- 0:59Speaker 5: love lamb?

- 1:09Speaker 5: I know. I love a lot of things, Buddy.
- 1:13Speaker 6: Green Bay Packers, love God, love my family, loving America,
- 1:16Speaker 6: love football and baseball. Now I love the Tour de France.
- 1:23Speaker 6: Even though that's not American. I say a couple Americans
- 1:26Speaker 6: in it.
- 1:27Speaker 5: WoT.
- 1:29Speaker 4: I'll let you talk about that later on.
- 1:31Speaker 6: There was like, like I want to say, nine years
- 1:33Speaker 6: ago I took a trip to Ireland with my dad
- 1:36Speaker 6: and one of my brothers had and can I tell
- 1:40Speaker 6: you Irish people in Ireland love America. At the time
- 1:46Speaker 6: I was playing was obviously I was playing. I was
- 1:47Speaker 6: signed with the Patriots. They loved me because I was
- 1:51Speaker 6: with the Patriots at the time.
- 1:53Speaker 5: It was. It was the wildest thing.
- 1:54Speaker 6: And we were there during July fourth and they had
- 1:57Speaker 6: in Killarney, Ireland, southwest from part of the island, they
- 2:02Speaker 6: have like the biggest Fourth of July parade celebration I've
- 2:06Speaker 6: ever seen. That's a little like, all right, that's a
- 2:12Speaker 6: little bit there, but like it was.
- 2:14Speaker 5: They do. They love it because but they hate England
- 2:19Speaker 5: the US because we meet them.
- 2:20Speaker 7: They treat Fourth of July the way we treat too.
- 2:24Speaker 4: Okay, yeah, okay, all right.
- 2:26Speaker 7: I feel like no one in Mexico cares about well.
- 2:29Speaker 4: About what you're saying.
- 2:33Speaker 5: I'll tell you.
- 2:37Speaker 6: In the middle of Killarney, Ireland was a huge like
- 2:40Speaker 6: float statue of Liberty, tons of vocal Sam's running around.
- 2:44Speaker 5: It was awesome.
- 2:44Speaker 8: How it is Ireland.
- 2:46Speaker 5: It's amazing.
- 2:46Speaker 8: Everybody I know that's been there's like, that's one of
- 2:48Speaker 8: my favorite places I've done.
- 2:50Speaker 5: It was amazing.
- 2:51Speaker 6: Car had a driving other side of the road, which
- 2:53Speaker 6: took some getting used to, especially at the roundabouts.
- 2:55Speaker 4: Should we go cover the Iowa State Kansas State game
- 2:58Speaker 4: in August.
- 2:59Speaker 7: YEP, I don't see why not.
- 3:01Speaker 4: How do we sell that to the brass.
- 3:04Speaker 8: I'd rather do that than match up a lot of
- 3:06Speaker 8: eyeballs Avery.
- 3:08Speaker 9: Avery Johnson, Hey, guys, you want to take one of
- 3:11Speaker 9: four or five ESPN National.
- 3:13Speaker 5: International International are global?
- 3:15Speaker 4: Right, Let's go global.
- 3:17Speaker 7: Let's go global Global.
- 3:18Speaker 6: I'm sure the show will be super great. Well, we'd
- 3:20Speaker 6: be doing it the morning show like it like at noon.
- 3:24Speaker 4: Yeah, that would be set to wake up early and
- 3:27Speaker 4: sleep in a little bit more energy.
- 3:29Speaker 5: Yeah, let's just move there so we can sleep light
- 3:31Speaker 5: every day.
- 3:32Speaker 8: Stadium like, that's a that's a good football atmosphere, despite
- 3:35Speaker 8: that it's a soccer stadium, like they don't normally play
- 3:42Speaker 8: football in it. But I'm saying, like the crowd has
- 3:44Speaker 8: been a legend, can still be great. No, I'm saying
- 3:47Speaker 8: they don't do the Chargers.
- 3:48Speaker 4: Playing at the Home Depot Center.
- 3:50Speaker 5: That wouldn't great.
- 3:52Speaker 6: They have Irish Irish football there. Yeah, it's nothing like
- 3:58Speaker 6: our football or like soccer. Right, it's like its own rules.
- 4:02Speaker 6: It's only only in Ireland. So we we got tickets
- 4:05Speaker 6: to one of them and it was electric dude. It
- 4:08Speaker 6: was County Carry versus County Cork and Kilarney.
- 4:12Speaker 5: It was electric.
- 4:12Speaker 6: There was a star player there for County Cork I believe,
- 4:18Speaker 6: I can't remember.
- 4:18Speaker 5: His name was the Gooch. It was a start. Everybody
- 4:21Speaker 5: knew the Gooch.
- 4:22Speaker 7: Isn't that that's the neighborhood that guy lived in, the
- 4:25Speaker 7: tom Brady the Tennessee.
- 4:29Speaker 4: That's the name he goes by.
- 4:31Speaker 5: I mean, I'm sure sure it's short for something, maybe
- 4:34Speaker 5: Gunther or something.
- 4:35Speaker 8: No, his name is colemb Cooper where they was an
- 4:39Speaker 8: Irish Gaelic footballer for UH County Carry.
- 4:45Speaker 5: I got the opportunity to meet the Gooch.
- 4:47Speaker 8: Why he's called the Gooch, I don't know, but I
- 4:49Speaker 8: mean his name is colemb Cooper.
- 4:52Speaker 7: Remember something different?
- 5:00Speaker 4: Continue on until I say something I shouldn't.
- 5:02Speaker 5: Yeah, so I'm at the.
