- 0:08So
- 0:08for once it's not just me talking.
- 0:10Nona
- 0:11Hurst is here with me.
- 0:12Nona, say hi.
- 0:14Hi.
- 0:14This
- 0:14is Nona.
- 0:15You did a good job.
- 0:17I have been talking to Nona
- 0:19and her husband.
- 0:20Dr.
- 0:20Hurst is a beekeeper
- 0:22amongst a lot of other things, as is Nona.
- 0:24They have a very diversified life, but beekeeping is a major part of it.
- 0:29And some number of years ago, Nona
- 0:32began working on a cookbook.
- 0:33Today, beekeepers
- 0:35I want to talk to you about the successful production of that book and what a nice piece it is.
- 0:41Honey bee podcast listeners, I'm Jim Tew

- 0:49talk beef.

- 1:16Whether you're a seasoned beekeeper
- 1:18or just getting started,
- 1:20Get ready for some plain talk that'll delve into all things honey bees.
- 1:25Nona, from the earliest time, how does one get the notion that they want to ride a
- 1:31cookbook
- 1:33or
- 1:33more than a cookbook, a diversified cookbook.
- 1:37Oddly enough, it was John
- 1:39Hurst
- 1:40that suggested years ago that I write this book.
- 1:45And
- 1:45I didn't think too much about it
- 1:48But
- 1:49we had recently started with the beekeeping, her
- 1:53humorous story of how it began
- 1:57with neither one of us ever having
- 1:59been
- 2:00around a beehive
- 2:02And
- 2:02one of the anesthesiologists I
- 2:05worked with, I was looking for
- 2:08something really unusual for John
- 2:10's birthday.
- 2:10Thirty-eighth birthday
- 2:12and we had moved to the country
- 2:14So
- 2:15he suggested that I get John
- 2:17two
- 2:17beeps.
- 2:19And I thought,
- 2:20well, I like that.
- 2:21That's unusual.
- 2:22Really
- 2:22unusual.
- 2:23His father was a beekeeper all his life
- 2:27So
- 2:28he set it up with his dad
- 2:30for
- 2:31John and I to go out there and pick up two
- 2:33beehives, which
- 2:35really
- 2:36kinda turned into a crazy story
- 2:39because
- 2:39we had a one and a half year old, we had
- 2:42a closed
- 2:43in Jeep
- 2:45wagoneer
- 2:46and now we know that you have to have a pickup truck.
- 2:50So
- 2:50we rode out there in the dark
- 2:53It was before Interstate 459
- 2:56was made.
- 2:57So we had to go back roads to Best
- 3:00North
- 3:00where he lived.
- 3:02And
- 3:02so we
- 3:03drive up in the dark to his beehive
- 3:06They went out together
- 3:09and came back with the first beehive and they put it in the back of the vehicle
- 3:14and
- 3:15they're heading back out for the second one.
- 3:18And
- 3:19I
- 3:20looked at it and thought
- 3:22Uh, you know, that really doesn't look straight.
- 3:24I'm gonna
- 3:25fix this straight because
- 3:27that's the way women are.
- 3:28Yeah, it's gotta be straight.
- 3:30It's gotta be straight.
- 3:31And so when I did
- 3:33the bottom board was rotten
- 3:35So
- 3:36all of a sudden
- 3:37all of those bees came
- 3:40rolling out
- 3:41my
- 3:41molasses
- 3:42up my arm
- 3:44and I didn't know what to do
- 3:47It's not like Matthew
- 3:48McConaughey in the movie where he just flicks
- 3:51his arm down and all the bees fall on the ground.
- 3:54No, I started flailing my arms and
- 3:58these
- 3:58of course
- 3:59they don't fly at night
- 4:01and
- 4:01that was
- 4:02a thing I learned
- 4:03early on.
- 4:05But anyway
- 4:05they come back up with his sack
- 4:07on, and Mr. Preston, old fella
- 4:10by this time
- 4:12said, Sister, you've done it now
- 4:15And
- 4:15he
- 4:16he was not happy.
- 4:17He said,
- 4:18First thing you're gonna do is get that baby out of the back seat there
- 4:22and you're gonna go stand over there by that tree
- 4:25So
- 4:26that's what happened.
- 4:28They cleaned up my
- 4:29B
- 4:30collision here going home in the car.
- 4:33Put the second hive
- 4:35in
- 4:35and they walked around the car
- 4:37while we drove home with as few lights
- 4:42So we made it home.
