- 0:08willingness to push boundaries, featuring Hermolo Merleau, which is a rich,
- 0:13round earth the expressive wine with soft tannins and a
- 0:15wine that will compliment anyone's dinner table this holiday season.
- 0:18Get a bottle of Emmolo Merlau today, train wake, feel.
- 0:23Speaker 2: Better, the turn to the feel all right field talent under.
- 0:29Speaker 3: The weather, time to feel well. He's here now. He's
- 0:33the Empressario. He's the chief cook and bottle washer at
- 0:38the Wine Academy of Utah. Jimmy Santangelo Wine Academy of
- 0:43Utah dot com is where you'll find all of that
- 0:47stuff Jimmy, all of his events, how to become a saumier,
- 0:51all kinds of fun stuff, all different, different variety of things.
- 0:54And I was just sampling this, uh, this wine, and
- 0:58I thought I was getting a note of pork.
- 1:02Speaker 4: Go good with that dish, the cabbage dish utle and
- 1:06the pork raised. Hi, everybody, we are celebrating Jenny Wagner's
- 1:10wine She's part of the Wagner family, famed Camus Cabinet Savillon.
- 1:14We featured their wines in the past before. This is
- 1:16her collection. This is her She is not afraid to
- 1:19get her hands dirty. She was born into both wine
- 1:23making families. She's naming this portfolio, this brand Amolo after
- 1:28her grandmother's maiden name, and this is their seven blanc.
- 1:32And then we're also going to feature them are Low
- 1:34the savion blanc. You know, seven en blanc can be
- 1:37made all over the world New Zealand, savuon blancs that
- 1:40big bell pepper, dried grass, hay, lime, grapefruit, or the
- 1:44finer puifumets and sansers of the Loire and South blancs
- 1:49from California. Sometimes we'll touch them into a little oak
- 1:52to soften the a city. This is more leaning into
- 1:55that French style. The minerality comes through rather than just
- 1:58screaming acid on the side of the tongue, dryness on
- 2:02your tongue on the top, and that a little bit
- 2:04of dryness reflects uh minerality in the coming up from
- 2:10the soil. And when you can have when you can
- 2:14taste a sense of minerals in your wine. Uh, that's
- 2:19a it's telling you a little bit. The French call
- 2:21that terroi. The French call that terrooire, and not every
- 2:24wine has terrotoire. That's at the hand of the wine
- 2:26maker in the region. When everything comes together.
- 2:29Speaker 3: There's a nice slightly tart slight it's tart.
- 2:32Speaker 4: That's the acidity coming through on the side of the palate.
- 2:35This next uh, and as Bill's dish, as you mentioned,
- 2:39you have the port and that this is gonna cut through.
- 2:43You know, as the winter comes, your high acid whites,
- 2:48you want them to you want them to fatten up
- 2:51a little bit. You want the acid to come down. Uh,
- 2:54you don't want your refreshing backyard patio sablanx and pintigrigos
- 2:58and alberinos. As de delicious as those wines are. We
- 3:02got to drink seasonally, right, we got to drink seasonally.
- 3:04Speaker 3: Now this blanc this you're right, this would have been
- 3:06great with the pork and odon and cabbage. Now the
- 3:10pork in that was ground ground pork nice, you know,
- 3:14so you mix it, you.
- 3:15Speaker 4: Ground the fattiness of the pork, that protein, that saltiness
- 3:20is going to cancel out the acidity in that sad blanc,
- 3:24making for that fruitiness to come through and still a
- 3:27little bit of underlying city to cut through the starchiness.
- 3:30Speaker 3: The other pork that I had earlier in the week
- 3:33was tenderloin ah, and.
- 3:36Speaker 4: I understand it's a very small pork tenderline.
- 3:40Speaker 3: That's why we get to uh double it up this.
- 3:46I'm guessing this is going to be good with the
- 3:48tenderloin this.
- 3:49Speaker 4: So now what we're doing is in the season is
- 3:52we're we're not grilling outside as much, but we're opening
- 3:56things up from the oven. We're roasting, we're baking, and
- 4:00our wines need to become richer, fuller bodied. And this
- 4:04is a Merlow and this is right out of Napa
- 4:07Valley and this uh Merlow, the Molo Merlow is a
- 4:13premium wine. Uh long hang time meeting. They keep the
- 4:17grapes on the vine for an extended period. Where other
- 4:20people are like, yeah, we're gonna harvest, we're gonna we're
- 4:23gonna pull grapes, get them into the wine. These guys,
- 4:27their style is to keep them on the vine a
- 4:29little bit longer to absorb more of that rich sunshine.
