- 0:11Speaker 1: on the air.
- 0:11Speaker 3: Well, there's pot control for the years.
- 0:16Speaker 1: Live from the Raising Kine Studio, it's off the.
- 0:19Speaker 2: Bench, all right, Welcome back in our number three of
- 0:30Speaker 2: OTV here Live from the Raising Knees Studio.
- 0:32Speaker 3: Always a pleasure to catch up with our next guest.
- 0:34Speaker 2: Head baseball coach for the LSU Tigers, Jay Johnson joins
- 0:37Speaker 2: us now coach.
- 0:38Speaker 3: We always appreciate the time.
- 0:39Speaker 4: Hope you're well, Yeah, good morning, how you guys doing.
- 0:42Speaker 2: Doing fantastic, Looking forward to the series coming up starting
- 0:46Speaker 2: tomorrow there in Athens. But before we get there, coach
- 0:49Speaker 2: winners of the last five games, it's been a little
- 0:52Speaker 2: bit different of a lineup, a younger lineup. But what
- 0:55Speaker 2: has the last five games kind of shown you this team, Because,
- 0:59Speaker 2: like I said, it's been some different people. It's been
- 1:01Speaker 2: some people getting an opportunity, maybe really for the first time,
- 1:05Speaker 2: and they've kind of answered the call.
- 1:08Speaker 4: Yeah, I think we've had some injuries, have had to
- 1:12Speaker 4: shuffle the deck a little bit. Some young players have improved.
- 1:15Speaker 4: You know, it's something you don't see, you know, while
- 1:18Speaker 4: you're not seeing them in the game. But from fall
- 1:21Speaker 4: baseball beginning of the year, side work, you know, live
- 1:24Speaker 4: at bats, thing with pitchers against pitchers that hadn't thrown
- 1:27Speaker 4: very much. And you know, guys like Jack Record, William
- 1:30Speaker 4: Patrick improved.
- 1:32Speaker 5: You know, just as the season's going along.
- 1:33Speaker 4: Mason bron Omarcerna had gotten a lot of playing time
- 1:37Speaker 4: and have improved with that playing time. And those guys
- 1:40Speaker 4: have given us a jolt. And I would say offensively,
- 1:44Speaker 4: we've had a good, really good stretch of like nine
- 1:47Speaker 4: games in a row. We didn't have the pitching that
- 1:49Speaker 4: to match it per se and at Mississippi State, but
- 1:53Speaker 4: offensively found an identity a little bit and scoring in
- 1:56Speaker 4: a lot of different ways and competing hard in the games.
- 2:00Speaker 4: And that's what we'll continue to do and need to
- 2:03Speaker 4: this week and obviously playing against a great team.
- 2:05Speaker 6: Yeah, Kris, so a couple of weeks where the games
- 2:08Speaker 6: that certainly didn't turn out the way you hope for
- 2:10Speaker 6: or y'all work towards. But but the team's playing well.
- 2:13Speaker 6: It seems to be the lineup, it's hitting well. But
- 2:15Speaker 6: let's talk about the pitching a little bit, I know,
- 2:17Speaker 6: unfortunate injuries there on the pitching staff. Are we getting
- 2:21Speaker 6: healthier on the mound.
- 2:24Speaker 5: Well, you know, we'll we'll see.
- 2:28Speaker 4: We're feeling good about the direction we're headed there. You know,
- 2:33Speaker 4: it's it's this time of year. You know, it's one
- 2:35Speaker 4: of those things like the offense tends to come around
- 2:38Speaker 4: when the weather gets warm, Pitchers get a little tired,
- 2:42Speaker 4: and you know, obviously we have some guys that we
- 2:45Speaker 4: believe are really good, you know, pro prospects, you know,
- 2:47Speaker 4: and will be key contributors to next year's season as well.
- 2:51Speaker 4: So we're being really diligent about this, not trying to
- 2:54Speaker 4: play any kind of mind games, you know, relative to case.
- 2:57Speaker 5: Ending through a bullpen.
- 2:58Speaker 4: Yesterdaypen went great, but now it's more like how does
- 3:03Speaker 4: his body and arm respond to the intensity of the
- 3:05Speaker 4: throwing that he did, you know, for twenty to twenty
- 3:07Speaker 4: five pitches and then deciding, you know, we're in the
- 3:11Speaker 4: clear and feel good about it and getting them out
- 3:14Speaker 4: there or not. So that's obviously a big part of
- 3:18Speaker 4: our team, big part of the series this weekend. But
- 3:21Speaker 4: we're going to be smart about that as well.
- 3:25Speaker 2: And coach like even going back to the last series
- 3:27Speaker 2: in conference play against South Carolina, Like, what does the
- 3:31Speaker 2: performance of those pitchers in that series mean to being
- 3:34Speaker 2: able to only have a couple of guys run out
- 3:36Speaker 2: there and not have to go, you know, really really
- 3:39Speaker 2: deep in multiple games. And you mentioned the Mississippi State
- 3:42Speaker 2: series and you're right, like you're trying to find the
- 3:44Speaker 2: right tools for success there, but in the South Carolina series,
- 3:47Speaker 2: it's a little bit of the opposite where just a
- 3:49Speaker 2: couple of guys ran out there, did their job, handled
- 3:51Speaker 2: their business, and you didn't have to throw a lot
- 3:54Speaker 2: of arms at them.
- 3:56Speaker 4: Yeah, I think if you're looking forward and coach Bertman
- 3:59Speaker 4: kind of used to this model of like you have
- 4:01Speaker 4: eight pictures. You know, you might have sixteen or eighteen
- 4:04Speaker 4: or nineteen on the roster, but you have eight pictures.
- 4:07Speaker 4: And this is kind of what he was referring to.
- 4:10Speaker 4: And you know, those guys did a great job last week.
- 4:13Speaker 4: And if you look at our team last year, there
- 4:15Speaker 4: was a lot of let's say, you know, cad to
- 4:18Speaker 4: Zach and Anthony da Cason or vice versa, right, you know,
- 4:21Speaker 4: and then you know you're trying to cut up Sunday
- 4:24Speaker 4: and Tuesday a little bit and that was a good
- 4:25Speaker 4: formula for that team. You know, when we played our
- 4:28Speaker 4: best in twenty four, it was a lot of Holman
- 4:30Speaker 4: and jumped to let's say Herring and maybe Gidry, and
- 4:35Speaker 4: so you know, I like it that way. You know,
- 4:38Speaker 4: we haven't gotten some consistency out of some guys to know,
- 4:43Speaker 4: you know, who do you give the ball to for
- 4:45Speaker 4: like a nine out stretch and a close game. The
- 4:47Speaker 4: other thing we've done a better job of for two
- 4:49Speaker 4: weeks is we've played with the lead, and we hadn't
- 4:52Speaker 4: done that, you know, really a lot until the past
- 4:55Speaker 4: two weeks. So that gives you a little more freedom
- 4:58Speaker 4: and flexibility. But you know, me up for the six
- 5:01Speaker 4: or seven pitcher a weekend plan every weekend that usually
- 5:04Speaker 4: means things are going pretty good.
