  here

  with

  you,

  Marvin.
• 1:44
  Absolutely.
• 1:45
  It's
• 1:45
  been
• 1:45
  a
• 1:45
  bit,
• 1:45
  right?
• 1:46
  Yeah,
• 1:46
  yeah.
• 1:47
  Couple
• 1:47
  weeks,
• 1:48
  maybe
• 1:49
  a
• 1:49
  month,
• 1:50
  something
• 1:50
  like
• 1:50
  that.
• 1:50
  Yeah,
• 1:51
  Somewhere
• 1:51
  in
• 1:51
  between
• 1:51
  that.
• 1:51
  Well,
• 1:52
  you
• 1:52
  know,
• 1:52
  folks,
• 1:52
  I
• 1:52
  thought
• 1:52
  it
• 1:52
  was
• 1:53
  interesting
• 1:53
  to
• 1:53
  bring
• 1:53
  Tim
• 1:54
  back
• 1:54
  on.
• 1:54
  You
• 1:54
  know,
• 1:55
  folks
• 1:55
  are
• 1:55
  familiar
• 1:55
  obviously
• 1:56
  with
• 1:56
  his
• 1:56

• 1:56

• 1:57
  videos
• 1:58
  and
• 1:58
  his
• 1:58

  and
• 1:59
  his
• 1:59
  host
• 1:59
  to
• 1:59
  travel,
• 2:00
  but
• 2:00
  many
• 2:00
  folks
• 2:01
  may
• 2:01
  not
• 2:01
  know
• 2:02
  that
• 2:03
  Tim
• 2:03
  is.
• 2:04
  He
• 2:04
  says
• 2:04
  he's
• 2:05
  not
• 2:05
  a
• 2:05
  chef,
• 2:05
  he's
• 2:05
  a
• 2:05
  cook,
• 2:06
  but
• 2:06
  he's
• 2:07
  a
• 2:07
  very
• 2:07
  talented
• 2:08
  cook.
• 2:08
  And
• 2:08
  so
• 2:09
  I
• 2:09
  think
• 2:09
  I
• 2:09
  thought
• 2:09
  it
• 2:09
  would
• 2:09
  be
• 2:09
  interesting
• 2:10
  to
• 2:10
  bring
• 2:10
  him
• 2:10
  on
• 2:10
  and
• 2:11
  kind
• 2:12
  of
• 2:12
  talk
• 2:12
  about
• 2:12
  his
• 2:12
  culinary
• 2:13
  journey.
• 2:14
  And
• 2:14
  I
• 2:14
  guess
• 2:14
  we'll
• 2:15
  start
• 2:15
  off,
• 2:15
  Tim,
• 2:15
  by
• 2:15
  asking
• 2:16
  you,
• 2:16
  have
• 2:16
  you
• 2:16
  always
• 2:16
  been
• 2:17
  a
• 2:17
  foodie?
• 2:19
  Um,
• 2:19
  yeah,
• 2:20
  well,
• 2:21
  sort
• 2:21
  of.
• 2:21
  I.
• 2:22
  When
• 2:22
  I.
• 2:22
  When
• 2:22
  I
• 2:22
  was
• 2:22
  very
• 2:23
  young,
• 2:23
  I
• 2:23
  had
• 2:24
  just
• 2:24
  no
• 2:25
  taste
• 2:25
  at
• 2:25
  all
• 2:25
  like
• 2:26
  I,
• 2:26
  you
• 2:27
  know,
• 2:27
  vanilla
• 2:27
  ice
• 2:28
  cream
• 2:28
  and
• 2:28
  angel
• 2:29
  food
• 2:29
  cake
• 2:29
  was
• 2:29
  birthday
• 2:30
  party
• 2:30
  fair,
• 2:31
  but
• 2:31
  somewhere
• 2:32
  around
• 2:32
  like
• 2:32
  eight
• 2:32
  or
• 2:33
  nine
• 2:33
  years
• 2:33
  old,
• 2:33
  I
• 2:34
  think
• 2:34
  that's
• 2:34
  about
• 2:34
  what,
• 2:35
  what
• 2:35
  it
• 2:35
  was.
• 2:35
  I,
• 2:36
  I
• 2:36
  just,
• 2:36
  I
• 2:37
  don't
• 2:37
  know,
• 2:37
  I
• 2:37
  developed
• 2:38
  taste
• 2:38
  and,
• 2:38
  and,
• 2:39
  and
• 2:40
  you
• 2:41
  know,
• 2:41
  switched
• 2:41
  from,
• 2:42
  it's
• 2:42
  pretty
• 2:42
  big
• 2:43
  leap
• 2:43
  from
• 2:43
  vanilla
• 2:44
  to,
• 2:44
  to
• 2:44
  coffee
• 2:45
  ice
• 2:45
  cream.
• 2:45
  So,
• 2:47
  you
• 2:47
  know,
• 2:47
  I,
• 2:47
  Kids
• 2:48
  didn't
• 2:48
  want
• 2:48
  to
• 2:48
  come
• 2:48
  to
• 2:49
  my.
• 2:49
  Well,
• 2:49
  maybe
• 2:49
  it
• 2:50
  was
• 2:50
  just
• 2:50
  me,
• 2:50
  but
• 2:50
  they
• 2:50
  didn't
• 2:51
  want
• 2:51
  to
• 2:51
  come
• 2:51
  to
• 2:51
  my
• 2:51
  birthday
• 2:52
  parties
• 2:52
  anymore
• 2:53
  because
• 2:53
  nobody
• 2:54
  liked
• 2:54
  coffee
• 2:54
  ice
• 2:55
  cream
• 2:56
  to
• 2:56
  hack
• 2:57
  with
• 2:57
  them.
• 2:59
  And
• 3:00
  so
• 3:00
  it's,
• 3:00
  so
• 3:01
  it
• 3:01
  goes
• 3:01
  and
• 3:01
  the
• 3:01
  rest
• 3:01
  is.
• 3:02
  Yeah,
• 3:02
  and
• 3:02
  it's,
• 3:03
  you
• 3:03
  know,
• 3:03
  it's
• 3:03
  been
• 3:03
  downhill
• 3:04
  ever
• 3:04
  since,
• 3:05
  just
• 3:06
  almost,
• 3:07
  you
• 3:07
  know,
• 3:07
  stronger
• 3:08
  and
• 3:08
  stronger
• 3:08
  tastes
• 3:09
  every
• 3:09
  year.
• 3:10
  And
• 3:11
  so.
• 3:11
  Yeah,
• 3:12
  I
• 3:12
  push
• 3:12
  it
• 3:13
  pretty
• 3:13
  far
• 3:13
  now.
• 3:14
  Yeah,
• 3:14
  it's
• 3:14
  funny
• 3:15
  too.
• 3:15
  Cause
• 3:15
  you
• 3:15
  were
• 3:15
  kind
• 3:15
  of
• 3:16
  saying
• 3:16
  the
• 3:16
  genesis
• 3:16
  of
• 3:16
  all
• 3:16
  this
• 3:17
  is
• 3:17
  very
• 3:17
  similar
• 3:17
  for
• 3:18
  me
• 3:18
  too,
• 3:18
  is
• 3:18
  that,
• 3:18
  you
• 3:19
  know,
• 3:19
  food
• 3:19
  was
• 3:19
  a
• 3:19
  very
• 3:19
  important
• 3:20
  part
• 3:20
  of
• 3:20
  your
• 3:21
  family
• 3:21
  growing
• 3:21
  up.
• 3:22
  Yeah,
• 3:23
  yeah,
• 3:23
  it
• 3:23
  really
• 3:23
  was.
• 3:24
  And
• 3:25
  you
• 3:25
  know,
• 3:26
  anytime.
• 3:27
  Well,
• 3:28
  with
• 3:29
  my
• 3:29
  family,
• 3:29
  my
• 3:30
  direct
• 3:30

• 3:31
  you
• 3:32
  know,
• 3:32
  mom,
• 3:32
  dad
• 3:32
  and
• 3:32
  two
• 3:33
  brothers,
• 3:34
  it
• 3:34
  was
• 3:34
  important
• 3:35
  for
• 3:35
  us.
• 3:35
  It
• 3:36
  really
• 3:36
  was.
• 3:36
  Meal,
• 3:36
  mealtime
• 3:37
  was
• 3:38
  a
• 3:38
  big
• 3:38
  deal.
• 3:39
  But
• 3:40
  for
• 3:40
  my
• 3:40
  extended
• 3:41
  family,
• 3:41
  it
• 3:41
  was
• 3:41
  a
• 3:42
  really
• 3:42
  big
• 3:42
  deal.
• 3:42
  Aunts
• 3:43
  and
• 3:43
  uncles,
• 3:43
  grandparents,
• 3:44
  things
• 3:44
  like
• 3:45
  that.
• 3:46
  We,
• 3:46
  we,
• 3:47
  you
• 3:48
  know,
• 3:48
  when
• 3:48
  we
• 3:48
  get
• 3:48
  together,
• 3:48
  it
• 3:50
  every.
• 3:50
  Everybody
• 3:50
  helped
• 3:51
  to
• 3:51
  cook,
• 3:52
  everybody
• 3:52
  helped
• 3:52
  to
• 3:53
  clean
• 3:53
  up.
• 3:53
  And
• 3:55
  you
• 3:55
  know,
• 3:55
  it
• 3:55
  was
• 3:56
  a
• 3:56
  big
• 3:56
  participation
• 3:57
  thing.
• 3:57
  It
• 3:57
  wasn't
• 3:58
  just,
• 3:58
  you
• 3:58
  know,
• 3:59
  waiting
• 3:59
  for
• 3:59
  somebody
• 3:59
  to
• 4:00
  serve
• 4:00
  you.
• 4:01
  Interesting.
• 4:02
  And
• 4:02
  so
• 4:02
  were
• 4:03
  you
• 4:03
  self
• 4:03
  taught
• 4:03
  or
• 4:04
  did
• 4:04
  you
• 4:04
  have
• 4:04
  some
• 4:04
  training?
• 4:05
  Well,
• 4:06
  my,
• 4:06
  my
• 4:07
  mother
• 4:07
  was
• 4:07
  an
• 4:07
  excellent,
• 4:08
  excellent
• 4:08
  cook
• 4:09
  and
• 4:09
  not,
• 4:09
  not
• 4:10
  really,
• 4:11
  you
• 4:11
  know,
• 4:11
  a
• 4:11
  recipe
• 4:12
  cook.
• 4:12
  She
• 4:12
  was
• 4:13
  more
• 4:13
  just,
• 4:14
  you
• 4:14
  know,
• 4:14
  that,
• 4:14
  that
• 4:15
  instinct
• 4:16
  and
• 4:17
  knowing
• 4:17
  what
• 4:17
  goes
• 4:18
  well
• 4:18
  together,
• 4:19
  knowing
• 4:19
  how
• 4:19
  to
• 4:20
  season.
• 4:21
  And
• 4:22
  so
• 4:22
  I
• 4:22
  learned
• 4:23
  a
• 4:23
  ton
• 4:23
  from
• 4:23
  her.
• 4:24
  She's
• 4:24
  probably
• 4:24
  my,
• 4:25
  my
• 4:25
  biggest
• 4:26
  influence.
• 4:26
  But
• 4:28
  later
• 4:29
  on,
• 4:29
  my
• 4:29
  brother,
• 4:30
  my
• 4:30
  older
• 4:30
  brother
• 4:31
  would
• 4:31
  be
• 4:32
  a
• 4:32
  chef
• 4:32
  at
• 4:32
  the
• 4:32
  Jersey
• 4:33
  Shore
• 4:33
  for
• 4:33
  many
• 4:34
  years
• 4:34
  and
• 4:35
  in
• 4:35
  a
• 4:35
  seafood
• 4:35
  restaurant.
• 4:36
  And
• 4:37
  so
• 4:37
  I
• 4:37
  learned
• 4:37
  a
• 4:37
  ton
• 4:38
  from
• 4:38
  him
• 4:38
  as
• 4:39
  well
• 4:40
  after
• 4:40
  that.
• 4:42
  And
• 4:42
  then
• 4:43
  his
• 4:43
  friends
• 4:44
  were
• 4:44
  chefs
• 4:44
  as
• 4:44
  well
• 4:45
  and
• 4:45
  just
• 4:46
  hanging
• 4:46
  out
• 4:46
  with
• 4:46
  them,
• 4:47
  I
• 4:47
  learned
• 4:48
  quite
• 4:48
  a
• 4:48
  bit.
• 4:48
  Yeah,
• 4:49
  it's
• 4:49
  interesting,
• 4:49
  my
• 4:50
  mom
• 4:50
  calls
• 4:50
  that
• 4:50
  a
• 4:51
  process.
• 4:51
  We
• 4:51
  ask
• 4:52
  her
• 4:52
  for
• 4:52
  the
• 4:52
  biscuit
• 4:53
  recipe,
• 4:53
  she's
• 4:53
  like,
• 4:53
  yeah,
• 4:54
  I
• 4:54
  don't
• 4:54
  have
• 4:54
  a
• 4:54
  recipe.
• 4:54
  It's
• 4:55
  just
• 4:55
  a
• 4:55
  process.
• 4:56
  It
• 4:57
  is.
• 4:57
  And
• 4:58
  some
• 4:58
  of
• 4:58
  the
• 4:58
  best
• 4:59
  stuff
• 4:59
  to
• 4:59
  me
• 5:00
  is
• 5:00
  like
• 5:00
  that
• 5:01
  and
• 5:02
  I
• 5:03
  still
• 5:03
  cook
• 5:03
  very
• 5:04
  much
• 5:04
  that
• 5:05
  way
• 5:06
  is
• 5:06
  just
• 5:06
  sort
• 5:07
  of
• 5:07
  seated
• 5:07
  the
• 5:08
  pants
• 5:08
  and
• 5:09
  not
• 5:09
  a
• 5:09
  whole
• 5:09
  lot
• 5:10
  of
• 5:10
  measuring
• 5:10
  going
• 5:11
  on.
• 5:12
  Yeah,
• 5:12
  it's
• 5:13
  interesting
• 5:13
  too.
• 5:13
  I
• 5:13
  mean,
• 5:14
  I
• 5:14
  think
• 5:14
  that's,
• 5:14
  you
• 5:15
  know,
• 5:15
  if
• 5:15
  you
• 5:15
  come
• 5:15
  from
• 5:16
  a
• 5:16
  family
• 5:16
  where
• 5:16
  the
• 5:16
  food
• 5:17
  is
• 5:17
  important
• 5:17
  and
• 5:17
  not
• 5:17
  we're
• 5:18
  not
• 5:18
  talking
• 5:18
  about,
• 5:18
  like,
• 5:19
  having
• 5:19
  like,
• 5:19
  you
• 5:19
  know,
• 5:20
  prime
• 5:20
  rib
• 5:20
  every
• 5:20
  night,
• 5:20
  but
• 5:21
  we're
• 5:21
  talking
• 5:21
  about
• 5:21
  where,
• 5:22
  you
• 5:22
  know,
• 5:23
  the
• 5:23
  social
• 5:23
  aspect
• 5:24
  of
• 5:24
  cooking
• 5:24
  together
• 5:25
  and
• 5:25
  being
• 5:25
  together
• 5:25
  as
• 5:25
  a
• 5:26
  family,
• 5:26
  and
• 5:27
  it's
• 5:28
  just
• 5:28
  such
• 5:28
  a
• 5:28
  phenomenally
• 5:29
  neat
• 5:30
  thing.
• 5:30
  And
• 5:30
  it
• 5:30
  is
• 5:31
  kind
• 5:31
  of
• 5:31
  a
• 5:31
  process.
• 5:31
  And
• 5:32
  so,
• 5:32
  like
• 5:32
  I
• 5:32
  tell
• 5:32
  my
• 5:32
  boys,
• 5:33
  I
• 5:33
  was
• 5:33
  like,
• 5:33
  you
• 5:33
  know,
• 5:33
  spend
• 5:34
  time
• 5:34
  with
• 5:34
  your
• 5:34
  grandmother
• 5:35
  and
• 5:35
  learn
• 5:35
  how
• 5:35
  she
• 5:35
  makes
• 5:35
  her
• 5:36
  biscuits
• 5:36
  or
• 5:36
  how
• 5:36
  she
• 5:36
  makes
• 5:37
  her
• 5:37
  pie
• 5:37
  crusts.
• 5:39
  That
• 5:39
  was
• 5:39
  a
• 5:39
  huge
• 5:39
  part
• 5:39
  of,
• 5:39
  like,
• 5:40
  how
• 5:40
  our
• 5:40
  family.
• 5:40
  We
• 5:40
  show
• 5:41
  each
• 5:41
  other
• 5:41
  we
• 5:41
  love
• 5:41
  each
• 5:41
  other.
• 5:42
  Yo.
• 5:43
  Yeah.
• 5:43
  Yeah.
• 5:43
  And
• 5:44
  mine
• 5:44
  as
• 5:44
  well.
• 5:45
  That,
• 5:45
  that
• 5:45
  was.
• 5:47
  Yeah,
• 5:48
  it
• 5:48
  really
• 5:49
  held
• 5:49
  our
• 5:49
  family
• 5:49
  together
• 5:50
  in
• 5:50
  many
• 5:50
  respects.
• 5:52
  Just
• 5:53
  whether
• 5:53
  it
• 5:54
  was
• 5:54
  cooking
• 5:54
  food,
• 5:54
  eating
• 5:55
  the
• 5:55
  food
• 5:55
  or,
• 5:56
  or
• 5:56
  talking
• 5:56
  about,
• 5:57
  you
• 5:57
  know,
• 5:57
  a
• 5:57
  meal
• 5:58
  and
• 5:59
  collecting
• 5:59
  ingredients,
• 6:00
  if
• 6:00
  they,
• 6:00
  they
• 6:01
  were
• 6:01
  things,
• 6:01
  you
• 6:01
  know,
• 6:01
  like,
• 6:02
  like
• 6:02
  fish
• 6:02
  or
• 6:03
  shellfish
• 6:03
  or.
• 6:04
  Or
• 6:04
  vegetables
• 6:05
  that,
• 6:05
  that,
• 6:06
  you
• 6:06
  know,
• 6:06
  we,
• 6:08
  we.
• 6:08
  We
• 6:09
  grew
• 6:09
  or,
• 6:10
  you
• 6:11
  know,
• 6:11
  that
• 6:11
  you,
• 6:11
  you
• 6:11
  got
• 6:12
  from
• 6:12
  friends
• 6:12
  or
• 6:13
  something
• 6:13
  like
• 6:13
  that.
• 6:13
  And,
• 6:14
  and
• 6:15
  how
• 6:15
  that
• 6:15
  all
• 6:16
  came
• 6:16
  together,
• 6:16
  what
• 6:16
  went
• 6:17
  with
• 6:17
  what.
• 6:17
  And
• 6:19
  yeah,
• 6:19
  big
• 6:20
  part
• 6:20
  of
• 6:20
  growing
• 6:20
  up
• 6:20
  for
• 6:20
  me.
• 6:21
  Yeah,
• 6:21
  any
• 6:23
  you
• 6:23
  know,
• 6:23
  kind
• 6:23
  of,
• 6:24
  you
• 6:24
  know,
• 6:25
  ethnic
• 6:25
  Northeastern
• 6:26
  or
• 6:26
  kind
• 6:26
  of
• 6:27
  Northeastern
• 6:27
  kind
• 6:27
  of
• 6:28
  food
• 6:28
  traditions,
• 6:28
  kind
• 6:28
  of
• 6:28
  like
• 6:29
  we
• 6:29
  have
• 6:29
  in
• 6:29
  the
• 6:29
  south,
• 6:29
  that
• 6:30
  you
• 6:30
  were
• 6:30
  kind
• 6:30
  of
• 6:30
  part
• 6:30
  of
• 6:30
  that
• 6:31
  growing
• 6:31
  up
• 6:31
  in
• 6:31
  those
• 6:32
  big
• 6:32
  family
• 6:32
  meals.
• 6:33
  Yeah,
• 6:34
  we,
• 6:34
  we.
• 6:34
  My.
• 6:35
  My
• 6:35
  family,
• 6:35
  even
• 6:36
  my
• 6:36
  extended
• 6:36
  family,
• 6:37
  we
• 6:37
  didn't
• 6:38
  have
• 6:38
  a
• 6:38
  whole
• 6:38
  lot
• 6:38
  of
• 6:38
  money.
• 6:39
  And
• 6:40
  so
• 6:40
  it
• 6:40
  was
• 6:40
  not
• 6:41
  fancy
• 6:41
  ingredients,
• 6:42
  fancy
• 6:42
  meals.
• 6:43
  It
• 6:43
  was
• 6:43
  more
• 6:43
  like,
• 6:44
  you
• 6:44
  know,
• 6:45
  kind
• 6:45
  of
• 6:45
  country
• 6:46
  type
• 6:46
  type
• 6:47
  meals
• 6:47
  or
• 6:48
  stuff
• 6:49
  that
• 6:49
  we
• 6:49
  could
• 6:49
  get
• 6:50
  locally
• 6:51
  that
• 6:51
  was
• 6:52
  fairly
• 6:52
  cheap.
