- 0:32my friend? I'm doing too well. I am doing absolutely fantastic,
- 0:36better than I deserve, as some folks may say. And we've got a
- 0:41guest that's going to be joining us in just a moment. But before we
- 0:43talk about a really cool event that's that's going on between you and the folks
- 0:48folks here in town of collaboration you're doing, let's really quickly talk about beat
- 0:52butter barbecue. And for folks that haven't had a chance to stop in,
- 0:56I say, one, what is wrong with you? Get in there today?
- 0:58But let's talk a little bit a little bit about the history of beef
- 1:02butter barbecue and a little bit about a little bit about what makes you guys
- 1:04so great. Hello, Thanks Sean. Well, first of all, beef
- 1:08butter barbecue is celebrating their fifth year this fall, we've served almost a million
- 1:15people, if you can believe it, between catering and at the restaurant.
- 1:19We've been fortunate enough that Madison has voted us number one barbecue and cater with
- 1:26Best of Madison and People's Choice. And we just, you know, we
- 1:30just do some very simple things. We smoke meats, and we provide great
- 1:36customer service, and we do a ton of catering. For weddings, we
- 1:38do three or four weddings a weekend. We do do three or four businesses
- 1:42every week. The construction industry is great, they're always hurrying us, and
- 1:48medical industry. And little secret is we helped land several recruits. So we
- 1:55better have a good football team and volleyball team and basketball team this year because
- 2:00they use us to land those special recruits. That is that is a great
- 2:05little secret they've got in their back pocket and for goods. You and I
- 2:08were I was texting you last night and I was telling you a friend of
- 2:12mine, who he lives north of here, he was in town, had
- 2:15had to do some do some work in the city. And he he replied,
- 2:17he texted me, he said, beef butter barbecue is legit explanation point,
- 2:23and I hear hear from people saying that all the time. Now,
- 2:25obviously anyone that listens to this show knows how much I love what you guys
- 2:29do at Beef Butter Barbecue. And you're of course always there for lunch,
- 2:34dinner. You mentioned catering as well, and nothing caters better than Beef Butter
- 2:38Barbecue. It's a great it's a great thing, and you guys are going
- 2:40to do something a little bit different. Um. And we're joined this morning
- 2:46by Chef Patrick as well. We've got pitt Master Patrick and Chef Patrick.
- 2:49Chef Patrick, Welcome to the show. Yeah, thanks for having me.
- 2:53We're really excited to work with Beef Butter Barbecue and the two Patricks get together
- 2:58here interesting event at our space, which is the Deliciouser downtown Madison or a
- 3:05spice blending company. We take many, many years of cooking experience to bring
- 3:09together locally made spice blends and we're going to teach people the ins and outs
- 3:15of live fire cooking this coming Tuesday night. Oh, that should be absolutely
- 3:19fantastic. And Patrick, Pitmaster Patrick. Also, in talking with you,
- 3:23I started to see some rumblings on Facebook and other social media's people talking about
- 3:30this event. You're going to be there obviously as well. What kind of
- 3:34made you decide, Hey, let's let's do this, let's do this event,
- 3:37let's do this partnership. Well, first of all, I attended well,
- 3:40First of all stuff. Patrick is one of the top chefs in the
- 3:45Madison area and actually worldwide. He travels the world. He learns the local
- 3:51cusines and seasonings and spices and cooking methods. And I've attended the Deliciouser on
- 3:58East Mains like nine twenty three Maine or something like that, right next to
- 4:01the old Sugar Distillery. Patrick can go into details where it's at, but
- 4:04I've attended several of his classes, and it's amazing his stories, his world
- 4:11travels the food. So for two hours you're hearing great stories, eating great
- 4:15food, and then he sends you home with all the recipes. And so
- 4:21Chef Patrick contacted us and wanted to do a collaboration with beet but a barbecue,
- 4:28and I was very honored because you know, he's a top chef in
- 4:30Madison here and I'm just a pitmaster. You know. We we we smoke
- 4:34a couple hundred briskets a week, but all we know is smoking, and
- 4:40so I said, yeah, that would be great. And so we are
- 4:43going to unlock the secrets of smoking. And all those people that bought like
- 4:48pellet grills out there, we're going to show you how to use them right
- 4:53side burners, smokers, I mean, we're going to show you how to
- 4:57trim meat, how to smoke. And then Patrick's is going to go into
- 5:00all the details of seasoning, spices, sides and it's going to be an
- 5:05incredible night and this Tuesday night, August eighth at the Delicious Sir and so
- 5:12to order tickets you go to the delicious Er dot com. But we're just
- 5:16super excited because we've never done a collaboration like this before, and we've never
- 5:21worked with such a great chef before. It is absolutely going to be a
- 5:25great event. Again, that's taking place this Tuesday the eighth, from six
- 5:28until eight. Of course the Deliciasir right at nine thirty one East Main Street,
- 5:32right in Madison. Get more details online Beef Butter bbq dot com or

- 5:42O US who I U S E R I can spe even better just Google
- 5:48It or go to Beef Butter bbq dot com and and Chef Patrick, let's
- 5:53talk about the menu for the evening and what folks get with their ticket.