- 5:05Speaker 7: That's a pretty pretty good plan.
- 5:08Speaker 6: Cause y'all had this past Saturday play played great and
- 5:10Speaker 6: I think I think you even said that this is
- 5:12Speaker 6: the best baseball we played all season, and you know it.
- 5:15Speaker 6: Of course it wasn't against the highest ranked opponent, but
- 5:20Speaker 6: you saw something with the team and I was just
- 5:23Speaker 6: kind of wondering, like at the time, and it is
- 5:25Speaker 6: in the season, kind of back against the wall a
- 5:27Speaker 6: little bit, your guy, your your teams know exactly what
- 5:30Speaker 6: they have to do right now. It's like either do
- 5:33Speaker 6: it or don't do it. Do you think that has
- 5:35Speaker 6: helped them kind of step up?
- 5:37Speaker 5: You know?
- 5:38Speaker 4: I think I've said this and it's it's sometimes hard
- 5:41Speaker 4: at the place like LSU for young players, but they're
- 5:45Speaker 4: gonna get better as they go along. And I think
- 5:48Speaker 4: we've had some of that. And part of that is
- 5:50Speaker 4: mindset and mentality and you know, kind of just shift
- 5:54Speaker 4: the focus a little bit to you know, how we play,
- 5:58Speaker 4: which it's always kind of like been my but like
- 6:01Speaker 4: packaging it a little different for them. You know, we've
- 6:04Speaker 4: done a lot of video and we've had a lot
- 6:06Speaker 4: of good success over the nine games offensively of like hey,
- 6:09Speaker 4: this is what it looks like, and really positively reinforcing
- 6:12Speaker 4: that before we even start the next day, like yesterday
- 6:16Speaker 4: before practice, like there's a lot of good at bats
- 6:18Speaker 4: and a lot of good situational play in the game
- 6:21Speaker 4: against Tu Lane. I think that's maybe helped, you know
- 6:25Speaker 4: a little bit, you know, bring more clarity to the
- 6:27Speaker 4: message or the mission or whatever you want to call
- 6:29Speaker 4: it for this team, and you know, and just kind
- 6:34Speaker 4: of recently, it's like, you know who's the most dangerous soldier,
- 6:37Speaker 4: It's the ones not afraid to be killed. And like,
- 6:39Speaker 4: we've literally been through a lot of adversity when you
- 6:41Speaker 4: talk about injuries, tough close losses. You know, we've been
- 6:44Speaker 4: awesome in close games here. We haven't this year. So like,
- 6:48Speaker 4: let's not let that suffering or pain go to waste.
- 6:51Speaker 4: It's like she just hardened you a little bit and
- 6:54Speaker 4: go in guns plays and there's nothing to be afraid of.
- 6:56Speaker 4: And you know we're not supposed to win, you know
- 6:58Speaker 4: these next two frank on paper and where things are at.
- 7:02Speaker 4: So like, let's go in there, let's play great baseball.
- 7:05Speaker 4: Let's put ourselves in position to win, and then play
- 7:08Speaker 4: with the psychological freedom to just get after it and
- 7:11Speaker 4: make the pitch and make the play and take the
- 7:13Speaker 4: bat that we need to to put us over the home.
- 7:17Speaker 2: Catching up with Jay Johnson, head baseball coach for the
- 7:19Speaker 2: LSU Tigers here on OTB, and you know, coach one
- 7:22Speaker 2: of those players. At least it certainly looks like Kate
- 7:25Speaker 2: Aaron Beattie has gone out there, not just recently, but
- 7:29Speaker 2: really for the totality of the season.
- 7:31Speaker 3: And I can remember whenever he.
- 7:32Speaker 2: Like officially official to LSU and he's not going to
- 7:36Speaker 2: pro baseball, And how excited you were. We had you
- 7:38Speaker 2: on the show right after that and you talked about
- 7:40Speaker 2: all the things that you envisioned him doing in an
- 7:42Speaker 2: LSU uniform and coach.
- 7:44Speaker 3: It sure looks like he's doing most of those things
- 7:45Speaker 3: right now.
- 7:47Speaker 4: Yeah, I'm I'm proud of him. He's a good player,
- 7:50Speaker 4: this good team guy, cares about the team, all of
- 7:53Speaker 4: those types of things. So he's playing exceptional. So yeah,
- 8:02Speaker 4: that's that's where that's where he's at. And I can't
- 8:07Speaker 4: say enough good things about Kate. And it's more than
- 8:10Speaker 4: just the numbers to me, Like, I mean, how about
- 8:12Speaker 4: the way he's caught the last.
- 8:14Speaker 5: Few games and just the.
- 8:15Speaker 4: Throwing people out. He looks like Matt Flynn hit the
- 8:18Speaker 4: steam route you on the second base or backpicking a
- 8:21Speaker 4: guy at first.
- 8:22Speaker 5: Yeah, like he's he's.
- 8:24Speaker 4: Doing a great job and you know, really obviously happy
- 8:27Speaker 4: he's progressing the way that he is, and he's one
- 8:29Speaker 4: of the best hitters in the SEC right now, and
- 8:31Speaker 4: I think statistically it bears out.
- 8:33Speaker 6: So gouch, what does uh you talk about the young guys?
- 8:36Speaker 6: Are they kind of making an impact and kind of
- 8:37Speaker 6: growing and getting better and really kind of stepping up. Well,
- 8:40Speaker 6: you got Mason bron who has certainly stepped up and
- 8:43Speaker 6: been a force batting leadoff for you.
- 8:45Speaker 7: What is he kind of brought to the table for
- 8:46Speaker 7: your team.
- 8:48Speaker 5: Yeah, he's a really good player too. You know. You
- 8:52Speaker 5: know when I think.
- 8:53Speaker 4: About who'd you get through the draft, and we've certainly
- 8:56Speaker 4: gotten punched in the gut, especially last year. But you know,
- 9:00Speaker 4: we made a really strong effort to keep Mason because
- 9:03Speaker 4: I knew he was a good hitter. But I'll say
- 9:05Speaker 4: what's impressed me the most is just the day to
- 9:07Speaker 4: day work. It doesn't matter if he has four out
- 9:10Speaker 4: of five quality at bats or has a tough day,
- 9:12Speaker 4: and it's involved hard at people. You know before practice
- 9:15Speaker 4: the next day is gonna be in the cage. You know,
- 9:18Speaker 4: he's really improved defensively at first base. And this thing
- 9:21Speaker 4: is about maturity as much as it is about anything else.
- 9:25Speaker 4: And that's what I see. And yeah, I think he's
- 9:30Speaker 4: I see a lot of maturity in Mason. He's gonna
- 9:32Speaker 4: be a great player here for the next few years.