• 6:53
  And
• 6:54
  so
• 6:57
  that
• 6:57
  had
• 6:57
  a
• 6:57
  big
• 6:58
  influence.
• 6:58
  And
• 6:59
  the
• 7:00
  fact
• 7:00
  that
• 7:00
  we
• 7:00
  spent
• 7:00
  a
• 7:00
  lot
• 7:01
  of
• 7:01
  time
• 7:01
  down
• 7:01
  at
• 7:01
  the
• 7:01
  Jersey
• 7:02
  Shore.
• 7:04
  My
• 7:04
  grandparents
• 7:05
  had
• 7:06
  had
• 7:06
  a
• 7:06
  property
• 7:06
  there
• 7:07
  since,
• 7:07
  like
• 7:07
  the
• 7:08
  40s
• 7:08
  on
• 7:09
  Long
• 7:09
  beach
• 7:09
  is.
• 7:11
  And
• 7:11
  spent
• 7:12
  all
• 7:12
  my
• 7:12
  summers
• 7:13
  down
• 7:13
  there
• 7:14
  and
• 7:14
  then
• 7:14
  many,
• 7:14
  many
• 7:15
  weekends
• 7:15
  throughout
• 7:16
  the
• 7:16
  year,
• 7:17
  except
• 7:17
  for
• 7:17
  the
• 7:18
  wintertime.
• 7:18
  And
• 7:18
  so
• 7:19
  we
• 7:19
  were
• 7:20
  always,
• 7:21
  you
• 7:21
  know,
• 7:21
  fishing,
• 7:22
  duck
• 7:22
  hunting
• 7:23
  was
• 7:23
  another
• 7:23
  big
• 7:24
  kind
• 7:24
  of
• 7:24
  family
• 7:25
  thing
• 7:25
  for
• 7:26
  us
• 7:26
  for
• 7:26
  time.
• 7:27
  And
• 7:29
  so
• 7:29
  you
• 7:29
  were
• 7:29
  all
• 7:30
  clamming,
• 7:30
  crabbing,
• 7:32
  always
• 7:34
  getting
• 7:34
  food
• 7:34
  that
• 7:35
  way.
• 7:36
  And
• 7:36
  so,
• 7:38
  yeah,
• 7:39
  that,
• 7:39
  that,
• 7:39
  I
• 7:39
  guess,
• 7:40
  you
• 7:40
  know,
• 7:40
  that
• 7:41
  fairly
• 7:41
  local
• 7:42
  Mid
• 7:43
  Atlantic
• 7:43
  fare,
• 7:44
  if
• 7:44
  you
• 7:44
  will.
• 7:44
  Yeah.
• 7:45
  So
• 7:45
  when
• 7:45
  you
• 7:45
  were
• 7:46
  younger,
• 7:46
  I
• 7:46
  spent
• 7:46
  a
• 7:47
  lot
• 7:47
  of
• 7:47
  time
• 7:47
  doing
• 7:48
  meal
• 7:48
  prep
• 7:49
  with
• 7:49
  the,
• 7:49
  with
• 7:49
  my
• 7:50
  grandmother
• 7:50
  and
• 7:50
  great
• 7:50
  aunts
• 7:51
  where
• 7:51
  I
• 7:51
  would
• 7:52
  be
• 7:52
  shelling
• 7:53
  peas
• 7:53
  or,
• 7:54
  you
• 7:54
  know,
• 7:54
  doing
• 7:55
  things
• 7:55
  like
• 7:55
  that
• 7:55
  or
• 7:55
  snap
• 7:56
  peas
• 7:56
  or
• 7:56
  helping
• 7:57
  them
• 7:57
  prepare
• 7:57
  to.
• 7:57
  Can
• 7:58
  stuff
• 7:58
  anything
• 7:59
  like
• 7:59
  that
• 7:59
  in
• 7:59
  your
• 7:59
  childhood?
• 8:01
  Well,
• 8:01
  yeah,
• 8:01
  I,
• 8:02
  I
• 8:02
  had
• 8:02
  a
• 8:02
  grandmother
• 8:03
  too.
• 8:03
  My
• 8:04
  father's
• 8:05
  mother
• 8:06
  and
• 8:06
  she.
• 8:07
  We
• 8:08
  made
• 8:08
  two
• 8:08
  brothers
• 8:09
  would
• 8:10
  spend
• 8:10
  two
• 8:10
  weeks
• 8:10
  with
• 8:11
  her
• 8:11
  down
• 8:11
  at
• 8:11
  the
• 8:11
  Jersey
• 8:12
  shore.
• 8:13
  My
• 8:13
  parents
• 8:13
  took
• 8:14
  a
• 8:14
  vacation.
• 8:14
  I
• 8:15
  think
• 8:15
  they
• 8:15
  just,
• 8:16
  you
• 8:16
  know,
• 8:17
  we
• 8:17
  were,
• 8:17
  we
• 8:17
  were
• 8:18
  pretty
• 8:21
  feral,
• 8:22
  I
• 8:22
  guess.
• 8:26
  I
• 8:26
  Wouldn't
• 8:26
  want
• 8:27
  to
• 8:27
  spend
• 8:27
  the
• 8:27
  whole
• 8:27
  year
• 8:28
  with
• 8:28
  us
• 8:28
  either.
• 8:28
  But
• 8:29
  so
• 8:30
  she,
• 8:30
  my
• 8:31
  mom
• 8:31
  and
• 8:31
  dad
• 8:31
  would
• 8:31
  farm
• 8:32
  us
• 8:32
  out
• 8:32
  to
• 8:33
  our
• 8:33
  grandmother
• 8:33
  for
• 8:33
  two
• 8:34
  weeks.
• 8:34
  And
• 8:34
  she
• 8:34
  was,
• 8:35
  she
• 8:35
  was
• 8:35
  a
• 8:36
  skinny,
• 8:36
  skinny
• 8:37
  little
• 8:37
  woman,
• 8:37
  but
• 8:38
  like
• 8:38
  a
• 8:39
  drill
• 8:39
  sergeant.
• 8:40
  And
• 8:40
  so
• 8:40
  she
• 8:41
  had
• 8:41
  us
• 8:41
  hopping
• 8:42
  from,
• 8:42
  from
• 8:43
  dawn
• 8:43
  till
• 8:43
  dusk,
• 8:44
  catching
• 8:44
  fish,
• 8:44
  clamming,
• 8:47
  made
• 8:47
  root
• 8:47
  beer,
• 8:49
  canned
• 8:50
  or
• 8:50
  jarred,
• 8:50
  jarred
• 8:51
  vegetables,
• 8:52
  all
• 8:53
  sorts
• 8:53
  of
• 8:53
  wild,
• 8:54
  made
• 8:54
  bread,
• 8:54
  all
• 8:55
  sorts
• 8:55
  of
• 8:55
  wild
• 8:55
  stuff
• 8:56
  with
• 8:56
  her.
• 8:57
  And,
• 8:58
  and
• 8:58
  again,
• 8:59
  that,
• 8:59
  that
• 8:59
  was
• 9:00
  a
• 9:00
  big,
• 9:00
  big
• 9:01
  influence.
• 9:02
  And
• 9:02
  a
• 9:02
  lot
• 9:02
  of
• 9:03
  the
• 9:03
  stuff
• 9:04
  that
• 9:04
  I
• 9:04
  have,
• 9:05
  you
• 9:05
  know,
• 9:05
  the,
• 9:05
  the
• 9:06
  bas.
• 9:08
  Her,
• 9:08
  honestly,
• 9:09
  you
• 9:09
  know,
• 9:09
  whether
• 9:10
  it's
• 9:10
  making
• 9:10
  gravy
• 9:11
  or
• 9:11
  something
• 9:11
  like
• 9:11
  that,
• 9:12
  you
• 9:12
  know,
• 9:12
  when,
• 9:12
  when
• 9:12
  do
• 9:12
  you
• 9:13
  use
• 9:13
  flour,
• 9:13
  when
• 9:13
  to
• 9:13
  use
• 9:14
  cornstarch?
• 9:16
  Thinking
• 9:16
  back,
• 9:16
  that
• 9:17
  that
• 9:17
  all
• 9:17
  came
• 9:17
  from
• 9:17
  her,
• 9:18
  and,
• 9:19
  and
• 9:21
  yeah,
• 9:21
  I,
• 9:22
  I,
• 9:22
  I
• 9:22
  guess,
• 9:23
  Golly,
• 9:23
  I
• 9:23
  guess
• 9:23
  she
• 9:24
  was
• 9:24
  a
• 9:24
  big,
• 9:25
  bigger
• 9:25
  influence
• 9:26
  than
• 9:26
  I,
• 9:26
  I
• 9:27
  really
• 9:27
  thought.
• 9:28
  Yeah.
• 9:29
  That's
• 9:29
  funny.
• 9:30
  Did
• 9:30
  you
• 9:30
  have
• 9:30
  any
• 9:30
  pressure
• 9:31
  cooker
• 9:31
  explosion
• 9:32
  problems
• 9:33
  like
• 9:33
  canning?
• 9:34
  No,
• 9:35
  we,
• 9:35
  we
• 9:35
  didn't
• 9:36
  have
• 9:36
  any
• 9:36
  explosions,
• 9:37
  but
• 9:37
  that,
• 9:37
  that
• 9:38
  pressure
• 9:38
  cooker,
• 9:40
  first
• 9:40
  of
• 9:40
  all,
• 9:40
  the
• 9:40
  thing
• 9:40
  scared
• 9:41
  the
• 9:41
  living
• 9:41
  heck
• 9:41
  out
• 9:41
  of
• 9:42
  me.
• 9:42
  I
• 9:42
  mean,
• 9:42
  even
• 9:42
  till
• 9:42
  the
• 9:43
  time
• 9:43
  I
• 9:43
  was
• 9:43
  in
• 9:43
  my
• 9:43
  20s,
• 9:44
  I
• 9:44
  think
• 9:44
  whenever
• 9:45
  my
• 9:45
  mom
• 9:46
  or
• 9:46
  grandmother
• 9:46
  would
• 9:46
  crack
• 9:47
  out
• 9:47
  the
• 9:47
  pressure
• 9:48
  cooker,
• 9:48
  and
• 9:48
  they
• 9:48
  used
• 9:48
  it
• 9:49
  a
• 9:49
  lot
• 9:49
  for
• 9:50
  a
• 9:50
  lot
• 9:50
  of
• 9:50
  different
• 9:50
  things,
• 9:53
  I
• 9:53
  still
• 9:53
  have
• 9:53
  it
• 9:53
  somewhere.
• 9:54
  I
• 9:54
  kind
• 9:54
  of
• 9:54
  inherited
• 9:55
  all
• 9:55
  that
• 9:55
  stuff.
• 9:56
  And.
• 9:58
  Yeah,
• 9:58
  that
• 9:59
  little
• 9:59
  metal
• 9:59
  disc
• 9:59
  clacking
• 10:00
  away
• 10:00
  on
• 10:01
  top
• 10:01
  of
• 10:01
  it.
• 10:01
  Just
• 10:02
  that's.
• 10:03
  It'll
• 10:03
  put
• 10:03
  the
• 10:03
  fear
• 10:04
  of
• 10:04
  God
• 10:04
  in
• 10:04
  you.
• 10:05
  Yeah,
• 10:05
  it's
• 10:05
  kind
• 10:05
  of
• 10:05
  funny.
• 10:06
  So
• 10:06
  I
• 10:06
  was
• 10:06
  just
• 10:06
  up
• 10:07
  with
• 10:07
  my
• 10:07
  mom
• 10:07
  at
• 10:07
  Thanksgiving
• 10:08
  with
• 10:08
  the
• 10:08
  rest
• 10:08
  of
• 10:09
  my
• 10:09
  family
• 10:09
  and
• 10:09
  my
• 10:09
  sister's
• 10:10
  family,
• 10:10
  and
• 10:10
  we
• 10:11
  were
• 10:11
  actually
• 10:11
  talking
• 10:12
  about,
• 10:12
  like,
• 10:12
  knives
• 10:13
  and
• 10:13
  utensils
• 10:13
  we
• 10:13
  were
• 10:14
  using
• 10:14
  to
• 10:14
  prepare
• 10:14
  the
• 10:14
  meal.
• 10:15
  And
• 10:15
  like,
• 10:15
  you
• 10:15
  know,
• 10:16
  this
• 10:16
  was
• 10:16
  like
• 10:16
  my
• 10:16
  great
• 10:16
  grandmother's.
• 10:17
  This
• 10:17
  was
• 10:17
  my
• 10:18
  grandmother.
• 10:18
  So
• 10:18
  it's
• 10:18
  kind
• 10:18
  of
• 10:19
  cool.
• 10:19
  It
• 10:19
  sounds
• 10:20
  like
• 10:20
  maybe
• 10:20
  we
• 10:20
  had
• 10:20
  some
• 10:20
  similar
• 10:20
  experiences
• 10:21
  growing
• 10:21
  up.
• 10:22
  Yeah.
• 10:23
  And
• 10:23
  I,
• 10:23
  I
• 10:23
  have,
• 10:24
  I
• 10:24
  have
• 10:24
  some
• 10:24
  of
• 10:25
  my
• 10:25
  grandmothers.
• 10:26
  To
• 10:27
  me,
• 10:27
  they're,
• 10:27
  they're
• 10:28
  for
• 10:28
  me,
• 10:28
  their
• 10:28
  prized
• 10:29
  possessions.
• 10:31
  Clam
• 10:32
  knives
• 10:32
  that,
• 10:33
  that
• 10:34
  I
• 10:34
  believe
• 10:34
  that
• 10:35
  she
• 10:35
  may
• 10:36
  have
• 10:36
  gotten
• 10:36
  them
• 10:36
  from
• 10:37
  her
• 10:37
  mother
• 10:37
  or
• 10:38
  grandmother,
• 10:38
  that
• 10:39
  they're
• 10:39
  ancient.
• 10:40
  I
• 10:40
  still
• 10:40
  use
• 10:41
  them,
• 10:41
  and
• 10:42
  there's
• 10:42
  nothing
• 10:42
  like
• 10:42
  them.
• 10:43
  You,
• 10:43
  you
• 10:43
  cannot,
• 10:44
  you
• 10:45
  can't
• 10:45
  buy
• 10:45
  one
• 10:46
  like,
• 10:47
  like
• 10:47
  this.
• 10:47
  And
• 10:47
  I
• 10:48
  have
• 10:48
  about
• 10:48
  five
• 10:49
  of
• 10:49
  them
• 10:50
  of
• 10:50
  different
• 10:51
  flexibilities
• 10:52
  and
• 10:52
  things
• 10:52
  like
• 10:52
  that.
• 10:53
  So.
• 10:54
  Yeah,
• 10:54
  and
• 10:54
  a
• 10:55
  couple
• 10:55
  of
• 10:55
  her
• 10:55
  other,
• 10:55
  other
• 10:57
  kitchen
• 10:57
  tools
• 10:57
  that
• 10:58
  are,
• 10:58
  that
• 10:58
  are
• 10:58
  just
• 10:59
  really,
• 10:59
  really,
• 11:00
  yeah.
• 11:01
  Prized
• 11:01
  possessions
• 11:02
  for
• 11:02
  me,
• 11:02
  and
• 11:02
  I
• 11:03
  still
• 11:03
  use
• 11:03
  them.
• 11:04
  So.
• 11:05
  You
• 11:05
  know,
• 11:05
  it's
• 11:05
  kind
• 11:05
  of
• 11:05
  funny
• 11:06
  you
• 11:06
  say
• 11:06
  that.
• 11:06
  One
• 11:06
  of
• 11:06
  my
• 11:06
  great
• 11:07
  memories,
• 11:07
  Tim,
• 11:07
  is
• 11:08
  me
• 11:08
  with
• 11:09
  my
• 11:09
  grandmother
• 11:10
  making
• 11:10
  pecan
• 11:11
  pies.
• 11:11
  And
• 11:11
  the
• 11:11
  deal
• 11:12
  she
• 11:12
  would
• 11:12
  have,
• 11:12
  you
• 11:12
  know,
• 11:12
  in
• 11:12
  the
• 11:13
  south,
• 11:13
  if
• 11:13
  you
• 11:13
  have
• 11:13
  a
• 11:13
  pecan
• 11:14
  tree,
• 11:14
  you
• 11:15
  can,
• 11:15
  you
• 11:15
  know,
• 11:16
  pick
• 11:16
  up
• 11:16
  a
• 11:16
  bag
• 11:16
  of
• 11:16
  pecans
• 11:17
  in
• 11:18
  probably
• 11:18
  grocery
• 11:19
  bag
• 11:19
  in
• 11:19
  like
• 11:19
  five
• 11:19
  minutes.
• 11:20
  And
• 11:20
  so
• 11:20
  then
• 11:20
  the
• 11:20
  deal
• 11:20
  I
• 11:21
  always
• 11:21
  had
• 11:21
  with
• 11:21
  her
• 11:21
  was
• 11:23
  if,
• 11:24
  if
• 11:24
  I
• 11:24
  would
• 11:25
  shell
• 11:25
  them,
• 11:25
  she
• 11:25
  would
• 11:25
  make
• 11:25
  the
• 11:26
  pie.
• 11:26
  So
• 11:26
  you
• 11:26
  then
• 11:26
  spend
• 11:27
  a
• 11:27
  couple
• 11:27
  hours
• 11:27
  sitting
• 11:27
  outside
• 11:28
  on
• 11:28
  the
• 11:28
  front
• 11:28
  porch
• 11:28
  with
• 11:29
  the
• 11:29
  nutcracker
• 11:30
  eating
• 11:30
  half
• 11:30
  of
• 11:31
  what
• 11:31
  you
• 11:31
  crack
• 11:31
  to
• 11:31
  get
• 11:31
  enough
• 11:31
  for
• 11:32
  a
• 11:32
  pie.
• 11:33
  Well,
• 11:33
  yeah,
• 11:33
  I
• 11:34
  was
• 11:34
  kind
• 11:34
  of
• 11:34
  the
• 11:34
  same
• 11:34
  way,
• 11:35
  but
• 11:35
  it
• 11:35
  was
• 11:35
  with
• 11:35
  blue
• 11:36
  claw
• 11:36
  crabs.
• 11:38
  Excuse
• 11:38
  me.
• 11:38
  I
• 11:39
  love
• 11:39
  crab
• 11:39
  cakes.
• 11:40
  So
• 11:40
  did
• 11:40
  my
• 11:40
  brothers.
• 11:41
  And
• 11:42
  if
• 11:42
  we
• 11:42
  went
• 11:43
  out
• 11:43
  and
• 11:43
  got,
• 11:43
  you
• 11:43
  know,
• 11:43
  got
• 11:44
  a
• 11:44
  mess
• 11:44
  of
• 11:44
  crabs
• 11:45
  either
• 11:45
  out
• 11:45
  in
• 11:45
  the
• 11:45
  boat
• 11:46
  or
• 11:46
  off
• 11:46
  a
• 11:46
  dock
• 11:47
  and
• 11:49
  you
• 11:49
  know,
• 11:49
  we
• 11:49
  would
• 11:50
  like
• 11:50
  picking
• 11:50
  crabs,
• 11:51
  just
• 11:51
  eating
• 11:51
  them,
• 11:52
  but
• 11:52
  really
• 11:52
  liked
• 11:52
  her.
• 11:53
  My
• 11:53
  grandmother's
• 11:53
  crab
• 11:54
  cakes
• 11:54
  in
• 11:54
  the
• 11:54
  summertime
• 11:55
  and,
• 11:55
  and,
• 11:56
  but
• 11:56
  yeah,
• 11:57
  you
• 11:57
  can't
• 11:57
  believe
• 11:57
  how
• 11:58
  many
• 11:58
  crabs
• 11:59
  you
• 11:59
  gotta
• 11:59
  pick
• 12:00
  to
• 12:01
  put
• 12:01
  together
• 12:02
  a
• 12:02
  batch
• 12:02
  of
• 12:03
  nice
• 12:03
  big
• 12:03
  crab
• 12:04
  cakes.
• 12:04
  Yeah,
• 12:05
  absolutely.
• 12:06
  And
• 12:06
  so
• 12:06
  it
• 12:07
  sounds
• 12:07
  like,
• 12:07
  you
• 12:07
  know,
• 12:07
  we
• 12:07
  both,
• 12:08
  you
• 12:08
  know,
• 12:08
  you're
• 12:08
  in
• 12:08
  the
• 12:08
  North,
• 12:09
  I'm
• 12:09
  in
• 12:09
  the
• 12:09
  south,
• 12:09
  but
• 12:10
  we
• 12:10
  had
• 12:10
  kind
• 12:10
  of
• 12:10
  that
• 12:11
  kind
• 12:11
  of
• 12:11
  comfort
• 12:11
  family
• 12:12
  food
• 12:12
  tradition,
• 12:13
  you
• 12:13
  know,
• 12:14
  from,
• 12:14
  you
• 12:14
  know,
• 12:15
  what,
• 12:15
  what
• 12:15
  we
• 12:15
  were
• 12:15
  lucky
• 12:16
  enough
• 12:16
  to,
• 12:16
  to
• 12:16
  taste
• 12:17
  up
• 12:17
  at
• 12:17
  Spruce
• 12:17
  Creek.