- 4:33We're not afraid to have wine with a little bit
- 4:36higher brick level, and that's a sugar level in the grape.
- 4:40And when they bring them into the winery a little
- 4:42longer soaked time, cold soaking, extracting all that beautiful color
- 4:47from the grapes, from the skins of the grape.
- 4:50Speaker 3: Really unique, Yeah, no, really interesting. Yeah. I haven't even
- 4:53tasted a yet.
- 4:54Speaker 4: A lot of blueberry plum, a lot of blue fruits
- 4:57on this. So they take my wine classes, will know
- 4:59we break down into red fruit, blue fruit, and black fruit.
- 5:02This has got that black and blue fruit a little
- 5:04bit of a very ripe maybe even a little bit
- 5:07of prune in there, and are not like sweet things
- 5:11I'm saying, but not a ripe things, you know, things
- 5:14that have been sitting on a countertop for a minute,
- 5:16things that are very ripe aromatically, I haven't even put
- 5:20it to the pallettte let me say.
- 5:22Speaker 3: I haven't looked good. I haven't looked. But I'm guessing
- 5:24this is not an inexpensive bottle of wine.
- 5:27Speaker 4: Interestingly, we're the least expensive in the country. The brokers
- 5:31will tied to keep that into our community. This wine
- 5:35is normally fifty four to ninety nine. We're now going
- 5:37to stabilize it at forty four ninety five, forty five
- 5:40dollars beautiful bottle of wine. This is gonna pair with
- 5:44any dish that you're preparing over the holiday season. It's
- 5:48a great gift wine, in my opinion, Thanksgiving Turkey, Thanksgiving Turkey.
- 5:51It might be a little bit bild for that. But
- 5:53don't no fret because the Wagner family has a peanut
- 5:57noir for you. It's a bit in there.
- 6:00Speaker 1: Would say this time of year you should splurge a
- 6:02little bit.
- 6:02Speaker 4: On I think it's good around the weekends if you're
- 6:07you're grilling or having something as mentioned out of the oven.
- 6:11But this is a great wine that for you know,
- 6:16my target wine expenditure is different from others. I meet
- 6:21a lot of people who they're they're more of that
- 6:24premium market and this is gonna be a deal for them,
- 6:28and it is. It's at forty five dollars in November.
- 6:31Onward competes with you know, I don't like, but it's
- 6:35gonna blow away like duck Horn Merleau. As delicious as
- 6:38Duckhorn is and as famous as they are for merla,
- 6:41these guys are hot on their heels.
- 6:43Speaker 3: I think I like this one better than duck Horn.
- 6:44Speaker 4: Kind of yeah, yeah, I don't want to say, but yeah,
- 6:47I get it. Very neutral, but.
- 6:48Speaker 3: Yeah it's very good. I mean standing rib roast, standing rib, yeah,
- 6:54or crown pork, crown roast, So yeah, pork. That's what
- 6:59I said, Gina, I didn't say anything.
- 7:02Speaker 4: All right, A good stuff.
- 7:04Speaker 3: This is good stuff. So this is what's the name again, it's.
- 7:09Speaker 4: Jenny Wagner, Sablanc and Relow compliment. You just need these
- 7:14two bottles for a meal, one to start and one
- 7:17with the main and you're good to go olicious.
- 7:19Speaker 3: All right, all right, we're back with Jimmy Santangelo, Jimmy
- 7:26the wine guy who was the proprietor of the Wine
- 7:28Academy of Utah. You can find all of his events
- 7:31and things like that at the Wine Academy of Utah
- 7:34dot com. We have questions, what do you got there?
- 7:37Speaker 2: Character have your copy of Mill Creek City Lifestyle, which
- 7:41is you know that everyone everyone is clamoring for. And
- 7:45as you open up here to the middle centerfold, Jimmy's
- 7:50the centerfold, Jimmy Delicious.
- 7:53Speaker 3: Wines for a fall that Jimmy Famous jim right there now,
- 8:00suggestions in this selection here.
- 8:02Speaker 4: It's a great magazine. They it's a new publication and feature.
