- 0:02Speaker 1: Film train, the feel all right, feel town, the weather,
- 0:10Speaker 1: feel out.
- 0:11Speaker 2: He's here in the studio with us. He's the battle
- 0:14Speaker 2: hardened Warlord of the Wine Academy of Utah. He's Jimmy Santangelo,
- 0:19Speaker 2: Wine Academy of Utah dot com.
- 0:22Speaker 3: And uh hi, jim good morning.
- 0:24Speaker 4: Who needs a beverage?
- 0:26Speaker 2: I do? I do everyone with the battle hardened Warlord.
- 0:32Speaker 4: He's got blue pain on his face.
- 0:35Speaker 3: So this is a this is a fall kind of coffee.
- 0:37Speaker 5: Yeah, we're celebrating Clearwater Distilling's uh Kanela whiskey. It's that
- 0:42Speaker 5: cinnamon focused whiskey, no sugar added. It's this beautiful whiskey
- 0:47Speaker 5: that they steep in the highest end cinnamon sticks. Just
- 0:51Speaker 5: a bundle of them just soaking it into their whiskey,
- 0:55Speaker 5: back and forth, extracting all those beautiful flavors. What I
- 0:58Speaker 5: love about this is there's no sugar added in that super.
- 1:02Speaker 1: But it's still kind of has a sweetness to it.
- 1:05Speaker 5: And how is that that flavor that just comes out
- 1:09Speaker 5: complimenting and emphasizing the barrel age of the whiskey. Just
- 1:14Speaker 5: all that together just emphasizes the vanolins from the barrel age,
- 1:18Speaker 5: so you get those vanillas driven through those toffees in
- 1:21Speaker 5: the cinnamons that you also get from the barrel. And
- 1:24Speaker 5: then when you emphasize it with a bundle of the
- 1:26Speaker 5: cinnamon sticks, and so you mixed it with So I
- 1:30Speaker 5: have this with unfiltered apple juice, my favorite type of
- 1:32Speaker 5: apple juice during the fall season. So you have some things.
- 1:36Speaker 5: You have some apple juice here that I just get
- 1:39Speaker 5: it at Whole Foods. You can get it at other
- 1:42Speaker 5: markets things like that. But the unfiltered so this isn't
- 1:45Speaker 5: like the clear, perfect pasturized or.
- 1:49Speaker 3: Apple juice, the apple juice for babies, right, this is the.
- 1:54Speaker 6: Ingredients on the label usually just says apples.
- 1:58Speaker 4: And all love that.
- 1:59Speaker 5: And this is is a sighter unfiltered cider and spice
- 2:03Speaker 5: and under apple juice other ingredients not from concentrates.
- 2:06Speaker 4: So it's a fun one.
- 2:07Speaker 5: They've got a number of these, so just pick your
- 2:10Speaker 5: favorite and then just a touch. I like to offset it,
- 2:13Speaker 5: just to touch a turbinado simple syrup.
- 2:15Speaker 4: That's the sugar in the raw. Sugar in the raw,
- 2:18Speaker 4: so get a little bit of that in there.
- 2:20Speaker 5: So this is a kind of equal parts two to
- 2:22Speaker 5: two or one to one, So a one one thousand
- 2:25Speaker 5: and two one thousand.
- 2:26Speaker 4: Of the Canela whiskey. Imagine that count with your cider
- 2:30Speaker 4: and a little.
- 2:30Speaker 3: One one thousand, two one thousand.
- 2:35Speaker 1: This is so tasty and it's simple, yeah, like super simple.
- 2:40Speaker 3: Perfect autumn.
- 2:41Speaker 5: You know, all the fun flavors that you want. And
- 2:44Speaker 5: you can make this hot or cold. This of course
- 2:47Speaker 5: is cold chilled over ice, but game day something like that.
- 2:53Speaker 4: Don't over when you have.
- 2:54Speaker 5: A warmed cocktail. Uh, there's two techniques. Not adding the
- 2:59Speaker 5: whew the spirit to the heat, because you know it
- 3:02Speaker 5: might evaporated some of the alcohol off if it's too
- 3:04Speaker 5: hot of a kettle, or you just warm the ingredients
- 3:09Speaker 5: so it would be the And then when we do
- 3:11Speaker 5: this over in the holidays at my house on the
- 3:14Speaker 5: stove with the open pot, you have this cider in there.