- 5:06Speaker 4: Pub that.
- 5:12Speaker 5: You have a highlight clips of UH Gaelic football. That
- 5:18Speaker 5: was amazing though, So I did some him. We uh
- 5:22Speaker 5: we shared a guinness.
- 5:24Speaker 7: Did you split the g?
- 5:27Speaker 5: I don't know.
- 5:29Speaker 9: I don't so it's like a trend for something like
- 5:32Speaker 9: you chug a guinness until you split the g.
- 5:35Speaker 4: On the glass?
- 5:38Speaker 7: You know how there's a g on the glass.
- 5:40Speaker 5: When you drink. When you drink a beer with the
- 5:43Speaker 5: you go past the g you finished, You finished the beer.
- 5:48Speaker 8: Here's cold. The Cooper highlights.
- 5:51Speaker 7: Look at this seems very angry there it is. I
- 5:58Speaker 7: thought you weren't allowed to use your hands.
- 6:00Speaker 5: So this is Irish Irish football.
- 6:02Speaker 7: It's different from soccer.
- 6:04Speaker 4: A combination of rugby and soccer.
- 6:06Speaker 5: It's a combination of rugby.
- 6:08Speaker 9: Ultimately, why the polos, gentlemen, it's classics stribbling.
- 6:15Speaker 7: So it's like basketball.
- 6:17Speaker 4: Yeah, soccer, I'm telling you. But they got a gold
- 6:21Speaker 4: look above gold what ye yeah, that's why people are there.
- 6:26Speaker 5: My god, it was, I'm telling you it was. We
- 6:29Speaker 5: barely got tickets.
- 6:31Speaker 4: Yeah, but the car he was a score.
- 6:35Speaker 7: He gouches, he scored.
- 6:37Speaker 5: Yeah, yep. God, space between you know what I mean.
- 6:48Speaker 4: I almost said to them, I'm pretty sure it could
- 6:50Speaker 4: have got.
- 6:50Speaker 7: Me fire canceled.
- 6:52Speaker 4: I'm pretty sure you said the space between.
- 6:54Speaker 8: It's always like, what position does this guy play?
- 6:56Speaker 10: I don't know.
- 6:56Speaker 5: He's a bit of between or between at the bottom.
- 7:02Speaker 4: Oh my god. We have to move on from We
- 7:07Speaker 4: have to because I just said I want to pop
- 7:10Speaker 4: off and I'm going in my head.
- 7:14Speaker 8: Well, and like you were talking like Gayla, you were
- 7:17Speaker 8: saying Gaelic football. I'm thinking of like style got.
- 7:21Speaker 5: He's a slim dude.
- 7:22Speaker 6: I know there were some big hits. Was decleating people
- 7:27Speaker 6: out there. Okay, buddy, Yeah, I'm good. I told you.
- 7:35Speaker 5: It means something different. I know, I know, maybe it doesn't.
- 7:39Speaker 5: Who knows, I know.
- 7:41Speaker 8: I mean maybe.
- 7:42Speaker 9: Now, apparently there was a doll that was called the
- 7:48Speaker 9: Gooch and.
- 7:51Speaker 7: Over here like this that dog.
- 7:53Speaker 8: I got to look up the Guca dog. I have
- 7:55Speaker 8: to know what this looks like.
- 7:56Speaker 5: All right, all right?
- 7:59Speaker 4: How the how? How the drink the guinness?
- 8:02Speaker 5: Though?
- 8:02Speaker 4: I feel like if you got like that, like, I'm
- 8:05Speaker 4: pretty sure he eliminated those as well.
- 8:07Speaker 6: Let me tell you something. I made all Americans proud
- 8:14Speaker 6: that night. So you hung out with the goot, I
- 8:16Speaker 6: mean just for okay, split a brew split a brew
- 8:22Speaker 6: split a g.
- 8:26Speaker 5: Good lord splitcher.
- 8:27Speaker 7: Mm hmm. Well, I don't know. Irish soccer was a thing.
- 8:34Speaker 6: That's the thing, so whatever. I think the fame has
- 8:38Speaker 6: been contained to a small little island.
- 8:43Speaker 5: Yeah, but now.
- 8:46Speaker 8: Because he's getting popular, time to unleash the Gooch.
- 8:50Speaker 5: You see, if I can get a sports card of
- 8:52Speaker 5: the gooch.
- 8:53Speaker 8: Yeah, okay, so here look here it is it was.
- 8:55Speaker 8: There was a there was a doll in there nothing
- 8:57Speaker 8: not the not the card. There's a dollar in the
- 9:00Speaker 8: eighties called the Gucci Doll, better nickname than gooj and
- 9:05Speaker 8: it had red hair.
- 9:06Speaker 5: And this is it. He does have red hair.
- 9:10Speaker 9: He is very pale, good Irish boy sad, Yeah, Irish lad.
- 9:20Speaker 5: Okay, do you like inness?
- 9:23Speaker 4: Yeah? It tastes different over there than it does here.
- 9:27Speaker 5: I don't love it here. I don't either, but it
- 9:30Speaker 5: goes down so smooth when you're there. What is it
- 9:34Speaker 5: the nitrogen? I think it's like a nitrogen keg.
- 9:36Speaker 4: I don't know. Really good there I had in a
- 9:38Speaker 4: pub when we played the Saints over there.
- 9:40Speaker 6: Yeah, instead of using CO two that we use here,
- 9:42Speaker 6: I think they used like nitrogen specifically for that went.
- 9:45Speaker 4: Down smooth, real quick.