- 9:34Speaker 2: Yeah, And coach, when you have a young player and
- 9:37Speaker 2: this is like any sports, certainly at the level that
- 9:39Speaker 2: LSU baseball plays, but when you have a freshman and
- 9:42Speaker 2: somebody that is as far as like own base percentage,
- 9:46Speaker 2: I mean, the top on the team and it's not
- 9:47Speaker 2: even really close, and just being able to put at
- 9:49Speaker 2: the top of the lineup, and it's so much more
- 9:53Speaker 2: than the physical tools, like the mental tools that it
- 9:55Speaker 2: takes to be a freshman lead your team on own
- 9:57Speaker 2: base percentage, be the first guy the table set right
- 10:00Speaker 2: there at the front, like that's something that you saw
- 10:03Speaker 2: in him and that he would be able to handle
- 10:04Speaker 2: it mentally as much as the physical.
- 10:07Speaker 3: Part of it.
- 10:08Speaker 4: Yeah, no doubt about it. And that's always going to
- 10:11Speaker 4: be the separator. And football is a little more of
- 10:13Speaker 4: a in your face like physical toughness here. But I'm
- 10:17Speaker 4: sure you guys played with guys that were just really sharp.
- 10:20Speaker 4: You knew what you could count on every day, and
- 10:23Speaker 4: good teammates, good players, and just the model of consistency,
- 10:28Speaker 4: and that's what we're after for our team. And you
- 10:31Speaker 4: start to do that player by player, And if you
- 10:34Speaker 4: ask me, a thing that has breathed a lot of
- 10:36Speaker 4: optimism into our team is you got young guys that
- 10:39Speaker 4: are understanding that and playing like that, and so you're
- 10:41Speaker 4: getting the most out of a Mason or an Omar
- 10:44Speaker 4: or Jack Rickert.
- 10:45Speaker 5: William Patrick.
- 10:46Speaker 4: You mentioned Kade, you know, still only a sophomore, you know,
- 10:48Speaker 4: and then you know, you pair those guys with you know, Derek,
- 10:52Speaker 4: you know, playing playing to his capability, right, and Steven
- 10:55Speaker 4: playing to his capability. You know, there's your answer for
- 10:59Speaker 4: you know why we're scoring eight or nine now instead
- 11:01Speaker 4: of four or five.
- 11:02Speaker 6: Yeah, coach Stephen Mylm's been obviously just so incredible on
- 11:07Speaker 6: defense all year long, but it also like at the plate,
- 11:10Speaker 6: it seems like this is his time of the year,
- 11:14Speaker 6: like him getting better and being a little bit more
- 11:16Speaker 6: productive at the plate of recent I only have to like,
- 11:20Speaker 6: I can imagine that, especially like the new guys, the
- 11:22Speaker 6: young guys, they're like, okay, yeah, we saw this last
- 11:25Speaker 6: year on the national championship run.
- 11:26Speaker 7: I got to think that seeing Stevens.
- 11:28Speaker 6: Step up and be productive not only on defense but
- 11:31Speaker 6: at the plate now a little bit more has got
- 11:33Speaker 6: to motivate those new guys and those young guys a
- 11:36Speaker 6: little bit more.
- 11:36Speaker 4: Yeah, I think they nobody here has any lack of
- 11:40Speaker 4: faith in him, and he's earned everybody's trust, you know,
- 11:43Speaker 4: within our program, I would say, you know, the leadership
- 11:47Speaker 4: thing has really elevated. You know, that's not he's let's
- 11:53Speaker 4: just play who is talking, you know what I mean?
- 11:56Speaker 5: Or his fancy shoes. He likes the shoes, you know
- 11:58Speaker 5: what I mean.
- 11:58Speaker 4: But he's not a real outspoken guy. And you know
- 12:02Speaker 4: he's he's done a good job with the young players
- 12:05Speaker 4: as well, so he's respected by everybody. And for me,
- 12:09Speaker 4: I said this a couple of weeks ago. I don't
- 12:10Speaker 4: know if it was to you, guys or not to me.
- 12:12Speaker 4: I think he's actually swung the bat better this year
- 12:14Speaker 4: than he did last year. He was hitting into a
- 12:17Speaker 4: lot of tough luck early in the season, and now
- 12:20Speaker 4: it's kind of like baseball is starting to come around
- 12:22Speaker 4: and reward him accordingly.
- 12:25Speaker 5: If that makes sense.
- 12:26Speaker 2: Oh yeah, absolutely, and certainly has been one of the
- 12:30Speaker 2: guys kind of list for kind of some of the
- 12:32Speaker 2: offensive runs scored. As you mentioned there, coach, guys know,
- 12:35Speaker 2: but Jay Johnson here on OTB coach with the series
- 12:39Speaker 2: coming up against Georgia, going to Athens, one of better
- 12:41Speaker 2: baseball teams in the country, I think we all know that.
- 12:44Speaker 2: And you know, you and Wes Johnson. Certainly y'all shared
- 12:46Speaker 2: a dugout together. He was on the staff in twenty
- 12:48Speaker 2: twenty three, so you know each other very well. When
- 12:51Speaker 2: you have, you know, a situation where we have a
- 12:53Speaker 2: relationship with the coach, he's been on the staff, you
- 12:55Speaker 2: know each other. How hard is it to just try
- 12:58Speaker 2: to play your game and not case ghosts because you're like, man,
- 13:01Speaker 2: I know what Wes would do in this situation here,
- 13:04Speaker 2: or well, Wes might know what I would do in
- 13:06Speaker 2: this situation here. When you have you know, the familiar relationship,
- 13:09Speaker 2: is it something you try to stay away from because
- 13:11Speaker 2: in football, coach we talk about it all the time.
- 13:13Speaker 2: It's like, look, we're chasing ghosts, We're watching things that
- 13:15Speaker 2: probably won't even happen.
- 13:16Speaker 3: We're thinking too much into this. How do you handle
- 13:18Speaker 3: it in baseball?
- 13:20Speaker 5: Yeah, it's a really good question.
- 13:21Speaker 4: I think it's a unique situation with the SEC schedule,
- 13:25Speaker 4: Like we haven't played the last couple of years since
- 13:28Speaker 4: he's been gone, other than we played him in the
- 13:30Speaker 4: SEC tournament in twenty four and that one was pretty
- 13:34Speaker 4: simple gaue jump, you know it dominated And they'll be
- 13:38Speaker 4: doing the same thing for the Oakland or sacrament or
- 13:40Speaker 4: Las Vegas Hitgies or whatever they're called here pretty soon.
- 13:43Speaker 4: Like no, I think I'm obviously appreciative to what he
- 13:47Speaker 4: did here.
- 13:49Speaker 5: You know, pitching coach on the national championship team.