- 4:43But
- 4:44John
- 4:45already knew from a talk with him that we should have our
- 4:49cinder
- 4:49block
- 4:50set up.
- 4:51So
- 4:51That was the beginning
- 4:53and that's had
- 4:54to be forty-three years ago.
- 4:57I was going to ask how long ago it was, forty-three years ago.
- 5:01And it's so interesting to me that
- 5:04he has kept this hobby up
- 5:06all these years while carrying on a practice, but it seemed to be like a
- 5:12pacifying thing to him.
- 5:14To go out
- 5:15when he got home, check the bees, it became a regular habit.
- 5:20We had a lot of ups and downs through the years, but
- 5:25he always
- 5:26started again.
- 5:27Well, he's been doing it a long time.
- 5:29I didn't know that John's father was a beekeeper.
- 5:31Listen to the big thing.
- 5:32No,
- 5:32this
- 5:32was not his father.
- 5:34This was
- 5:34Dr
- 5:35President
- 5:36's
- 5:37Yes, it was his father.
- 5:39Yeah.
- 5:39This
- 5:40is
- 5:40I was about to tell you John's obviously a physician.
- 5:42He's retired.
- 5:44But he says he's known now more for his bees
- 5:46than he was for being a physician.
- 5:48He said that.
- 5:49Yes, that's right.
- 5:50So what was your role?
- 5:52You took his honey to the hospital
- 5:54and you had customers there.
- 5:56I worked uh
- 5:57at that time I was working
- 5:58a
- 5:59same day surgery.
- 6:00and people
- 6:01began to ask me to bring
- 6:04okay, would you bring me ten?
- 6:06It
- 6:06got to be a regular thing.
- 6:08It was
- 6:09like
- 6:09Here
- 6:10here she comes with her honey box.
- 6:13That is
- 6:13it.
- 6:14And everybody enjoyed, you know
- 6:16, they
- 6:16love
- 6:17the honey
- 6:17Well are you a cook
- 6:19also?
- 6:19Are you a chef?
- 6:20How did the cookbook evolve from all these years of beekeeping?
- 6:24I am not a chef.
- 6:26I am a curious cooker.
- 6:28I just
- 6:29I enjoyed playing with different recipes and taking the sugar out.
- 6:35and converting it to honey.
- 6:37I had to do
- 6:38had to learn how to
- 6:41try to get the pH
- 6:42down, add
- 6:43more
- 6:44soda.
- 6:45And then
- 6:46I learned that through baking
- 6:48you get
- 6:50of
- 6:50moisture
- 6:51bread or cake or whatever you're making, it just
- 6:56gives it a good flavor
- 6:58to me.
- 6:58But
- 6:59it is hard to always get that first
- 7:02experiment
- 7:03right.
- 7:04You may do it numerous times before you get it just right.
- 7:08I can't imagine, I think I understand what you're saying, that you must have made these recipes
- 7:14over and over and over again
- 7:16until they met your criteria.
- 7:18So you started with a basic recipe
- 7:20Mm-hmm.
- 7:20You didn't make these up from scratch.
- 7:22I mean you
- 7:23you basically had an idea of the
- 7:25particular product you were cooking and then you just perfected the recipe.
- 7:29Well
- 7:30exactly what happened was
- 7:32when
- 7:33our daughters were ten, twelve, we
- 7:36we had an eight
- 7:38inch binder
- 7:39that
- 7:40recipes
- 7:41that my mother
- 7:42had
- 7:42given me
- 7:43different people had given me
- 7:45I would save
- 7:47recipes
- 7:48about honey
- 7:49then
- 7:50and that went on for
- 7:52Our girls are in their forties
- 7:53now, so that's been a while.
- 7:55But that has become a prize
- 7:57possession
- 7:58because
- 7:59each girl says
- 8:00that
- 8:01's mine, you know.
- 8:03And then
- 8:04so Courtney, the one that designed
- 8:06Courtney Wyndham
- 8:07who designed this cookbook right here, she actually
- 8:11illustrated the binder book that's eight inches
- 8:15stick, she went through every category, she drew
- 8:19some
- 8:19fantastic thing and painted it.
- 8:22So
- 8:22it's kind of unique that they got involved in it
- 8:25Well ironically, my mother did that.
- 8:27It wasn't eight inches, it was hardly an inch and a half.
- 8:30And a grandkid asked for it early
- 8:32on, so it already had a home.
- 8:34But the grandkid made copies of it.