- 9:48Speaker 9: Because we had a question about this earlier and this
- 9:50Speaker 9: is like behind the scenes meat making kind of stuff.
- 9:54Speaker 7: You asked about rouses earlier.
- 9:56Speaker 9: Yeah, okay, it didn't show up, and now showing up,
- 9:58Speaker 9: so do rouses?
- 10:00Speaker 5: Okay?
- 10:00Speaker 4: All right?
- 10:01Speaker 7: Well you like not a floater?
- 10:02Speaker 5: Yeah yeah, yeah, yeah, yeah, it's right here.
- 10:04Speaker 4: Yeah, it's weird to get Okay, So to get me

- 13:49Speaker 10: I'm good brother?
- 13:49Speaker 4: How are you fantastic? How can we not be? Tomorrow
- 13:52Speaker 4: is America's birthday? And on that note, hashtag munchies. What
- 13:55Speaker 4: is on Chef's Fourth of July menu?
- 13:59Speaker 10: I'm actually going to Tolito Band and I'm gonna. Yeah,
- 14:03Speaker 10: I'm gonna try to catch me some cat fris. Fresh
- 14:06Speaker 10: fish is always better, but I do have a little
- 14:08Speaker 10: brisket lined up. My my buddy. There's a big crew
- 14:12Speaker 10: of people that are going, so we're gonna We're gonna
- 14:14Speaker 10: barbecue tomorrow.
- 14:16Speaker 4: Yes, SI for that hashtag munchies. Do you make your
- 14:19Speaker 4: own tortillas?
- 14:22Speaker 10: I have before. You got to find the right quality ingredients.
- 14:26Speaker 10: You know, there's definitely a difference in it when you
- 14:28Speaker 10: can get it done and and you know, it's kind
- 14:31Speaker 10: of one of those romantic things too, like when you
- 14:33Speaker 10: do it by hand, I think it's a superior product.
- 14:36Speaker 10: But I don't do it all the time. Know, there's
- 14:38Speaker 10: something something convenient about the speed of life. You know,
- 14:43Speaker 10: when I'm trying to feed my children, I don't. I
- 14:45Speaker 10: don't hand make tortillas.
- 14:47Speaker 6: Yeah, we my wife and I one time we bought
- 14:50Speaker 6: like a tortilla press because we were like, man, we're
- 14:52Speaker 6: gonna do it ourselves. We love homemade tortillas. And we
- 14:55Speaker 6: did it once and we're like, yep, we'll never do that.
- 14:57Speaker 10: Yeah, but you know, for the for the you know
- 15:00Speaker 10: price per pound, you know what I mean, Like I mean,
- 15:03Speaker 10: it takes it takes some time to get all those
- 15:05Speaker 10: things pressed out. You have to have a small army
- 15:07Speaker 10: to do it in an efficient amount of time. And
- 15:10Speaker 10: so yeah, and that's only like one one tenth of
- 15:14Speaker 10: the of the dish that you're preparing, right, So yeah,
- 15:19Speaker 10: hashtag is better.
- 15:21Speaker 4: No doubt. Hashtag munchies. What can you do with leftover
- 15:24Speaker 4: cooked burger patties besides make another burger?
- 15:28Speaker 10: Uh? You know, we'd like to put it into like
- 15:30Speaker 10: a red sauce or something, to make a bolognaise, or
- 15:33Speaker 10: put it into a stuffing or dirty rice or something
- 15:35Speaker 10: like that.
- 15:35Speaker 5: Yeah, dirty rice, JEF.
- 15:38Speaker 6: So a big part of the Fourth of July is
- 15:41Speaker 6: firing up the grill. Some people like to low and slow.
- 15:44Speaker 6: Let's get some let's get some smoke on some meat.
- 15:48Speaker 6: My question is if you're cooking like some ribs or brisket,
- 15:51Speaker 6: and I'm sure, it's different for every meat. For you
- 15:53Speaker 6: by what kind of wood are we going with? And
- 15:55Speaker 6: then my question, like I was told one time, like
- 15:58Speaker 6: soak the wood for a couple hourshigher to the to it.
- 16:02Speaker 10: Yes, all that, so I have I actually have a
- 16:05Speaker 10: specific temperature that I like. And if you're smoking on
- 16:08Speaker 10: a pellet grill, it's it's difficult to maintain that if
- 16:12Speaker 10: you're smoking in like an oven with a controllable And
- 16:16Speaker 10: the reason for pellet grills is because a lot of
- 16:18Speaker 10: times it doesn't go down to one hundred and eighty
- 16:19Speaker 10: seven degrees, But that's that's the that's the temperature that
- 16:22Speaker 10: I like to smoke smoke at. Well, you can go
- 16:26Speaker 10: to one ninety if you if you don't go down
- 16:28Speaker 10: that low. But so the lower you smoke, the more
- 16:31Speaker 10: profuge and profound the smoke is, and it creates a
- 16:36Speaker 10: deeper saturation. Right once you get up into the two
- 16:39Speaker 10: hundred and twenty range, you're getting a really light smoking.
- 16:41Speaker 10: You're really more so cooking than you are smoking. So
- 16:45Speaker 10: I like to smoke low and lower in the range.