- 13:51Speaker 4: They've done a great job recruiting and evaluating, you know,
- 13:55Speaker 4: out of the portal. He's smart baseball guy. And they're
- 13:59Speaker 4: playing hard, and they're playing a lot of confidence, and
- 14:00Speaker 4: they have talent. I've done more on their offensive players
- 14:04Speaker 4: so far, and that's kind of they're staple of their
- 14:06Speaker 4: team right now as they hit a lot of homers
- 14:09Speaker 4: and that's going to be a part of the weekend.
- 14:11Speaker 4: You know, it's like the ability to take a punch
- 14:13Speaker 4: and and move forward and minimize and all those types
- 14:16Speaker 4: of things. But you know what, baseball is a little
- 14:18Speaker 4: different in that regard. Yeah, sure you got maybe the
- 14:22Speaker 4: trick play on offense or the pitching tendency of you know,
- 14:26Speaker 4: they had to do this, but it doesn't come up,
- 14:29Speaker 4: I would think as much as in football.
- 14:31Speaker 5: And you know, the game, you know, in.
- 14:34Speaker 4: Its truest form hasn't changed as much as maybe a
- 14:38Speaker 4: football or a basketball, and it's it's always about the
- 14:41Speaker 4: players on the field, and right you know, and being
- 14:44Speaker 4: in the right frame of mind. And that's what weird
- 14:46Speaker 4: challenges is our team and our frame of mind, and
- 14:49Speaker 4: and it's it's actually, you know, there is some some
- 14:52Speaker 4: freedom in like, hey man, this is an opportunity, you know,
- 14:55Speaker 4: And we've narrowly missed some really good opportunities this year
- 14:59Speaker 4: that would have completely changed where we were sitting today.
- 15:02Speaker 4: But we have one in front of us. The best
- 15:04Speaker 4: thing about Georgia right now is they have a great
- 15:06Speaker 4: record and we're playing on a road and that may
- 15:08Speaker 4: sound counterintuitive to just winning, but if you do get
- 15:11Speaker 4: on top, that changes things in a hurry.
- 15:14Speaker 6: Coach, I've talked to you about this before, but as
- 15:17Speaker 6: as the head coach, you are most of the time
- 15:20Speaker 6: baseball coach, but like a part time psychologist too, So
- 15:23Speaker 6: I'm curious as to your approach in the messaging to
- 15:27Speaker 6: your team going into this weekend and the remainder of
- 15:29Speaker 6: the regular season, because like when I played football, my
- 15:32Speaker 6: coach was careful not to use certain words like don't
- 15:35Speaker 6: throw an interception on this play, like he would say,
- 15:37Speaker 6: you know, let's have all security here, like it was
- 15:40Speaker 6: a way to message it to where you didn't think
- 15:42Speaker 6: about the obvious thing in front of us. What is
- 15:45Speaker 6: your messaging knowing that there's probably a win total that
- 15:48Speaker 6: you need to get to the next two weekends, Like what,
- 15:51Speaker 6: how are you laying that out for your team? Or
- 15:54Speaker 6: is it just kind of like an obvious, understood, unspoken thing.
- 15:58Speaker 4: Yeah, I think I'll try to say kind of do
- 16:00Speaker 4: it and it actually rears its head more on Tuesdays,
- 16:04Speaker 4: believe it or not. Like, but I think you guys
- 16:08Speaker 4: would appreciate this as athletes. It's like the team that
- 16:12Speaker 4: plays the best that day is going to win.
- 16:14Speaker 5: Again.
- 16:15Speaker 4: I think baseball is different football, where you know, if football,
- 16:18Speaker 4: big fast people beat little fast people all the time,
- 16:21Speaker 4: you know, like here, it's not the case. The picture
- 16:24Speaker 4: determines a lot of it. So I've literally tried to
- 16:27Speaker 4: double down on the process of winning and how we
- 16:30Speaker 4: play because it kind of takes some pressure off them,
- 16:34Speaker 4: and playing at this place, there's already enough of it.
- 16:37Speaker 5: Like these guys want to.
- 16:38Speaker 4: Win, they want to play good. They you know, don't
- 16:42Speaker 4: like maybe where we are in totality, but you know,
- 16:45Speaker 4: they've been able to hang in there where we're playing
- 16:47Speaker 4: important baseball with six games left, and I've just tried
- 16:49Speaker 4: to use the fact that we're still alive to build
- 16:53Speaker 4: some confidence and guys that haven't been down this road.
- 16:56Speaker 4: And then you're always teaching for the future as well,
- 16:58Speaker 4: and you know, win or lose, you know, whether we're
- 17:01Speaker 4: in the postseason or not, there's some there's a lot
- 17:05Speaker 4: of value in you know, kind of this this struggle
- 17:08Speaker 4: that we've gone through. And you know, I'm I'm I'm
- 17:11Speaker 4: okay with that. And if we use that correctly. You know,
- 17:14Speaker 4: nobody wants to not you know, be in the postseason,
- 17:17Speaker 4: but we can use this to make us better. And
- 17:21Speaker 4: I think this team's doing that in the best way
- 17:24Speaker 4: it can. But now it's only about like you said,
- 17:27Speaker 4: like like it's the like the messaging, it's the most
- 17:31Speaker 4: effective soldiers, the one is not afraid.
- 17:33Speaker 5: To be killed.
- 17:33Speaker 4: Well, really, what do we have to be afraid of
- 17:35Speaker 4: right now? Like literally nothing? Like we've lost one run games,
- 17:39Speaker 4: We've been walked off on the road three times.
- 17:41Speaker 5: In SEC play, you know what I mean.
- 17:43Speaker 4: We've been down seven to nothing, you know, tied at
- 17:46Speaker 4: seven to seven, had our best hitter at the plate
- 17:49Speaker 4: and then ended up.
- 17:50Speaker 5: Losing, you know, eight to seven.
- 17:52Speaker 4: You know, like we're we've been through the fire, and
- 17:55Speaker 4: you know sometimes that hardens you.
- 17:57Speaker 5: And right now.
- 17:58Speaker 4: It's like, hey, let's go for it. And that's kind
- 18:01Speaker 4: of the messaging, is like attacking this opportunity and you know,
- 18:06Speaker 4: bigger picture and all that, there's there's time for that
- 18:08Speaker 4: at a later time.
- 18:10Speaker 2: Yeah, no doubt about it, coach last one. And we
- 18:12Speaker 2: always appreciate for your time. I've got to ask you,
- 18:15Speaker 2: and I know you're in the heat of the season
- 18:16Speaker 2: sometimes it's hard to I hustle this. But Kate Anderson
- 18:20Speaker 2: point three seventy r A, Anthony Hyinsen point four to
- 18:23Speaker 2: four e RA. The things that they're doing at a
- 18:26Speaker 2: professional level are video game numbers that might not even
- 18:30Speaker 2: do it justice. Do you have a chance to maybe
- 18:33Speaker 2: like just check in on them every now and again
- 18:35Speaker 2: and just shake your head at oh my god, look
- 18:38Speaker 2: at what they're doing at the professional level.