- 8:37So we all have it and it's just old-fashioned
- 8:40southern cooking, a pinch of this
- 8:42and a teaspoon of bacon
- 8:43fat, and
- 8:44some
- 8:44of the things you would never expect in those old recipes and you
- 8:47probably want to change that out now, but it was good old fashioned
- 8:51cooking that I remember.
- 8:52So it's a good thing that you've got those
- 8:54Well, I did add your requested recipe in this book, 'cause
- 8:59with Jim
- 9:00being
- 9:01from the South
- 9:02He
- 9:02likes fried okra and he just didn't really know how to do it.
- 9:07So I put the recipe in there
- 9:09and I put a sassy
- 9:11honey sauce
- 9:12put on top of his okra
- 9:14I do like fried okra, and I don't have it very often.
- 9:17In Ohio where I live, I'm off the subject.
- 9:20Okra
- 9:20's not really happy growing there, and there's one or two people who have it at the farmers
- 9:24market, and I have to get there at seven o'clock in the morning
- 9:27or
- 9:27sells
- 9:28out.
- 9:28So even though it's not very popular, it's popular enough that everybody buys
- 9:32it, it's a different project.
- 9:34I wanna tell the listeners that the book is absolutely beautiful.
- 9:37Courtney was your daughter. Courtney
- 9:39what was her name?
- 9:40Courtney Wyndham
- 9:41Wyndham
- 9:42has
- 9:42just designed an absolutely gorgeous book.
- 9:45So you could s
- 9:46use
- 9:47this
- 9:48as a cookbook, as a coffee
- 9:50table book, as an inspirational book.
- 9:53as a bit of artwork
- 9:54or
- 9:55the layout and the design and the quality of it.
- 9:57It sounds like I'm selling the book.
- 9:59I'm not.
- 9:59It's just not well known right now
- 10:02because the book has just come out
- 10:03and it's probably
- 10:05Not readily available, but the photography, what
- 10:07did you give some of these nice pictures here?
- 10:09Courtney actually does photography as well
- 10:13and we used a professional photographer
- 10:16From Louisiana, Hector Sanchez.
- 10:22From Louisiana.
- 10:23Well
- 10:23that is a professional that
- 10:25explains
- 10:25some of these high quality, high definitions
- 10:28photos that you've got here.
- 10:29So the visual layout is
- 10:31really nice.
- 10:32It's a nice visual layout and the pictures are great.
- 10:37You get an idea of the Hurst
- 10:39family and how they
- 10:40come together on this.
- 10:42You get a good idea of
- 10:43bees.
- 10:44And then
- 10:45You went into quite a bit of actual bee biology
- 10:48and the behavior.
- 10:49Are you a beekeeper
- 10:50yourself?
- 10:51Are you a bee biologist?
- 10:52Is that John's
- 10:53And behind the scenes?
- 10:55No, you're the expert on that.
- 10:57But I have
- 10:58always loved plants and I've observed what bees go to first.
- 11:04I did
- 11:05in the beginning
- 11:06help
- 11:07him a lot.
- 11:08We
- 11:08we enjoy doing that together
- 11:10and
- 11:11as life happens
- 11:12it
- 11:13things start taking over.
- 11:15And
- 11:15I was less involved getting into beehives when we first started.
- 11:21But I am
- 11:22just
- 11:23so
- 11:23curious
- 11:25about
- 11:25all of the things that go in a beehive.
- 11:29I've
- 11:29read Karl von
- 11:30Frisch
- 11:31's book.
- 11:31
- 11:33And then I love
- 11:35Honeybee
- 11:36Democracy
- 11:37all of that fascinates me.
- 11:39If I got into the hives more
- 11:42I would see it more, but John
- 11:44did show me bees dancing on the front board, which I'd
- 11:49find that so
- 11:51Really
- 11:51interesting that they can communicate that way.
- 11:55It is remarkably sophisticated.
- 11:58Let's talk about some of the recipes, but first let's take a break and hear from our sponsor.

- 12:48your
- 12:49partners in Better Beekeeping.
- 12:53You mentioned my favorite fried okra, and I also like fried tomatoes and they're
- 12:58hard to get too
- 12:59but
- 13:00How did you choose out of eight inches of hundreds and hundreds of recipes?
- 13:04How did you select the ones that you were willing to test?
- 13:07Is it mainly.
- 13:09.
- 13:09.
- 13:09Southern recipes or is it just good recipes?
- 13:12It's just good recipes.
- 13:13It's not necessarily southern.