- 16:49Speaker 10: As far as soaking the wood, if you're using sticks
- 16:52Speaker 10: of wood, yes, absolutely overnight is fine. You want to
- 16:56Speaker 10: You want to allow that moisture to absorb in because
- 16:58Speaker 10: you don't want the wood to catch fire, which is,
- 17:01Speaker 10: you know, like you dry wood out to catch the
- 17:03Speaker 10: set fire. If you're putting it into a fireplace, you dry,
- 17:06Speaker 10: you wet the wood and soak it. And you need
- 17:09Speaker 10: to wait now because it's want to float, right, So
- 17:11Speaker 10: it needs to be saturated enough that when you put
- 17:13Speaker 10: it here a fire or near the briquets or near
- 17:16Speaker 10: the fire source, it's smoldering, which creates the smoke versus
- 17:20Speaker 10: catches catches fire. And it's definitely important as far as
- 17:24Speaker 10: the types of wood. I like to do a blend
- 17:27Speaker 10: of woods depending on white meat or red meat. Red
- 17:31Speaker 10: meat I like to put you know, like a pecan
- 17:36Speaker 10: in there, and well let me let me rephrase that.
- 17:39Speaker 10: If I'm smoking pork or chicken, I like to blend
- 17:43Speaker 10: it with like a cherry or an apple or a peach,
- 17:46Speaker 10: with a heavier, more denser wood like pecan or hickory.
- 17:52Speaker 10: I really like the flavor of hickory and pecan. And
- 17:55Speaker 10: then for you know, like red meat, just a just
- 17:57Speaker 10: a straight hickory something like that you can use like
- 18:01Speaker 10: white oak. But I really for the other two flavors.
- 18:05Speaker 4: Yeah, hashtag munchies. What's your barbecue sauce recipe?
- 18:11Speaker 10: So I'm going to get judged over this. I like
- 18:14Speaker 10: molasses space. You know, the barbecue is a is a
- 18:17Speaker 10: is a buzzword, right, Like if you're from Texas, you
- 18:19Speaker 10: got But being from the Kansas City area, I do
- 18:24Speaker 10: like the molasses based sauces. And what I really love
- 18:27Speaker 10: to do is Kcy Masterpiece makes a delicious sauce that
- 18:31Speaker 10: I use as a base to go different directions. Right,
- 18:34Speaker 10: So like I love making this raspberry halipen, you know,
- 18:38Speaker 10: barbecue for pork and you you know, like if I'm
- 18:41Speaker 10: in a pinch and I don't have time to make
- 18:42Speaker 10: the sauces, I mean most people don't. Most people don't
- 18:46Speaker 10: start with the molasses and the ketchup and make their
- 18:48Speaker 10: own barbecue. You can and it's it's it's you know,
- 18:51Speaker 10: like it's feasible. But you know, when it's busy on
- 18:54Speaker 10: the fourth of July and you're just trying to make
- 18:56Speaker 10: a good sauce, I'll take a Ksey Masterpiece and like
- 19:01Speaker 10: for a for a brisket, I really love to take
- 19:05Speaker 10: whole pepper corns toast them off. Then when then crack
- 19:09Speaker 10: them and put them back into the pan, burn some
- 19:12Speaker 10: bourbon or or whiskey off while in the pan with them,
- 19:16Speaker 10: and then put that into the barbecue sauce and make
- 19:19Speaker 10: a whiskey or a bourbon pepper glaze with a barbecue
- 19:24Speaker 10: for uh, for a pork bud or something like that.
- 19:28Speaker 10: I really love fruity stuff. You know this raspberry jalapeno
- 19:33Speaker 10: and you can you can use fresh alipannos. You can
- 19:36Speaker 10: use raspberry jam if you're in a pinch, but raspberry
- 19:39Speaker 10: and jalapeno go. It's definitely well together. And you make
- 19:42Speaker 10: a sauce out of that and then blend that into
- 19:44Speaker 10: your barbecue sauce, so you're kind of sweetening it, sweetening
- 19:47Speaker 10: it up a bit, brightening it up, brightening it with
- 19:50Speaker 10: a little bit of fruitiness, and then spicing it with
- 19:53Speaker 10: with the jalapenos. Right, and uh, there's there's a lot
- 19:55Speaker 10: of going.
- 19:56Speaker 5: On in there, chef. Oh, I'm sorry, go ahead, No, oh, no,
- 20:00Speaker 5: you're good. This was a.
- 20:01Speaker 6: Completely different subject to your question. But I remember Fourth
- 20:06Speaker 6: of July like growing up, like the best sound ever
- 20:08Speaker 6: playing outside as a kid was hearing that like homemade
- 20:12Speaker 6: ice cream maker just churning, like in the in the
- 20:15Speaker 6: wooden bucket.
- 20:16Speaker 5: You got the ice on it, you got the ice.
- 20:17Speaker 6: Cream salt poured over, you got the towel like to
- 20:20Speaker 6: keep it all insulated. And we would always do like
- 20:23Speaker 6: just a standard like vanilla ice cream or maybe a
- 20:25Speaker 6: peach ice cream. But do you have any like any
- 20:28Speaker 6: secret sauce to a good homemade ice cream, maybe something
- 20:31Speaker 6: that's not real traditional.
- 20:34Speaker 10: Well, I'm old enough brother that the sound of the
- 20:37Speaker 10: ice cream maker was the kids pissing and moaning.
- 20:43Speaker 4: When my grandma had one.