- 3:18Speaker 5: But then I'm gonna float a few cinnamon sticks in.
- 3:20Speaker 5: There's some cloves, sliced apples, you know that kind of thing.
- 3:24Speaker 5: So it's nice. You get this beautiful aroma, a little
- 3:27Speaker 5: bit of a paddle in there of or a coffee
- 3:31Speaker 5: mug full of that, and then drop in whatever spirit
- 3:33Speaker 5: you want. In this case, it would be good.
- 3:36Speaker 2: Oh yeah, you know this this you know we're having
- 3:39Speaker 2: it with ice and then chilled. This would be good
- 3:42Speaker 2: for sitting on the on the porch and the sun
- 3:45Speaker 2: down an escalante right by the Escalandi River.
- 3:49Speaker 3: That's what I'm gonna Are you heading down there? Yeah,
- 3:52Speaker 3: I'm gonna go down there. Nice yeah, nice sit and ship.
- 3:55Speaker 4: We got you covered. Wow.
- 4:00Speaker 3: Yeah.
- 4:00Speaker 5: Clear water does a lot of great things, you know.
- 4:03Speaker 5: Just to throw out there what we do every other month.
- 4:06Speaker 5: So next month we'll be down there celebrating the wine
- 4:09Speaker 5: Keetem of Utah.
- 4:10Speaker 4: We do a cigar in spirits.
- 4:11Speaker 5: Pairing, So they select a cigar, they tell me what
- 4:16Speaker 5: spirit they want to focus, and then I create two
- 4:18Speaker 5: cocktails to be paired with that cigar. So it's a
- 4:22Speaker 5: lot of fun, it's challenging, we have a good time
- 4:25Speaker 5: doing it. It's all proper glassware, and I demonstrate cocktail
- 4:28Speaker 5: making techniques as well as the etiquette of smoking, how
- 4:33Speaker 5: to hold, how to cut, how to light and enjoy
- 4:35Speaker 5: and only.
- 4:41Speaker 3: The girls, so I've seen Gina do on occasion. A
- 4:44Speaker 3: lot of people sign up for that if.
- 4:46Speaker 5: They want to go right to winiceemviewtah dot com. Go
- 4:49Speaker 5: to our ticketed events page and all the types of
- 4:52Speaker 5: ticketed events that we have, whether it's a clear Water
- 4:55Speaker 5: Traceyhavior and the like, you can get all the ticket in.
- 4:58Speaker 3: Is that where you can get literary libations? Oh?

- 6:08Speaker 1: Park Citywinefest dot com must be twenty.
- 6:11Speaker 2: One back now with a battle hardened war lord of
- 6:15Speaker 2: the Wine Academy of Utah. Wine Academy of Utah dot
- 6:19Speaker 2: com just too correct. So we're having our literary Libations
- 6:24Speaker 2: event next Saturday, the twenty seventh, or we're discussing the
- 6:27Speaker 2: Monkey Wrench Gang. And I said the venue was at
- 6:30Speaker 2: the old Ladies Literary Guild building, and which I mean
- 6:34Speaker 2: I should have said in the building which was formerly
- 6:39Speaker 2: the Ladies.
- 6:40Speaker 3: Because it wasn't just old ladies, it was lots of ladies,
- 6:42Speaker 3: ladies of all ages.
- 6:44Speaker 2: It's established in the early nineteen hundreds. It's now called
- 6:48Speaker 2: the Clubhouse. A beautiful building in anyway. So it's the
- 6:51Speaker 2: Ladies Literary Guild building now called the Clubhouse.
- 6:55Speaker 6: All right, eight seven seven six two nine six ninety six.
- 6:58Speaker 6: If you want to talk to Jimmy the guy, let's
- 7:00Speaker 6: begin with me. Shak Aberta.
- 7:03Speaker 3: I'm Shack.
- 7:03Speaker 2: You've got a question about uh lemon?
- 7:09Speaker 7: Yes, yes, yes, last weekend I actually made a lemon
- 7:13Speaker 7: cello terramasou with a chunky strawberry drizzle.
- 7:17Speaker 4: We'll be right over. Wow, that sounds great.
