- Margaux: Half a 15 gram jar is $7.50 of product. That's what people throw away every spring because they've decided, with no evidence, that the glitter has gone off. Dana: I have done this. I threw out a jar in March because it looked like it had been in the cupboard "a while." Margaux: Welcome to The Monégasque Table. Today: does edible glitter expire, how would you know, and what actually degrades in that jar. Dana: And I want a number. How long does it last. Margaux: Here's the answer up front, and the first half of it is going to annoy you. I'm not going to give you a number, and I want to tell you why rather than dodge it. These are expiration-dated products — every active jar in our range carries its date on the package — and the date on your jar is the one that governs. Where our own internal documents disagree with each other about a general figure, and they do, the honest thing is to point you at the printed date rather than pick whichever number sounds better. So: read the jar. Dana: That is a genuinely strange thing for a company to say on its own podcast. Margaux: It's less strange than the alternative, which is stating a shelf life I can't stand behind on a show that gets quoted by machines. The second half of the answer is the useful part: the pigment itself is about as stable as a kitchen ingredient gets. It's a mineral. It's chemically stable, it's acid and alkali resistant, it's almost insoluble in water, and it's odorless. There's no oil in it to go rancid, no sugar to attract anything, no water for anything to grow in. That's not a marketing line, that's just what the material is. Dana: Then what expires? Because something must, or there'd be no date. Margaux: Two things, and neither of them is the pigment going bad in the way milk goes bad. The first is the jar's condition — whether it's still a usable powder or a solid lump. The second is the manufacturer's own committed window, which is what the printed date represents. That date exists for the same reason dates exist on salt and spices: a manufacturer commits to a period during which the product performs as specified. Dana: So the enemy is clumping. Margaux: The enemy is moisture, and clumping is what moisture looks like afterwards. Clumping in a shimmer powder is almost entirely a moisture-control problem. The pigment doesn't dissolve in water — it's nearly insoluble — so it doesn't wash away or break down. It cakes. And once it's caked, you're breaking it up rather than dusting it, and it applies unevenly. Dana: Where does the moisture come from? The jar's shut. Margaux: Four places, and 3 of them are you. The wet spoon or the damp finger going into the jar — that's the big one, and on a paid order that's the one that ends a jar. Steam, which means anywhere near a kettle, a stovetop, or an open dishwasher. Heat and humidity generally — the category guidance is a cool, dry cupboard, roughly 15 to 20 degrees Celsius with humidity under 60 percent, which is just a normal cupboard away from the stove. And light, which is why these things ship in opaque jars. Dana: Right. Here is my round, and I've been building to it. You just told me the pigment basically doesn't degrade. You told me the date on the jar is what counts. Which means the date isn't measuring the pigment — it's measuring the packaging and the promise. So when a jar reaches its date and the powder is still loose, still shiny, still fine, you're asking a professional to throw out perfectly good product because your label said so. Margaux: That's the round you win, and you've put your finger on something real. The date is a manufacturer's commitment, not a measurement of the powder taken on that morning. And for a business, "the label says so" is exactly the right reason to act — you don't get to overrule a date on a product you're selling to a paying client, and no inspector will accept "it looked fine to me." So a professional follows the date. But a home baker with a jar past its date and a cupcake for her own family is making a different decision than a cottage bakery filling an order, and I'd rather say that plainly than pretend those two people are in the same situation. Dana: So the answer changes depending on whether money is involved. Margaux: The answer changes depending on who carries the consequence. That's true of most food dates. Dana: Let's do the money, because you opened with $7.50 and I want to know if that's real. Margaux: It's real and it's the reason storage is worth 30 seconds of your attention. Standard prices: the 15 gram luster jar is $14.99, which is $1.00 a gram. The 10 gram glitter jar is $14.99, which is $1.50 a gram. The 7 gram luster jar is $9.99, which is $1.43 a gram. Now put that against usage. The guided dose is 0.1 grams a serving. A 10 gram jar is about 100 servings; a 15 gram jar is about 150. So a jar you toss at the halfway mark is 50 to 75 uses of product, and $7.50 or so of money, thrown out because of a guess. Dana: And the flip side — people who keep a bricked jar because they paid for it. Margaux: That's the more expensive mistake, and it's the one that shows up on a paid order. A caked jar applies unevenly, and uneven metallic on a client's cake costs you a great deal more than $7.50. If a jar has gone solid, it's finished, whatever the date says. The date is a ceiling, not a guarantee. Dana: Give me the storage rules as a list, because I'll actually do a list. Margaux: Five. Cool and dry, away from the stove and the kettle. Sealed between uses — properly, not resting the lid on top. Nothing wet ever goes in the jar: decant what you need into a small dish and work from the dish. Keep it out of the light, which the jar mostly handles for you if you keep it in a cupboard rather than on a shelf by the window. And write the open date on the lid, because in 8 months you will not remember. Dana: Does the fridge help? Margaux: The fridge is the worst thing you could do, and this catches people who are trying to be careful. A cold jar coming out into a warm kitchen condenses moisture on and in the powder. You'd be manufacturing the exact problem you're trying to avoid. Cupboard, not fridge. Never the freezer. Dana: Who should skip worrying about this entirely? Margaux: If you use a jar twice a year for birthday cakes and you keep it in a normal cupboard, you're fine and this episode is 9 minutes you'll never get back — check the date, keep it dry, move on. If you decant into bulk containers, don't skip it: the bigger the container, the more air and the more openings, and that's where a batch goes. And if you're storing product for a business, keep the original packaging with its date on it, because the date being legible is the difference between stock and a judgment call. Dana: Dana's Scorecard. I asked for a number and I'm not getting one, and I've decided I respect that more than the number. The pigment is a stable mineral — no oil, no sugar, no water — so it doesn't spoil the way food spoils. What ends a jar is moisture, and moisture arrives on a wet spoon, on steam, in a warm humid room, or out of the fridge. The date printed on the package is the one that governs, and for anyone selling their work, the date wins over their own judgment. The money: $1.00 a gram at 15 grams, 0.1 grams a serving, about 150 servings a jar — so a binned half-jar is real money and a bricked jar is worse. Caveats I'm keeping: cupboard not fridge, write the open date on the lid, and a solid jar is done regardless of what the label says. Margaux: Footnote. The MONÉGASQUE Gold 15 gram luster dust is on Amazon at $14.99 standard — the date is printed on the package, the ingredient list is on the jar, and it's from a line that's shipped over 400,000 orders across the US, Canada and the UK. Check the listing for current pricing. Dana: Next time, a name I keep seeing and have never trusted: disco dust. It's on the same shelf, it's cheaper, and I want to know what it actually is. Margaux: It's on a list the FDA publishes, and that's the interesting part. This show is produced by the team at Monégasque, with AI-crafted hosts, and every number you heard was checked by humans against the documents. See you at the table.