- 20:44Speaker 10: It was one of the ones you turned and didn't
- 20:46Speaker 10: have the electric motor yet. But do you know that
- 20:49Speaker 10: that peach, you know, like fresh fresh berries in the summertime,
- 20:54Speaker 10: you know, like strawberry or or you know, I have
- 20:56Speaker 10: a particular fondness for really sweet peaches or nectarines. I
- 21:00Speaker 10: think you hit it on the nose there, like cook
- 21:02Speaker 10: that down into a syrup and added in. The sugar
- 21:06Speaker 10: is what's matterful to the ice cream so that it
- 21:08Speaker 10: doesn't freeze up into a hard mass. The sugar is
- 21:11Speaker 10: what offers the fat substance to the ice cream that
- 21:14Speaker 10: keeps its you know, like soft and churning. So you know,
- 21:18Speaker 10: when you're putting something into it, you need to make
- 21:20Speaker 10: sure that it's sweet and has sugar content. So if
- 21:23Speaker 10: you're using peaches, you kind of make a peach syrup
- 21:26Speaker 10: and get the flavor out of the peaches purring it down.
- 21:29Speaker 10: You can use the pulp in it that Not everybody
- 21:32Speaker 10: loves that texture, you know, like pulp and ice cream.
- 21:35Speaker 10: Some people like the smoothness of ice cream, so you
- 21:37Speaker 10: would just make a syrup out of it. But I mean,
- 21:42Speaker 10: you have my mouth watering when you said peaches. You know,
- 21:44Speaker 10: like I love fresh summertime peaches.
- 21:46Speaker 4: Man, Jeff, what's the go I know? Like you know,
- 21:50Speaker 4: we talk about often, like you're not out there trying
- 21:52Speaker 4: to bake your cake or anything, but what is your
- 21:54Speaker 4: go to dessert for the Fourth of July? Like do
- 21:57Speaker 4: you have because earlier we were talking about it. We
- 21:59Speaker 4: had to apple pie, We had banana pudding. Is mine
- 22:03Speaker 4: in a lawn dress? What we went with? What's your
- 22:05Speaker 4: favorite Fourth July? I desert?
- 22:07Speaker 10: You know you're gonna I just like fresh fruit. Honestly,
- 22:10Speaker 10: I like the sweetness of fresh fruit, especially when it's
- 22:12Speaker 10: in season, you know, like a white nectorine or a
- 22:15Speaker 10: white peach. When it's in season. The sweetness of that
- 22:18Speaker 10: is more satisfying to me than any other, you know,
- 22:20Speaker 10: like baked baked sweetes. I have a fondness for crimber
- 22:25Speaker 10: lay and I don't care what time to the year is.
- 22:28Speaker 10: Like if you put a crimberle in front of me
- 22:29Speaker 10: on fourth of July, I'm gonna eat it. But I'm
- 22:31Speaker 10: probably not gonna make it on fourth of July because
- 22:33Speaker 10: it's quite labor intensive and and not not. And I'm
- 22:37Speaker 10: gonna put an asterisk to kind of behind apple pie
- 22:40Speaker 10: because I don't I would never turn down a piece
- 22:42Speaker 10: of apple pie. And I do think that it goes
- 22:45Speaker 10: with the holiday. You know, it's it's it is an
- 22:47Speaker 10: American dish, And yeah, I do like apple pie.
- 22:53Speaker 6: Chef are chips an appropriate option to put inside of
- 22:57Speaker 6: a burger to add a little crutch?
- 22:59Speaker 10: I mean, I love changes. You know this contrast, if
- 23:02Speaker 10: I told you if somebody yes, the quick answer is yes,
- 23:06Speaker 10: And like I think, you know, like very crispy chips.
- 23:10Speaker 10: You can't get those soggy things, the ruffles, Like it's
- 23:12Speaker 10: got to be a proper kettle kettle fried chip where
- 23:16Speaker 10: it has a lot of texture. But as a kid
- 23:19Speaker 10: growing up like I thought I was the smartest guy ever.
- 23:21Speaker 10: First time I put chips on burger and was like,
- 23:23Speaker 10: oh my god, you know yeah.
- 23:25Speaker 5: Oh yeah, cheeseburger. I got cheetos.
- 23:27Speaker 10: Yeah, there you go.
- 23:29Speaker 4: Actually sounds pretty delicious there, chef. If you're doing ribs
- 23:36Speaker 4: the right way and you want to fall off the bone,
- 23:39Speaker 4: how do you make that happen?
- 23:41Speaker 10: You know, there's a couple of ways to do it.
- 23:43Speaker 10: And you said it earlier, slow and low. You know,
- 23:47Speaker 10: in some circumstances, people will actually simmer their bones and
- 23:50Speaker 10: like a flavorful broth, and I say simmer, not boil like.
- 23:54Speaker 10: They sometimes will poast them in a flavorful broth to
- 23:57Speaker 10: speed the process of the cookup. If you're not smoking
- 24:00Speaker 10: them right, because if you're just trying to get them
- 24:04Speaker 10: to fall off the bone, you can simmer them in
- 24:06Speaker 10: a flavorful frost and then barbecue them, sauce them and
- 24:09Speaker 10: put them on the pit and cook them until they
- 24:11Speaker 10: fall off. The key feature here is is that you
- 24:14Speaker 10: need to cook them long enough that the connective tissue
- 24:17Speaker 10: is falling falling apart, and it needs to reach at
- 24:20Speaker 10: least one hundred and eighty degrees So in temperatures of
- 24:25Speaker 10: done this one hundred eighty degrees as well beyond well done. Right,
- 24:29Speaker 10: So at that point, if you cook it to that
- 24:32Speaker 10: temperature too fast, everything tenses up and gets real hard
- 24:36Speaker 10: and it draws the moisture out of the meat too quickly.
- 24:39Speaker 10: So that's why you have to go slow and low,
- 24:41Speaker 10: because there's two things that will loosen connective tissues. Time
- 24:46Speaker 10: and temperature. Time being the better of the two because
- 24:50Speaker 10: you know it's going to get to that one hundred
- 24:53Speaker 10: and eighty degree temperature, but you're taking your time to
- 24:55Speaker 10: get there so that the muscle tissues don't sense up too quickly.