- 18:41Speaker 4: Oh yeah, for sure. And I mean, yeah, those guys
- 18:44Speaker 4: made me look smart a lot, right, Yeah, you know,
- 18:48Speaker 4: like I'm just not surprised at all, is what I
- 18:52Speaker 4: would say. But having a front row seat to how
- 18:56Speaker 4: those guys do what they do, and it's more than talent,
- 19:00Speaker 4: Like there's a lot of talented players at that level.
- 19:03Speaker 4: It's the discipline. You know, those guys are always going
- 19:07Speaker 4: to do what they're supposed to do. There's the ability
- 19:11Speaker 4: to just focus on what they can control and what matters.
- 19:13Speaker 4: And we're just talking about maturity of mental strength at
- 19:16Speaker 4: this level. Like those guys have it, and I mean
- 19:20Speaker 4: they whatever it is, they have it. Like it's almost
- 19:23Speaker 4: like when they're in a minor league. It's like, hey, man,
- 19:25Speaker 4: just give me that call when you make the big
- 19:28Speaker 4: leagues and we'll be there to support you, because like
- 19:30Speaker 4: that's a foregone conclusion.
- 19:32Speaker 5: And like with Anthony in.
- 19:36Speaker 4: The draft last year, I was just like, and somebody's
- 19:39Speaker 4: really missing something. And the Red Sox got to be
- 19:41Speaker 4: licking their chops and you know, the former assistant GM
- 19:45Speaker 4: and the Mariners you know, had texted me after they
- 19:48Speaker 4: met with Kate. It was very shortly after the College
- 19:51Speaker 4: World Series and like, this guy's not going to be
- 19:53Speaker 4: available with the third pick. Somebody's going to take him, right,
- 19:56Speaker 4: but man, what an impressive dude. And then he immediately
- 20:01Speaker 4: after the pick and I don't remember the teams, he's like, man,
- 20:04Speaker 4: I can't believe these guys screwed this up. Like they're
- 20:08Speaker 4: just through the moon. Most both organizations are through the
- 20:11Speaker 4: moon moon for those guys, and they absolutely should be.
- 20:14Speaker 2: Yeah, no doubt about it. Coach, we went along with you.
- 20:17Speaker 2: We certainly appreciate your time. Enjoy this weekend, best of
- 20:21Speaker 2: luck this weekend, and we'll catch up again with you
- 20:22Speaker 2: next week.
- 20:23Speaker 5: All right, thanks, guys, have a good day.
- 20:25Speaker 3: All right you as well.
- 20:26Speaker 2: Jay Johnson, head baseball coach for LSU Tigers, and we
- 20:28Speaker 2: kept him twenty minutes. Appreciate that coach. A big deal though,
- 20:34Speaker 2: huge deal came out of that interview. Oh yeah, he
- 20:36Speaker 2: knows my name. I thought you said the really good
- 20:40Speaker 2: question that I know, well, the good question you got, No,
- 20:42Speaker 2: really good question, he said, really good question. But he
- 20:45Speaker 2: knows my name. YEA not a big deal. Yeah, well
- 20:48Speaker 2: not all the coaches did. That's fair.
- 20:52Speaker 7: See see you got.
- 20:53Speaker 3: I got it now.
- 20:54Speaker 2: Yeah, I saw, guys, you're not nowhere else going with
- 20:56Speaker 2: it or not. I was like, yeah, of course he
- 20:58Speaker 2: knows you.
- 20:58Speaker 3: You're not.
- 20:59Speaker 7: I'm not come to him. You're flynning.
- 21:02Speaker 6: Yeah, big day for me. It's gonna be a good day.
- 21:07Speaker 3: You have a little pep in your step.
- 21:08Speaker 7: Pep in my step. Now, baby, we'll do some push ups.
- 21:15Speaker 3: I still Kate Anderson has a point three it's.
- 21:19Speaker 2: Unbelieves five games right, and Anthony Iinson has a point
- 21:23Speaker 2: four to.
- 21:24Speaker 7: Four r A kid's pitched five? Now, didn't he did?
- 21:27Speaker 3: He believe both? I believe. I just had kids pulled up.
- 21:32Speaker 6: Yeah, I just had a new I think it was
- 21:34Speaker 6: last night. I had a new alert hit me.
- 21:38Speaker 2: Kate Anderson has started five games, pitched twenty four and
- 21:41Speaker 2: the third, only giving up thirteen hits, only one urned run,
- 21:45Speaker 2: only walked for it, has struck out thirty eight his
- 21:50Speaker 2: batting average against his one fifty seven. For Anthony Iinson,
- 21:58Speaker 2: he's pitched five games, point forty four a twenty and
- 22:01Speaker 2: a third, struck out thirty four.
- 22:07Speaker 7: Decent, pretty okay.
- 22:09Speaker 3: And that's in like that's not like in like the
- 22:13Speaker 3: Florida League. That's not like in High A.
- 22:16Speaker 2: That's in Double A for a lot of times, that's
- 22:18Speaker 2: where like your best young players are.
- 22:23Speaker 3: It's remarkable.
- 22:24Speaker 6: So I think, what now they're both of them, I
- 22:26Speaker 6: think are top five prospects.
- 22:28Speaker 1: Now.
- 22:28Speaker 3: I think that's if they're not, I don't trust the list.
- 22:31Speaker 2: Yeah, probably all right, we will take a break more
- 22:34Speaker 2: OTB when we jump back here Live from the Raisin
- 22:36Speaker 2: King Studio off the bench. All right, don't forget about
- 22:40Speaker 2: our friends over at Emerson Heating and Air. How could you,
- 22:42Speaker 2: because they're always gonna remember you, and they're gonna be
- 22:45Speaker 2: on time. They're gonna have incredible customer service. That's what
- 22:48Speaker 2: they've had for me. It's what they've had for Matt
- 22:50Speaker 2: and I had a couple of different things.
- 22:53Speaker 3: One time I was out of town.
- 22:55Speaker 2: I was at the draft working and one of our
- 22:58Speaker 2: AC units, Will had a battery die and we didn't
- 23:01Speaker 2: know what it was and it was such a quick fix. Okay, Well,
- 23:04Speaker 2: fast forward two weeks later, the other side of the house,
- 23:06Speaker 2: the other AC unit, it had a claw in the drain, right,
- 23:09Speaker 2: the pants filling up. Well, they come in, they drain it,
- 23:12Speaker 2: they fix it five I mean five minutes. It was
- 23:14Speaker 2: five minutes professional the entire time. They've got the OTB
- 23:18Speaker 2: eighty nine dollars Spring Service special as well. Ask them
- 23:21Speaker 2: about that. That's normally one hundred and thirty dollars. And
- 23:23Speaker 2: you can find all this information at ems air dot net.