• 12:18
  You
• 12:18
  know,
• 12:18
  that's
• 12:18
  certainly
• 12:19
  evolved.
• 12:19
  I
• 12:19
  mean,
• 12:19
  you're
• 12:20
  doing
• 12:20
  sushi,
• 12:21
  you're
• 12:21
  doing
• 12:21
  Asian
• 12:22
  dumplings.
• 12:23
  You
• 12:23
  know,
• 12:23
  how
• 12:23
  did
• 12:23
  that,
• 12:23
  how
• 12:24
  did
• 12:24
  you
• 12:24
  kind
• 12:24
  of
• 12:24
  progress
• 12:25
  from,
• 12:25
  you
• 12:26
  know,
• 12:26
  the
• 12:26
  family
• 12:26
  cooking
• 12:27
  to
• 12:27
  kind
• 12:27
  of
• 12:27
  what
• 12:27
  you're,
• 12:27
  you
• 12:28
  know,
• 12:28
  producing,
• 12:28
  you
• 12:29
  know,
• 12:29
  when
• 12:29
  you're
• 12:29
  out
• 12:29
  on
• 12:29
  a
• 12:29
  hosted
• 12:30
  trip,
• 12:30
  for
• 12:30
  example.
• 12:31
  Well,
• 12:32
  a
• 12:32
  lot
• 12:32
  of
• 12:32
  it
• 12:32
  actually
• 12:33
  comes
• 12:33
  from
• 12:33
  my
• 12:33
  older
• 12:33
  brother
• 12:34
  and
• 12:34
  he,
• 12:34
  he
• 12:34
  was
• 12:34
  a
• 12:35
  chef
• 12:35
  for
• 12:35
  a
• 12:35
  time
• 12:36
  at
• 12:36
  a
• 12:36
  seafood,
• 12:37
  very
• 12:37
  good
• 12:37
  seafood
• 12:38
  restaurant
• 12:38
  in
• 12:38
  the
• 12:39
  Jersey
• 12:39
  Shore.
• 12:40
  And,
• 12:40
  and
• 12:40
  so,
• 12:41
  and
• 12:42
  he,
• 12:42
  he
• 12:42
  really
• 12:43
  kind
• 12:43
  of
• 12:44
  was
• 12:45
  given
• 12:45
  a
• 12:45
  lot
• 12:45
  of
• 12:45
  freedom
• 12:46
  there
• 12:46
  to,
• 12:47
  to
• 12:47
  cook
• 12:47
  and
• 12:47
  so
• 12:49
  kind
• 12:49
  of
• 12:50
  explored
• 12:51
  newer,
• 12:51
  newer
• 12:52
  things,
• 12:53
  if
• 12:53
  you
• 12:53
  will.
• 12:53
  And
• 12:54
  you
• 12:54
  know,
• 12:54
  back
• 12:54
  then,
• 12:55
  this
• 12:55
  is,
• 12:57
  gosh,
• 12:57
  70s
• 12:57
  into
• 12:57
  the
• 12:58
  early
• 12:58
  80s
• 12:59
  and
• 13:01
  sushi
• 13:01
  and
• 13:01
  rolls
• 13:02
  really
• 13:02
  wasn't
• 13:02
  a
• 13:02
  thing
• 13:03
  yet
• 13:03
  here
• 13:04
  in
• 13:04
  the
• 13:04
  States.
• 13:07
  But
• 13:08
  he
• 13:08
  was
• 13:09
  learning
• 13:10
  to
• 13:10
  do
• 13:10
  that
• 13:11
  type
• 13:11
  of
• 13:11
  cooking
• 13:11
  back
• 13:12
  then
• 13:12
  and
• 13:13
  a
• 13:13
  lot
• 13:13
  of
• 13:13
  Asian
• 13:14
  influence
• 13:14
  for
• 13:14
  him.
• 13:15
  And
• 13:15
  so
• 13:16
  I
• 13:16
  learned
• 13:16
  a
• 13:16
  lot
• 13:17
  from
• 13:17
  him
• 13:17
  just
• 13:18
  kind
• 13:18
  of
• 13:20
  passing
• 13:20
  it
• 13:20
  down
• 13:21
  and
• 13:22
  hanging
• 13:22
  out
• 13:22
  with
• 13:22
  other
• 13:23
  chef
• 13:23
  friends
• 13:23
  of
• 13:24
  his
• 13:25
  and,
• 13:26
  and
• 13:27
  yeah,
• 13:27
  that's
• 13:28
  really
• 13:28
  where
• 13:28
  it
• 13:28
  came
• 13:28
  from.
• 13:29
  And
• 13:29
  then
• 13:30
  we
• 13:30
  have
• 13:31
  so
• 13:31
  many
• 13:31
  great
• 13:32
  resources
• 13:32
  now
• 13:33
  in
• 13:34
  terms
• 13:34
  of,
• 13:35
  with
• 13:36
  a
• 13:36
  lot
• 13:36
  of
• 13:36
  that
• 13:36
  Asian
• 13:37
  food,
• 13:38
  it's
• 13:38
  not
• 13:38
  as
• 13:39
  ingredient
• 13:40
  that's
• 13:40
  not
• 13:40
  going
• 13:40
  to
• 13:41
  sound
• 13:41
  right.
• 13:42
  It's
• 13:43
  very
• 13:43
  technique
• 13:43
  driven,
• 13:45
  if
• 13:45
  you
• 13:45
  will.
• 13:46
  And
• 13:46
  so
• 13:49
  having
• 13:49
  the
• 13:50
  ability,
• 13:51
  gosh,
• 13:51
  just
• 13:51
  like
• 13:52
  fly
• 13:52
  tying,
• 13:52
  really
• 13:53
  having
• 13:54
  the
• 13:54
  ability
• 13:54
  to
• 13:55
  actually
• 13:55
  see
• 13:56
  someone
• 13:56
  doing
• 13:56
  it,
• 13:57
  rather
• 13:57
  than
• 13:57
  say,
• 13:58
  series
• 13:58
  of
• 13:58
  still
• 13:59
  pictures
• 14:00
  really
• 14:00
  helps,
• 14:00
  you
• 14:01
  know,
• 14:01
  or.
• 14:02
  Or
• 14:03
  just
• 14:03
  having
• 14:03
  a
• 14:03
  written
• 14:04
  text
• 14:04
  in
• 14:04
  a
• 14:04
  recipe.
• 14:06
  And
• 14:06
  so
• 14:06
  I,
• 14:07
  I
• 14:07
  do
• 14:07
  watch
• 14:07
  a
• 14:08
  lot.
• 14:08
  Lot
• 14:08
  of
• 14:08
  video
• 14:10
  of.
• 14:10
  Of,
• 14:11
  you
• 14:11
  know,
• 14:11
  people
• 14:12
  preparing
• 14:12
  different
• 14:13
  cuisines,
• 14:13
  whether
• 14:13
  it's,
• 14:15
  you
• 14:15
  know,
• 14:15
  Mexican
• 14:16
  or.
• 14:16
  Or
• 14:17
  Asian
• 14:17
  or,
• 14:19
  you
• 14:19
  know,
• 14:19
  more.
• 14:20
  More
• 14:20
  South
• 14:20
  American.
• 14:22
  We
• 14:22
  run
• 14:22
  trips
• 14:23
  to
• 14:23
  Argentina
• 14:24
  every
• 14:24
  year.
• 14:24
  And
• 14:25
  so
• 14:25
  those
• 14:26
  guys
• 14:26
  are
• 14:26
  amazing.
• 14:28
  Amazing.
• 14:31
  Oh,
• 14:32
  man.
• 14:32
  Yeah.
• 14:33
  Particularly
• 14:33
  with
• 14:33
  the
• 14:33
  fire,
• 14:34
  right?
• 14:35
  Yeah.
• 14:36
  It
• 14:36
  is
• 14:36
  something
• 14:37
  that
• 14:38
  if
• 14:39
  I
• 14:39
  have
• 14:39
  a
• 14:39
  little
• 14:39
  more
• 14:40
  time,
• 14:42
  I
• 14:42
  really
• 14:42
  want
• 14:43
  to.
• 14:44
  Just
• 14:44
  dying
• 14:45
  to
• 14:45
  pursue
• 14:45
  that,
• 14:46
  to
• 14:46
  learn
• 14:47
  how
• 14:47
  they
• 14:47
  do
• 14:47
  that
• 14:48
  cooking
• 14:48
  with
• 14:48
  the
• 14:48
  coals
• 14:50
  from
• 14:50
  wood.
• 14:51
  And
• 14:51
  I
• 14:51
  swear
• 14:51
  to
• 14:52
  you,
• 14:52
  Marvin,
• 14:53
  the
• 14:53
  guys
• 14:54
  that
• 14:54
  are
• 14:54
  good,
• 14:54
  even,
• 14:55
  like
• 14:55
  on
• 14:55
  a
• 14:55
  camp
• 14:55
  crew,
• 14:56
  you're
• 14:57
  doing
• 14:57
  overnights
• 14:58
  down
• 14:58
  there,
• 14:59
  camping
• 14:59
  on
• 14:59
  the
• 15:00
  river,
• 15:00
  and
• 15:00
  what
• 15:01
  they
• 15:01
  can
• 15:01
  prepare
• 15:02
  just
• 15:02
  with
• 15:03
  fire
• 15:04
  is
• 15:05
  remarkable
• 15:06
  and
• 15:06
  tastes
• 15:07
  like
• 15:07
  just
• 15:07
  out
• 15:08
  of
• 15:08
  this
• 15:08
  world.
• 15:10
  Totally
• 15:11
  different
• 15:11
  set
• 15:11
  of
• 15:12
  techniques
• 15:12
  than,
• 15:12
  say,
• 15:13
  Asian
• 15:13
  cooking.
• 15:16
  Yeah,
• 15:17
  super
• 15:17
  interesting.
• 15:17
  And
• 15:18
  so
• 15:18
  your
• 15:19
  brother
• 15:19
  was
• 15:19
  an
• 15:19
  important
• 15:20
  influence.
• 15:20
  Your
• 15:20
  grandmother
• 15:21
  sounds
• 15:21
  like
• 15:21
  was
• 15:21
  a
• 15:21
  really
• 15:22
  important
• 15:22
  influence.
• 15:22
  Any
• 15:23
  other
• 15:23
  folks
• 15:23
  have
• 15:23
  kind
• 15:24
  of,
• 15:24
  you
• 15:24
  know,
• 15:24
  mentored
• 15:25
  you
• 15:25
  on
• 15:25
  your
• 15:25
  cooking
• 15:26
  journey?
• 15:27
  Well,
• 15:28
  what
• 15:28
  happened
• 15:29
  was.
• 15:29
  And
• 15:29
  again,
• 15:29
  this
• 15:30
  comes
• 15:30
  back
• 15:30
  to
• 15:30
  the
• 15:30
  Jersey
• 15:31
  Shore,
• 15:31
  and
• 15:32
  it's
• 15:32
  going
• 15:32
  to
• 15:32
  sound
• 15:33
  a
• 15:33
  little
• 15:33
  weird,
• 15:33
  but
• 15:36
  during
• 15:36
  the
• 15:36
  summertime
• 15:37
  anyway,
• 15:37
  I.
• 15:38
  I
• 15:38
  was.
• 15:38
  Me
• 15:38
  and
• 15:39
  my
• 15:39
  brothers
• 15:39
  were
• 15:39
  pretty
• 15:40
  much
• 15:41
  given
• 15:41
  free
• 15:41
  reign
• 15:42
  down
• 15:42
  at
• 15:43
  our
• 15:43
  house
• 15:43
  at
• 15:43
  the
• 15:43
  Jersey
• 15:44
  Shore.
• 15:44
  And
• 15:45
  so
• 15:45
  from
• 15:45
  the
• 15:45
  time
• 15:45
  I
• 15:45
  think
• 15:46
  I
• 15:46
  was
• 15:46
  13,
• 15:47
  was
• 15:47
  the
• 15:47
  first
• 15:47
  summer
• 15:48
  I
• 15:48
  spent.
• 15:49
  We
• 15:49
  spent
• 15:49
  down
• 15:49
  there.
• 15:52
  My
• 15:52
  parents
• 15:52
  would
• 15:52
  come
• 15:52
  down
• 15:53
  on
• 15:53
  weekends.
• 15:53
  They
• 15:53
  both
• 15:54
  worked.
• 15:54
  And
• 15:54
  so.
• 15:55
  And
• 15:56
  there
• 15:56
  were
• 15:56
  a
• 15:56
  fair
• 15:56
  number
• 15:56
  of
• 15:57
  my
• 15:57
  friends
• 15:57
  and
• 15:58
  my
• 15:58
  brother's
• 15:58
  friends
• 15:59
  that
• 15:59
  were
• 16:00
  in
• 16:00
  the
• 16:00
  same
• 16:00
  boat
• 16:01
  sort
• 16:01
  of,
• 16:01
  and
• 16:02
  we
• 16:02
  would
• 16:02
  get
• 16:02
  together
• 16:03
  and
• 16:03
  cook
• 16:03
  meals
• 16:04
  and,
• 16:06
  you
• 16:06
  know,
• 16:06
  got.
• 16:06
  Got
• 16:07
  a
• 16:07
  lot
• 16:07
  of
• 16:07
  stuff
• 16:07
  from
• 16:08
  them.
• 16:08
  They
• 16:08
  got
• 16:08
  a
• 16:08
  lot
• 16:08
  of
• 16:09
  stuff
• 16:09
  from
• 16:09
  me.
• 16:10
  Some
• 16:10
  of
• 16:10
  them
• 16:10
  went
• 16:11
  on
• 16:11
  to
• 16:11
  become
• 16:11
  chefs
• 16:12
  themselves,
• 16:14
  and
• 16:14
  a
• 16:14
  couple
• 16:14
  still
• 16:15
  own
• 16:15
  restaurants,
• 16:16
  actually.
• 16:17
  And
• 16:18
  so,
• 16:18
  you
• 16:18
  know,
• 16:18
  just
• 16:18
  kind
• 16:19
  of
• 16:19
  trading
• 16:19
  ideas
• 16:20
  and
• 16:21
  literally,
• 16:21
  you
• 16:22
  know,
• 16:22
  nights
• 16:22
  you
• 16:22
  get.
• 16:23
  Get
• 16:23
  in
• 16:23
  from
• 16:23
  surfing
• 16:24
  or
• 16:24
  something
• 16:24
  like
• 16:24
  that,
• 16:25
  and.
• 16:25
  And
• 16:25
  everybody's
• 16:26
  starving
• 16:26
  and
• 16:27
  you
• 16:27
  got
• 16:28
  six
• 16:28
  hungry
• 16:28
  guys
• 16:29
  and.
• 16:29
  And
• 16:30
  what.
• 16:31
  What's
• 16:31
  in
• 16:31
  the
• 16:31
  cabinets?
• 16:32
  You
• 16:32
  know,
• 16:32
  what.
• 16:32
  What
• 16:33
  can
• 16:33
  we
• 16:33
  put
• 16:33
  together?
• 16:34
  And,
• 16:35
  you
• 16:36
  know,
• 16:36
  some,
• 16:36
  Some.
• 16:37
  Some
• 16:37
  of
• 16:37
  the
• 16:37
  meals
• 16:37
  were
• 16:38
  really
• 16:38
  amazing.
• 16:38
  From
• 16:39
  next
• 16:39
  to
• 16:39
  nothing.
• 16:40
  Very
• 16:41
  neat.
• 16:41
  Sounds
• 16:41
  like
• 16:41
  that's
• 16:41
  the
• 16:42
  idea.
• 16:42
  For
• 16:42
  the
• 16:42
  next
• 16:42
  interview,
• 16:43
  we'll
• 16:43
  talk
• 16:43
  about
• 16:43
  your
• 16:43
  surfing
• 16:44
  life.
• 16:47
  Yeah,
• 16:47
  those.
• 16:47
  Those
• 16:47
  were
• 16:48
  the
• 16:48
  days,
• 16:48
  Marvin.
• 16:50
  Fair
• 16:50
  enough.
• 16:51
  Yeah.
• 16:52
  So
• 16:52
  you
• 16:52
  knew
• 16:52
  about
• 16:52
  Solarez
• 16:53
  before
• 16:53
  Fly
• 16:54
  tight.
• 16:54
  Oh,
• 16:55
  long
• 16:55
  before.
• 16:55
  I
• 16:56
  have
• 16:56
  a
• 16:56
  feeling
• 16:57
  that's
• 16:57
  why
• 16:57
  I'm
• 16:58
  so
• 16:58
  sensitized
• 16:59
  to
• 16:59
  it
• 16:59
  is
• 17:01
  fixing
• 17:01
  surfboards
• 17:02
  and
• 17:02
  sailboards
• 17:03
  and
• 17:03
  boats
• 17:03
  with
• 17:03
  that
• 17:04
  stuff
• 17:04
  back
• 17:04
  in
• 17:04
  the
• 17:04
  day.
• 17:05
  And
• 17:06
  let's
• 17:07
  just
• 17:07
  say
• 17:07
  that
• 17:08
  protective
• 17:10
  safety
• 17:10
  gear
• 17:10
  was
• 17:10
  not
• 17:11
  really
• 17:11
  in
• 17:11
  my
• 17:11
  toolbox.
• 17:12
  Yeah,
• 17:13
  well,
• 17:13
  I
• 17:13
  still
• 17:13
  can't
• 17:14
  get.
• 17:14
  Yeah,
• 17:14
  I
• 17:14
  can't
• 17:14
  get
• 17:14
  a
• 17:15
  straight
• 17:15
  answer
• 17:15
  from
• 17:15
  anybody
• 17:16
  about
• 17:16
  using
• 17:16
  the
• 17:16
  UV
• 17:16
  light
• 17:17
  today,
• 17:17
  for
• 17:17
  that
• 17:17
  matter.
• 17:18
  Yeah,
• 17:19
  yeah.
• 17:20
  I
• 17:21
  do
• 17:21
  not
• 17:21
  do
• 17:21
  well
• 17:21
  with
• 17:22
  it.
• 17:22
  In
• 17:22
  fact,
• 17:22
  we
• 17:22
  just
• 17:22
  had
• 17:23
  the
• 17:23
  tying
• 17:23
  symposium,
• 17:24
  and
• 17:24
  I
• 17:25
  must
• 17:25
  walk
• 17:25
  through
• 17:26
  a
• 17:26
  cloud
• 17:26
  of
• 17:26
  the
• 17:26
  vapor
• 17:27
  because
• 17:29
  reacted
• 17:29
  very,
• 17:30
  very
• 17:30
  badly
• 17:30
  to
• 17:31
  it.
• 17:31
  Yeah,
• 17:32
  you're
• 17:32
  not
• 17:32
  the
• 17:32
  only
• 17:32
  one.
• 17:32
  I
• 17:33
  mean,
• 17:33
  I've
• 17:33
  got
• 17:33
  guys
• 17:34
  that
• 17:34
  are
• 17:34
  coming
• 17:34
  on
• 17:34
  the
• 17:34
  butcher
• 17:35
  shop
• 17:35
  and
• 17:35
  they're
• 17:35
  like,
• 17:35
  dude,
• 17:35
  I
• 17:35
  was
• 17:36
  fine
• 17:36
  for
• 17:36
  a
• 17:36
  while,
• 17:36
  and
• 17:37
  then
• 17:37
  I
• 17:37
  went
• 17:37
  to
• 17:37
  Bob
• 17:37
  in
• 17:37
  the
• 17:38
  hood
• 17:38
  and
• 17:38
  30
• 17:39
  guys
• 17:39
  were
• 17:39
  cooking
• 17:40
  off
• 17:40
  solar
• 17:40
  as
• 17:40
  the
• 17:41
  next
• 17:41
  thing
• 17:41
  you
• 17:41
  know,
• 17:41
  I
• 17:41
  looked
• 17:42
  like
• 17:42
  I
• 17:43
  was
• 17:43
  an
• 17:43
  Oompa
• 17:43
  Loopa
• 17:44
  or
• 17:44
  something.
• 17:44
  Yeah,
• 17:45
  yeah,
• 17:45
  yeah.
• 17:46
  I
• 17:46
  think
• 17:47
  your
• 17:48
  body
• 17:48
  can
• 17:48
  only
• 17:48
  take
• 17:49
  so
• 17:49
  much
• 17:49
  of
• 17:49
  it
• 17:50
  and
• 17:50
  then
• 17:51
  it
• 17:51
  just
• 17:51
  says
• 17:54
  and
• 17:54
  reacts
• 17:55
  poorly
• 17:55
  to
• 17:56
  it.
