.
• 4:07
the-restaurant-guys_2_12-07-2025_133724: Uh, so they harvest such delicacies as, um.
• 4:10
  the-restaurant-guys_2_12-07-2025_133724: Mosses a few berries.
• 4:14
the-restaurant-guys_2_12-07-2025_133724: Uh, and as you might imagine, it's a restaurant that's really based on preservation techniques, like mm-hmm.
• 4:18
the-restaurant-guys_2_12-07-2025_133724: Fermenting, curing, smoking, pickling, and drying.
• 4:21
the-restaurant-guys_2_12-07-2025_133724: They work with local hunters and fishermen, which is great.
• 4:24
the-restaurant-guys_2_12-07-2025_133724: Well,'cause you got 40 weeks a year that nothing grows.
• 4:27
  the-restaurant-guys_2_12-07-2025_133724: Yeah, right.
• 4:28
  the-restaurant-guys_2_12-07-2025_133724: So that's a long time.
• 4:29
the-restaurant-guys_2_12-07-2025_133724: Just so you know, that's a big part of a year.
• 4:31
  the-restaurant-guys_2_12-07-2025_133724: 40 weeks.
• 4:31
  the-restaurant-guys_2_12-07-2025_133724: Yeah.
• 4:32
  the-restaurant-guys_2_12-07-2025_133724: It's a big part.
• 4:33
the-restaurant-guys_2_12-07-2025_133724: And the thing about it is, while that's the northern most fine dining restaurant, people eat up there.
• 4:36
  the-restaurant-guys_2_12-07-2025_133724: Mm-hmm.
• 4:36
the-restaurant-guys_2_12-07-2025_133724: People live up there and, but they don't, you know, grow corn.
• 4:39
the-restaurant-guys_2_12-07-2025_133724: let's talk about some of the ingredients.
• 4:40
the-restaurant-guys_2_12-07-2025_133724: 'cause I thought this was fascinating.
• 4:42
the-restaurant-guys_2_12-07-2025_133724: So first ingredient, the crown jewel of Arctic cuisine, FBAR reindeer.
• 4:49
the-restaurant-guys_2_12-07-2025_133724: That seems very un Christmasy at the Christmas show, does it not?
• 4:53
the-restaurant-guys_2_12-07-2025_133724: But I wanna tell you about the Fbar reindeer.
• 4:55
the-restaurant-guys_2_12-07-2025_133724: Uh, they are plump, short-legged, and utterly unhurried.
• 4:59
the-restaurant-guys_2_12-07-2025_133724: So these couldn't be the flying reindeer that Santa uses.
• 5:02
the-restaurant-guys_2_12-07-2025_133724: These are, those are the Santa uses only the fastest reindeer.
• 5:05
  the-restaurant-guys_2_12-07-2025_133724: Yeah.
• 5:06
  the-restaurant-guys_2_12-07-2025_133724: Yeah.
• 5:06
the-restaurant-guys_2_12-07-2025_133724: So he's gotta get all the way around the world.
• 5:07
the-restaurant-guys_2_12-07-2025_133724: But when you talk about hunting up there, it sounds like nobody has a lot of energy'cause it's fricking cold.
• 5:12
the-restaurant-guys_2_12-07-2025_133724: So, um, the creature is unlike any other reindeer.
• 5:16
the-restaurant-guys_2_12-07-2025_133724: It lives without fear because there are no wolves to chase it and no predators to test its speed.
• 5:22
the-restaurant-guys_2_12-07-2025_133724: And I want to put a parenthetical in there.
• 5:24
  the-restaurant-guys_2_12-07-2025_133724: Almost little reindeer almost.
• 5:27
the-restaurant-guys_2_12-07-2025_133724: You know what the problem with articles like this are?
• 5:30
  the-restaurant-guys_2_12-07-2025_133724: What's that?
• 5:31
the-restaurant-guys_2_12-07-2025_133724: Well, now everybody in the world is gonna be like.
• 5:34
the-restaurant-guys_2_12-07-2025_133724: I gotta have some reindeer.
• 5:35
the-restaurant-guys_2_12-07-2025_133724: No, we're not even done yet.
• 5:36
  the-restaurant-guys_2_12-07-2025_133724: Right?