- 23:26Speaker 6: Yesterday. It was that first day, I was like, yep,

- 23:30Speaker 6: it was hot, a little bit muggy. Uh, make sure
- 23:33Speaker 6: your air cognition is working at top speed and the

- 24:06Speaker 6: Down, I got a little uh, it's a little quick
- 24:13Speaker 6: ti tidbit on a verbelness.

- 25:02Speaker 2: That Mike Rabel is the week one head coach for
- 25:04Speaker 2: the New England Patriots.
- 25:10Speaker 7: How's it.
- 25:14Speaker 8: Wa?
- 25:14Speaker 3: Do you think that's going to be when the next
- 25:16Speaker 3: piece of.
- 25:16Speaker 6: News drops, it's gonna keep I don't think it's going
- 25:19Speaker 6: to get higher unless we hear nothing until yeah June,
- 25:24Speaker 6: right at least?
- 25:26Speaker 7: All right, that's not great.
- 25:32Speaker 9: Have a couple of texts from when we were talking
- 25:34Speaker 9: about them. I forgot to pull the tap up. But
- 25:37Speaker 9: when we were talking about the Diana reci My Rabel
- 25:39Speaker 9: stuff earlier, I just realized, Diana Ruscini is my hear
- 25:44Speaker 9: me out, so that's somebody's hearing me out as Diana Russini.
- 25:51Speaker 9: And then somebody said, Elandra, do we think the next
- 25:54Speaker 9: news drop on Rabel and Russinia's photos from one of
- 25:57Speaker 9: those j C. Penny Seers photo shoots just jeans and
- 25:59Speaker 9: awkward poses.
- 26:01Speaker 3: Yeah, it might be.

- 26:04Speaker 9: opera radio station, And I said, if you tune into
- 26:06Speaker 9: o TV expecting straight sports, that's on you. I mean
- 26:10Speaker 9: we that is sports technically, but yeah, we get here.

- 26:18Speaker 2: super Bowl?
- 26:19Speaker 9: Matt even told you why people in the locker room
- 26:20Speaker 9: are gonna start losing respect for him.
- 26:23Speaker 7: Yeah, it's not the kind of stuff you get everywhere people.
- 26:27Speaker 9: But yeah, we like we like to be gossipy, like.
- 26:30Speaker 7: A little hot gossip, even if it's not true, it's
- 26:34Speaker 7: it's gossip. Yeah, it's fun to talk about it.
- 26:37Speaker 9: I mean, this is this is pretty true.
- 26:40Speaker 6: This is I mean this is Yeah. We didn't think
- 26:43Speaker 6: at first. We thought it was just a little gossip,
- 26:46Speaker 6: a little strange, but just a little gossip.
- 26:49Speaker 3: It was just two friends like saying what's up Now.
- 26:51Speaker 6: In fact, I think we can all believe now that
- 26:55Speaker 6: they might have had extra marital affairs just got condunceed
- 27:01Speaker 6: maybe with permission from their spouses. Diana had permission or
- 27:05Speaker 6: a look the other way. She was probably encouraged. I
- 27:09Speaker 6: feel like prop.
- 27:12Speaker 2: All right, So go ahead and get your Munchy questions in,

- 28:29Speaker 6: they guess up. Never again.
- 28:30Speaker 7: Central Plumbing, Central Plumbing dot Org.

- 29:50Speaker 2: Michael Johnson's time. Now we're your monkey question.
- 29:54Speaker 1: Get ready to tantalyze your taste buds and leave this
- 29:57Speaker 1: segment hungry. This is Monkey's with executi of Chef Michael Johnson.
- 30:05Speaker 3: Chef.
- 30:05Speaker 7: What's going on?
- 30:06Speaker 3: Brother? How are you doing good?
- 30:08Speaker 8: I'm living well, brother, blessed.
- 30:12Speaker 3: Chef.
- 30:15Speaker 2: Typically like once a month, I feel like we catch
- 30:17Speaker 2: you where you're on a boat and you're fishing with somebody,
- 30:20Speaker 2: and I don't feel like we've had that in a minute.
- 30:22Speaker 3: You are you okay?
- 30:23Speaker 8: I know, man, it's been a while. You know, it's
- 30:26Speaker 8: just been a busy life for me here. But I
- 30:28Speaker 8: do have something scheduled for the end of the month.
- 30:30Speaker 7: So hunting fishing, which one fishing?
- 30:34Speaker 8: Yeah, you know, snapper season just opened up, So I'm
- 30:38Speaker 8: I'm you know, salivating to get off shore and go
- 30:42Speaker 8: chase some snapper.
- 30:43Speaker 6: There you go, Chef, Hey, I'm fired up that you
- 30:45Speaker 6: got me the introduction. I'm fired up for next week.
- 30:47Speaker 6: I'm not going down to New Orleans with a bunch
- 30:51Speaker 6: of other chefs, the performance the performance Dieticians, and the
- 30:54Speaker 6: Performance Chef's Summit conference next week. I'm fired up. Tell me,
- 30:58Speaker 6: I never knew this existed for the performance chefs. Tell
- 31:01Speaker 6: me kind of about they what y'all did. Y'all you'll
- 31:04Speaker 6: get together once a year and just kind of talk
- 31:06Speaker 6: about what works, what doesn't work.
- 31:08Speaker 8: Yeah, this is actually the first time we've done it.
- 31:10Speaker 8: So when when doctor Frakes was here, he was he
- 31:14Speaker 8: was a coach, Kelly's dietitian. He had, He's a PhD.
- 31:17Speaker 8: Super brilliant guy. He got me engaged in this, in
- 31:21Speaker 8: this community of performance chefs, and it's it's really we
- 31:25Speaker 8: kind of started from the ground up. It's it's not
- 31:27Speaker 8: my design, but I've been a part of it and
- 31:29Speaker 8: I'm on the board of directors. So it's just kind
- 31:32Speaker 8: of a co op of chefs, if you will, or
- 31:36Speaker 8: a guild of chefs. They're all performance chefs who are
- 31:40Speaker 8: helping define what a performance chef is, helping kind of
- 31:44Speaker 8: navigate what that means. You know. They also help businesses
- 31:49Speaker 8: like LSU or companies that are looking for performance chefs
- 31:52Speaker 8: locate performance chefs. But this is our first time to
- 31:56Speaker 8: do it, and it's it's going to be in New Orleans,
- 31:57Speaker 8: and it's paralleling the National Aeticians Meetings, which is also
- 32:02Speaker 8: in New Orleans. So it's you know, I'm really excited
- 32:05Speaker 8: about it. I'm helping organize and I'm helping supply the
- 32:09Speaker 8: you know, some of the labor for the food, labor
- 32:13Speaker 8: for the dinner. So some of my chefs are going
- 32:16Speaker 8: to go down there and work with NOKI, which is
- 32:18Speaker 8: the New Orleans Culinary Institute. So I'm really excited about it. Man.
- 32:22Speaker 8: And I don't know if you know this or not,
- 32:24Speaker 8: but you know who Royce Gracy is.