• 17:56
  And
• 17:56
  so,
• 17:57
  yeah,
• 17:57
  I'm
• 17:57
  super
• 17:58
  sensitized
• 17:58
  to
• 17:59
  it.
• 17:59
  Yeah.
• 18:00
  So
• 18:00
  it's
• 18:00
  interesting.
• 18:01
  You've
• 18:01
  got
• 18:01
  this
• 18:01
  incredibly
• 18:02
  varied
• 18:04
  palette
• 18:05
  of
• 18:05
  styles
• 18:06
  of
• 18:06
  cuisine.
• 18:07
  Do
• 18:07
  you
• 18:07
  have
• 18:07
  a
• 18:07
  favorite
• 18:08
  style
• 18:08
  or
• 18:09
  do
• 18:09
  you
• 18:09
  have
• 18:09
  a
• 18:09
  style
• 18:10
  that
• 18:10
  you're
• 18:10
  kind
• 18:10
  of
• 18:10
  digging
• 18:11
  into
• 18:11
  really
• 18:12
  deeply
• 18:12
  right
• 18:12
  now?
• 18:15
  I
• 18:15
  guess
• 18:15
  more
• 18:16
  Asian
• 18:16
  than
• 18:16
  anything
• 18:17
  else
• 18:17
  at
• 18:17
  this
• 18:17
  point.
• 18:18
  There's
• 18:18
  so
• 18:19
  much
• 18:19
  there,
• 18:20
  and
• 18:23
  it's
• 18:24
  not
• 18:24
  just
• 18:24
  Japanese
• 18:25
  and
• 18:25
  it's
• 18:25
  not
• 18:25
  just
• 18:26
  Chinese
• 18:27
  or
• 18:27
  Thai.
• 18:28
  It's
• 18:29
  variations
• 18:30
  within
• 18:30
  each
• 18:30
  of
• 18:31
  those
• 18:31
  cultures.
• 18:33
  And
• 18:34
  so
• 18:34
  many
• 18:34
  things
• 18:36
  when
• 18:36
  you
• 18:36
  look
• 18:36
  at
• 18:37
  it,
• 18:38
  the
• 18:38
  variety
• 18:38
  of
• 18:39
  food
• 18:41
  that
• 18:41
  those
• 18:41
  cultures
• 18:42
  eat
• 18:43
  and
• 18:44
  the
• 18:44
  level
• 18:44
  of
• 18:45
  preparation
• 18:45
  that
• 18:46
  goes
• 18:46
  into
• 18:46
  it,
• 18:47
  it's
• 18:48
  really
• 18:48
  remarkable.
• 18:51
  I
• 18:51
  don't
• 18:51
  want
• 18:51
  to
• 18:51
  beat
• 18:52
  up
• 18:52
  on
• 18:55
  American
• 18:55
  cooking,
• 18:56
  if
• 18:56
  you
• 18:56
  will,
• 18:57
  but
• 18:58
  it
• 18:58
  really
• 18:58
  does
• 18:59
  come
• 18:59
  from
• 18:59
  Europe
• 18:59
  originally
• 19:00
  and
• 19:01
  so
• 19:01
  was
• 19:02
  not
• 19:02
  the
• 19:02
  fanciest
• 19:03
  affair
• 19:03
  other
• 19:04
  than,
• 19:04
  say,
• 19:04
  French
• 19:05
  cooking
• 19:06
  over
• 19:07
  there.
• 19:07
  And
• 19:08
  so
• 19:09
  I
• 19:09
  just
• 19:09
  have
• 19:09
  a
• 19:10
  lot
• 19:10
  of
• 19:10
  interest
• 19:10
  in.
• 19:11
  In
• 19:11
  that.
• 19:11
  That
• 19:11
  type
• 19:12
  of
• 19:13
  cuisine
• 19:14
  at.
• 19:14
  At
• 19:15
  this
• 19:15
  point.
• 19:18
  Just.
• 19:18
  Just
• 19:18
  the,
• 19:18
  the
• 19:19
  flavors
• 19:19
  and
• 19:20
  the
• 19:20
  techniques.
• 19:22
  I
• 19:22
  just,
• 19:22
  I
• 19:22
  really
• 19:23
  enjoy
• 19:24
  preparing
• 19:24
  it
• 19:24
  as
• 19:24
  well
• 19:25
  as
• 19:25
  eating
• 19:25
  it.
• 19:26
  Yeah,
• 19:26
  it's
• 19:27
  amazing
• 19:27
  too.
• 19:27
  I
• 19:27
  mean,
• 19:28
  you
• 19:28
  know,
• 19:28
  kind
• 19:28
  of,
• 19:28
  you
• 19:28
  know,
• 19:29
  what
• 19:29
  we've
• 19:29
  talked
• 19:29
  about
• 19:29
  kind
• 19:30
  of
• 19:30
  pre.
• 19:30
  Pre
• 19:30
  interview
• 19:31
  and
• 19:31
  a
• 19:31
  little
• 19:31
  bit
• 19:31
  during
• 19:31
  the
• 19:32
  interview
• 19:32
  is
• 19:32
  just,
• 19:34
  you
• 19:34
  know,
• 19:35
  like
• 19:35
  Americans,
• 19:35
  it's
• 19:35
  so.
• 19:36
  It's
• 19:36
  so
• 19:36

• 19:37
  driven.
• 19:37
  Right.
• 19:38
  Particularly
• 19:38
  now.
• 19:38
  Right.
• 19:39
  And,
• 19:39
  you
• 19:39
  know,
• 19:39
  whether
• 19:40
  you,
• 19:40
  like,
• 19:40
  look
• 19:40
  at
• 19:40
  French
• 19:41
  cooking
• 19:41
  or
• 19:42
  Japanese
• 19:42
  cooking,
• 19:43
  there's
• 19:43
  so
• 19:43
  much
• 19:43
  about
• 19:45
  the
• 19:45
  process.
• 19:46
  Right,
• 19:47
  right.
• 19:48
  Which
• 19:48
  is
• 19:48
  probably
• 19:49
  like
• 19:49
  tying
• 19:49
  a
• 19:49
  fly,
• 19:49
  right?
• 19:50
  Yeah,
• 19:51
  it
• 19:51
  is.
• 19:51
  And
• 19:52
  it's,
• 19:52
  you
• 19:52
  know,
• 19:52
  it's
• 19:52
  about
• 19:53
  very
• 19:53
  much
• 19:53
  like
• 19:54
  tying
• 19:54
  a
• 19:54
  fly.
• 19:55
  It's
• 19:55
  about
• 19:58
  getting
• 19:58
  the
• 19:58
  best
• 19:58
  ingredients.
• 20:00
  And
• 20:01
  I
• 20:02
  don't
• 20:02
  think
• 20:02
  I
• 20:02
  can
• 20:02
  use
• 20:02
  the
• 20:03
  F
• 20:03
  bomb
• 20:03
  on
• 20:03
  here,
• 20:03
  but.
• 20:04
  Yeah,
• 20:04
  you
• 20:04
  can.
• 20:04
  I
• 20:04
  can
• 20:04
  market
• 20:05
  e.
• 20:05
  Go
• 20:05
  for
• 20:05
  it.
• 20:05
  Knock
• 20:06
  it
• 20:06
  out.
• 20:07
  No,
• 20:08
  Anthony,
• 20:09
  Bourdain
• 20:09
  was
• 20:10
  one
• 20:10
  of
• 20:10
  my
• 20:10
  heroes,
• 20:11
  and
• 20:12
  he
• 20:12
  said
• 20:13
  the
• 20:13
  key
• 20:13
  to
• 20:14
  being.
• 20:14
  I'm
• 20:15
  not
• 20:15
  sure
• 20:15
  if
• 20:15
  he
• 20:15
  said
• 20:15
  it
• 20:16
  originally,
• 20:16
  but
• 20:16
  someone
• 20:17
  that
• 20:17
  he
• 20:17
  knew
• 20:18
  did.
• 20:18
  Anyway,
• 20:18
  the
• 20:19
  key
• 20:19
  to
• 20:19
  being
• 20:19
  a
• 20:19
  great
• 20:20
  chef
• 20:20
  is
• 20:22
  getting
• 20:22
  together
• 20:23
  the
• 20:23
  best
• 20:23
  ingredients
• 20:24
  she
• 20:24
  could
• 20:24
  possibly
• 20:25
  find
• 20:25
  and
• 20:26
  trying
• 20:26
  not
• 20:26
  to
• 20:26
  fuck
• 20:27
  it
• 20:27
  up
• 20:27
  from
• 20:27
  there.
• 20:28
  And
• 20:29
  it,
• 20:29
  you
• 20:29
  know,
• 20:30
  that.
• 20:30
  That's
• 20:30
  it.
• 20:31
  Get
• 20:31
  the
• 20:32
  best
• 20:32
  ingredients
• 20:33
  and
• 20:33
  it
• 20:34
  applies
• 20:34
  to
• 20:34
  fly
• 20:34
  tying
• 20:35
  as
• 20:35
  well.
• 20:35
  You
• 20:36
  know,
• 20:36
  get.
• 20:36
  Get
• 20:37
  the,
• 20:37
  get
• 20:38
  the
• 20:38
  good
• 20:38
  hackle,
• 20:39
  get
• 20:39
  the
• 20:39
  good
• 20:39
  wood
• 20:39
  duck,
• 20:40
  you
• 20:41
  know,
• 20:41
  get
• 20:41
  the
• 20:41
  good
• 20:41
  Hungarian
• 20:42
  partridge
• 20:43
  and
• 20:43
  that,
• 20:44
  that
• 20:44
  kind
• 20:44
  of
• 20:44
  artisanal
• 20:45
  almost
• 20:47
  materials.
• 20:48
  And
• 20:48
  then
• 20:49
  you
• 20:49
  put
• 20:49
  together
• 20:49
  something
• 20:50
  really,
• 20:50
  really
• 20:51
  classic.
• 20:52
  And
• 20:52
  food's
• 20:52
  the
• 20:52
  same
• 20:53
  way.
• 20:55
  You
• 20:55
  know,
• 20:55
  I'm
• 20:56
  very
• 20:56
  lucky.
• 20:56
  We
• 20:56
  have
• 20:56
  a
• 20:57
  couple
• 20:58
  of
• 21:00
  stores
• 21:01
  around
• 21:01
  here
• 21:02
  or
• 21:03
  people
• 21:04
  that
• 21:04
  produce
• 21:05
  like
• 21:06
  local
• 21:06
  general
• 21:07
  store
• 21:07
  in
• 21:07
  town.
• 21:08
  They
• 21:09
  slice
• 21:10
  their
• 21:10
  own
• 21:10
  bacon.
• 21:11
  And
• 21:12
  I
• 21:12
  don't
• 21:12
  know
• 21:12
  where
• 21:12
  it's
• 21:13
  actually
• 21:13
  smoked
• 21:14
  and
• 21:14
  prepared
• 21:15
  and
• 21:15
  cured
• 21:15
  and
• 21:15
  all
• 21:16
  that
• 21:16
  stuff,
• 21:16
  but
• 21:17
  having
• 21:17
  that,
• 21:18
  you
• 21:18
  know,
• 21:18
  having
• 21:18
  like,
• 21:19
  really
• 21:19
  good
• 21:19
  quality
• 21:20
  bacon
• 21:23
  is
• 21:23
  huge.
• 21:24
  Other
• 21:24
  things
• 21:25
  like,
• 21:25
  you
• 21:25
  know,
• 21:25
  New
• 21:26
  Jersey,
• 21:26
  I
• 21:26
  don't
• 21:27
  know
• 21:27
  whether
• 21:27
  a
• 21:27
  lot
• 21:27
  of
• 21:27
  people
• 21:27
  know
• 21:28
  this.
• 21:28
  They
• 21:29
  think
• 21:29
  turnpike
• 21:30
  and
• 21:30
  refineries
• 21:31
  and
• 21:31
  cities
• 21:32
  and
• 21:32
  all
• 21:32
  that
• 21:32
  stuff,
• 21:33
  but
• 21:33
  it
• 21:33
  is
• 21:33
  the
• 21:34
  Garden
• 21:34
  State.
• 21:34
  And
• 21:35
  we,
• 21:35
  we
• 21:35
  have.
• 21:36
  I'll.
• 21:36
  I'll
• 21:36
  put
• 21:37
  New
• 21:37
  Jersey
• 21:37
  tomatoes,
• 21:39
  sweet
• 21:39
  corn,
• 21:40
  asparagus
• 21:41
  up
• 21:42
  against
• 21:42
  just
• 21:43
  about
• 21:43
  eggplant,
• 21:44
  just
• 21:44
  about,
• 21:45
  up
• 21:45
  against
• 21:45
  just
• 21:46
  about
• 21:46
  anybody.
• 21:47
  And
• 21:47
  so
• 21:48
  being
• 21:48
  able
• 21:48
  to
• 21:49
  access
• 21:49
  those
• 21:49
  really
• 21:50
  good
• 21:50
  ingredients,
• 21:51
  know
• 21:51
  where
• 21:51
  to
• 21:52
  get
• 21:52
  them,
• 21:52
  to
• 21:53
  get
• 21:53
  them
• 21:53
  is.
• 21:54
  Is
• 21:54
  a
• 21:54
  big
• 21:54
  part
• 21:55
  of
• 21:55
  it.
• 21:55
  Yeah.
• 21:55
  And
• 21:56
  you're
• 21:56
  in
• 21:56
  a
• 21:56
  lucky
• 21:56
  part
• 21:56
  of
• 21:56
  the
• 21:57
  world
• 21:57
  too,
• 21:57
  because
• 21:57
  kind
• 21:58
  of,
• 21:58
  you
• 21:58
  know,
• 21:58
  with
• 21:58
  the
• 21:58
  kind
• 21:59
  of
• 21:59
  New
• 21:59
  York
• 21:59
  City
• 21:59
  restaurant
• 22:00
  culture,
• 22:00
  I
• 22:00
  imagine,
• 22:01
  like,
• 22:01
  you
• 22:01
  know,
• 22:01
  everything
• 22:02
  awesome
• 22:03
  is
• 22:03
  heading
• 22:03
  in
• 22:03
  your
• 22:03
  direction.
• 22:04
  Right.
• 22:05
  Yeah.
• 22:05
  Yeah.
• 22:05
  And
• 22:06
  we,
• 22:06
  we
• 22:06
  do
• 22:06
  have
• 22:07
  also
• 22:08
  access
• 22:08
  to
• 22:09
  particularly
• 22:11
  not.
• 22:11
  Not.
• 22:11
  Right.
• 22:12
  I'm
• 22:12
  kind
• 22:12
  of
• 22:12
  out
• 22:12
  in
• 22:13
  the.
• 22:14
  Kind
• 22:14
  of
• 22:14
  out
• 22:14
  in
• 22:14
  the
• 22:14
  country
• 22:15
  in
• 22:15
  New
• 22:16
  Jersey,
• 22:16
  live
• 22:16
  in
• 22:17
  a
• 22:17
  very,
• 22:17
  very
• 22:17
  small
• 22:18
  town
• 22:19
  in
• 22:19
  a
• 22:19
  rural
• 22:20
  community.
• 22:20
  And.
• 22:21
  But,
• 22:22
  you
• 22:22
  know,
• 22:22
  because
• 22:23
  it's
• 22:23
  such
• 22:23
  a
• 22:23
  small
• 22:23
  state,
• 22:25
  we're,
• 22:25
  It's.
• 22:25
  We're
• 22:26
  not
• 22:26
  far
• 22:26
  from
• 22:27
  very
• 22:28
  ethnic
• 22:28
  communities.
• 22:30
  And
• 22:31
  you
• 22:31
  know,
• 22:31
  where,
• 22:32
  where
• 22:32
  you
• 22:32
  drive
• 22:33
  down
• 22:33
  one
• 22:33
  road
• 22:34
  and
• 22:35
  everything
• 22:35
  is
• 22:35
  in
• 22:35
  Korean
• 22:36
  and
• 22:36
  drive
• 22:37
  down
• 22:37
  the
• 22:37
  next
• 22:37
  road
• 22:38
  and
• 22:39
  everything
• 22:39
  is
• 22:40
  from
• 22:40
  a
• 22:41
  Thai
• 22:41
  community
• 22:42
  or,
• 22:43
  you
• 22:43
  know,
• 22:43
  an
• 22:43
  Indian
• 22:44
  community.
• 22:45
  And
• 22:45
  so
• 22:46
  getting
• 22:46
  to
• 22:47
  go
• 22:47
  there,
• 22:48
  sample
• 22:48
  the
• 22:48
  food
• 22:48
  and,
• 22:50
  and
• 22:50
  shop,
• 22:51
  you
• 22:51
  know,
• 22:51
  get.
• 22:51
  Get
• 22:51
  those.
• 22:52
  The.
• 22:52
  The
• 22:52
  true
• 22:53
  local
• 22:53
  ingredients
• 22:54
  is.
• 22:54
  Is
• 22:54
  really.
• 22:56
  That's
• 22:56
  a
• 22:56
  gift.
• 22:57
  And
• 22:58
  a
• 22:58
  lot,
• 22:58
  A
• 22:58
  lot
• 22:58
  of
• 22:58
  people
• 22:59
  can't
• 22:59
  do
• 22:59
  that
• 22:59
  depending
• 23:00
  on
• 23:00
  where
• 23:00
  they
• 23:00
  live.
• 23:01
  Yeah,
• 23:01
  interesting.
• 23:02
  So
• 23:02
  in
• 23:02
  terms
• 23:03
  of
• 23:03
  getting
• 23:03
  inspiration
• 23:04
  for
• 23:04
  kind
• 23:04
  of
• 23:04
  new
• 23:04
  things
• 23:05
  you
• 23:05
  want
• 23:05
  to
• 23:05
  try
• 23:05
  out,
• 23:05
  is
• 23:06
  it,
• 23:06
  you
• 23:06
  know,
• 23:06
  going
• 23:07
  to
• 23:07
  the
• 23:07
  shop
• 23:07
  or
• 23:07
  is
• 23:08
  it
• 23:08
  reading
• 23:08
  a
• 23:08
  cookbook?
• 23:09
  Or
• 23:09
  is
• 23:09
  it
• 23:09
  reading
• 23:09
  a
• 23:09
  blog
• 23:10
  post
• 23:10
  or
• 23:10
  a
• 23:10
  YouTube
• 23:11
  video
• 23:11
  kind
• 23:11
  of.
• 23:12
  Where
• 23:12
  do
• 23:12
  you
• 23:12
  kind
• 23:13
  of
• 23:13
  get
• 23:13
  your
• 23:13
  creative
• 23:14
  cooking
• 23:14
  juices
• 23:14
  stoked?
• 23:15
  I.
• 23:16
  It's
• 23:16
  all
• 23:16
  the
• 23:16
  above,
• 23:17
  Marvin.
• 23:17
  Really
• 23:18
  and
• 23:18
  truly.
• 23:18
  You
• 23:19
  know,
• 23:19
  I'll
• 23:19
  see
• 23:19
  something
• 23:20
  online
• 23:21
  and
• 23:22
  I'll
• 23:22
  go,
• 23:23
  oh,
• 23:23
  you
• 23:23
  know,
• 23:24
  wow.
• 23:24
  And.
• 23:24
  And
• 23:24
  it
• 23:24
  just
• 23:25
  kind
• 23:25
  of
• 23:25
  flashes
• 23:26
  by,
• 23:26
  you
• 23:27
  know,
• 23:27
  it's,
• 23:27
  it's,
• 23:27
  it's
• 23:28
  part
• 23:28
  of
• 23:29
  something
• 23:29
  else.
• 23:29
  And
• 23:30
  then,
• 23:30
  then
• 23:31
  I'll
• 23:31
  take
• 23:31
  that
• 23:31
  and
• 23:31
  go,
• 23:32
  oh,
• 23:32
  you
• 23:32
  know,
• 23:32
  I
• 23:33
  wonder
• 23:33
  what
• 23:33
  they
• 23:33
  were
• 23:33
  doing.
• 23:34
  And
• 23:34
  then
• 23:35
  if
• 23:35
  I
• 23:35
  can
• 23:35
  find
• 23:36
  a
• 23:36
  video
• 23:36
  on,
• 23:36
  on
• 23:37
  how
• 23:37
  that's
• 23:37
  done
• 23:38
  and
• 23:38
  then
• 23:39
  go
• 23:39
  to
• 23:39
  the,
• 23:39
  Go
• 23:40
  to
• 23:40
  a
• 23:40
  store.
• 23:41
  Let's.
• 23:42
  We.
• 23:42
  We
• 23:43
  have
• 23:43
  an
• 23:43
  Asian
• 23:43
  chain,
• 23:44
  I
• 23:44
  don't
• 23:44
  know
• 23:44
  how
• 23:45
  many
• 23:45
  people
• 23:45
  have
• 23:45
  it
• 23:45
  called
• 23:46
  H
• 23:46
  Mart.
• 23:47
  A
• 23:47
  massive
• 23:48
  grocery
• 23:48
  store
• 23:49
  with,
• 23:49
  with
• 23:50
  food
• 23:50
  from
• 23:50
  all
• 23:51
  over.