- 24:58Speaker 10: The other one is, like I said, bring it to
- 25:00Speaker 10: one hundred and eighty degrees quickly, it's going to get
- 25:03Speaker 10: firm and tint and chewy, and the moisture will draw
- 25:06Speaker 10: out of it, which means it's going to be dry
- 25:07Speaker 10: as well. So you can choose your path, but one
- 25:11Speaker 10: of them is better than the other.
- 25:12Speaker 6: Chef, you used to drive me crazy. You used to
- 25:14Speaker 6: watch like the cooking shows, and there were some barbecue
- 25:17Speaker 6: shows where when they were cooking ribs, if the meat
- 25:19Speaker 6: was falling off the bone, they got deducted points. They
- 25:22Speaker 6: wanted like a beautiful rib would bite to it. I
- 25:24Speaker 6: was like, you guys are crazy, These judges are idiots,
- 25:28Speaker 6: Like falling off.
- 25:28Speaker 5: The bone is the best.
- 25:30Speaker 10: Yeah, I mean it's kind of like gumbo, right, Like
- 25:33Speaker 10: it depends on people have their own ideas of what
- 25:36Speaker 10: barbecue is, and you know, it depends on how they
- 25:39Speaker 10: were raised and the way their parents prepared it. And
- 25:41Speaker 10: that's the right way, right, Like the way grandma did
- 25:44Speaker 10: it is the right way to me. You know, Like
- 25:47Speaker 10: food is all about enjoyment. It's kind of like wine,
- 25:49Speaker 10: you know, like I don't care if you're a salmonie
- 25:51Speaker 10: or not. If it doesn't taste good, it's not good wine. Right,
- 25:55Speaker 10: thing goes with food. If you enjoy it, who cares
- 25:57Speaker 10: how you got there with it? You know what I mean.
- 25:59Speaker 10: It's it's you have You have traditionally trained chefs that
- 26:04Speaker 10: that that I think have their philosophies. But then you
- 26:08Speaker 10: have home trained cooks that grandma taught that. You know,
- 26:11Speaker 10: like you can get the same product and have their
- 26:14Speaker 10: two completely different processes and one that just doesn't make
- 26:18Speaker 10: any sense to a trained chef's mind, but there is
- 26:21Speaker 10: some sensibility and science behind it, and Grandma may not
- 26:25Speaker 10: be able to explain it to you. But you know,
- 26:27Speaker 10: as long as the product gets there and everybody enjoys it,
- 26:30Speaker 10: who cares.
- 26:31Speaker 4: You know what I'm saying, Chef, you're the best. We
- 26:34Speaker 4: appreciate you every single week. Enjoy your holiday, sir.
- 26:37Speaker 5: And catfish yes, book, yeah, thank you.
- 26:41Speaker 10: I appreciate that it travels.
- 26:46Speaker 4: And a lot of fishing on old Teleda Ben where
- 26:48Speaker 4: I did not catch a catfish, so best of luck,
- 26:52Speaker 4: weren't a great angler. That's yeah, I don't know about that.
- 26:56Speaker 6: But I need to get my I need to get
- 26:57Speaker 6: my kids out fishing, like I just don't know.
- 27:00Speaker 5: Really where did it take them? Right now?
- 27:01Speaker 4: Come my backyard? Yeah all right, that's like fun kid
- 27:06Speaker 4: fishing because like chances are you throw it out there.
- 27:08Speaker 6: You got a lake like in my neighborhood kind of
- 27:10Speaker 6: kind of by my house. But I don't like, not
- 27:12Speaker 6: on the lake, so I don't technically have permission to
- 27:14Speaker 6: go do that.
- 27:15Speaker 9: Oh.
- 27:15Speaker 4: I mean we have like we'll have like teenagers that
- 27:18Speaker 4: will just walk in our backyard with their fishing pole
- 27:20Speaker 4: and I'm like, I don't care. Yeah, I mean, we're
- 27:24Speaker 4: all throwing them back anyway, and nobody's keeping these fish.
- 27:27Speaker 6: So no one's keeping those golf course marshmouth pass.
- 27:33Speaker 4: I mean we we have a five pound bass in there,
- 27:36Speaker 4: which is if you're a bass fisherman, you know that's
- 27:38Speaker 4: a big one. Uh. They did, they got a car
- 27:41Speaker 4: they have They caught what would have been the state
- 27:44Speaker 4: record carp in there. But obviously you know it doesn't
- 27:49Speaker 4: count if it's in a like a private lake situation.
- 27:51Speaker 4: So it's good, kid fished, right, throw it out there,
- 27:55Speaker 4: catch it, throw it back.
- 27:56Speaker 5: Hey.
- 27:58Speaker 6: Catfish like hot dogs too, just like I used to
- 28:01Speaker 6: go fishing with hot dogs. Cut them up, put them
- 28:03Speaker 6: out a little hook as a kid, kind of like
- 28:06Speaker 6: we's a troublehook.
- 28:07Speaker 5: Kind of cheating a little bit. See catch the fire
- 28:11Speaker 5: out of them.
- 28:11Speaker 4: Cafe, You ain't cheating, You ain't trying bot agree though.

- 31:08Speaker 1: breakdown l s U Football like only champions.
- 31:10Speaker 4: Can thank my lucky starts to be living here today.