- 7:22Speaker 7: It was amazing, except my kids aren't used to alcohol,
- 7:26Speaker 7: and well you've got a tough on themm not Yeah,
- 7:31Speaker 7: I did not realize that the sugars would accentuate the
- 7:35Speaker 7: alcohol taste in them. So it was a pretty interesting,
- 7:39Speaker 7: shocking look on their faces as they've been in the
- 7:42Speaker 7: first time. Now they really enjoyed it.
- 7:45Speaker 3: Yeah, normal, Now was there?
- 7:48Speaker 8: Now?
- 7:48Speaker 3: Is there? Jimmy?
- 7:49Speaker 2: First of all, was there any chance that kids could
- 7:52Speaker 2: eat that and get drunk on it?
- 7:54Speaker 3: And?
- 7:55Speaker 4: Uh, yeah, I don't think so. You know, depending on
- 7:58Speaker 4: how much it is.
- 7:58Speaker 5: We see that with you when you soak lady fingers
- 8:02Speaker 5: in espresso and then you use other types of you know,
- 8:05Speaker 5: it's the trace amounts that are in there. It Sometimes
- 8:09Speaker 5: you will simmer down, depending on how the recipe calls it,
- 8:11Speaker 5: because you want those infused flavors, not so much the
- 8:14Speaker 5: alcohol with it and things of that nature. But boy,
- 8:18Speaker 5: lemon cello at the strawberry drizzle and everything. That sounds
- 8:21Speaker 5: like a great dessert. And now what a fun experience
- 8:24Speaker 5: for you and your family to have And I though
- 8:25Speaker 5: you're gonna be able to talk about that with your kids, right,
- 8:28Speaker 5: And that's what food and beverage's.
- 8:31Speaker 7: A long time.
- 8:32Speaker 3: Yeah, listen to Mishak.
- 8:33Speaker 2: I'm telling you, in twenty years, when you're bailing your
- 8:37Speaker 2: son out of jail, he's going to say, this is
- 8:38Speaker 2: your fault and it's the lemon cello.
- 8:42Speaker 7: Well, luckily, my youngest is almost twenty one.
- 8:44Speaker 3: Oh okay, all, okay, good. Thank you Amisa and Meshak.
- 8:47Speaker 3: Thanks for the lollipops and stuff.
- 8:51Speaker 7: Hey, you're very welcome.
- 8:52Speaker 3: Bill.
- 8:53Speaker 7: My question now, though, is this with the lemon cello.
- 8:56Speaker 7: Can I bake with it? Maybe like a lemon in
- 9:00Speaker 7: with with capers and.
- 9:03Speaker 5: Yeah, really getting after it, you know, I would I
- 9:04Speaker 5: would reduce the Yeah, with the alcohol that's in there,
- 9:08Speaker 5: you may want to reduce it down so it's a
- 9:10Speaker 5: little bit more viscous. It's gonna be a little too thin,
- 9:13Speaker 5: h with the alcohol in there, so you might want
- 9:15Speaker 5: to just kind of simmer it down and if you, you.
- 9:16Speaker 4: Know, incorporate the the capers.
- 9:19Speaker 5: And the other ingredients and then glaze you're chicken with
- 9:22Speaker 5: that and you'd be good to go.
- 9:23Speaker 3: Thank you, Chek.
- 9:24Speaker 7: Sound awesome.
- 9:26Speaker 3: Thanks you got it, man.
- 9:27Speaker 6: Now I got a bottle little lemonchello in my liquor cabinet.
- 9:30Speaker 3: Nice.
- 9:31Speaker 6: There is there a something like it?
- 9:33Speaker 5: After dinner, drink right, a little bit over ice and uh,
- 9:36Speaker 5: you know, or maybe what I like to do is
- 9:38Speaker 5: do a little stir with lemonchello in a mixing glass
- 9:42Speaker 5: and then strain it into a chilled cups. This way
- 9:44Speaker 5: it's nice. You know, you're not watering it down, but
- 9:47Speaker 5: you're chilling it up.
- 9:47Speaker 2: Okay, somebody told me that lemon and maybe I misheard
- 9:51Speaker 2: this or I remembering wrong.
- 9:52Speaker 3: Lemon cello is easy to make. You can make it
- 9:55Speaker 3: at home.
- 9:56Speaker 4: You can.
- 9:57Speaker 5: There are a few recipes out there, basically a lot
- 9:59Speaker 5: of sit your lemon citrus, the pith you're peeling your lemon,
- 10:05Speaker 5: sugar soucra, and the neutral grain spirit.