- 8:07You know, it's a hyper focus on a great community
- 8:09in our area. And I did one of their launch
- 8:13parties and everybody there, all the business people are so
- 8:17authentic and you're passionate about what they're doing.
- 8:19Speaker 2: It.
- 8:20Speaker 4: It was I'm usually around larger corporations and is crushing
- 8:25along making our numbers. These people are like going through
- 8:28it and I really respect it.
- 8:29Speaker 3: Creek has really become a it has It's become one
- 8:32of the areas and Salt.
- 8:34Speaker 4: Like absolutely absolutely, yeah.
- 8:37Speaker 3: All right. We got some questions for Jimmy. I know
- 8:39I saw some on the line to Stella. Hello, Stella,
- 8:42Morning Stella. I didn't do that. I didn't do it.
- 8:48That was Jimmy, who.
- 8:52Speaker 4: I know, you get it a lot.
- 8:55Speaker 5: So Jimmy, I don't eat meat. I do eat fish.
- 8:59I'd my pescotarian. So my boyfriend does not like white wine.
- 9:05So when I make like stripped campy or cod with
- 9:09like a tomato salad, like, I don't know if traditionally
- 9:14you're supposed to do white wines with fish, right, but
- 9:18is there any red wines that you could do with fish.
- 9:21Speaker 4: Yes, pean and noir, lighter gammets, chilled reds. See, this
- 9:24is the key when you do food and wine pairing.
- 9:27You want to pair the wine with what's talking the
- 9:31loudest down the plate. Just just hear me out. Sometimes
- 9:34you'll have a protein or the sauce is the protein.
- 9:39Let's say we're grilling steak and with salt and pepper
- 9:42it or you're grilling salmon. You hardly do any herbs
- 9:46and seasonings on salmon. Maybe a little tarragon or word
- 9:49merry with some sliced lemon, but the salmon's coming out.
- 9:52So we're gonna pair the wine with that salmon. That
- 9:55can be a pean and noir, that can be a lighter,
- 9:56buttery red. Now, if you're making that's an example of
- 9:59the protein talking loudest on the on the plate. If
- 10:02you have say cod or a hal a bit, well,
- 10:05that's where you're gonna do averblanc sauce. You're gonna have
- 10:07some crab meat over the top of that, finishing it
- 10:10with a white wine butter with a little tarra gun
- 10:13in there. Well, unfortunately, that's going to be speaking to
- 10:16a white wine. You had mentioned you make a with
- 10:19with a tomato salad. Ah, So now in the tomato
- 10:22that's going to be speaking loudest, and you compare a
- 10:25nice lighter body Kiantia red wine from Italy.
- 10:28Speaker 3: So you're good to go.
- 10:29Speaker 4: So thinking terms, Stella, next time you're pairing wine with
- 10:33your fish based dish or otherwise, what's the prominent flavor
- 10:38or what's talking the loudest on the plate?
- 10:41Speaker 2: See good, Thank you appreciate it.
- 10:45Speaker 4: You got it.
- 10:46Speaker 3: I think that pause was there because you stunned it.
- 10:50Speaker 1: Oh, she was waiting for the protein to talk the.
- 10:53Speaker 3: Last Jimmy's the loudest talking protein in the room. Indeed.
- 10:57Speaker 2: All right, thanks Stella. Let's go to Patricia hy Patricia, Patricia,
- 11:02good morning, good morning, go ahead, bye.
- 11:06Speaker 3: Good morning, good morning.
- 11:08Speaker 6: My question is for Christmas, I'm thinking about making a
- 11:12seafood extravaganza. I don't know size yet, but we would
- 11:17like to have like muscles and scallops and maybe some
- 11:20lobster love it.
- 11:22Speaker 4: What time should I? That's fantastic. So when you have that,
- 11:28we're looking at a white wine. You can also do
- 11:30a red Now, because you have such a number of
- 11:33different flavors in there, I would recommend a white blend.
- 11:36One that comes to mind and that's affordable and is delicious.
- 11:42Is a conundrum white blend because that has the good
- 11:47acidity but yet round flavors and it even has a
- 11:49little ripeness in there. You've got chardonnay sevi block, so
- 11:55you got the base of chardnay, you have the acidity
- 11:58of savin block. These are the grapes that are blended. Conundrum.
- 12:00You have semion for the florality of it, and then
- 12:03you have vigne that brings a bit of round ripeness
- 12:06to that wine that will just adapt wonderfully with your uh,
- 12:12your your seafood boiled.