- 31:19Speaker 11: Thus the fact still stands for freedom. Then they can't
- 31:23Speaker 11: take that away. And I'm bound to be an American where.
- 31:33Speaker 2: These die O free and I won't get.
- 31:38Speaker 7: The men who died who gave that bite to me?
- 31:42Speaker 3: And I glad his hand up next to you And
- 31:46Speaker 3: then persuase, no doubt.
- 31:51Speaker 4: Did y'all used to play this like in school, like
- 31:54Speaker 4: on Fridays we.
- 31:55Speaker 8: Had to wed to see it for an end of
- 31:57Speaker 8: the year program when I was in Like that's great.
- 31:59Speaker 6: Like I'm thinking my music class. Yeah, they gave all
- 32:02Speaker 6: the kids, like the little tambourine.
- 32:03Speaker 8: You did it for like Veterans Day when I was
- 32:05Speaker 8: in the first grade or something.
- 32:07Speaker 4: Yeah, like any like patriotic holiday, like they'd play it
- 32:10Speaker 4: over the speakers like the intercom system of the entire school,
- 32:13Speaker 4: the whole.
- 32:14Speaker 6: Of hope they're still doing that today, unfortunately.
- 32:21Speaker 5: Chance.
- 32:22Speaker 9: Yeah, I'm surprised they haven't taken like the Pledge of
- 32:26Speaker 9: Allegiance out of school.
- 32:28Speaker 8: Probably some of I know at least tried. I don't
- 32:32Speaker 8: know if they have.
- 32:33Speaker 6: A lot of people took the under God part, yeah,
- 32:36Speaker 6: which is let's not get started on that because it's
- 32:40Speaker 6: just gonna piss us all off. Let's just celebrate America,
- 32:45Speaker 6: America under God, under God.
- 32:49Speaker 7: Wait, did you do the Texas Pledge of Allegiance?
- 32:52Speaker 5: We did not do the Texas Pledge.
- 32:53Speaker 9: We used to have like the Texas Pledge of Allegiance
- 32:56Speaker 9: and it was like, I pledge allegiance to.
- 32:59Speaker 4: The Wait see what it was, Texas.
- 33:03Speaker 7: Yeah, and it was every time you would do the
- 33:07Speaker 7: I don't remember.
- 33:08Speaker 9: It, and then you would do the Texas one after
- 33:11Speaker 9: honor the Texas flag. I pledge allegiance to the Texas
- 33:14Speaker 9: wed state under God, won and indivisible. It's literally the
- 33:17Speaker 9: Pledge of Allegiance, but like shortened in Texas.
- 33:23Speaker 7: Is there a Louisiana.
- 33:25Speaker 6: Pledge of the Well, the Texas state flag is the
- 33:28Speaker 6: only like state flag that's allowed legally to be flown
- 33:31Speaker 6: at the same level as the American flag because it
- 33:34Speaker 6: has had its But that's part of it. I don't
- 33:38Speaker 6: I don't necessarily agree with it, but you know it
- 33:41Speaker 6: was just well, well fun fact cod bit there.
- 33:43Speaker 4: Yeah, all right, So because of the look that you
- 33:47Speaker 4: gave me when I said, like your favorite Fourth of
- 33:49Speaker 4: July moment, we don't have to do that. I'll give
- 33:53Speaker 4: you some of the big moments in sports on the
- 33:57Speaker 4: fourth of July, going all the way back to nineteen
- 34:01Speaker 4: thirty nine, Lou Garrick's Luckiest Man speech. So after being
- 34:05Speaker 4: diagnosed with als, Yankees legend Loud Garrett delivered his iconic
- 34:09Speaker 4: farewell at Yankee Stadium in which one of the lines
- 34:13Speaker 4: that has really lived on and I think every sports
- 34:16Speaker 4: fan knows it today, I consider myself the luckiest man
- 34:20Speaker 4: on the face of the earth. That was on the
- 34:23Speaker 4: fourth of July nineteen thirty nine. In nineteen eighty four,
- 34:27Speaker 4: the Mets and Braves had a game in which the
- 34:31Speaker 4: two teams battled through nineteen innings in over eight hours,
- 34:36Speaker 4: ending at three point fifty five am on July the fifth,
- 34:40Speaker 4: and included two rain delays in a stadium fireworks show

- 41:11Speaker 6: But I had a question, what, in all your years
- 41:13Speaker 6: playing football, what was the best rendition of the pregame
- 41:18Speaker 6: national anthem you were ever on.
- 41:20Speaker 4: The Oh my gosh, what is that guy's name? I'm
- 41:22Speaker 4: so embarrassed. I can't remember it because my love for
- 41:25Speaker 4: R and B. I'm gonna look it up.
- 41:27Speaker 6: I got a couple why do you while you do that?
- 41:29Speaker 6: I got a couple that stood out to me. The
- 41:30Speaker 6: first one was, uh, this was probably the worst or
- 41:34Speaker 6: the most famous one in the twenty ten Super Bowl,
- 41:36Speaker 6: Christina Aguilera messing up the words.
- 41:39Speaker 5: So we were there.
- 41:41Speaker 6: Black Eyed Peace played halftime, but yeah, Christina Aguilair messed
- 41:43Speaker 6: up the words. There was one in Chicago, Uh, Kobe
- 41:48Speaker 6: calay Is I think that's her name. She played one
- 41:50Speaker 6: that was really cool. If you're gonna if you're gonna
- 41:52Speaker 6: do like a different rendition of it, like a little
- 41:54Speaker 6: put An artist take on it, you better be really good.
- 41:57Speaker 5: And hers was really good.