• 23:53
  And
• 23:53
  so
• 23:53
  just
• 23:54
  going
• 23:54
  down
• 23:54
  the
• 23:54
  aisles
• 23:55
  and
• 23:55
  picking
• 23:56
  out
• 23:56
  ingredients
• 23:56
  that,
• 23:57
  you
• 23:57
  know,
• 23:57
  I
• 23:57
  can't
• 23:58
  read
• 23:58
  any
• 23:58
  of
• 23:58
  the
• 23:58
  labels.
• 23:59
  I
• 23:59
  don't
• 23:59
  even
• 23:59
  know
• 23:59
  what
• 23:59
  it
• 24:00
  is,
• 24:00
  but
• 24:00
  I
• 24:00
  recognize
• 24:01
  it
• 24:01
  from
• 24:01
  a
• 24:01
  video.
• 24:02
  And
• 24:02
  so
• 24:03
  I'll
• 24:03
  just
• 24:03
  grab
• 24:04
  whatever
• 24:04
  that
• 24:04
  is
• 24:05
  and
• 24:06
  take
• 24:06
  it
• 24:06
  home
• 24:07
  and
• 24:07
  give
• 24:07
  it
• 24:07
  a
• 24:07
  taste
• 24:07
  and
• 24:08
  see
• 24:08
  what
• 24:08
  it
• 24:08
  fits
• 24:08
  in.
• 24:09
  Pretty
• 24:09
  much,
• 24:10
  yeah.
• 24:11
  It's
• 24:11
  very
• 24:11
  neat.
• 24:11
  And
• 24:11
  you've
• 24:11
  been
• 24:12
  fortunate
• 24:12
  enough
• 24:12
  to
• 24:12
  travel,
• 24:13
  which
• 24:13
  I'm
• 24:13
  sure
• 24:13
  also
• 24:13
  has
• 24:14
  a
• 24:14
  huge
• 24:14
  impact
• 24:14
  on,
• 24:15
  on
• 24:15
  what
• 24:15
  you
• 24:15
  want
• 24:16
  to
• 24:16
  cook,
• 24:16
  right?
• 24:17
  Yeah,
• 24:17
  yeah,
• 24:18
  I,
• 24:19
  I
• 24:19
  do.
• 24:19
  I
• 24:19
  get
• 24:20
  to,
• 24:20
  you
• 24:20
  know,
• 24:21
  I've
• 24:21
  been
• 24:21
  to
• 24:21
  a
• 24:21
  lot
• 24:21
  of
• 24:21
  places.
• 24:22
  I'm
• 24:23
  very
• 24:23
  fortunate
• 24:23
  in
• 24:24
  that
• 24:24
  regard.
• 24:25
  And
• 24:27
  each
• 24:27
  one
• 24:28
  has
• 24:28
  got,
• 24:28
  you
• 24:29
  know,
• 24:29
  really
• 24:29
  unique
• 24:30
  stuff,
• 24:30
  whether
• 24:31
  it's
• 24:31
  Iceland
• 24:32
  or
• 24:32
  Newfoundland
• 24:33
  or
• 24:34
  Nova
• 24:34
  Scotia,
• 24:37
  you
• 24:37
  know,
• 24:39
  Argentina.
• 24:42
  Just.
• 24:42
  Just
• 24:43
  incredible
• 24:44
  variety
• 24:45
  of
• 24:45
  food.
• 24:45
  And,
• 24:46
  and
• 24:46
  I,
• 24:47
  I
• 24:47
  just,
• 24:47
  I
• 24:47
  want
• 24:48
  to,
• 24:48
  I
• 24:48
  want
• 24:48
  to
• 24:48
  learn
• 24:49
  how
• 24:49
  to
• 24:49
  do
• 24:49
  it
• 24:49
  all.
• 24:50
  And
• 24:50
  that.
• 24:51
  That's
• 24:51
  kind
• 24:51
  of
• 24:51
  a
• 24:52
  problem,
• 24:52
  you
• 24:53
  know,
• 24:53
  that.
• 24:53
  That
• 24:53
  takes
• 24:54
  time
• 24:54
  and
• 24:54
  takes
• 24:54
  money,
• 24:55
  but
• 24:56
  definitely
• 24:57
  an
• 24:57
  interest
• 24:58
  for
• 24:58
  me.
• 24:58
  And
• 24:59
  very
• 24:59
  neat.
• 24:59
  And,
• 24:59
  you
• 24:59
  know,
• 25:00
  this
• 25:00
  is
• 25:00
  actually
• 25:00
  kind
• 25:00
  of
• 25:00
  funny.
• 25:01
  We
• 25:01
  were
• 25:01
  talking
• 25:01
  about
• 25:01
  before
• 25:01
  we
• 25:01
  started
• 25:02
  recording,
• 25:02
  can
• 25:02
  we
• 25:02
  like
• 25:02
  relate
• 25:03
  this
• 25:03
  to
• 25:03
  fly
• 25:03
  fishing?
• 25:04
  And
• 25:04
  I
• 25:04
  actually
• 25:05
  stole.
• 25:05
  This
• 25:05
  is
• 25:06
  kind
• 25:06
  of
• 25:06
  out
• 25:06
  of
• 25:06
  my,
• 25:07
  my
• 25:07
  question
• 25:07
  quiver.
• 25:08
  But
• 25:08
  it's
• 25:08
  tying
• 25:09
  oriented.
• 25:09
  And
• 25:09
  as
• 25:09
  opposed
• 25:10
  to
• 25:10
  asking
• 25:10
  you
• 25:10
  for
• 25:10
  your
• 25:10
  favorite
• 25:11
  tying
• 25:11
  tool
• 25:11
  or
• 25:11
  something
• 25:12
  weird
• 25:12
  on
• 25:12
  your
• 25:12
  bench,
• 25:13
  you
• 25:13
  know,
• 25:13
  what's
• 25:13
  your
• 25:13
  favorite
• 25:14
  kitchen
• 25:14
  tool
• 25:14
  or
• 25:14
  gadget?
• 25:18
  You're
• 25:18
  not
• 25:18
  going
• 25:19
  to
• 25:19
  believe.
• 25:19
  Nobody's
• 25:20
  going
• 25:20
  to
• 25:20
  believe
• 25:21
  me
• 25:21
  if
• 25:21
  I
• 25:21
  tell
• 25:21
  you
• 25:21
  this,
• 25:22
  but
• 25:22
  I
• 25:23
  have.
• 25:23
  It's
• 25:23
  a.
• 25:25
  It.
• 25:26
  It's
• 25:26
  a
• 25:27
  spoonula.
• 25:27
  Okay.
• 25:28
  So
• 25:29
  it's
• 25:29
  not
• 25:29
  really
• 25:29
  a
• 25:30
  spatula.
• 25:31
  It's
• 25:32
  not
• 25:32
  really
• 25:32
  a
• 25:32
  spoon.
• 25:33
  It's
• 25:33
  made
• 25:33
  out
• 25:34
  of
• 25:34
  silicone
• 25:36
  and
• 25:37
  silicon.
• 25:39
  Silicone.
• 25:39
  I
• 25:40
  don't
• 25:40
  get
• 25:40
  the
• 25:41
  two
• 25:41
  mixed
• 25:41
  up.
• 25:41
  We're
• 25:42
  marking
• 25:42
  it
• 25:42
  explicit.
• 25:42
  It
• 25:43
  doesn't
• 25:43
  matter.
• 25:45
  And
• 25:46
  it
• 25:47
  just
• 25:47
  it's
• 25:47
  one
• 25:47
  of
• 25:47
  those
• 25:47
  things
• 25:48
  that
• 25:48
  it
• 25:49
  will
• 25:49
  scrape
• 25:50
  out
• 25:50
  a
• 25:50
  pan,
• 25:50
  it
• 25:50
  will
• 25:50
  scrape
• 25:51
  out
• 25:51
  a
• 25:51
  bowl
• 25:52
  and
• 25:52
  not
• 25:52
  leave
• 25:53
  anything.
• 25:54
  And
• 25:55
  so,
• 25:55
  yeah,
• 25:55
  of
• 25:56
  all
• 25:56
  the.
• 25:57
  And
• 25:57
  I,
• 25:58
  My
• 25:58
  kitchen
• 25:58
  is
• 25:59
  pretty
• 26:00
  complete,
• 26:03
  but
• 26:04
  yeah,
• 26:04
  that's
• 26:04
  probably
• 26:04
  my
• 26:05
  favorite
• 26:05
  tool
• 26:05
  out
• 26:05
  of
• 26:06
  everything.
• 26:06
  I
• 26:06
  have
• 26:07
  that.
• 26:07
  And
• 26:07
  I'm
• 26:08
  pretty
• 26:08
  fond
• 26:09
  of
• 26:09
  my
• 26:11
  rice
• 26:12
  cooker.
• 26:12
  I
• 26:13
  have
• 26:13
  a
• 26:14
  rather
• 26:14
  expensive
• 26:15
  rice
• 26:15
  cooker
• 26:15
  and
• 26:16
  I
• 26:16
  use
• 26:16
  that
• 26:17
  a
• 26:17
  lot.
• 26:18
  Yeah,
• 26:19
  I
• 26:19
  thought
• 26:19
  your
• 26:19
  sous
• 26:19
  vide
• 26:20
  machine
• 26:20
  was
• 26:20
  pretty
• 26:20
  impressive.
• 26:21
  Yeah,
• 26:21
  the
• 26:22
  sous
• 26:22
  vide
• 26:22
  machine
• 26:23
  is.
• 26:23
  That's
• 26:24
  right
• 26:24
  up,
• 26:25
  right
• 26:25
  up
• 26:25
  there
• 26:27
  as
• 26:27
  well.
• 26:28
  Yeah,
• 26:29
  I
• 26:29
  guess,
• 26:29
  Guess
• 26:29
  I
• 26:29
  have
• 26:30
  a
• 26:30
  lot
• 26:30
  of
• 26:30
  favorite
• 26:30
  kitchen
• 26:31
  tools.
• 26:31
  But
• 26:31
  the
• 26:31
  spoonula,
• 26:33
  if
• 26:33
  you,
• 26:34
  if
• 26:34
  you
• 26:34
  guys
• 26:34
  don't
• 26:35
  have
• 26:35
  one,
• 26:35
  get
• 26:35
  one.
• 26:36
  The
• 26:36
  other
• 26:36
  thing
• 26:37
  that
• 26:37
  you
• 26:37
  must
• 26:37
  have
• 26:38
  to
• 26:39
  me
• 26:39
  is
• 26:41
  ditch
• 26:41
  the
• 26:42
  non
• 26:42
  stick
• 26:43
  stuff.
• 26:43
  Just
• 26:45
  whether
• 26:45
  you
• 26:45
  use
• 26:45
  carbon
• 26:46
  steel,
• 26:46
  stainless
• 26:47
  steel,
• 26:47
  cast
• 26:48
  iron,
• 26:48
  just
• 26:48
  ditch
• 26:49
  that
• 26:49
  non
• 26:50
  stick
• 26:51
  junk.
• 26:52
  Excuse
• 26:52
  me.
• 26:54
  And
• 26:55
  yeah,
• 26:56
  you'll
• 26:56
  be
• 26:56
  a
• 26:56
  lot,
• 26:57
  lot
• 26:57
  happier.
• 26:59
  Got
• 26:59
  it.
• 26:59
  And
• 27:00
  so
• 27:00
  we
• 27:00
  talked
• 27:00
  about
• 27:00
  how
• 27:00
  important
• 27:01
  ingredients
• 27:02
  are.
• 27:03
  You
• 27:03
  know,
• 27:03
  what
• 27:03
  other,
• 27:04
  you
• 27:04
  know,
• 27:04
  keys
• 27:05
  do
• 27:05
  you
• 27:05
  think
• 27:05
  it
• 27:05
  takes
• 27:05
  to
• 27:05
  be.
• 27:06
  We
• 27:06
  won't.
• 27:06
  I'll
• 27:06
  say
• 27:07
  successful
• 27:07
  chef,
• 27:07
  and
• 27:08
  you
• 27:08
  can
• 27:08
  roll
• 27:08
  your
• 27:08
  eyes
• 27:08
  and
• 27:08
  answer
• 27:09
  the
• 27:09
  question.
• 27:12
  I,
• 27:13
  One
• 27:13
  of
• 27:13
  the
• 27:13
  main
• 27:13
  things,
• 27:14
  and
• 27:14
  I
• 27:15
  really
• 27:15
  see
• 27:15
  this
• 27:15
  a
• 27:16
  lot
• 27:16
  when
• 27:16
  I
• 27:16
  watch,
• 27:16
  watch
• 27:17
  other
• 27:17
  people
• 27:17
  cook
• 27:18
  or,
• 27:19
  or
• 27:19
  eat
• 27:19
  their
• 27:19
  food
• 27:19
  is
• 27:20
  you,
• 27:20
  you
• 27:21
  absolutely
• 27:21
  have
• 27:22
  to
• 27:22
  taste
• 27:22
  your
• 27:22
  food
• 27:23
  every
• 27:24
  step
• 27:24
  of
• 27:24
  the
• 27:24
  way.
• 27:25
  And
• 27:26
  I
• 27:26
  just,
• 27:26
  I
• 27:27
  cannot
• 27:27
  believe
• 27:28
  that
• 27:28
  people
• 27:29
  don't.
• 27:30
  It's
• 27:31
  just,
• 27:31
  it's
• 27:31
  staggering
• 27:32
  to
• 27:32
  me.
• 27:32
  My,
• 27:33
  you
• 27:33
  know,
• 27:33
  my
• 27:33
  grandmother
• 27:34
  did,
• 27:34
  my
• 27:34
  brother
• 27:34
  did,
• 27:35
  my
• 27:35
  mother
• 27:35
  did,
• 27:36
  you
• 27:37
  know,
• 27:37
  just
• 27:37
  taste,
• 27:37
  taste,
• 27:37
  taste
• 27:38
  all
• 27:38
  the
• 27:38
  way
• 27:38
  through.
• 27:39
  I,
• 27:39
  I
• 27:39
  don't
• 27:40
  know
• 27:40
  how
• 27:40
  else
• 27:40
  you,
• 27:41
  you're.
• 27:41
  You're
• 27:42
  gonna
• 27:42
  make
• 27:42
  something
• 27:43
  taste
• 27:43
  good
• 27:44
  unless
• 27:45
  you
• 27:45
  taste
• 27:45
  all
• 27:46
  the
• 27:46
  way
• 27:46
  through.
• 27:47
  That
• 27:47
  would
• 27:48
  be,
• 27:49
  to
• 27:49
  me,
• 27:50
  for
• 27:50
  anyone
• 27:51
  to
• 27:52
  be
• 27:52
  successful
• 27:53
  cooking
• 27:54
  is
• 27:54
  to
• 27:54
  taste
• 27:55
  as
• 27:55
  you
• 27:55
  go.
• 27:56
  Yeah,
• 27:56
  anything
• 27:57
  kind
• 27:57
  of
• 27:57
  on
• 27:57
  prep
• 27:57
  or
• 27:58
  process.
• 28:00
  Good
• 28:01
  knives,
• 28:02
  that's
• 28:02
  a
• 28:03
  real,
• 28:03
  real
• 28:04
  big
• 28:04
  one,
• 28:04
  and
• 28:05
  know
• 28:05
  how
• 28:05
  to
• 28:05
  sharpen
• 28:05
  them,
• 28:07
  and
• 28:09
  life
• 28:09
  is
• 28:09
  just
• 28:09
  so
• 28:10
  much
• 28:10
  easier
• 28:10
  that
• 28:11
  way.
• 28:12
  And
• 28:12
  things
• 28:12
  that
• 28:12
  you're
• 28:13
  required,
• 28:13
  like
• 28:13
  in
• 28:14
  a
• 28:14
  lot
• 28:14
  of
• 28:14
  the
• 28:15
  Asian
• 28:15
  cooking,
• 28:16
  anyway,
• 28:17
  the
• 28:17
  way
• 28:17
  things
• 28:18
  are
• 28:18
  cut
• 28:19
  influences,
• 28:20
  directly
• 28:21
  influences
• 28:22
  how
• 28:22
  they
• 28:23
  cook
• 28:24
  and
• 28:24
  how
• 28:24
  they
• 28:24
  taste
• 28:25
  as
• 28:25
  a
• 28:25
  result
• 28:26
  and
• 28:27
  how
• 28:27
  they
• 28:27
  interact
• 28:28
  with
• 28:28
  other
• 28:28
  ingredients.
• 28:29
  And
• 28:30
  so
• 28:31
  being
• 28:32
  able
• 28:32
  to
• 28:32
  cut
• 28:32
  things
• 28:33
  properly
• 28:33
  requires
• 28:37
  good
• 28:37
  sharp
• 28:37
  knives
• 28:38
  and
• 28:39
  different
• 28:39
  knives,
• 28:40
  not
• 28:40
  just
• 28:40
  one
• 28:41
  knife.
• 28:42
  And
• 28:42
  understanding
• 28:43
  how
• 28:43
  different
• 28:44
  knives
• 28:44
  have
• 28:44
  different
• 28:45
  applications,
• 28:48
  very
• 28:48
  important.
• 28:49
  Yeah.
• 28:49
  And
• 28:49
  are
• 28:49
  you
• 28:50
  a
• 28:50
  messy
• 28:50
  cook
• 28:50
  or
• 28:51
  do
• 28:51
  you
• 28:51
  clean
• 28:51
  as
• 28:52
  you
• 28:52
  go?
• 28:52
  Oh,
• 28:53
  I'm
• 28:53
  pretty
• 28:53
  messy.
• 28:54
  Unfortunately.
• 28:56
  My
• 28:56
  wife
• 28:56
  Joan,
• 28:57
  she
• 28:57
  does,
• 28:58
  she,
• 28:58
  she's,
• 28:59
  she's
• 28:59
  a
• 28:59
  good
• 28:59
  cook.
• 29:00
  Just
• 29:00
  doesn't
• 29:01
  really
• 29:01
  enjoy
• 29:01
  cooking
• 29:02
  as
• 29:02
  much
• 29:02
  as
• 29:02
  I
• 29:02
  do.
• 29:03
  But,
• 29:03
  but
• 29:04
  she,
• 29:05
  she
• 29:06
  seems
• 29:06
  to
• 29:06
  really
• 29:06
  enjoy
• 29:07
  cleaning
• 29:07
  up.
• 29:08
  So
• 29:09
  A
• 29:09
  match
• 29:09
  made
• 29:10
  in
• 29:10
  heaven,
• 29:10
  if
• 29:10
  you
• 29:10
  will.
• 29:11
  She,
• 29:12
  she
• 29:12
  might
• 29:12
  not
• 29:12
  tell
• 29:12
  you
• 29:13
  that,
• 29:13
  but
• 29:14
  I
• 29:14
  think
• 29:15
  it
• 29:15
  is.
• 29:15
  Yeah.
• 29:15
  She's
• 29:16
  a
• 29:16
  great
• 29:16
  baker
• 29:16
  though.
• 29:17
  Yeah.
• 29:17
  Oh
• 29:17
  yeah.
• 29:18
  She
• 29:18
  bakes
• 29:18
  very
• 29:19
  well
• 29:19
  and
• 29:19
  she,
• 29:19
  she
• 29:20
  has
• 29:20
  some,
• 29:21
  some
• 29:21
  of
• 29:21
  her
• 29:22
  recipes,
• 29:22
  some
• 29:23
  of
• 29:23
  the
• 29:23
  things
• 29:23
  that
• 29:23
  she
• 29:24
  does,
• 29:24
  I,
• 29:24
  I
• 29:24
  do
• 29:25
  not
• 29:25
  mess
• 29:25
  with
• 29:26
  them.
• 29:26
  I
• 29:27
  just
• 29:27
  let
• 29:27
  her
• 29:28
  do
• 29:28
  her
• 29:28
  own
• 29:28
  thing
• 29:29
  and
• 29:30
  they're
• 29:30
  absolutely
• 29:31
  great.
• 29:31
  Yeah.
• 29:32
  Baking
• 29:32
  is
• 29:32
  so
• 29:32
  temperamental
• 29:33
  too,
• 29:33
  right?
• 29:34
  Temperature,
• 29:34
  flour,
• 29:35
  location.
• 29:35
  I
• 29:35
  mean,
• 29:36
  it's,
• 29:37
  to
• 29:37
  me,
• 29:37
  that's
• 29:37
  kind
• 29:37
  of
• 29:37
  like
• 29:38
  the
• 29:38
  genius
• 29:38
  level
• 29:38
  stuff.
• 29:39
  Yeah.
• 29:40
  And
• 29:40
  that's
• 29:40
  where
• 29:41
  you
• 29:41
  end,
• 29:41
  you
• 29:42
  have
• 29:42
  to
• 29:42
  measure,
• 29:42
  you
• 29:43
  know,
• 29:43
  and
• 29:44
  that's
• 29:44
  where
• 29:44
  I
• 29:45
  kind
• 29:45
  of
• 29:46
  fall
• 29:46
  apart
• 29:46
  a
• 29:46
  little
• 29:47
  bit.