• 5:36
the-restaurant-guys_2_12-07-2025_133724: I gotta have some reindeer and what's gonna happen.
• 5:40
the-restaurant-guys_2_12-07-2025_133724: First of all, I love this author.
• 5:41
the-restaurant-guys_2_12-07-2025_133724: We have to get him on the show.
• 5:43
the-restaurant-guys_2_12-07-2025_133724: Jennifer, can we reach out to Jeffrey ue his, he, it's a beautifully written article.
• 5:47
  the-restaurant-guys_2_12-07-2025_133724: It's, it's very, very written.
• 5:48
the-restaurant-guys_2_12-07-2025_133724: It's very funny, very informative.
• 5:50
the-restaurant-guys_2_12-07-2025_133724: Okay, so he talks about the life of the reindeer up there without predators.
• 5:54
the-restaurant-guys_2_12-07-2025_133724: And he writes in this piece, it grows round, rich and fatty.
• 5:58
the-restaurant-guys_2_12-07-2025_133724: It's flesh marbled with a quiet luxury of an untroubled life.
• 6:02
the-restaurant-guys_2_12-07-2025_133724: Until, okay, here's what I'm gonna say.
• 6:05
  the-restaurant-guys_2_12-07-2025_133724: Until we come, if.
• 6:07
the-restaurant-guys_2_12-07-2025_133724: If polar bears could read, that's what they'd be reading about me.
• 6:12
the-restaurant-guys_2_12-07-2025_133724: But they can't get down here to get you'cause you're never going up to the north pole.
• 6:16
  the-restaurant-guys_2_12-07-2025_133724: You ready?
• 6:16
  the-restaurant-guys_2_12-07-2025_133724: The see goes on.
• 6:17
the-restaurant-guys_2_12-07-2025_133724: This is, this is gonna, but you know that right?
• 6:19
the-restaurant-guys_2_12-07-2025_133724: That somewhere in a different dimension there's a, there's polar bears are farming meat where the apex predator.
• 6:26
  the-restaurant-guys_2_12-07-2025_133724: Yeah.
• 6:27
the-restaurant-guys_2_12-07-2025_133724: So let him think everything's okay.
• 6:29
the-restaurant-guys_2_12-07-2025_133724: That seems to be the theme up there with hunting.
• 6:31
the-restaurant-guys_2_12-07-2025_133724: We'll go on a little more about that, but you ready for this?
• 6:33
the-restaurant-guys_2_12-07-2025_133724: Here's how he describes it though.
• 6:35
the-restaurant-guys_2_12-07-2025_133724: The Wagyu of the north, A miracle of fat and flavor.
• 6:39
the-restaurant-guys_2_12-07-2025_133724: Born from moss, lichen, and polar air.
• 6:42
the-restaurant-guys_2_12-07-2025_133724: Each bite tells the story of endurance made tender.
• 6:45
the-restaurant-guys_2_12-07-2025_133724: Arctic austerity turned into opulence.
• 6:48
  the-restaurant-guys_2_12-07-2025_133724: Right?
• 6:48
  the-restaurant-guys_2_12-07-2025_133724: Hold on to taste.
• 6:49
  the-restaurant-guys_2_12-07-2025_133724: Hold on.
• 6:49
the-restaurant-guys_2_12-07-2025_133724: To taste is to taste the arctic's most intimate secret.
• 6:53
the-restaurant-guys_2_12-07-2025_133724: That even the world's harshest place perfection can come from stillness.
• 6:58
the-restaurant-guys_2_12-07-2025_133724: Who the fuck is this guy?
• 6:59
  the-restaurant-guys_2_12-07-2025_133724: Okay, ready?
• 7:00
  the-restaurant-guys_2_12-07-2025_133724: Yep.
• 7:01
  the-restaurant-guys_2_12-07-2025_133724: Me, me, me, me.
• 7:03
  the-restaurant-guys_2_12-07-2025_133724: I don't know.
• 7:05
  the-restaurant-guys_2_12-07-2025_133724: I don't know perfection from stillness.
• 7:07
the-restaurant-guys_2_12-07-2025_133724: I, I don't know perfection from Doritos and bowling maybe.