- 41:58Speaker 6: But the best was the guy that does it for
- 42:00Speaker 6: the Chicago Blackhawks hockey team. He's like famous for it.
- 42:04Speaker 6: He's this big guy and he just like he has
- 42:06Speaker 6: a cadence and he's like kind of like opera. But
- 42:09Speaker 6: kind of yells it, but it's amazing. He came in
- 42:11Speaker 6: and played it during the Uh he did it during
- 42:13Speaker 6: the NFCU It wasn't the NFC championship game. I don't
- 42:17Speaker 6: think it was a playoff game. The year we went
- 42:19Speaker 6: to the super Bowl in Soldier Field and it was cold.
- 42:21Speaker 5: And it was awesome.
- 42:22Speaker 7: Yeah, hell yeah, I love that.
- 42:25Speaker 5: I think he does it in every Chicago black Hawk game.
- 42:27Speaker 7: The best one I've heard is the Chris Stapleton one.
- 42:31Speaker 4: What about like you've seen live? Do you remember any tough?
- 42:34Speaker 2: Yeah?
- 42:35Speaker 7: I know, I don't.
- 42:36Speaker 4: We had an R and B artist. There was a
- 42:38Speaker 4: Chargers fan, Frankie j He sang the national anthem a
- 42:43Speaker 4: one time in the old Q nasty and did a
- 42:46Speaker 4: really nice job. And at that time he had a
- 42:49Speaker 4: little bit before then, but he had a couple of
- 42:52Speaker 4: a couple of hits.
- 42:53Speaker 9: This is why I know he's like a Spanish Yeah yeah, yeah, yeah, yeah,
- 42:57Speaker 9: I know some.
- 42:57Speaker 7: Of his songs.
- 42:59Speaker 4: So Frankie Jake, you go yeah, yeah.
- 43:03Speaker 7: He has this like okay, so he's part of just
- 43:06Speaker 7: like I know for it.
- 43:07Speaker 9: So he was like on Kings, which is Semila's brothers band.
- 43:11Speaker 7: Yeah yeah, yeah.
- 43:13Speaker 5: Okay, Hey, I would like this guy.
- 43:15Speaker 6: I think it would be a great change of pace
- 43:18Speaker 6: for college football. Put the players on the field for
- 43:20Speaker 6: the national anthem.
- 43:23Speaker 8: There because they do it and then the band goes,
- 43:28Speaker 8: they line up and run out.
- 43:29Speaker 4: I love that.
- 43:30Speaker 6: Playing in the NFL, I loved being on the on
- 43:32Speaker 6: the field because there was always somebody singing in someone different.
- 43:35Speaker 5: It was great.
- 43:35Speaker 4: Yeah, yeah, I h The most iconic for me, like
- 43:38Speaker 4: this isn't the national anthem, but just on the field performance.
- 43:41Speaker 4: I've said this a thousand times because it will never
- 43:43Speaker 4: leave my memory. When we went and played Pittsburgh in
- 43:46Speaker 4: the playoffs and you know, they they had sticks because
- 43:50Speaker 4: Renegade's their famous song that they played to get fired up,
- 43:52Speaker 4: and they had sticks on the field singing Renegade in
- 43:57Speaker 4: the snow, and one of them had their shirt off
- 43:59Speaker 4: and was like waving the terrible towel.
- 44:01Speaker 7: That's awesome.
- 44:02Speaker 4: Oh mama, I mean, and I'm like, well, boys, it
- 44:07Speaker 4: was a good season, right. That's the year they won
- 44:10Speaker 4: the Super Bowl too. They beat the Cardinals a rookie year.
- 44:15Speaker 4: Is the last game or I don't know, but I
- 44:18Speaker 4: was like, oh, we are in trouble.
- 44:20Speaker 8: Probably my favorite Super Bowl still that game.
- 44:22Speaker 4: Was elite Antonio Holmes touchdown.
- 44:25Speaker 8: Homes, Jerome Harrison.
- 44:27Speaker 6: I was rooting hard Harrison, like returning.
- 44:32Speaker 4: I was rooting hard for the Cardinals. I was better
- 44:35Speaker 4: because we got beat You know, you know how that is,
- 44:36Speaker 4: like I don't want Yeah, early said was it's always
- 44:41Speaker 4: been a big Warner guy.

- 44:51Speaker 4: It was as cheesy as you can imagine.
- 44:53Speaker 8: Did I still get it was a football movie?
- 44:55Speaker 5: Yes? I did. Didn't people like give it good ratings.
- 44:57Speaker 4: Though I don't know. I don't know about that. I did.
- 44:59Speaker 5: I the clips looks so brutal.
- 45:01Speaker 4: They the clips were those.
- 45:05Speaker 8: Like most football movies aren't long.
- 45:07Speaker 5: It was most the same.
- 45:10Speaker 4: Good story, socking grocery as well know. It then turned
- 45:14Speaker 4: into a Hall of Famer. His son is a quarterback
- 45:18Speaker 4: at right.
- 45:19Speaker 8: Yes, Charlie.
- 45:22Speaker 6: He was on the field during the game, like before
- 45:23Speaker 6: the game and how you had going warm up before pregame.
- 45:26Speaker 6: He was out because he was calling the game, and uh,
- 45:29Speaker 6: I was talking with him on the field and he said, Hey,
- 45:31Speaker 6: what's your number?
- 45:31Speaker 5: I want to hit you up? Blah, blah blah, I.
- 45:32Speaker 6: Give my number and I walk off and I don't
- 45:36Speaker 6: remember what name he said, but he called me another name.