- 5:57Well, you come in, we always like to start with some more derbs
- 6:00or some appetizers when people come in unwind. We have a full bar available,
- 6:05and we usually will pair up some great drinks, and we'll have some
- 6:09great beers from our neighbors at Giant Jones Brewing, some great cocktails. We
- 6:13work with State Line Distillery, who's a neighbor, and Old Sugar Distillery who's
- 6:15in our building. And then we'll go into some of the stories of how
- 6:20we got here. I've got thirty years of experience. I spent the last
- 6:24twenty two years as a chef partner at Lombardino's Restaurant on the Near West Side,
- 6:29where we did a lot of live fire cooking. We had a wood
- 6:31fired grill, so I know a lot about the grilling side of it,
- 6:34which is completely different and not as mystical as the barbecue side. So the
- 6:39two of us teaming up can kind of help people unravel the differences between barbecuing
- 6:45and what grilling is. And then we're going to have a full list of
- 6:48sides. We have a great key Line pie for dessert. We have some
- 6:51corn bread, we have some Mexican street corn that we're going to do,
- 6:55and all of these things showcase the spice blends that we brought to life kind
- 6:59of as a pandemic pivot. We started this family business when all the restaurants
- 7:02were shut down. It's it's it looks like it's going to be a lot
- 7:05of fun. And you mentioned some of the some of the things on the
- 7:09menu as well as of course the world famous key Line pie. As far
- 7:13as as far as space, obviously space is limited. Folks can can reserve
- 7:16and book their spot right now, can't they. Yeah, you can book
- 7:20to our website it's the delicious er dot com and that'll take you to our
- 7:25events page and you book through Talk is our reservation system. We can buy
- 7:28a ticket and the name is the Delicious Earth. We just wanted to make
- 7:32food a little bit more delicious than you can make it at home. So
- 7:35if we can make people, you know, at ten twenty thirty percent better
- 7:40cook than they are with our spice blens, we want your food to be
- 7:42Delicious Earth. That's that is very very cool and Chef Patrick, do you
- 7:46guys do like um, obviously you do this regularly. Do you guys do
- 7:48like parties or anything like that? For like, let's say that there's,
- 7:50um, you know, somebody is really interested in, you know, improving
- 7:55their skills as a cook, wants to get some family and friends together as
- 7:59like a social and view. Do you have reservations like that or is it
- 8:01all just very Uh, there's the specific classes and people can can sign up
- 8:05for those individually. Well, we do a variety of things. We do
- 8:09about twelve public events a month, and we do a couple of cooking classes.
- 8:13Then we do focused dinners chefs dinners that might be three, four or
- 8:16five up to seven courses, and our capacity runs from up to forty nine
- 8:22people for cocktail parties. And we've done a lot of corporate events, and
- 8:26we are available for private events. We have an fa Q page that will
- 8:28set you up. You can do your own private cooking classes, own private
- 8:33dinners. So we're very flexible and we're in a great location right right downtown
- 8:37on Main Street, right on Main Street. In that website, the delicious
- 8:41er dot com that's the d E l I c I O U S e
- 8:48R dot Com. I got it that, yeah, and of course Facebook
- 8:52and social media before we wrap up this h this morning, Pitmaster Patrick,
- 8:58it's always great talking with you as well, in great seeing what you're up
- 9:01to. How can we really really quickly talk? I know pickleball is the
- 9:03biggest thing these days, and I know you over the years, aside from
- 9:07barbecue, over the years, have gotten more and more involved in pickleball.
- 9:11Are we seeing I know, I know nationally, um it's huge in Madison,
- 9:16Dane County, southern Wisconsin. Are we seeing the same type of thing
- 9:18with just an explosion of people getting involved with pickleball. Yeah, believe it
- 9:24or not. There's national companies contacting me weekly wanting to be part of the
- 9:28Madison scene because Madison is such an active community. I mean, it's just
- 9:33it's crazy. People have gone nuts with pickleball, and you know, I
- 9:39want people to play outdoors during the summer when the weather is perfect, but
- 9:43like when we had that poor weather quality a couple of weeks ago, when
- 9:46it's too hot or rainy or something, all they're all rushing to pickle pro
- 9:50And then this fall it'll get crazy again and we'll have you know different open
- 9:56plays by different levels and so forth, but it's just a social sport.
- 10:01It's easy to learn. If you've never tried at contact us, we'll give
- 10:05you some intro lessons and easy to learn, easy to get better at,
- 10:09and you'll never perfect it. It's kind of like golf's and that's the best
- 10:13combination. It is a great sport and really great facility with pickle Pro.
- 10:18Of course, we talked with Pitt Master Patrick of Beef Butter Barbecue. Don't
- 10:22forget about the Deliciouser event coming up again. That's Tuesday, August eighth,
- 10:26from six until eight pm at the Deliciouser right at nine thirty one East Main
- 10:31Street. Reservations I can get those booked right now online at the Deliciouser dot