- 32:26Speaker 3: Oh yeah, I do for sure.
- 32:27Speaker 5: Yeah.
- 32:28Speaker 8: So Royce Gracie is coming as one of the speakers
- 32:31Speaker 8: as well. And you know, like USC one, right, yeah,
- 32:37Speaker 8: Like this guy is a legend. He reshaped you know,
- 32:40Speaker 8: like modern mar mixed martial arts. So yeah, I'm just
- 32:44Speaker 8: you know, it's gonna be some cool people there. Deon
- 32:47Speaker 8: Sanders chefs that's from Colorado is going to be there.
- 32:49Speaker 8: There's some chefs from Australia and UK. They are going
- 32:53Speaker 8: to be there. So it's just a group of minds
- 32:56Speaker 8: that are kind of like minded and but come from
- 32:58Speaker 8: different walks of life that we're getting together to kind of,
- 33:01Speaker 8: you know, have conversation about anything and everything. This business
- 33:05Speaker 8: oriented around being a performance chef.
- 33:08Speaker 6: I'm excited about it because I've been to the Dietitians
- 33:10Speaker 6: meeting in the last couple of years with my business,
- 33:12Speaker 6: so this kind of butts up to it and like, look,
- 33:14Speaker 6: yeah y'all, y'all ask me to be on a panel
- 33:17Speaker 6: for a little Q and A, so I would drop
- 33:19Speaker 6: a lot of knowledge out here. You definitely need to
- 33:22Speaker 6: hear from this old washed up football player.
- 33:24Speaker 8: Well, I talked you up, man, I talked with you before, brother,
- 33:28Speaker 8: So no, I have every ounce of confidence that you're
- 33:31Speaker 8: going to be able to hold your own up.
- 33:32Speaker 3: So sure, God bless you, chef.
- 33:34Speaker 2: That's a lot of confidence in a person that well,
- 33:37Speaker 2: I'll see how it goes.
- 33:39Speaker 3: We shall see how it goes, all right? Hashtag munchies.
- 33:44Speaker 2: Do you make your own sausa and if so, what
- 33:46Speaker 2: do you put in question?
- 33:49Speaker 8: I do and I don't, you know, like it depends
- 33:51Speaker 8: on how much of a crunch I'm in. Like if
- 33:52Speaker 8: it's at the house, I might buy it, but here
- 33:54Speaker 8: at the nutrition center, it just kind of depends, you know.
- 33:57Speaker 8: Like if I'm making my own sauce, it's not going
- 33:59Speaker 8: to be a cook It's gonna be like a salsa
- 34:01Speaker 8: crew today. And I like putting all kinds of chili
- 34:03Speaker 8: peppers in it, and you know, like sweet onions instead
- 34:06Speaker 8: of just regular onions, you know, like roma tomatoes instead
- 34:09Speaker 8: of instead of red tomatoes. Or it's kind of it's
- 34:12Speaker 8: gonna be bougie sauces. It's gonna be you know, Yeah,
- 34:17Speaker 8: but I do like to put some smoked chilis in there.
- 34:20Speaker 6: A good homemade sauce if you do it right. It's
- 34:22Speaker 6: hard to do it right, but do it right, it's
- 34:24Speaker 6: it's pretty legit.
- 34:26Speaker 3: Yeah, all right.
- 34:27Speaker 6: Hashtag mystie chef. I'm always interested in what I can
- 34:29Speaker 6: do from the garden to the kitchen. Do you have
- 34:32Speaker 6: anything out of the ordinary in mind for okra.
- 34:36Speaker 8: Okra man okra is a tough one because you know,
- 34:39Speaker 8: like people, I don't, I don't know. It's it's kind
- 34:41Speaker 8: of a weird deal, you know, like if it's eaten fresh,
- 34:44Speaker 8: it's very stalky and fibrous and and you know has
- 34:48Speaker 8: you know, like that gelatinous liquid that comes out of it.
- 34:51Speaker 8: I don't, you know, like pickled okra is the thing
- 34:54Speaker 8: that comes to mind to me that I think, you know,
- 34:56Speaker 8: once you run out of frying it and staw saying
- 34:59Speaker 8: it and stewed okra tomatoes or whatever, you know, all
- 35:01Speaker 8: your traditionals. I really really love to pickle okra like
- 35:05Speaker 8: a spice, really spiced pickle okra. Okra's you know, like
- 35:10Speaker 8: outside the box. Nothing's coming to me out of my mind.
- 35:14Speaker 8: But you know, I'll get off the phone here and
- 35:15Speaker 8: then an hour I'll be like, oh, you know what.
- 35:20Speaker 6: Speaking of that? So you did text us last week.
- 35:22Speaker 6: We had a question for you last week that Yeah,
- 35:25Speaker 6: it was it was an out of the ordinary question
- 35:28Speaker 6: because we talked about soue v'd. But you text us
- 35:31Speaker 6: later You're like, hey, I got like five or six
- 35:33Speaker 6: great ideas of different ways to use a soue v
- 35:36Speaker 6: outside of just like proteins and veggies.
- 35:38Speaker 8: So first of all, this happens to me all the time,
- 35:40Speaker 8: you know, like coming up with ideas in the moments,
- 35:44Speaker 8: you know, like sometimes I get it and sometimes I don't,
- 35:46Speaker 8: but almost always when I'm when i'm when I'm not
- 35:49Speaker 8: within a couple of hours, I'm like, I can't believe
- 35:51Speaker 8: I didn't think about that. But yeah, so cold cold brew.
- 35:54Speaker 8: Some one of the best cold brew coffees I've ever
- 35:57Speaker 8: done was soue vie. You can control the heat, which
- 36:00Speaker 8: controls how much bitter it comes out of coffee. You
- 36:02Speaker 8: put you grind your coffee grinds and put them into
- 36:04Speaker 8: a vacuum steel bag with a small amount of water,
- 36:08Speaker 8: and then you put them into your souv machine and
- 36:10Speaker 8: you cook it or heat it and it extracts the
- 36:15Speaker 8: coffee out of the beans and then you you know,
- 36:18Speaker 8: put it through a strainer or a filter, and you
- 36:23Speaker 8: know what you're what you're doing is you're making this
- 36:25Speaker 8: extremely uh you know, like compounded coffee and then you
- 36:31Speaker 8: can put like syrup water in with it, and whether
- 36:34Speaker 8: you like the hot or cold that matter or not,
- 36:36Speaker 8: you can but it goes really well cold. But yeah,
- 36:40Speaker 8: cold brew coffee through the SUV machine, which is neperature.
- 36:43Speaker 6: And so how how how does that specific heat control
- 36:45Speaker 6: the bitterness of the coffee.