- 10:07Speaker 3: Speaking of citrus, Braiden has a question. Hi Braiden, good morning.
- 10:13Speaker 8: Thank you for taking my call. Hello, Jimmy, really quick.
- 10:17Speaker 8: Just wanted to know if there was any other variation
- 10:21Speaker 8: for a screwdriver. I've had the classic orange juice in vodka,
- 10:25Speaker 8: but I'm wondering if there's any other kind of alcohol.
- 10:29Speaker 5: Yeah, well, grapefruit. So staying with the vodka, orange juice,
- 10:33Speaker 5: a grapefruit. We see that coming about. But if you're
- 10:36Speaker 5: the greyhound, the greyhound, yep. And then if you want
- 10:39Speaker 5: to when you said any other alcohol there and you
- 10:42Speaker 5: and you don't mind the orange juice, what we can
- 10:45Speaker 5: do is think of a twist on a French seventy
- 10:50Speaker 5: five and a French seventy five is gin and replacing
- 10:56Speaker 5: the lemon with a splash of the orange juice a
- 10:59Speaker 5: little bit a sukra, but orange juice I already has
- 11:01Speaker 5: a living rough, uh. And then sparkling wine. I've done
- 11:05Speaker 5: that before. So gin an ounce one to one, gin
- 11:09Speaker 5: to oj and then sparkling wine. Then we've done that
- 11:13Speaker 5: from momoses as a twist, as a play on that
- 11:17Speaker 5: that that's delicious.
- 11:19Speaker 4: Yeah, man, you got it. Thanks, thank you Brandon.
- 11:21Speaker 6: All Right, let's see, Jimmy, what should I buy to
- 11:25Speaker 6: stock a new liquor cabinet. I've always had a taste
- 11:28Speaker 6: for vodka and tequila, but have bought the fifteen dollars
- 11:32Speaker 6: bottle at the liquor store. What brands do you recommend
- 11:35Speaker 6: for better tasting and smoother flavor?
- 11:37Speaker 5: Sure so for tequila, and so when you're stock in
- 11:41Speaker 5: your liquor cabinet. You want to have a balance, you know,
- 11:44Speaker 5: from the clears to the darts. You want to have
- 11:46Speaker 5: a vodka, gin, tequila, rum and whiskey.
- 11:50Speaker 4: Sounds like we're focusing on the vodka.
- 11:52Speaker 5: And you know, we do have some really great high
- 11:55Speaker 5: end uh, really clean distilled well who do we do
- 12:00Speaker 5: clear water? Clear water has an excellent triple distillation to
- 12:03Speaker 5: They distill it until it's just so clean, so perfect,
- 12:07Speaker 5: and it makes a great martini and otherwise. So I
- 12:10Speaker 5: would recommend that. And you got some big brands. And
- 12:13Speaker 5: remember when you're buying a bottle of spirit for the
- 12:18Speaker 5: cabinet for home, spend an extra eight bucks. I mean
- 12:22Speaker 5: it's gonna be It's not like a bottle of wine
- 12:25Speaker 5: where you open it and you gotta drink it all
- 12:27Speaker 5: so present company exactly. But yeah, you know you can
- 12:32Speaker 5: get you don't have to go to the most expensive,
- 12:35Speaker 5: you don't have to do the least expensive, and you'll
- 12:36Speaker 5: find right there in between. I'm gonna withhold saying exact
- 12:40Speaker 5: brands for you, except for our local guy there.
- 12:43Speaker 4: All right, there we go, Thank.
- 12:44Speaker 3: You, Jimmy. So is that it? Are we done? We are? Oh?
- 12:49Speaker 1: Bill always wants more with Jimmy.
- 12:51Speaker 3: I do. Well.
- 12:52Speaker 1: It's a good thing you have an event planned where
- 12:54Speaker 1: you can spend some more time with it.
- 12:55Speaker 3: I have a lot of Jimmy in my life.
- 12:57Speaker 2: Actually, right, so, Wine Academy of Utah dot com. You'll
- 13:02Speaker 2: find information there about the wine event up in Park City,
- 13:07Speaker 2: the Clearwater events, and the Literary Libations event.
- 13:12Speaker 3: That's right.
- 13:12Speaker 4: Hey, everybody, thanks a lot, have a great weekend, bees H.
