- 0:36Speaker 2: Ah, yes, indeed, ladies and gentlemen.
- 0:37Speaker 3: Here he is, the jittery genius that is... I did
- 0:40Speaker 3: have coffee this morning.
- 0:41Speaker 2: That runs the Wine Academy of Utah, Jimmy Santangelo, WineAcademyofUtah.com.
- 0:50Speaker 3: Good morning, Mr. Santangelo. Good morning. We have a little
- 0:53Speaker 3: bit of rum and chocolate this morning. What do you
- 0:56Speaker 3: think of that? Nice. Much. I think much of it.
- 0:59Speaker 3: So this is part of our rum and chocolate tasting
- 1:01Speaker 3: that we do at the Wine Academy at various events.
- 1:03Speaker 3: We've done this as in-home events. We've done it at
- 1:06Speaker 3: corporate events and even at bars and restaurants, things like that.
- 1:09Speaker 3: We do a series of four different rums, four different chocolates.
- 1:13Speaker 3: And this is, I got to admit, this is one
- 1:15Speaker 3: of my favorite. They're all good, the pairings. But if
- 1:18Speaker 3: I had to pick one to have over and over again,
- 1:21Speaker 3: So this is paired with an orange-infused chocolate. Let's get
- 1:26Speaker 3: to the rum. This rum is Diplomatico. It's available in
- 1:29Speaker 3: the state stores. It's the Reserva Exclusiva. It's from Venezuela,
- 1:34Speaker 3: and it's a blend of aged rums from 6 to
- 1:37Speaker 3: 12 years. So it's a blend, and they age in
- 1:41Speaker 3: both ex-bourbon casks and then European oak casks. They're not
- 1:45Speaker 3: specific on that, so likely a sherry cask or something
- 1:49Speaker 3: of that nature. This great color on this rum. I
- 1:52Speaker 3: know we don't have glassware. We're using coffee cups. It's
- 1:55Speaker 3: a dark rum. But it's a dark rum. And this
- 1:58Speaker 3: is a. Smells good. The color in there is from
- 2:02Speaker 3: the barrel extraction. So we're not doing any backfill or
- 2:07Speaker 3: any concentrated molasses. So like, you know, as delicious as
- 2:10Speaker 3: they are, Captain Morgan or Kraken, those are those like
- 2:15Speaker 3: caramel colorings and things like that. This is all kind
- 2:18Speaker 3: of au naturel, if you will. It's a proper rum. Yeah,
- 2:23Speaker 3: proper rum. And go ahead and smell it and taste it.
- 2:26Speaker 1: I want to know what order you're supposed to use.
- 2:30Speaker 3: Yeah, sip, taste, sip. So, yeah, get your palate primed
- 2:34Speaker 3: with the rum. This is 40-43% alcohol by Valmet. You
- 2:38Speaker 3: can take a look here in a second. Beautiful packaging
- 2:40Speaker 3: on this. I love this. This is in the. Shape
- 2:43Speaker 3: of those barrel styles. Oh, I like that. Large glass
- 2:46Speaker 3: demijohns that were shipped, in fact. This is kind of
- 2:49Speaker 3: a smaller version of it. Various distillation. They distill this
- 2:53Speaker 3: in a single column, which is traditional, but they also
- 2:56Speaker 3: do copper pot still to get a little bit more
- 2:59Speaker 3: fatty conagers, a little bit richer style. So this rum's
- 3:02Speaker 3: got a lot going on. It's a handcrafted rum. It's
- 3:05Speaker 3: in the spirit of a Spanish-style rum where you have
- 3:07Speaker 3: English rums, British rums rather. that are sometimes navy strength,
- 3:11Speaker 3: high proof, or a little drier. This is round. This
- 3:15Speaker 3: has got a lot of that classic toffee. There is
- 3:18Speaker 3: a bit of orange character in this. I was going
- 3:21Speaker 3: to say that. Not that there's orange in here.
- 3:24Speaker 1: No.
- 3:24Speaker 3: It's just the floral characteristics.
- 3:26Speaker 1: I got that before I tried the chocolate.
- 3:28Speaker 3: Nice, nice. That's pretty good. And then that's why we
- 3:31Speaker 3: pair it with the orange chocolate, just to really bind
- 3:33Speaker 3: those two characteristics together. Really encourages those flavors together. And
- 3:38Speaker 3: it's kind of a fun pairing. Yeah, I like it.
- 3:41Speaker 2: Now, would you most often drink this neat?
- 3:45Speaker 3: You know, this is one of those finer rums that
- 3:48Speaker 3: would be served on a rock or neat in a glass.
- 3:53Speaker 3: We're starting to see more of our finer spirits. Tequila
- 3:57Speaker 3: and mezcals are being consumed neat. Rums certainly are in
- 4:01Speaker 3: that category of a certain caliber. And this is on
- 4:04Speaker 3: that platform. This is in that area. to um have
- 4:08Speaker 3: neat uh and it's only 40 bucks it's 39.99 yeah
- 4:12Speaker 3: and they have another one that's the familia in a
- 4:15Speaker 3: brown so this is kind of a dark green then
- 4:17Speaker 3: they have the same shade but in brown um and
- 4:20Speaker 3: that comes out into our market periodically i think we
- 4:22Speaker 3: get like 36 bottles of it once a year and
- 4:26Speaker 3: that's a good one too that's a lot of fun
- 4:28Speaker 3: and it's aged longer the difference may i look at
- 4:30Speaker 3: the Yeah, Diplomatico.