• 7:11
  the-restaurant-guys_2_12-07-2025_133724: I dunno.
• 7:12
the-restaurant-guys_2_12-07-2025_133724: Um, so the best of Svalbard reindeer, I didn't know there were, uh, grades.
• 7:17
the-restaurant-guys_2_12-07-2025_133724: but the, uh, the Huett reindeer is done with a cherry glaze and Jerusalem artichoke.
• 7:24
the-restaurant-guys_2_12-07-2025_133724: It's perfect in every way.
• 7:26
the-restaurant-guys_2_12-07-2025_133724: Um, the reindeer loin was as tender.
• 7:28
the-restaurant-guys_2_12-07-2025_133724: I love this guy who, Jennifer, get this man on the show.
• 7:32
the-restaurant-guys_2_12-07-2025_133724: The reindeer loin was as tender as you might hope, a lazy reindeer to be.
• 7:39
the-restaurant-guys_2_12-07-2025_133724: Okay enough with the lazy onto the next.
• 7:43
the-restaurant-guys_2_12-07-2025_133724: An ode to this fowled, Targin Targins a bird, by the way, um, the Fbar rock Parmesan is one of the arctic's toughest survivors.
• 7:52
the-restaurant-guys_2_12-07-2025_133724: It is the only bird that stays on the island year round with the harsh conditions.
• 7:57
  the-restaurant-guys_2_12-07-2025_133724: Um, it doesn't migrate.
• 8:00
the-restaurant-guys_2_12-07-2025_133724: And so it's like a small feathered tank compared to its mainland relatives.
• 8:04
the-restaurant-guys_2_12-07-2025_133724: It's larger and heavier and has thicker plumage.
• 8:07
the-restaurant-guys_2_12-07-2025_133724: That is a little like you thicker plumage.
• 8:09
  the-restaurant-guys_2_12-07-2025_133724: I like that.
• 8:10
  the-restaurant-guys_2_12-07-2025_133724: Plump and juicy.
• 8:11
the-restaurant-guys_2_12-07-2025_133724: That's, that's those, those words describe me to a T, but here we have again, uh uh, along a theme with few natural predators in the north.
• 8:19
the-restaurant-guys_2_12-07-2025_133724: These birds don't really need to stay on high alert.
• 8:22
the-restaurant-guys_2_12-07-2025_133724: Until we come around, they are a bit, and I love this guy.
• 8:26
the-restaurant-guys_2_12-07-2025_133724: They're a bit lazier, slower and heavier, and not nearly as quick to take off as regular targin uh, during hunting season.
• 8:34
the-restaurant-guys_2_12-07-2025_133724: It can almost feel unfair as the bird doesn't seem to really care when you turn up.
• 8:39
  the-restaurant-guys_2_12-07-2025_133724: We'll teach those birds.
• 8:40
the-restaurant-guys_2_12-07-2025_133724: You see, we've forgotten the, the, it seems that the planet has forgotten that human beings can hunt anything into extinction at any moment.
• 8:49
the-restaurant-guys_2_12-07-2025_133724: Well, that's the other thing about this though, they're very, uh, environmentally responsible.
• 8:53
  the-restaurant-guys_2_12-07-2025_133724: Mm-hmm.
• 8:53
the-restaurant-guys_2_12-07-2025_133724: And they're not hunting anything to extinction.
• 8:55
the-restaurant-guys_2_12-07-2025_133724: It's part of the regular food chain.
• 8:56
the-restaurant-guys_2_12-07-2025_133724: And let's be honest, mark.
• 8:58
  the-restaurant-guys_2_12-07-2025_133724: They're not doing 200 on a Saturday night.
• 9:00
the-restaurant-guys_2_12-07-2025_133724: You know what I mean?
• 9:01
the-restaurant-guys_2_12-07-2025_133724: And there's no line outside how many covers we got tonight?
• 9:03
  the-restaurant-guys_2_12-07-2025_133724: Yeah, seven.
• 9:05
  the-restaurant-guys_2_12-07-2025_133724: Exactly.
• 9:05
the-restaurant-guys_2_12-07-2025_133724: And there's no line around the block.