- 12:14Speaker 6: Okay, that sounds great, Thank you so much.
- 12:18Speaker 4: You're welcome you right.
- 12:19Speaker 2: See these two sophisticated questions. So we've fd yes with
- 12:23cooking and all other Then we come back to the text,
- 12:29what's a good wine or beer for a first drink?
- 12:32Speaker 3: Which you got for good wine or beer for a
- 12:35first first time?
- 12:36Speaker 1: We get this in the morning's we have new people
- 12:39coming online all the first drink in the in the morning.
- 12:44Speaker 3: It's hard to relate. What's a good eye opener's I
- 12:49found this actually the dogs.
- 12:53Speaker 4: That's a great question. And gene is right. We I
- 12:55love when we get this question because I uh so,
- 13:00one thing that you can do is you want to
- 13:02keep it lighter, a little bit richer on the palette.
- 13:06Think moscato. Moscato, which is a type of wine. It's
- 13:10slightly bubbly and it's a little off dry. I mean,
- 13:14it's got a little bit of sweetness in it. Now,
- 13:16is it coca cola sweetened? No, it's less than that,
- 13:19but it's not dry tannic iced tea either. It's kind
- 13:23of in between there, and it's got a little physicfist.
- 13:26So your palette would be, oh, I've had that before,
- 13:30bubbles on my pallet and then it's this round flavor.
- 13:33So that is a very fundamental kind of a starter
- 13:37for you. Muscatadasti, let's see.
- 13:40Speaker 2: I feel as if everyone references with rum or vodka.
- 13:43But I've never heard much about Hawaiian wine.
- 13:48Speaker 3: Loved, Well, what did you have? Pineapple? Right? It was
- 13:52a pineapple wine.
- 13:53Speaker 2: It was there's a winery on Maui and they make
- 13:56the wine out of pineapples, and it is some of
- 13:59the sweet It's like kool Lady.
- 14:00Speaker 3: It was some of the sweetest stuff.
- 14:04Speaker 4: Interesting with that pineapple is going to be racy, interesting
- 14:08with that pineapple. When you pour that pineapple wine, when
- 14:12you get that bottle upside down, you're turning that pineal
- 14:15upside down.
- 14:15Speaker 3: It's just.
- 14:20Speaker 4: You behave yourself.
- 14:21Speaker 2: I like this well, but on the subject of pineapple,
- 14:24one thing I like to do is I like to
- 14:26get a big, a big Mason jar, cut up the pineapple,
- 14:30put it in there, and then.
- 14:31Speaker 3: Just take vodka. Doesn't even have to be good vodka. Sure,
- 14:34pour it up to the top.
- 14:35Speaker 2: Of the fruit. Let us sit a few days and
- 14:38then enjoy that vodcast.
- 14:39Speaker 3: Oh that's a great somebody says, I've recently got it
- 14:43into tiki.
- 14:45Speaker 4: Cocktails. Yeh, a rum based cocktail, typically having uh you
- 14:50know your pineapples. Your juice is one of the best.
- 14:52Were my favorite one cocktail I recommend it stiky bass
- 14:56called the Painkiller, and that is a dark rum. You've
- 15:00got then equal parts uh uh coconut milk uh orange
- 15:06juice and a little heavier dose of your pineapple shake.
- 15:10That put it in a nice talk Collins glass. Maybe
- 15:13it's even a zombie glass because that's a shaded wall
- 15:17or it's got that glass coat on the on the
- 15:20outside and a straw and a you know you can
- 15:24take those umbrellas. So that's a great morning cocktails whatever.
- 15:28Say the painkiller if you must know.
- 15:30Speaker 3: And somebody says, if your protein is talking, I think
- 15:33you need to put it back on the grill.
- 15:35Speaker 4: There you go, you'll keep it in mind. Thanks, everybody,
- 15:38have a great weekend.
- 15:40Speaker 3: Wine Academy of Utah dot com. That's Jimmy Santangelo. You
- 15:44can find all of his stuff. Let's be very vague.
- 15:48Speaker 2: Coming up, it's going to be a special event, special
- 15:54with Western Jimmy. That's that's as vague as I'm gonna get,
- 15:57all right, Wine Academy of Utah dot on for all
- 16:00of the events that Jimmy's got playing