• 29:49
  So.
• 29:49
  But
• 29:49
  I,
• 29:49
  you
• 29:50
  know,
• 29:50
  I,
• 29:50
  I,
• 29:51
  I
• 29:51
  do
• 29:51
  enjoy
• 29:51
  baking
• 29:52
  bread.
• 29:52
  I
• 29:52
  haven't
• 29:53
  done
• 29:53
  it
• 29:53
  in
• 29:53
  a
• 29:53
  while,
• 29:54
  but,
• 29:54
  but
• 29:56
  really
• 29:56
  like
• 29:56
  baking
• 29:57
  bread,
• 30:00
  probably
• 30:00
  a
• 30:00
  pandemic
• 30:01
  thing
• 30:01
  more
• 30:01
  than
• 30:01
  anything
• 30:02
  else.
• 30:02
  There
• 30:03
  you
• 30:03
  go.
• 30:04
  Yeah.
• 30:04
  And
• 30:05
  so
• 30:05
  for
• 30:05
  folks
• 30:05
  that
• 30:05
  kind
• 30:06
  of
• 30:06
  want
• 30:06
  to
• 30:06
  up
• 30:06
  their
• 30:07
  cooking
• 30:07
  game
• 30:07
  but
• 30:07
  are
• 30:08
  intimidated.
• 30:08
  Right.
• 30:08
  Because
• 30:09
  it's,
• 30:09
  you
• 30:09
  know,
• 30:09
  like
• 30:09
  everything
• 30:10
  else,
• 30:10
  it
• 30:10
  seems
• 30:10
  like
• 30:11
  there's
• 30:11
  reality
• 30:11
  TV
• 30:12
  shows,
• 30:12
  there's
• 30:12
  tons
• 30:12
  of
• 30:13
  retail,
• 30:13
  there's
• 30:13
  tons
• 30:13
  of
• 30:13
  stuff
• 30:14
  on
• 30:14
  the
• 30:14
  Internet.
• 30:14
  You
• 30:15
  know,
• 30:15
  what
• 30:15
  do
• 30:15
  you
• 30:15
  think
• 30:15
  they
• 30:16
  should
• 30:16
  do
• 30:16
  to
• 30:16
  kind
• 30:16
  of
• 30:17
  go
• 30:17
  to
• 30:17
  the
• 30:17
  next
• 30:18
  level
• 30:18
  with
• 30:18
  a
• 30:18
  little
• 30:18
  less.
• 30:18
  Intimidation,
• 30:20
  to
• 30:20
  just
• 30:21
  start
• 30:21
  off
• 30:21
  easy,
• 30:22
  really,
• 30:22
  you
• 30:23
  know,
• 30:24
  and
• 30:26
  not
• 30:26
  try
• 30:26
  to
• 30:27
  take
• 30:27
  it,
• 30:27
  not
• 30:27
  try
• 30:27
  to
• 30:28
  make
• 30:28
  it
• 30:28
  too,
• 30:28
  too
• 30:29
  fancy.
• 30:30
  Just
• 30:30
  get,
• 30:31
  you
• 30:31
  know,
• 30:31
  a
• 30:31
  couple
• 30:32
  of
• 30:32
  recipes
• 30:33
  down
• 30:34
  that,
• 30:34
  that
• 30:35
  you
• 30:35
  can,
• 30:35
  that
• 30:35
  are
• 30:36
  repeatable
• 30:36
  for
• 30:36
  you.
• 30:38
  Again,
• 30:38
  kind
• 30:38
  of
• 30:39
  like
• 30:39
  tying
• 30:39
  flies,
• 30:40
  you
• 30:40
  know,
• 30:40
  don't
• 30:41
  go
• 30:41
  for
• 30:41
  that
• 30:41
  full
• 30:41
  dressed
• 30:42
  Atlantic
• 30:42
  salmon,
• 30:42
  fly
• 30:43
  right
• 30:44
  out
• 30:44
  of
• 30:44
  the
• 30:44
  chute.
• 30:45
  Do
• 30:45
  something,
• 30:46
  you
• 30:46
  know,
• 30:47
  pheasant
• 30:47
  tail
• 30:48
  nymph
• 30:48
  or
• 30:50
  you
• 30:51
  know,
• 30:53
  elkhare
• 30:53
  catus,
• 30:54
  something
• 30:55
  that,
• 30:55
  that
• 30:55
  and,
• 30:56
  and
• 30:56
  learn
• 30:56
  how
• 30:56
  to
• 30:56
  perfect
• 30:57
  it
• 30:58
  and,
• 30:58
  and,
• 30:58
  and
• 30:59
  make
• 30:59
  it
• 30:59
  good,
• 30:59
  make
• 31:00
  it
• 31:00
  very
• 31:00
  usable,
• 31:00
  make
• 31:01
  it
• 31:01
  enjoyable
• 31:01
  for
• 31:01
  other
• 31:02
  people.
• 31:03
  And
• 31:03
  then
• 31:05
  you
• 31:05
  kind
• 31:05
  of
• 31:05
  develop
• 31:06
  those
• 31:06
  basic
• 31:07
  skills
• 31:08
  and
• 31:08
  from
• 31:08
  then
• 31:09
  you
• 31:09
  can
• 31:09
  start
• 31:09
  getting
• 31:10
  fancier,
• 31:10
  adding
• 31:11
  more
• 31:11
  ingredients,
• 31:12
  adding
• 31:14
  fancier
• 31:14
  stuff.
• 31:15
  But
• 31:15
  yeah,
• 31:15
  start
• 31:15
  off
• 31:16
  simple
• 31:16
  is
• 31:17
  the
• 31:17
  biggest
• 31:18
  one
• 31:18
  of
• 31:18
  all.
• 31:19
  Got
• 31:20
  it.
• 31:20
  And
• 31:21
  as
• 31:21
  your
• 31:21
  culinary
• 31:22
  skills
• 31:22
  have
• 31:22
  evolved,
• 31:23
  how
• 31:23
  has
• 31:24
  the
• 31:24
  way
• 31:24
  you
• 31:24
  experienced
• 31:25
  eating
• 31:25
  out
• 31:26
  changed?
• 31:27
  Well,
• 31:28
  quite
• 31:28
  frankly,
• 31:29
  Marvin,
• 31:30
  we
• 31:30
  don't,
• 31:31
  we
• 31:31
  don't
• 31:32
  eat
• 31:32
  out
• 31:32
  a
• 31:32
  lot.
• 31:33
  Mainly
• 31:33
  because
• 31:34
  I
• 31:34
  really
• 31:34
  do
• 31:35
  enjoy
• 31:35
  cooking
• 31:36
  here,
• 31:37
  eating
• 31:37
  out.
• 31:38
  I
• 31:39
  will
• 31:39
  go
• 31:40
  for
• 31:40
  things
• 31:41
  that
• 31:41
  are
• 31:42
  out
• 31:42
  of
• 31:42
  the
• 31:42
  ordinary.
• 31:45
  If
• 31:45
  I'm
• 31:45
  going
• 31:45
  to
• 31:45
  eat
• 31:46
  out,
• 31:46
  if
• 31:47
  I'm
• 31:47
  going
• 31:47
  to
• 31:47
  spend
• 31:47
  the
• 31:47
  money,
• 31:49
  I
• 31:49
  really
• 31:49
  want
• 31:50
  something
• 31:50
  that's
• 31:51
  very,
• 31:51
  very
• 31:51
  different,
• 31:56
  Usually
• 31:56
  from
• 31:56
  a
• 31:57
  different
• 31:57
  culture.
• 31:59
  And
• 31:59
  so
• 32:02
  I'll
• 32:02
  go
• 32:02
  for
• 32:03
  that.
• 32:04
  And
• 32:05
  I
• 32:05
  had
• 32:05
  a
• 32:05
  good
• 32:05
  friend
• 32:06
  who
• 32:06
  was
• 32:06
  doing
• 32:07
  the
• 32:07
  fly
• 32:08
  fishing
• 32:08
  show
• 32:08
  circuit
• 32:09
  for
• 32:09
  quite
• 32:10
  a
• 32:10
  while
• 32:10
  and
• 32:11
  he
• 32:11
  was
• 32:11
  one
• 32:11
  of
• 32:11
  those
• 32:11
  guys
• 32:12
  that
• 32:13
  he'd
• 32:14
  come
• 32:14
  into
• 32:14
  town,
• 32:15
  I
• 32:15
  just
• 32:15
  say,
• 32:16
  where
• 32:17
  are
• 32:17
  we
• 32:17
  eating?
• 32:18
  And
• 32:18
  he
• 32:19
  would
• 32:19
  always
• 32:19
  have
• 32:20
  the
• 32:21
  funkiest
• 32:21
  place
• 32:22
  where
• 32:22
  you're
• 32:22
  sitting
• 32:23
  on
• 32:23
  the
• 32:23
  floor
• 32:23
  or
• 32:25
  standing
• 32:25
  up
• 32:26
  or
• 32:27
  sitting
• 32:28
  on
• 32:28
  a
• 32:28
  pillow
• 32:28
  or
• 32:29
  eating
• 32:29
  with
• 32:29
  your
• 32:30
  hands
• 32:30
  or
• 32:30
  your
• 32:30
  feet
• 32:31
  or
• 32:31
  whatever.
• 32:32
  And
• 32:33
  those
• 32:33
  places.
• 32:34
  I
• 32:34
  really
• 32:34
  enjoyed
• 32:35
  eating
• 32:35
  out.
• 32:37
  He
• 32:37
  hasn't
• 32:37
  been
• 32:37
  around
• 32:38
  for
• 32:38
  a
• 32:38
  few
• 32:38
  years,
• 32:38
  so
• 32:39
  I
• 32:40
  miss
• 32:40
  that.
• 32:40
  But
• 32:41
  yeah,
• 32:42
  something
• 32:42
  off,
• 32:43
  you
• 32:43
  know,
• 32:43
  something
• 32:43
  different.
• 32:44
  Yeah.
• 32:44
  And
• 32:45
  then
• 32:45
  when
• 32:45
  you
• 32:45
  taste
• 32:45
  the
• 32:46
  dishes,
• 32:46
  are
• 32:46
  you
• 32:46
  kind
• 32:46
  of
• 32:47
  trying
• 32:47
  to
• 32:47
  kind
• 32:47
  of
• 32:48
  pick
• 32:48
  things
• 32:48
  apart
• 32:49
  kind
• 32:49
  of
• 32:49
  like
• 32:49
  from
• 32:49
  an
• 32:50
  ingredient
• 32:50
  or
• 32:50
  a
• 32:50
  style
• 32:51
  perspective
• 32:51
  or
• 32:51
  are
• 32:51
  you
• 32:52
  just
• 32:52
  kind
• 32:52
  of
• 32:52
  soaking
• 32:52
  in
• 32:53
  the
• 32:53
  whole
• 32:53
  experience?
• 32:54
  I.
• 32:54
  Soaking
• 32:55
  in
• 32:55
  the
• 32:55
  whole
• 32:55
  experience,
• 32:56
  but
• 32:56
  at
• 32:56
  the
• 32:56
  same
• 32:57
  time,
• 32:57
  you
• 32:58
  know,
• 32:58
  I
• 32:58
  guess
• 32:58
  in
• 32:58
  the
• 32:58
  back
• 32:59
  of
• 32:59
  my
• 32:59
  head
• 33:00
  picking
• 33:00
  out
• 33:00
  parts
• 33:00
  of
• 33:01
  it
• 33:01
  that
• 33:01
  I
• 33:01
  can
• 33:01
  use
• 33:02
  at
• 33:03
  home
• 33:04
  and
• 33:04
  you
• 33:05
  know,
• 33:05
  maybe
• 33:05
  not
• 33:05
  the
• 33:06
  whole
• 33:06
  dish
• 33:06
  because
• 33:06
  some
• 33:07
  of
• 33:07
  them
• 33:07
  are
• 33:07
  very,
• 33:07
  very
• 33:08
  complex.
• 33:08
  But
• 33:09
  you
• 33:09
  know,
• 33:09
  what
• 33:09
  parts
• 33:10
  of
• 33:10
  it,
• 33:10
  whether
• 33:10
  it's,
• 33:11
  it's,
• 33:11
  you
• 33:11
  know,
• 33:12
  the,
• 33:13
  the
• 33:13
  bread
• 33:13
  that's
• 33:14
  served
• 33:14
  with
• 33:14
  it
• 33:14
  or,
• 33:15
  or
• 33:15
  the,
• 33:15
  the,
• 33:16
  the
• 33:16
  way
• 33:16
  they
• 33:16
  did,
• 33:16
  you
• 33:17
  know,
• 33:17
  a
• 33:17
  little
• 33:17
  side
• 33:17
  salad
• 33:18
  or
• 33:18
  something
• 33:18
  like
• 33:19
  that.
• 33:19
  I'll,
• 33:19
  I
• 33:19
  will
• 33:20
  definitely
• 33:21
  stash
• 33:21
  that
• 33:22
  away
• 33:22
  in
• 33:22
  my
• 33:22
  head
• 33:22
  and
• 33:23
  try
• 33:23
  to,
• 33:24
  try
• 33:24
  to
• 33:24
  duplicate
• 33:24
  it
• 33:25
  or
• 33:25
  take
• 33:25
  something
• 33:25
  from
• 33:25
  it.
• 33:26
  Very,
• 33:26
  very
• 33:27
  neat.
• 33:27
  And
• 33:27
  so,
• 33:27
  you
• 33:28
  know,
• 33:28
  what's
• 33:28
  your
• 33:29
  all
• 33:29
  time
• 33:29
  favorite
• 33:30
  meal?
• 33:30
  And
• 33:30
  it
• 33:30
  doesn't
• 33:30
  have
• 33:31
  to
• 33:31
  be
• 33:31
  prepared
• 33:31
  for
• 33:31
  you,
• 33:32
  so
• 33:32
  it
• 33:32
  can
• 33:32
  be
• 33:32
  something
• 33:32
  that
• 33:33
  you
• 33:33
  prepared
• 33:33
  or
• 33:33
  something
• 33:34
  someone
• 33:34
  else
• 33:34
  prepared
• 33:34
  for
• 33:35
  you.
• 33:37
  Well,
• 33:38
  if
• 33:39
  it
• 33:39
  came
• 33:39
  right
• 33:39
  down
• 33:40
  to,
• 33:41
  would
• 33:41
  probably
• 33:41
  be
• 33:41
  my
• 33:42
  mother's
• 33:42
  pot
• 33:42
  roast.
• 33:43
  I
• 33:43
  know
• 33:44
  that
• 33:44
  sounds,
• 33:44
  it's
• 33:44
  like
• 33:45
  cliche
• 33:45
  almost
• 33:45
  at
• 33:46
  this
• 33:46
  point
• 33:46
  but,
• 33:46
  but
• 33:48
  well
• 33:48
  she,
• 33:48
  she
• 33:48
  could
• 33:49
  make
• 33:49
  pot
• 33:49
  roast
• 33:49
  that
• 33:50
  was
• 33:50
  just,
• 33:51
  you
• 33:51
  know,
• 33:51
  vegetables
• 33:52
  done
• 33:52
  perfectly.
• 33:53
  And
• 33:54
  you
• 33:55
  know
• 33:55
  when
• 33:55
  you,
• 33:55
  you
• 33:55
  talk
• 33:56
  about
• 33:56
  food
• 33:56
  being
• 33:57
  love.
• 33:57
  That,
• 33:57
  that
• 33:58
  was,
• 33:59
  that,
• 33:59
  that
• 33:59
  was
• 34:00
  it
• 34:00
  for
• 34:00
  me
• 34:00
  when,
• 34:01
  when
• 34:01
  she
• 34:01
  made
• 34:01
  pot
• 34:02
  roast
• 34:02
  in
• 34:02
  a
• 34:03
  cast
• 34:03
  iron
• 34:04
  Dutch
• 34:04
  oven.
• 34:05
  And
• 34:06
  like,
• 34:06
  you
• 34:06
  know,
• 34:06
  I
• 34:07
  get
• 34:07
  home
• 34:07
  from
• 34:07
  school
• 34:08
  and
• 34:09
  she,
• 34:09
  she'd
• 34:09
  slow
• 34:10
  cook
• 34:10
  it.
• 34:10
  I
• 34:10
  get
• 34:10
  you
• 34:10
  know,
• 34:11
  home
• 34:11
  at
• 34:11
  3:30
• 34:12
  or
• 34:12
  whatever
• 34:13
  from
• 34:13
  school
• 34:13
  as
• 34:13
  a
• 34:14
  kid
• 34:14
  and
• 34:14
  I
• 34:14
  could
• 34:15
  smell
• 34:15
  it.
• 34:15
  Like
• 34:16
  I
• 34:16
  didn't
• 34:17
  even
• 34:17
  have
• 34:17
  to
• 34:17
  go
• 34:17
  into
• 34:17
  the
• 34:18
  house
• 34:18
  and
• 34:18
  I
• 34:18
  could
• 34:18
  smell
• 34:19
  it.
• 34:19
  It
• 34:19
  was,
• 34:20
  it
• 34:20
  was
• 34:20
  going
• 34:20
  to
• 34:20
  be
• 34:20
  a
• 34:21
  good
• 34:21
  day.
• 34:22
  So
• 34:22
  yeah,
• 34:23
  Mom's
• 34:23
  pot
• 34:23
  roast.
• 34:24
  Yeah,
• 34:24
  that's
• 34:24
  neat.
• 34:25
  I
• 34:25
  mean
• 34:25
  I
• 34:25
  think
• 34:25
  my
• 34:25
  favorite
• 34:26
  for
• 34:26
  pot
• 34:27
  roast,
• 34:27
  I
• 34:27
  love
• 34:27
  the
• 34:27
  meat,
• 34:28
  but
• 34:28
  I
• 34:28
  also
• 34:28
  just
• 34:28
  love
• 34:29
  the
• 34:29
  onions.
• 34:30
  Yeah.
• 34:30
  All
• 34:30
  the
• 34:31
  onions.
• 34:32
  Yeah.
• 34:33
  If
• 34:33
  they're
• 34:33
  done
• 34:33
  right,
• 34:34
  if
• 34:34
  they're
• 34:34
  not
• 34:34
  stringy.
• 34:35
  Sometimes
• 34:36
  some
• 34:36
  people,
• 34:37
  they're,
• 34:37
  they're,
• 34:38
  they're,
• 34:38
  I
• 34:38
  don't
• 34:39
  know,
• 34:40
  they,
• 34:40
  they
• 34:40
  get
• 34:41
  a
• 34:41
  little
• 34:41
  weird.
• 34:41
  But
• 34:41
  yeah,
• 34:42
  pot
• 34:42
  roast,
• 34:42
  onions
• 34:43
  with
• 34:44
  the
• 34:44
  potatoes.
• 34:45
  Oh
• 34:45
  man,
• 34:46
  oh
• 34:46
  man.
• 34:47
  I
• 34:47
  haven't
• 34:47
  had,
• 34:48
  I
• 34:49
  haven't
• 34:49
  had
• 34:49
  dinner
• 34:49
  yet?
• 34:50
  Yeah,
• 34:51
  I
• 34:51
  have
• 34:52
  actually
• 34:54
  had,
• 34:54
  had
• 34:55
  Asian
• 34:55
  tonight.
• 34:56
  So
• 34:56
  we
• 34:56
  had
• 34:56
  some
• 34:57
  Asian
• 34:57
  chicken
• 34:58
  thighs
• 34:58
  and
• 34:58
  jasmine
• 34:59
  rice.
• 34:59
  It
• 34:59
  was
• 34:59
  very
• 35:00
  good.
• 35:00
  Well,
• 35:00
  that
• 35:01
  sounds
• 35:01
  pretty
• 35:01
  neat.
• 35:01
  So
• 35:01
  you
• 35:02
  know,
• 35:02
  we're,
• 35:02
  we're
• 35:02
  sliding
• 35:03
  into
• 35:03
  the
• 35:03
  holidays
• 35:04
  and
• 35:04
  you
• 35:04
  know,
• 35:04
  that
• 35:05
  means,
• 35:05
  you
• 35:05
  know,
• 35:05
  the
• 35:05
  first
• 35:06
  thing
• 35:06
  you
• 35:06
  know,
• 35:06
  we
• 35:06
  started
• 35:06
  talking
• 35:07
  about
• 35:07
  2026
• 35:08
  and
• 35:08
  you
• 35:08
  know,
• 35:08
  I'll
• 35:09
  get
• 35:09
  to
• 35:09
  the
• 35:09
  show
• 35:09
  stuff
• 35:09
  in
• 35:09
  a
• 35:10
  minute.
• 35:10
  But
• 35:11
  you,
• 35:11
  you
• 35:11
  know,
• 35:11
  you've
• 35:12
  got
• 35:12
  a
• 35:12
  ton
• 35:12
  of
• 35:12
  hosted
• 35:13
  travel
• 35:13
  stuff
• 35:13
  going
• 35:13
  on
• 35:14
  next
• 35:14
  year.