- 13:16I did send five to America
- 13:18's Test Kitchen
- 13:20just to see that I was on the right track
- 13:22I did
- 13:23have
- 13:24someone edit my recipes.
- 13:26She was a
- 13:28Southern
- 13:28living employee, but now she just does that.
- 13:32consulting.
- 13:33But
- 13:34she
- 13:34had
- 13:35just so many hands in it that got me started
- 13:38and you as well
- 13:39wrote
- 13:40the foreword
- 13:41because
- 13:41I was
- 13:42very appreciative of that 'cause
- 13:44you and John
- 13:45have a good relationship.
- 13:48I was honored to do it.
- 13:49Thank you for letting me do it.
- 13:50You've got some nice recipes here.
- 13:52Elegant chicken pot
- 13:53pie.
- 13:54Is there anything that someone like me could cook by myself?
- 13:57Simple to do, Asian lettuce wraps?
- 13:59With Oriental chicken filling?
- 14:01Do you like salmon?
- 14:03I
- 14:03literally eat anything.
- 14:05That is the easiest thing to do
- 14:07in that book.
- 14:09You
- 14:09get a good frick
- 14:11cut of salmon
- 14:13and put
- 14:14butter in your cast-iron skillet
- 14:16And
- 14:16I put a lot of herbs in there, I sort of melt it and then put the herbs in there
- 14:21and then I put the fillets
- 14:24in there.
- 14:25And
- 14:25if the
- 14:26the skin is still on I just let that cook
- 14:30and
- 14:31I'm not prone
- 14:32to eat that but
- 14:33we do have some puppies
- 14:35that
- 14:35Well, like that.
- 14:36So
- 14:37anyway, it
- 14:38you
- 14:38you just
- 14:39actually
- 14:40just keep it on like a medium
- 14:43and
- 14:44and
- 14:44let it cook maybe three, four minutes on each side
- 14:49and then I have a sauce that goes with that and then you just pour that on top of that
- 14:54while it's in the skillet.
- 14:55I mean
- 14:56it is so simple.
- 14:57That's what I do on days that we're so busy with all
- 15:01these
- 15:02weddings and
- 15:03life.
- 15:04So
- 15:04I can run by the seafood store
- 15:07Pick up some salmon
- 15:09and bingo.
- 15:10There's
- 15:11must
- 15:11there is dinner and a salad.
- 15:13It's a wholesome meal too.
- 15:15Yes it is.
- 15:16And
- 15:16so we have it once a week
- 15:19Okay.
- 15:21Yeah.
- 15:22They have a lot of other projects going on that we shouldn't go into for lack of time, but they
- 15:27They have a very full life all the time.
- 15:29How many recipes
- 15:30read the book?
- 15:31Do you remember?
- 15:32I think they're 96.
- 15:33Ninety-six tested recipes.
- 15:36And the book is two
- 15:37hundred and thirty-six high
- 15:38gloss pages with an index
- 15:40It's just a nice book, The Dancing Bees of Rockhurst Farm.
- 15:45If somebody wanted to get this book from you, how would they do it?
- 15:47Because right now it's not easy to get.
- 15:50Foxhound Bee Company
- 15:51is carrying them for me at present, so it can be bought through Foxhound Bee Company
- 15:57's
- 15:57website.
- 15:58All right, Foxhound
- 16:00Bee Company.
- 16:00They have a website
- 16:02and you can pick it up there.
- 16:04If you have an interest in it.
- 16:05And then we have
- 16:07retailers in Birmingham and
- 16:09just
- 16:09that
- 16:10carry the book.
- 16:10Well I hope you have nothing but good sales.
- 16:12It's really
- 16:13a nice book.
- 16:15But
- 16:15I know there's other recipe books out there, but that I don't know of any of this of
- 16:19this quality and I
- 16:20probably just offended someone who has recipe books out there.
- 16:23But this is nicely done.
- 16:25Nona, thank you for talking.
- 16:27Thank you for asking me.
- 16:28And thank you for doing such a great.
- 16:30Great job on this and giving
- 16:31and just having a nice book here.
- 16:33I'd love to share it with more.
- 16:35Listeners, thank you.
- 16:36That's enough.
- 16:37We'll try it again next week.
- 16:38I hope you enjoyed letting Nona talk and tell her beekeeping experiences and how she moves bees at night and
- 16:45some of the colorful things that happen.
- 16:47It's all in good fun.
- 16:48Bye-bye listeners.
- 16:49I'll see you next week.