• 9:07
the-restaurant-guys_2_12-07-2025_133724: 'cause you would freeze to death waiting in a line around the block.
• 9:10
  the-restaurant-guys_2_12-07-2025_133724: Okay.
• 9:11
the-restaurant-guys_2_12-07-2025_133724: Uh, so the pure taste of swallow bard comes in, this bird served in a sea buckthorn sauce and fermented chanterelles.
• 9:18
  the-restaurant-guys_2_12-07-2025_133724: I don't know what buckthorn is.
• 9:21
the-restaurant-guys_2_12-07-2025_133724: My guess is you've never been cold enough to see buckthorn.
• 9:24
  the-restaurant-guys_2_12-07-2025_133724: Yeah, I think you're probably right.
• 9:26
the-restaurant-guys_2_12-07-2025_133724: It could be a plant, it could be a bird, it could be a tree.
• 9:28
the-restaurant-guys_2_12-07-2025_133724: I have no idea what it could be.
• 9:29
  the-restaurant-guys_2_12-07-2025_133724: Leather.
• 9:30
  the-restaurant-guys_2_12-07-2025_133724: I don't know what it is.
• 9:31
the-restaurant-guys_2_12-07-2025_133724: Um, perfectly prepared and this is the cool thing, not possible anywhere else in the world.
• 9:36
the-restaurant-guys_2_12-07-2025_133724: 'cause you can't export any of this stuff anywhere else in the world.
• 9:39
  the-restaurant-guys_2_12-07-2025_133724: All right.
• 9:40
the-restaurant-guys_2_12-07-2025_133724: Next item up on the menu, Arctic ring seal.
• 9:44
the-restaurant-guys_2_12-07-2025_133724: Now the arctic ring seal is not in danger.
• 9:46
the-restaurant-guys_2_12-07-2025_133724: It is the main prey of polar bears.
• 9:48
  the-restaurant-guys_2_12-07-2025_133724: Mm-hmm.
• 9:49
the-restaurant-guys_2_12-07-2025_133724: Polar bears are in danger'cause the ice is melting.
• 9:51
the-restaurant-guys_2_12-07-2025_133724: But the ring seal is having a great time.
• 9:53
the-restaurant-guys_2_12-07-2025_133724: So we're gonna chip in and help the polar bears.
• 9:55
the-restaurant-guys_2_12-07-2025_133724: I need some of those ring seals.
• 9:56
the-restaurant-guys_2_12-07-2025_133724: Um, can I tell you why I'm weird?
• 9:58
the-restaurant-guys_2_12-07-2025_133724: Uh, let me count the ways I'm gonna tell you.
• 10:01
the-restaurant-guys_2_12-07-2025_133724: Just, just a weird thing about me reindeer.
• 10:04
  the-restaurant-guys_2_12-07-2025_133724: No problem.
• 10:05
the-restaurant-guys_2_12-07-2025_133724: I'm going to eat a reindeer seal.
• 10:07
the-restaurant-guys_2_12-07-2025_133724: I'm like, ah, we gotta eat a seal.
• 10:10
  the-restaurant-guys_2_12-07-2025_133724: Really?
• 10:11
  the-restaurant-guys_2_12-07-2025_133724: Yeah.
• 10:12
  the-restaurant-guys_2_12-07-2025_133724: I don't know.
• 10:13
the-restaurant-guys_2_12-07-2025_133724: I just, dude, quail, quail are cute.
• 10:15
  the-restaurant-guys_2_12-07-2025_133724: I don't, what, what can I tell you?
• 10:16
the-restaurant-guys_2_12-07-2025_133724: Funny rabbits, I, I, there's, they operate in different spaces in my brain, seals and reindeers.
• 10:22
the-restaurant-guys_2_12-07-2025_133724: I want to eat the reindeer, the plump, juicy, delicious Wagyu, reindeer and the seal.
• 10:27
  the-restaurant-guys_2_12-07-2025_133724: I'm kind of like, I don't know.
• 10:28
  the-restaurant-guys_2_12-07-2025_133724: Uh, yeah.
• 10:29
the-restaurant-guys_2_12-07-2025_133724: Well, I'm like, I'm gonna disagree with you on this one.