- 4:32Speaker 1: That is interesting, the sip-taste sip, because you get a
- 4:36Speaker 1: little something different on the second go-round.
- 4:38Speaker 3: Yeah, it really cleanses the palate. The rum remains. You
- 4:42Speaker 3: might have a bit of that residual chocolate on the palate. But,
- 4:47Speaker 3: you know, a lot of orange peel, toffee, licorice, kind
- 4:49Speaker 3: of a fudge, vanilla-y thing going on.
- 4:51Speaker 2: I've already done my final round.
- 4:53Speaker 3: I've done... I mean, it was delicious. You want another
- 4:56Speaker 3: piece of chocolate? No, I'm good. I'm good.
- 4:58Speaker 2: Because then I would have to have more rum. And
- 5:02Speaker 2: that would be bad.
- 5:03Speaker 3: And it never ends.
- 5:06Speaker 2: So it's Diplomatico. Yeah. It's got a rather distinguished... Yeah,
- 5:10Speaker 2: it's the grandfather. Ron Antonio is his name on the label.
- 5:15Speaker 3: And exclusive.
- 5:16Speaker 2: Pretty cool. I used to like rum a lot. Then
- 5:19Speaker 2: I kind of went off of it. Because, I mean,
- 5:22Speaker 2: I usually would always just drink you know, the medium brands.
- 5:25Speaker 1: Sure.
- 5:27Speaker 3: But this is something special. It's kind of like rums
- 5:29Speaker 3: in the fall. I feel like it's rum season. I
- 5:31Speaker 3: don't know. You know what I mean? It's got that,
- 5:33Speaker 3: you know, the fall in the air. It's a darker spirit.
- 5:35Speaker 3: It's different than whiskey because whiskey is annual, you know,
- 5:38Speaker 3: year round. I could give an excuse to have whiskey
- 5:42Speaker 3: any time of the month, any month of the year.
- 5:45Speaker 3: We're rums. And the other ones I was just thinking
- 5:47Speaker 3: we do. Hamilton's Blackstrap Molasses, they have a new one
- 5:51Speaker 3: out that's from Jamaica. This Jamaican rum is really just,
- 5:55Speaker 3: it's like overripe bananas and pecan pie, just like these
- 6:01Speaker 3: really strong flavors. And I simply do a milk chocolate
- 6:05Speaker 3: with that one. I have done chocolate-covered almonds as well. Oh,
- 6:10Speaker 3: that'd be good. So that pairs really well. The last
- 6:13Speaker 3: one is Zacapa. That's from Guatemala. And that rum is
- 6:20Speaker 3: aged up. It's the 23-year Solera. So that means it's
- 6:24Speaker 3: a blend of various aged rums that represents what a
- 6:29Speaker 3: 23-year-aged rum would taste like. So it's very rich, very dark.
- 6:34Speaker 3: Kind of like almost even Triaco, like the top of
- 6:38Speaker 3: a creme brulee, that burnt sugar. So you get a
- 6:40Speaker 3: lot of that to it. And we do that one
- 6:43Speaker 3: with a sea salt and caramel chocolate. So it's a
- 6:48Speaker 3: lot of fun, the rum and chocolate tasting season. We
- 6:50Speaker 3: can do this as an in-home event as well.
- 6:53Speaker 2: What is Meyer's rum?
- 6:56Speaker 3: It's a dark rum.
- 6:57Speaker 2: And is that considered just a sort of.
- 7:00Speaker 3: A— That's a great mixing rum. It's a rum that
- 7:03Speaker 3: has a lot of character. It does have a little
- 7:05Speaker 3: backfill in it. So what this rum is— so rum is
- 7:09Speaker 3: made with sugar cane. That's the base material. You know,
- 7:11Speaker 3: wine's made with grapes. Whiskey's the grains of corn, wheat, barley, rye.
- 7:16Speaker 3: Rum is sugarcane, and it's actually from the byproduct of
- 7:20Speaker 3: sugarcane in that when we're making sugar, culinary sugar, we
- 7:25Speaker 3: need the sugarcane, and we boil it, and frothing up
- 7:29Speaker 3: to the top is the grade A sugar. We then
- 7:32Speaker 3: boil it again, get another category or quality level of sugar,
- 7:36Speaker 3: and at the very bottom when we evaporate it all off,
- 7:39Speaker 3: it's the molasses, and it's called blackstrap molasses in some cases.
- 7:44Speaker 3: And then that's what we're fermenting and then ultimately distilling.
- 7:49Speaker 3: So the molasses is a byproduct or the rum is
- 7:53Speaker 3: from a byproduct of the production of cane sugar. Because
- 7:57Speaker 3: that's what pirates like it. That's right.
- 8:00Speaker 1: Because they're in places that have sugar cane.