• 35:14
  You
• 35:14
  want
• 35:14
  to
• 35:15
  kind
• 35:15
  of
• 35:15
  share
• 35:15
  that
• 35:16
  with
• 35:16
  folks
• 35:16
  and
• 35:16
  let
• 35:16
  it,
• 35:17
  you
• 35:17
  know,
• 35:17
  I
• 35:17
  suspect
• 35:17
  a
• 35:17
  lot
• 35:17
  of
• 35:18
  it's
• 35:18
  pretty
• 35:18
  full,
• 35:18
  but
• 35:18
  if
• 35:18
  you
• 35:19
  got
• 35:19
  any
• 35:19
  spaces
• 35:19
  or
• 35:19
  anything
• 35:20
  like
• 35:20
  that.
• 35:21
  Yeah,
• 35:21
  we,
• 35:21
  we
• 35:22
  are,
• 35:23
  we're,
• 35:23
  we're
• 35:23
  fairly
• 35:24
  filled
• 35:24
  up
• 35:24
  for
• 35:25
  next
• 35:25
  year.
• 35:25
  There,
• 35:25
  there
• 35:25
  are
• 35:26
  two
• 35:26
  places
• 35:26
  where
• 35:26
  we
• 35:26
  do
• 35:27
  have
• 35:27
  open
• 35:27
  spaces.
• 35:28
  I
• 35:28
  should
• 35:28
  let
• 35:29
  people
• 35:29
  know
• 35:29
  if
• 35:29
  they're
• 35:29
  interested.
• 35:32
  We
• 35:32
  end
• 35:32
  up
• 35:34
  my
• 35:34
  wife
• 35:34
  and
• 35:34
  I
• 35:34
  and
• 35:35
  my
• 35:35
  son,
• 35:36
  Our,
• 35:36
  our
• 35:36
  son
• 35:36
  Drew,
• 35:37
  who's
• 35:37
  also,
• 35:38
  he,
• 35:38
  he's
• 35:38
  joined
• 35:39
  our
• 35:39
  video
• 35:39
  production
• 35:40
  business.
• 35:40
  So.
• 35:41
  But
• 35:41
  he
• 35:41
  is
• 35:41
  also
• 35:42
  a
• 35:42
  fly
• 35:42
  fisher
• 35:43
  and
• 35:43
  a
• 35:43
  guide
• 35:44
  and
• 35:45
  he,
• 35:45
  he
• 35:45
  works
• 35:46
  in
• 35:46
  logistics
• 35:46
  for
• 35:47
  the
• 35:47
  fly
• 35:47
  fishing
• 35:47
  shows.
• 35:49
  So
• 35:49
  all
• 35:49
  three
• 35:50
  of
• 35:50
  us
• 35:50
  do
• 35:51
  the
• 35:51
  shows
• 35:51
  throughout
• 35:52
  the
• 35:52
  winter
• 35:53
  months.
• 35:54
  That's
• 35:54
  kind
• 35:54
  of
• 35:54
  our
• 35:54
  entire
• 35:55
  winter.
• 35:56
  But
• 35:56
  then
• 35:57
  starting
• 35:57
  in
• 35:57
  April,
• 35:59
  I
• 35:59
  go
• 35:59
  to
• 35:59
  Argentina
• 36:01
  and
• 36:02
  I
• 36:02
  have
• 36:02
  a
• 36:02
  week
• 36:03
  up
• 36:03
  Golden
• 36:04
  Dorado
• 36:04
  fishing
• 36:06
  up
• 36:06
  on
• 36:06
  the
• 36:06
  Ibera
• 36:07
  marsh.
• 36:07
  And
• 36:07
  there
• 36:08
  are
• 36:08
  openings
• 36:08
  there.
• 36:09
  It's
• 36:09
  a
• 36:09
  spectacular
• 36:10
  place.
• 36:11
  Anybody's
• 36:12
  interested,
• 36:12
  just
• 36:14
  a
• 36:15
  must
• 36:15
  see
• 36:15
  before
• 36:15
  you,
• 36:16
  before
• 36:17
  you
• 36:17
  expire.
• 36:19
  And
• 36:19
  then
• 36:19
  another
• 36:20
  week
• 36:20
  which
• 36:20
  is
• 36:20
  very
• 36:21
  filled.
• 36:22
  That's
• 36:25
  more
• 36:25
  just
• 36:25
  trout
• 36:26
  fishing
• 36:26
  on
• 36:26
  the
• 36:27
  classic
• 36:29
  Patagonia
• 36:29
  rivers.
• 36:30
  The
• 36:30
  Chimi
• 36:30
  in
• 36:30
  Cajun,
• 36:31
  Cora
• 36:31
  Luminae
• 36:32
  Maggio.
• 36:33
  And
• 36:33
  then
• 36:34
  we
• 36:34
  do
• 36:34
  have
• 36:34
  openings
• 36:35
  on
• 36:35
  another
• 36:36
  trip.
• 36:37
  It's
• 36:37
  a
• 36:38
  six
• 36:38
  day
• 36:38
  float
• 36:39
  on
• 36:39
  the
• 36:39
  Maimario
• 36:41
  which
• 36:41
  is
• 36:41
  huge
• 36:43
  minnow
• 36:44
  eating
• 36:44
  brown
• 36:45
  trout.
• 36:45
  It's,
• 36:46
  you
• 36:46
  know,
• 36:46
  camping
• 36:47
  every
• 36:47
  night
• 36:47
  on
• 36:47
  the
• 36:48
  river.
• 36:48
  It's,
• 36:49
  you
• 36:49
  know,
• 36:49
  I
• 36:50
  love
• 36:50
  being
• 36:50
  in,
• 36:51
  in
• 36:51
  Argentina
• 36:52
  and
• 36:52
  Patagonia,
• 36:53
  but
• 36:53
  the
• 36:53
  camping
• 36:54
  on
• 36:54
  the
• 36:54
  river,
• 36:54
  for
• 36:55
  me
• 36:55
  that,
• 36:55
  that's,
• 36:56
  that's
• 36:56
  the
• 36:56
  highlight
• 36:57
  right
• 36:57
  there.
• 36:58
  And
• 36:59
  the,
• 36:59
  the
• 37:00
  possibility
• 37:01
  of
• 37:01
  truly
• 37:01
  giant
• 37:02
  brown
• 37:02
  trout.
• 37:03
  And
• 37:03
  then
• 37:04
  after
• 37:04
  that
• 37:05
  we
• 37:06
  do
• 37:06
  a
• 37:06
  bunch
• 37:06
  of
• 37:06
  trips
• 37:07
  out
• 37:07
  at
• 37:07
  Spruce
• 37:07
  Creek,
• 37:08
  Pennsylvania.
• 37:10
  And
• 37:11
  throughout
• 37:12
  the
• 37:12
  year,
• 37:12
  four
• 37:12
  day
• 37:13
  trips,
• 37:14
  I
• 37:14
  go
• 37:14
  out
• 37:15
  to
• 37:15
  the
• 37:15
  Linehans.
• 37:17
  I
• 37:18
  believe
• 37:18
  that
• 37:18
  trip's
• 37:18
  fully
• 37:19
  booked
• 37:19
  for
• 37:20
  2026
• 37:21
  out
• 37:21
  in
• 37:21
  Northwest
• 37:22
  Montana
• 37:22
  on
• 37:22
  the
• 37:22
  Kootenay
• 37:23
  river
• 37:24
  for
• 37:24
  a
• 37:24
  full
• 37:25
  week
• 37:25
  trip
• 37:25
  that's
• 37:25
  a
• 37:26
  ton
• 37:26
  of
• 37:26
  fun.
• 37:26
  Then
• 37:27
  some
• 37:27
  more
• 37:30
  little
• 37:30
  trips
• 37:31
  around
• 37:31
  here
• 37:32
  and
• 37:32
  then
• 37:33
  another
• 37:33
  big
• 37:33
  one.
• 37:34
  I'll
• 37:34
  be
• 37:34
  up
• 37:34
  for
• 37:34
  two
• 37:35
  weeks
• 37:35
  in
• 37:36
  very
• 37:36
  northern
• 37:37
  Rockies
• 37:39
  in
• 37:39
  British
• 37:39
  Columbia
• 37:40
  almost
• 37:41
  to
• 37:41
  the
• 37:41
  Northwest
• 37:42
  Territories
• 37:43
  and
• 37:43
  the
• 37:43
  Yukon.
• 37:44
  Incredible
• 37:45
  fishing
• 37:45
  up
• 37:45
  there
• 37:46
  with
• 37:46
  northern
• 37:46
  Rockies
• 37:47
  adventures.
• 37:47
  I
• 37:47
  Got
• 37:48
  two
• 37:48
  weeks
• 37:48
  there.
• 37:49
  They're
• 37:49
  both
• 37:50
  pretty
• 37:50
  much
• 37:50
  filled
• 37:50
  up
• 37:51
  now.
• 37:52
  And
• 37:52
  that's
• 37:53
  trophy
• 37:54
  pike,
• 37:55
  bull
• 37:55
  trout,
• 37:56
  lake
• 37:56
  trout,
• 37:56
  rainbow
• 37:57
  trout
• 37:57
  and
• 37:58
  grayling.
• 37:59
  Four
• 37:59
  fly
• 38:00
  outs
• 38:00
  throughout
• 38:00
  the
• 38:01
  week.
• 38:01
  Super,
• 38:01
  super
• 38:02
  cool.
• 38:03
  And
• 38:03
  then
• 38:04
  more
• 38:04
  Spruce
• 38:05
  Creek
• 38:05
  and
• 38:05
  then
• 38:06
  actually
• 38:07
  I
• 38:07
  kind
• 38:07
  of
• 38:07
  forgot
• 38:08
  one
• 38:08
  in
• 38:08
  there.
• 38:08
  We
• 38:09
  do
• 38:09
  it.
• 38:10
  It's
• 38:11
  going
• 38:11
  to
• 38:11
  start
• 38:11
  in
• 38:12
  another
• 38:12
  week
• 38:12
  or
• 38:12
  2.
• 38:14
  Got
• 38:14
  two
• 38:14
  5
• 38:15
  day
• 38:15
  trips
• 38:16
  and
• 38:16
  they're
• 38:16
  both
• 38:17
  booked
• 38:17
  for
• 38:17
  this
• 38:17
  year
• 38:18
  up
• 38:18
  in
• 38:19
  Lake
• 38:19
  Erie
• 38:19
  for
• 38:20
  lake
• 38:20
  run
• 38:20
  rainbows,
• 38:21
  Steelhead,
• 38:22
  if
• 38:22
  I'm
• 38:22
  allowed
• 38:22
  to
• 38:23
  say
• 38:23
  that.
• 38:23
  You're
• 38:23
  allowed.
• 38:24
  I'm
• 38:25
  allowed.
• 38:25
  You're
• 38:25
  allowed.
• 38:27
  And
• 38:27
  so
• 38:28
  fingers
• 38:28
  crossed
• 38:29
  for
• 38:29
  the
• 38:29
  weather.
• 38:29
  It's
• 38:29
  a
• 38:30
  little
• 38:30
  snowy
• 38:30
  and
• 38:30
  cold
• 38:31
  up
• 38:31
  there,
• 38:31
  but
• 38:31
  they
• 38:31
  finally
• 38:32
  got
• 38:32
  some
• 38:32
  fish
• 38:32
  coming
• 38:33
  in.
• 38:33
  So
• 38:33
  it's
• 38:33
  looking
• 38:33
  good
• 38:34
  for
• 38:34
  this
• 38:34
  year.
• 38:35
  And
• 38:35
  that's
• 38:35
  pretty
• 38:36
  much
• 38:36
  our
• 38:36
  year,
• 38:36
  Marvin.
• 38:38
  I'll
• 38:39
  be
• 38:39
  away
• 38:40
  somewhere
• 38:41
  like
• 38:42
  160
• 38:43
  days
• 38:43
  I
• 38:44
  think
• 38:44
  next
• 38:44
  year.
• 38:45
  Well,
• 38:45
  there
• 38:45
  you
• 38:45
  go.
• 38:47
  I'll
• 38:48
  drop
• 38:48
  the
• 38:48
  link
• 38:48
  to
• 38:48
  all
• 38:49
  those
• 38:49
  Adventures
• 38:50
  in
• 38:50
  the
• 38:50
  show
• 38:50
  notes.
• 38:51
  And
• 38:51
  it's
• 38:51
  interesting
• 38:51
  too
• 38:52
  because
• 38:52
  I
• 38:52
  fished
• 38:52
  with
• 38:52
  the
• 38:52
  guys
• 38:53
  at
• 38:53
  Set
• 38:54
  way
• 38:54
  back
• 38:54
  when
• 38:54
  they
• 38:54
  were
• 38:55
  Andy's
• 38:55
  drifters.
• 38:55
  And
• 38:56
  folks,
• 38:56
  they're
• 38:56
  awesome
• 38:57
  outfitters
• 38:57
  in
• 38:57
  Argentina.
• 38:58
  Yeah.
• 38:59
  And
• 39:00
  I
• 39:00
  tell
• 39:00
  you
• 39:00
  what,
• 39:01
  the
• 39:01
  food
• 39:03
  everywhere
• 39:03
  down
• 39:04
  there
• 39:04
  is
• 39:05
  insane.
• 39:06
  It's
• 39:07
  so
• 39:07
  good.
• 39:07
  Particularly
• 39:08
  at
• 39:08
  Spring
• 39:08
  Creek
• 39:09
  Lodge,
• 39:09
  the
• 39:09
  trout
• 39:10
  one.
• 39:11
  People
• 39:12
  go,
• 39:12
  you've
• 39:13
  got
• 39:13
  to
• 39:13
  be
• 39:13
  kidding
• 39:13
  me.
• 39:14
  This
• 39:14
  is,
• 39:14
  I
• 39:15
  mean,
• 39:15
  it's
• 39:15
  like
• 39:16
  some
• 39:16
  of
• 39:16
  the
• 39:16
  finest
• 39:17
  dining
• 39:17
  in
• 39:17
  the
• 39:17
  world.
• 39:19
  All
• 39:20
  done
• 39:20
  right
• 39:20
  there.
• 39:21
  Yeah.
• 39:21
  Or
• 39:22
  even
• 39:22
  the
• 39:22
  camping,
• 39:22
  I
• 39:22
  mean,
• 39:23
  I
• 39:23
  don't
• 39:23
  know,
• 39:23
  to
• 39:23
  fish
• 39:23
  hard
• 39:24
  all
• 39:24
  day
• 39:24
  and
• 39:24
  you
• 39:25
  step
• 39:25
  out
• 39:25
  of
• 39:25
  your
• 39:26
  drift
• 39:26
  boat
• 39:26
  and
• 39:27
  they
• 39:27
  hand
• 39:27
  you
• 39:27
  a
• 39:27
  glass
• 39:27
  of
• 39:27
  red
• 39:28
  wine
• 39:28
  and
• 39:28
  you
• 39:28
  go
• 39:28
  sit
• 39:28
  around
• 39:29
  the
• 39:29
  fire
• 39:29
  and
• 39:29
  eat
• 39:29
  salamis
• 39:30
  and
• 39:30
  cheeses
• 39:31
  while,
• 39:32
  you
• 39:32
  know,
• 39:32
  they
• 39:32
  work
• 39:32
  on,
• 39:34
  you
• 39:34
  know,
• 39:34
  the
• 39:34
  barbecue
• 39:35
  for
• 39:35
  dinner.
• 39:35
  I
• 39:35
  mean,
• 39:36
  it's,
• 39:36
  it's
• 39:36
  pretty
• 39:36
  awesome.
• 39:37
  Yeah.
• 39:38
  Yeah.
• 39:38
  And
• 39:38
  they,
• 39:39
  when
• 39:39
  they
• 39:39
  do,
• 39:40
  you
• 39:40
  know,
• 39:40
  they
• 39:40
  got
• 39:40
  the
• 39:42
  full
• 39:42
  lamb
• 39:43
  that's
• 39:43
  cooking
• 39:44
  over,
• 39:44
  over
• 39:44
  the
• 39:45
  open
• 39:45
  fire
• 39:46
  and
• 39:47
  you,
• 39:48
  you
• 39:48
  can
• 39:48
  oftentimes
• 39:49
  you
• 39:49
  can
• 39:49
  smell
• 39:49
  it.
• 39:49
  You
• 39:50
  know,
• 39:50
  you're
• 39:50
  a
• 39:50
  half
• 39:50
  mile
• 39:51
  away
• 39:51
  in
• 39:51
  the
• 39:51
  drift
• 39:51
  boat
• 39:52
  coming
• 39:52
  down
• 39:52
  the
• 39:52
  river
• 39:52
  and
• 39:53
  you
• 39:53
  get
• 39:53
  a
• 39:53
  whiff
• 39:54
  of,
• 39:54
  of,
• 39:54
  of
• 39:55
  lamb
• 39:55
  cooking
• 39:56
  over
• 39:56
  an
• 39:56
  open
• 39:56
  flame
• 39:58
  after
• 39:58
  a
• 39:58
  long
• 39:59
  day
• 39:59
  of
• 39:59
  fishing.
• 39:59
  Yeah,
• 40:00
  it's
• 40:00
  enough
• 40:00
  to.
• 40:01
  Oh,
• 40:02
  but
• 40:02
  even
• 40:02
  the
• 40:02
  star,
• 40:02
  I
• 40:03
  mean,
• 40:03
  just
• 40:03
  the
• 40:03
  stars,
• 40:04
  right?
• 40:04
  I
• 40:04
  mean
• 40:04
  like,
• 40:04
  you
• 40:05
  know,
• 40:05
  seeing
• 40:05
  the
• 40:05
  Milky
• 40:05
  Way
• 40:06
  and
• 40:06
  the
• 40:06
  Southern
• 40:06
  Cross
• 40:06
  down
• 40:07
  there.
• 40:07
  I
• 40:07
  mean,
• 40:07
  there's
• 40:07
  no
• 40:07
  light
• 40:08
  pollution
• 40:08
  because
• 40:08
  you're
• 40:08
  literally
• 40:09
  in
• 40:09
  the
• 40:09
  middle
• 40:09
  of
• 40:09
  nowhere.
• 40:10
  No,
• 40:10
  yeah,
• 40:11
  it,
• 40:11
  it's
• 40:12
  the,
• 40:12
  the
• 40:12
  place
• 40:13
  is
• 40:13
  incredible.
• 40:14
  And,
• 40:14
  and
• 40:15
  you
• 40:15
  know,
• 40:15
  I,
• 40:15
  I
• 40:15
  enjoy
• 40:16
  the
• 40:16
  hook.
• 40:16
  The,
• 40:17
  the
• 40:17
  dorado
• 40:18
  fishing
• 40:18
  up
• 40:18
  north,
• 40:19
  that,
• 40:19
  that's
• 40:19
  got
• 40:20
  its
• 40:20
  own
• 40:20
  whole
• 40:21
  thing.
• 40:23
  You
• 40:23
  know,
• 40:23
  the
• 40:23
  trout
• 40:23
  the,
• 40:24
  the
• 40:24
  regular
• 40:24
  trout
• 40:25
  fishing
• 40:25
  at
• 40:25
  Spring
• 40:26
  Creek
• 40:26
  Lodge.
• 40:27
  But,
• 40:27
  but
• 40:27
  that,
• 40:28
  that
• 40:28
  float
• 40:28
  on
• 40:29
  the
• 40:29
  Lemai,
• 40:30
  if
• 40:30
  you're
• 40:30
  up
• 40:30
  for
• 40:30
  it,
• 40:31
  you
• 40:31
  know,
• 40:31
  if
• 40:32
  you've
• 40:32
  got
• 40:32
  a
• 40:32
  little,
• 40:33
  little
• 40:33
  adventuresome
• 40:34
  in
• 40:35
  you,
• 40:36
  it,
• 40:36
  it's.
• 40:36
  That
• 40:37
  to
• 40:37
  me
• 40:37
  is
• 40:38
  just
• 40:38
  kind
• 40:38
  of
• 40:38
  the
• 40:38
  ultimate.
• 40:40
  Just
• 40:41
  being
• 40:41
  out
• 40:41
  there
• 40:41
  in
• 40:42
  that
• 40:42
  wilderness,
• 40:43
  in
• 40:43
  that
• 40:43
  just
• 40:44
  unspoiled,
• 40:46
  untamed
• 40:47
  wild
• 40:47
  is
• 40:48
  super,
• 40:48
  super
• 40:48
  cool.
• 40:49
  Yeah.
• 40:50
  When
• 40:50
  I
• 40:50
  was
• 40:50
  down
• 40:51
  the.
• 40:52
  You
• 40:52
  could
• 40:52
  hear
• 40:52
  the
• 40:52
  Red
• 40:52
  Stag
• 40:53
  bugling
• 40:53
  at
• 40:53
  night.
• 40:54
  Yeah.
• 40:54
  Yeah.