• 10:31
the-restaurant-guys_2_12-07-2025_133724: They also serve things like, there's a strange invasive sea urchin.
• 10:36
  the-restaurant-guys_2_12-07-2025_133724: That they eat that.
• 10:37
  the-restaurant-guys_2_12-07-2025_133724: So that's a really good thing.
• 10:38
the-restaurant-guys_2_12-07-2025_133724: We get that damn thing outta, I feel like we should be eating that, right?
• 10:40
the-restaurant-guys_2_12-07-2025_133724: We use the word invasive.
• 10:41
the-restaurant-guys_2_12-07-2025_133724: I feel like we should make the crap out.
• 10:43
  the-restaurant-guys_2_12-07-2025_133724: Anything invasive.
• 10:43
  the-restaurant-guys_2_12-07-2025_133724: Yeah.
• 10:43
the-restaurant-guys_2_12-07-2025_133724: It's the crap outta it.
• 10:44
  the-restaurant-guys_2_12-07-2025_133724: Right?
• 10:44
the-restaurant-guys_2_12-07-2025_133724: And these ingredients pop up everywhere in the serving style.
• 10:47
the-restaurant-guys_2_12-07-2025_133724: They're served on rocks, shells, fossils, and antlers, which is pretty cool.
• 10:51
the-restaurant-guys_2_12-07-2025_133724: Um, you ready for this?
• 10:53
the-restaurant-guys_2_12-07-2025_133724: How many times can you use antlers?
• 10:55
the-restaurant-guys_2_12-07-2025_133724: You know, you think like, like.
• 10:57
the-restaurant-guys_2_12-07-2025_133724: Eight uses, and then you gotta get a new set of antlers.
• 11:00
the-restaurant-guys_2_12-07-2025_133724: Or you think you can use antlers for decades.
• 11:01
the-restaurant-guys_2_12-07-2025_133724: As long as you keep using the reindeer, the antlers come with it.
• 11:04
  the-restaurant-guys_2_12-07-2025_133724: It's all, it's a whole purpose thing.
• 11:05
the-restaurant-guys_2_12-07-2025_133724: But here's the, this really surprised me.
• 11:08
the-restaurant-guys_2_12-07-2025_133724: Um, uh, do you put'em in a dishwasher?
• 11:09
the-restaurant-guys_2_12-07-2025_133724: Do you, how do you clean an antler?
• 11:11
the-restaurant-guys_2_12-07-2025_133724: I, I do not know the answer.
• 11:12
the-restaurant-guys_2_12-07-2025_133724: Rub it against a tree.
• 11:13
  the-restaurant-guys_2_12-07-2025_133724: I don't, I don't know.
• 11:14
the-restaurant-guys_2_12-07-2025_133724: Um, here, but here's the thing.
• 11:16
  the-restaurant-guys_2_12-07-2025_133724: Ready?
• 11:16
  the-restaurant-guys_2_12-07-2025_133724: Uh, wine list.
• 11:17
the-restaurant-guys_2_12-07-2025_133724: How many bottles do you think they have in the wine cellar?
• 11:20
  the-restaurant-guys_2_12-07-2025_133724: 14, 20,000 bottles.
• 11:23
the-restaurant-guys_2_12-07-2025_133724: In a thousand bottle list.
• 11:25
  the-restaurant-guys_2_12-07-2025_133724: Yeah.
• 11:25
the-restaurant-guys_2_12-07-2025_133724: And the Arctic Circle, that's 14 is what they should have though.
• 11:28
the-restaurant-guys_2_12-07-2025_133724: I also think like people who get paid to go work up in that area, like on oil rigs and stuff mm-hmm.
• 11:34
the-restaurant-guys_2_12-07-2025_133724: They get paid a lot of money.
• 11:35
  the-restaurant-guys_2_12-07-2025_133724: Yeah.
• 11:35
the-restaurant-guys_2_12-07-2025_133724: You know what I mean?
• 11:36
the-restaurant-guys_2_12-07-2025_133724: May as well have a good bottle of wine and they should.
• 11:37
the-restaurant-guys_2_12-07-2025_133724: Yeah, I'm gonna say because they should.
• 11:39
  the-restaurant-guys_2_12-07-2025_133724: Yes, they should.