- 8:03Speaker 3: All those tropical islands, yeah. It was funny because with
- 8:08Speaker 3: my worm tastings, I like to do a big map
- 8:11Speaker 3: for the whole table. And like a four foot table.
- 8:14Speaker 3: I wanted to cover the whole table with a map
- 8:16Speaker 3: of the Caribbean so I could show where all these
- 8:18Speaker 3: rums are from. And I'm looking all over. I'm looking
- 8:21Speaker 3: at an Amazon and Etsy. I'm looking everywhere. And I
- 8:26Speaker 3: couldn't find like the perfect one. So I'm saying this and.
- 8:29Speaker 3: And my mom, I'm telling her about it. And she's like, well,
- 8:34Speaker 3: let me see what I can do. And I said, well,
- 8:37Speaker 3: I'm looking everywhere. Thank you for that. So she calls me.
- 8:40Speaker 3: She's like, I found the perfect. It's a beach towel. Yeah.
- 8:46Speaker 3: That is of the Caribbean. Which is perfect. It is perfect.
- 8:50Speaker 3: And it's from Walmart.
- 8:51Speaker 1: Way to go, mom.
- 8:52Speaker 3: So I was like looking in all the wrong spots.
- 8:55Speaker 3: So she's like, here you go. What's your mom's name? Nancy. Nancy.
- 8:58Speaker 2: I have a quick question for you, Jim. So Tuesday,
- 9:01Speaker 2: it was Henry C. Ramos Day. to honor the inventor
- 9:06Speaker 2: of the Ramos Gin Fizz in 1888.
- 9:07Speaker 3: The Ramos Fizz. So what is the Ramos Fizz? So
- 9:12Speaker 3: the Ramos Fizz is gin-based citrus. It's a sour drink,
- 9:17Speaker 3: and you've got a little powdered sugar in there, and
- 9:20Speaker 3: then egg white. And when you make that, you have
- 9:24Speaker 3: to shake the bejesus out of it without ice. It's
- 9:27Speaker 3: a dry shake, and then you introduce the ice, shake it.
- 9:30Speaker 3: And then when you set it into the... It's a long,
- 9:34Speaker 3: skinny Collins glass. And you have to, just for effect,
- 9:37Speaker 3: on the side of the glass with your bar spoon,
- 9:39Speaker 3: you've got to tap it like this. And that allows,
- 9:43Speaker 3: because it's so frothy, that it's got to break it down.
- 9:47Speaker 3: Like popping the bubbles, if you will. Nice, dense Ramos
- 9:51Speaker 3: classic fizz. It takes about seven minutes. It takes seven
- 9:55Speaker 3: minutes to make it. It's a pain.
- 9:56Speaker 2: Yeah. I'd like a.
- 10:00Speaker 3: Ramos.
- 10:01Speaker 2: And Jimmy goes.
- 10:02Speaker 3: Yeah. Yeah. I mean, it's similar. Like, you know, the
- 10:04Speaker 3: Tom Collins without the without the egg white. But, you know, it's.
- 10:10Speaker 3: Is it a good. It means a good. Delicious. Very
- 10:14Speaker 3: citrusy and fresh. And the egg white provides a mouthfeel to.
- 10:19Speaker 3: offset all that acid. You need something else without adding sugar.
- 10:23Speaker 2: I think I'll go to the bar over at the
- 10:27Speaker 2: hotel there, the Monaco.
- 10:28Speaker 3: It's called The Vault. Is that it? Yeah, they could
- 10:30Speaker 3: do it.
- 10:30Speaker 2: And I'll go to The Vault and say, I'd like
- 10:32Speaker 2: a Ramos.
- 10:32Speaker 3: Gin Fizz, please, and see what they do. They'll do
- 10:34Speaker 3: a fantastic job. The Vesper Martini over there is very good.
- 10:39Speaker 3: The James Bond cocktail. And you can see Gin Forward, Vodka,
- 10:43Speaker 3: and if you have not Cappelletti, a Cokie Americano. Um,
- 10:49Speaker 3: and they'll make you a proper drink. What do you
- 10:51Speaker 3: got coming up? Oh, you know, next week on the, uh,
- 10:54Speaker 3: I'm at the breaks in Saratoga Springs. We also have
- 10:58Speaker 3: a Tracy Aviary wine takes flight friends giving. We've got a, uh,
- 11:04Speaker 3: we're outsourcing the food and it's got a tiny little bites, um,
- 11:08Speaker 3: celebrating Thanksgiving and, uh, plenty of events throughout November, but, uh,
- 11:12Speaker 3: definitely book your in-home as well as a corporate tasting events, uh,
- 11:17Speaker 3: As soon as possible. Yeah, because he's loading up for
- 11:20Speaker 3: the holidays. All right. Thank you, Jimmy. Well, thanks, guys.
- 11:23Speaker 3: Enjoy the rum and chocolate. Have a great weekend, everybody.
- 11:25Speaker 2: WineAcademyOfUtah.com. I'm going to pick up a bottle of that
- 11:29Speaker 2: on my way home.
- 11:30Speaker 3: Nice. It is nice.
- 11:31Speaker 1: Okay.