- 36:47Speaker 8: Because I think above one hundred and sixty degrees some
- 36:51Speaker 8: and I'm not certain of the temperatures off the top
- 36:53Speaker 8: of my head, but above a certain like if you
- 36:56Speaker 8: steep something for too long under intense heat, it's going
- 37:00Speaker 8: to it's going to pull the bitterers out. But at
- 37:02Speaker 8: a lower temperature, with a with you know, a longer
- 37:06Speaker 8: amount of time, it's going to slowly pull that coffee
- 37:10Speaker 8: out without pulling the bitter out with it. If it
- 37:12Speaker 8: gets too hot, it will go bitter and tease.
- 37:15Speaker 5: The same way.
- 37:15Speaker 8: This applies to tea as well. So it's you know,
- 37:19Speaker 8: like one hundred and thirty degrees one hundred and forty
- 37:21Speaker 8: degrees somewhere in there. You know, you're pulling it out
- 37:24Speaker 8: nice and slow and low, and you're not going to
- 37:26Speaker 8: get the bitter out. And when you put the syrup
- 37:28Speaker 8: water in with it, you know, to fit it out
- 37:30Speaker 8: to what a normal cup of coffee would be, you know,
- 37:33Speaker 8: you're adding the sugar into it. Some people put the
- 37:36Speaker 8: sugar in with the in with the steep. I don't
- 37:39Speaker 8: prefer to. I like to control the sugar later, you know,
- 37:42Speaker 8: through the through. It's it's kind of like making moonshine, right,
- 37:45Speaker 8: Like you make it strong and then you send it
- 37:47Speaker 8: out with water and then you have your coffee and
- 37:50Speaker 8: coldbra coffee is exceptional that way.
- 37:53Speaker 7: I feel like.
- 37:54Speaker 6: Low and slow is almost the right answer for all
- 37:56Speaker 6: cooking questions, but a shot to hear that it's the
- 37:59Speaker 6: right answer for.
- 38:00Speaker 7: Coffee as well.
- 38:01Speaker 8: Yeah, I mean I think it's not. It's not every answer,
- 38:05Speaker 8: but I think it's the best answer most of the time. Right,
- 38:08Speaker 8: Like flow and low is just it's almost always going
- 38:11Speaker 8: to be better. You take your time. You know, you're
- 38:13Speaker 8: paying attention to details when you're when you're rushing through something,
- 38:17Speaker 8: regardless of what it is, it's almost inevitable that you're
- 38:21Speaker 8: going to make errors and mistakes, and you know it
- 38:25Speaker 8: almost always presents you know, like a sub subpower product.
- 38:30Speaker 2: So you know, I got one here hashtag munchies. How
- 38:36Speaker 2: do you know when to pick potatoes and onions from
- 38:38Speaker 2: the garden?
- 38:40Speaker 8: Potatoes and onions? I think there's a time frame there,
- 38:43Speaker 8: you know, Like my gardening skills for potatoes date back
- 38:47Speaker 8: to when I was a child, and I don't have
- 38:48Speaker 8: any potatoes in the ground, But you know, I think
- 38:51Speaker 8: one is firmness, you know, like you need to check
- 38:53Speaker 8: firmness and size. I think a lot of it's common sense,
- 38:57Speaker 8: but there is a growing period, right like guy, like
- 39:01Speaker 8: a gestation period, if you will, for potatoes and onions,
- 39:04Speaker 8: that it needs to be a certain firmness and softness both.
- 39:09Speaker 8: But I'm not I'm not a I'm not a master gardener,
- 39:12Speaker 8: so I don't have all those questions hashtag munchies.
- 39:16Speaker 7: Do you ever make butter chicken? The Indian dish I
- 39:19Speaker 7: have before?
- 39:20Speaker 8: It's it's been a while, you know. When I lived
- 39:21Speaker 8: in Seattle and we were kind of saturated with all
- 39:24Speaker 8: those ethnic foods around us, there was a need to write,
- 39:28Speaker 8: and I just we don't have as much of the
- 39:30Speaker 8: calling for it down here. But I do love butter
- 39:32Speaker 8: chicken for sure. I like Indian food as a whole.
- 39:36Speaker 8: Just to be honest with you, you know, like I
- 39:39Speaker 8: I did business with an Indian guy in uh in Seattle,
- 39:43Speaker 8: and so much so that he invited me to his
- 39:46Speaker 8: daughter's wedding. And I have a traditional I have a
- 39:48Speaker 8: traditional Indian wedding outfit.
- 39:52Speaker 2: Ye chef hashtag munchies. What is your seasoning choice for
- 39:59Speaker 2: whole baked or a kissery chicken?
- 40:03Speaker 8: I mean, it kind of depends on if I'm at
- 40:06Speaker 8: the house, you know, Like I don't keep the pantry
- 40:07Speaker 8: of spices at my house that I do at work.
- 40:10Speaker 8: And just be known, the shoemaker's kids don't have any shoes, right,
- 40:13Speaker 8: so I don't. I don't cook as much at home
- 40:15Speaker 8: as I do here. But you know, I like a
- 40:20Speaker 8: little bit of lemon or citrus or or even orange
- 40:23Speaker 8: piss and my spice mixed with with chicken. It tolerates
- 40:26Speaker 8: it really well. Certainly is going to be brined. I
- 40:29Speaker 8: like to brine my chicken. You guys know that garlic
- 40:32Speaker 8: and chili powder. I like paprika in there too. It's
- 40:35Speaker 8: it's it's like a smoke paprika onion powder. Just kind
- 40:40Speaker 8: of your your yours typical things. But I'll tell you
- 40:43Speaker 8: this too, if if you can get your hands on
- 40:45Speaker 8: some black garlic, it's it's kind of a it's fermented garlic, right,
- 40:50Speaker 8: and it's oh man, it's it's kind of a it's tart. Yeah,
- 40:56Speaker 8: oh man, looks I'm salivating talking about it. That's how
- 41:00Speaker 8: I feel. That's how strongly I feel about it, like
- 41:02Speaker 8: it's absolutely right now.
- 41:05Speaker 3: Yeah, I've heard of garlic, all.
- 41:07Speaker 8: Right, black garlic. It's acceptful.
- 41:09Speaker 6: But we waited this song for you to bring up
- 41:11Speaker 6: black garland for eight years.
- 41:13Speaker 8: You can. You can exchange lemon for black garlic easily
- 41:16Speaker 8: because it kind of offers the same.
- 41:17Speaker 3: Parkness, right Like I don't want I want black garlic.
- 41:21Speaker 8: You should.
- 41:21Speaker 5: It's better.
- 41:22Speaker 8: It's it's a it's a a better product, for sure.
- 41:25Speaker 2: And I'm looking that up right now, Chef. I'm hungry
- 41:28Speaker 2: as always. We appreciate you, We love your brother. We
- 41:31Speaker 2: we'll catch up again with you next week.

- 41:39Speaker 2: join us every single week.
- 41:40Speaker 3: And I am looking up black.

- 41:45Speaker 2: humidity for several weeks, transforming into a soft black clothes