• 40:55
  And,
• 40:56
  and
• 40:56
  just,
• 40:57
  just
• 40:57
  something
• 40:57
  about
• 40:58
  that
• 40:58
  place,
• 40:58
  it's
• 40:59
  kind
• 40:59
  of,
• 40:59
  kind
• 41:00
  of
• 41:00
  haunts
• 41:00
  me,
• 41:00
  I
• 41:00
  think.
• 41:01
  Yeah,
• 41:02
  it's
• 41:02
  super
• 41:02
  neat.
• 41:02
  And
• 41:02
  so,
• 41:03
  you
• 41:03
  know,
• 41:03
  I
• 41:03
  know
• 41:03
  you're
• 41:03
  going
• 41:03
  to
• 41:03
  do
• 41:04
  all
• 41:04
  of
• 41:04
  the
• 41:04
  official
• 41:04
  d
• 41:05
  fly
• 41:05
  fishing
• 41:05
  shows,
• 41:06
  but
• 41:06
  do
• 41:07
  you
• 41:07
  have
• 41:07
  any
• 41:07
  other
• 41:07
  appearances
• 41:08
  in
• 41:08
  2026
• 41:09
  you
• 41:09
  want
• 41:09
  to
• 41:09
  let
• 41:09
  folks
• 41:09
  know
• 41:10
  about?
• 41:11
  Yeah,
• 41:11
  kind
• 41:12
  of
• 41:12
  all
• 41:12
  over.
• 41:12
  You
• 41:13
  know,
• 41:13
  I
• 41:13
  do
• 41:13
  do
• 41:13
  classes
• 41:15
  and
• 41:16
  throughout
• 41:17
  the
• 41:17
  year
• 41:19
  and
• 41:19
  some
• 41:20
  other
• 41:20
  smaller
• 41:20
  shows.
• 41:21
  We've
• 41:22
  kind
• 41:22
  of
• 41:22
  cut
• 41:22
  back
• 41:22
  on
• 41:23
  some
• 41:23
  of
• 41:23
  those.
• 41:24
  Just
• 41:24
  kind
• 41:24
  of
• 41:25
  running
• 41:25
  out
• 41:25
  of
• 41:25
  time.
• 41:27
  I
• 41:28
  love
• 41:28
  going
• 41:28
  down
• 41:28
  to
• 41:28
  the
• 41:29
  Saobug
• 41:29
  Roundup
• 41:30
  every
• 41:30
  year.
• 41:31
  It's
• 41:32
  going
• 41:32
  to
• 41:32
  be
• 41:32
  real
• 41:32
  close
• 41:33
  this
• 41:33
  year
• 41:33
  whether
• 41:34
  I
• 41:34
  can
• 41:34
  go
• 41:34
  or
• 41:34
  not.
• 41:34
  It's
• 41:35
  kind
• 41:35
  of
• 41:35
  up
• 41:35
  against
• 41:37
  the
• 41:37
  Patagonia
• 41:38
  trip
• 41:38
  and
• 41:38
  so
• 41:39
  can't
• 41:40
  quite
• 41:40
  commit
• 41:40
  to
• 41:41
  that
• 41:41
  yet.
• 41:41
  But
• 41:43
  any
• 41:43
  you
• 41:43
  fly
• 41:43
  tires
• 41:44
  out
• 41:44
  there
• 41:44
  that
• 41:44
  haven't
• 41:45
  been
• 41:45
  to
• 41:45
  the
• 41:45
  Sow
• 41:45
  Bug,
• 41:46
  you
• 41:46
  should
• 41:46
  put
• 41:47
  it
• 41:47
  on
• 41:47
  your
• 41:47
  list.
• 41:47
  It's
• 41:50
  really
• 41:50
  cool
• 41:50
  and
• 41:50
  great
• 41:51
  fishing
• 41:51
  on
• 41:51
  the
• 41:51
  White
• 41:52
  and
• 41:52
  on
• 41:52
  the
• 41:52
  Norfork
• 41:53
  down
• 41:53
  there.
• 41:54
  Very,
• 41:54
  very
• 41:55
  neat.
• 41:55
  And
• 41:56
  I
• 41:56
  will
• 41:56
  drop
• 41:56
  links
• 41:57
  to
• 41:57
  all
• 41:57
  the
• 41:57
  show
• 41:57
  notes
• 41:57
  stuff
• 41:57
  too.
• 41:58
  And
• 41:58
  that's
• 41:58
  a
• 41:58
  great
• 41:58
  place,
• 41:58
  folks
• 41:59
  I
• 41:59
  know.
• 41:59
  Are
• 41:59
  you
• 42:00
  doing
• 42:00
  any
• 42:00
  destination
• 42:00
  theater
• 42:01
  talks
• 42:01
  about
• 42:01
  your
• 42:01
  travel
• 42:02
  or
• 42:02
  are
• 42:02
  you
• 42:02
  just
• 42:02
  sticking
• 42:02
  to
• 42:03
  the
• 42:03
  fly
• 42:03
  tying
• 42:03
  for
• 42:04
  the
• 42:04
  fly
• 42:04
  fishing
• 42:04
  shows?
• 42:05
  No,
• 42:06
  we're
• 42:06
  doing,
• 42:07
  you
• 42:07
  know,
• 42:08
  destination
• 42:08
  travel
• 42:09
  presentations.
• 42:10
  So
• 42:10
  if
• 42:10
  anybody's
• 42:10
  at
• 42:11
  the
• 42:11
  fly
• 42:11
  fishing
• 42:11
  shows,
• 42:12
  I'll
• 42:13
  be
• 42:13
  kind
• 42:13
  of
• 42:13
  alternating
• 42:14
  between,
• 42:15
  you
• 42:15
  know,
• 42:16
  our
• 42:17
  major
• 42:17
  trips,
• 42:18
  whether
• 42:18
  it's
• 42:19
  Argentina,
• 42:20
  Montana
• 42:21
  or
• 42:21
  British
• 42:22
  Columbia
• 42:22
  or
• 42:22
  even
• 42:23
  the
• 42:23
  steelhead
• 42:23
  trips.
• 42:24
  I
• 42:24
  also
• 42:25
  do
• 42:25
  seminars,
• 42:26
  you
• 42:26
  know,
• 42:26
  on
• 42:26
  what
• 42:26
  trout
• 42:27
  like
• 42:27
  to
• 42:27
  eat,
• 42:27
  for
• 42:28
  example,
• 42:28
  or
• 42:30
  on
• 42:30
  trout
• 42:31
  spay
• 42:31
  fishing,
• 42:31
  things
• 42:32
  like
• 42:32
  that.
• 42:33
  And
• 42:34
  then
• 42:34
  classes
• 42:35
  as
• 42:35
  well
• 42:35
  at
• 42:36
  the
• 42:36
  show.
• 42:36
  So.
• 42:37
  Yeah,
• 42:37
  I'm
• 42:38
  pretty
• 42:38
  busy
• 42:38
  at
• 42:38
  the
• 42:38
  shows
• 42:39
  too.
• 42:39
  Yeah.
• 42:39
  Which
• 42:40
  is
• 42:40
  the
• 42:40
  inside
• 42:40
  baseball
• 42:41
  tip.
• 42:41
  If
• 42:41
  you
• 42:41
  want
• 42:42
  to
• 42:42
  talk
• 42:42
  to
• 42:42
  Tim,
• 42:42
  don't
• 42:43
  try
• 42:43
  him
• 42:43
  on
• 42:43
  tires
• 42:44
  row.
• 42:44
  Track
• 42:44
  him
• 42:44
  down
• 42:44
  at
• 42:45
  a
• 42:45
  seminar.
• 42:46
  Yeah,
• 42:47
  the
• 42:47
  seminar.
• 42:47
  And
• 42:48
  catch
• 42:48
  me
• 42:48
  while
• 42:48
  I'm
• 42:48
  walking
• 42:49
  back.
• 42:49
  I
• 42:50
  also
• 42:50
  should
• 42:50
  get.
• 42:51
  I,
• 42:52
  I
• 42:52
  don't
• 42:53
  know
• 42:53
  when
• 42:53
  this
• 42:53
  is
• 42:53
  going
• 42:53
  to
• 42:54
  air,
• 42:54
  Marvin.
• 42:54
  That's
• 42:55
  the.
• 42:55
  But
• 42:56
  I
• 42:56
  have
• 42:56
  a
• 42:56
  tie
• 42:56
  off
• 42:57
  with
• 42:57
  cheech
• 42:57
  in,
• 42:58
  in
• 42:58
  Mr.
• 42:58
  Rosenbauer
• 42:59
  tomorrow.
• 43:00
  So
• 43:00
  yeah,
• 43:01
  I,
• 43:01
  I'M
• 43:01
  I'm
• 43:02
  good.
• 43:02
  I'm
• 43:02
  not
• 43:02
  that
• 43:02
  good.
• 43:03
  Yeah,
• 43:05
  I
• 43:05
  gotcha.
• 43:07
  Yeah.
• 43:08
  So.
• 43:08
  But
• 43:09
  they
• 43:09
  can
• 43:09
  wish
• 43:09
  me
• 43:09
  luck
• 43:10
  anyway
• 43:10
  in.
• 43:10
  In
• 43:11
  retroactively.
• 43:12
  Well
• 43:12
  and
• 43:12
  prospectively.
• 43:13
  Because
• 43:13
  I
• 43:13
  have
• 43:14
  a
• 43:14
  suspicion
• 43:14
  it
• 43:14
  won't
• 43:14
  be
• 43:14
  the
• 43:15
  last
• 43:15
  one.
• 43:15
  You
• 43:15
  do
• 43:15
  either.
• 43:16
  No,
• 43:16
  no.
• 43:16
  They're
• 43:17
  always
• 43:17
  fun.
• 43:18
  Yeah.
• 43:19
  And
• 43:19
  so
• 43:19
  do
• 43:20
  you
• 43:20
  have
• 43:20
  any.
• 43:21
  Anything
• 43:21
  kind
• 43:21
  of
• 43:22
  neat
• 43:22
  going
• 43:22
  on
• 43:22
  at
• 43:22
  the
• 43:22
  vice
• 43:23
  or
• 43:23
  behind
• 43:23
  the
• 43:23
  camera
• 43:23
  you
• 43:24
  want
• 43:24
  to
• 43:24
  share
• 43:24
  with
• 43:24
  folks
• 43:24
  before
• 43:24
  I
• 43:25
  let
• 43:25
  you
• 43:25
  go
• 43:25
  this
• 43:25
  evening?
• 43:26
  Yeah,
• 43:27
  actually,
• 43:28
  one
• 43:28
  of
• 43:28
  the
• 43:28
  things
• 43:28
  that
• 43:29
  just
• 43:29
  over
• 43:29
  the
• 43:30
  last
• 43:30
  couple
• 43:30
  years,
• 43:30
  and
• 43:31
  this
• 43:31
  comes
• 43:32
  from
• 43:32
  really
• 43:33
  looking
• 43:33
  closely
• 43:34
  at
• 43:34
  sampling
• 43:35
  aquatic
• 43:36
  macroinvertebrates
• 43:37
  and
• 43:37
  looking,
• 43:38
  you
• 43:38
  know,
• 43:38
  the
• 43:38
  stuff
• 43:38
  that
• 43:39
  the
• 43:39
  trout
• 43:39
  like
• 43:39
  to
• 43:40
  eat
• 43:40
  and
• 43:41
  looking
• 43:41
  at
• 43:41
  them
• 43:41
  up
• 43:42
  close
• 43:42
  and
• 43:42
  shooting
• 43:43
  video
• 43:43
  of
• 43:43
  them
• 43:44
  and
• 43:44
  their
• 43:44
  movements
• 43:45
  and
• 43:45
  everything
• 43:46
  like
• 43:46
  that.
• 43:46
  And
• 43:47
  one
• 43:47
  of
• 43:47
  the
• 43:47
  things
• 43:47
  that's
• 43:48
  just
• 43:48
  really
• 43:48
  striking
• 43:49
  to
• 43:49
  me
• 43:49
  is
• 43:51
  how
• 43:51
  their
• 43:52
  actual
• 43:52
  coloration.
• 43:54
  And
• 43:54
  we
• 43:54
  get
• 43:54
  really,
• 43:55
  really
• 43:55
  obsessed
• 43:56
  about,
• 43:56
  you
• 43:56
  know,
• 43:56
  different
• 43:57
  shades
• 43:57
  of
• 43:57
  a
• 43:58
  specific
• 43:58
  color
• 43:59
  when
• 43:59
  the
• 43:59
  fact
• 43:59
  of
• 43:59
  the
• 44:00
  matter
• 44:00
  is
• 44:00
  when
• 44:00
  you
• 44:00
  look
• 44:00
  at
• 44:00
  these
• 44:01
  insects
• 44:01
  up
• 44:01
  close
• 44:02
  or
• 44:03
  really
• 44:03
  any
• 44:03
  living
• 44:04
  things
• 44:04
  up
• 44:04
  close,
• 44:05
  honestly,
• 44:06
  it's
• 44:07
  more
• 44:07
  of
• 44:07
  a
• 44:07
  modeled
• 44:07
  appearance.
• 44:08
  Blotches
• 44:09
  of
• 44:09
  different
• 44:09
  colors.
• 44:10
  And
• 44:11
  so
• 44:12
  to
• 44:12
  me,
• 44:12
  those.
• 44:13
  That,
• 44:13
  that
• 44:14
  blotchiness
• 44:14
  or
• 44:15
  that
• 44:15
  modeling
• 44:16
  indicates
• 44:16
  life.
• 44:17
  And
• 44:17
  if
• 44:18
  it's
• 44:18
  living,
• 44:18
  it's
• 44:18
  protein.
• 44:19
  And
• 44:19
  if
• 44:19
  it's
• 44:19
  protein,
• 44:20
  it's
• 44:20
  nutritionally
• 44:21
  valuable
• 44:21
  to
• 44:21
  the
• 44:22
  fish.
• 44:22
  And
• 44:23
  so
• 44:23
  I've
• 44:23
  been
• 44:23
  trying
• 44:24
  with
• 44:25
  a
• 44:25
  lot
• 44:25
  of
• 44:25
  my
• 44:25
  patterns
• 44:26
  to
• 44:26
  add
• 44:26
  more
• 44:27
  of
• 44:27
  that
• 44:27
  modeling
• 44:28
  in.
• 44:29
  And
• 44:29
  some
• 44:30
  of
• 44:30
  the
• 44:30
  techniques
• 44:30
  to
• 44:30
  do
• 44:31
  it
• 44:31
  are
• 44:31
  a
• 44:31
  little
• 44:31
  bizarre.
• 44:32
  It
• 44:32
  takes
• 44:32
  a
• 44:32
  little
• 44:32
  more
• 44:33
  time.
• 44:33
  But
• 44:34
  I
• 44:34
  kind
• 44:35
  of
• 44:35
  feel
• 44:35
  like
• 44:35
  it's,
• 44:36
  it's,
• 44:36
  you
• 44:36
  know,
• 44:37
  for
• 44:37
  me,
• 44:37
  anyway,
• 44:37
  it's
• 44:38
  the
• 44:38
  next
• 44:38
  little
• 44:38
  step
• 44:39
  to
• 44:39
  take
• 44:40
  to
• 44:41
  make
• 44:41
  my
• 44:41
  flies
• 44:42
  look,
• 44:42
  look
• 44:43
  a
• 44:43
  little
• 44:43
  more
• 44:43
  natural
• 44:44
  and
• 44:44
  maybe
• 44:45
  get
• 44:45
  taken
• 44:46
  a
• 44:46
  little
• 44:46
  bit
• 44:47
  more
• 44:47
  than,
• 44:48
  you
• 44:48
  know,
• 44:49
  just
• 44:49
  a
• 44:51
  plain
• 44:51
  colored
• 44:52
  fly,
• 44:52
  for
• 44:52
  example.
• 44:53
  Interesting.
• 44:54
  I
• 44:54
  suspect
• 44:54
  if
• 44:55
  people
• 44:55
  stay
• 44:55
  tuned
• 44:55
  on
• 44:56
  YouTube,
• 44:56
  they'll
• 44:56
  find
• 44:56
  some,
• 44:57
  some
• 44:57
  tips,
• 44:57
  right?
• 44:58
  Yeah,
• 44:58
  yeah,
• 44:59
  but
• 44:59
  we're,
• 44:59
  we're
• 44:59
  really
• 45:00
  heading
• 45:00
  that
• 45:00
  way.
• 45:00
  I
• 45:01
  don't
• 45:01
  want
• 45:01
  to,
• 45:01
  you
• 45:01
  know,
• 45:02
  totally
• 45:02
  belabor
• 45:03
  the
• 45:03
  point
• 45:04
  on,
• 45:04
  on
• 45:04
  YouTube,
• 45:05
  but
• 45:06
  I'm
• 45:06
  coming
• 45:06
  close.
• 45:07
  I
• 45:07
  think
• 45:09
  it's
• 45:10
  really
• 45:10
  gotten
• 45:10
  to
• 45:10
  be
• 45:11
  a
• 45:11
  thing
• 45:11
  for
• 45:11
  me,
• 45:12
  learning
• 45:13
  different
• 45:13
  techniques
• 45:14
  to
• 45:14
  generate
• 45:15
  that
• 45:15
  model
• 45:15
  look
• 45:16
  and
• 45:18
  experimenting
• 45:19
  with
• 45:19
  new
• 45:19
  stuff
• 45:19
  every
• 45:20
  day.
• 45:20
  Very
• 45:21
  neat.
• 45:21
  Anything
• 45:21
  else
• 45:21
  you
• 45:22
  want
• 45:22
  to
• 45:22
  share
• 45:22
  with
• 45:22
  our
• 45:22
  listeners
• 45:22
  before
• 45:23
  I
• 45:23
  let
• 45:23
  you
• 45:23
  go
• 45:23
  tonight?
• 45:25
  Just
• 45:26
  now
• 45:26
  I'm
• 45:26
  incredibly
• 45:27
  hungry
• 45:27
  and
• 45:27
  want
• 45:28
  to
• 45:28
  eat
• 45:28
  a
• 45:28
  second
• 45:28
  dinner.
• 45:29
  Pot
• 45:29
  roast.
• 45:31
  I'd
• 45:31
  love
• 45:32
  to
• 45:32
  put
• 45:32
  together
• 45:33
  a
• 45:33
  pot
• 45:33
  roast,
• 45:34
  but
• 45:34
  we're
• 45:34
  getting
• 45:34
  a
• 45:35
  little
• 45:35
  late.
• 45:35
  Marvin.
• 45:36
  But
• 45:36
  you
• 45:36
  got
• 45:36
  the
• 45:36
  pressure
• 45:37
  cooker.
• 45:39
  You'll
• 45:39
  be
• 45:39
  done
• 45:39
  in
• 45:39
  15
• 45:40
  minutes
• 45:40
  if
• 45:40
  I
• 45:40
  don't
• 45:41
  blow
• 45:41
  the
• 45:41
  whole
• 45:41
  place
• 45:41
  up.
• 45:46
  So
• 45:47
  if
• 45:47
  Folks
• 45:47
  want
• 45:47
  to
• 45:48
  kind
• 45:48
  of
• 45:48
  follow
• 45:49
  your
• 45:49
  adventures
• 45:49
  at
• 45:49
  the
• 45:49
  vice
• 45:50
  and
• 45:50
  on
• 45:50
  the
• 45:50
  road
• 45:50
  and
• 45:50
  on
• 45:50
  the
• 45:51
  water.
• 45:51
  Where
• 45:51
  should
• 45:51
  they
• 45:51
  go?
• 45:53
  They
• 45:53
  can
• 45:53
  go
• 45:53
  to.
• 45:54
  Our
• 45:54
  YouTube
• 45:55
  is
• 45:55
  tightlinevideo.com
• 45:56
  or
• 45:57
  better
• 45:58
  yet,
• 45:58
  just
• 45:58
  go.
• 45:59
  Just
• 45:59
  a
• 46:00
  Google
• 46:00
  search
• 46:00
  will
• 46:01
  find
• 46:01
  me
• 46:01
  on
• 46:01
  YouTube.
• 46:02
  That's
• 46:03
  the
• 46:03
  easiest
• 46:03
  thing.
• 46:04
  Tightline
• 46:05
  video
• 46:05
  on
• 46:05
  YouTube
• 46:06
  as
• 46:07
  well.
• 46:07
  And,
• 46:07
  you
• 46:08
  know,
• 46:08
  that's
• 46:08
  where
• 46:08
  the
• 46:08
  majority
• 46:09
  of
• 46:09
  our
• 46:09
  stuff
• 46:09
  is.
• 46:10
  We
• 46:10
  just
• 46:10
  got
• 46:11
  a
• 46:11
  nasty
• 46:11
  note
• 46:11
  from
• 46:12
  Vimeo.
• 46:13
  Pay
• 46:13
  up
• 46:14
  or
• 46:14
  we're
• 46:14
  deleting
• 46:14
  your
• 46:15
  stuff.
• 46:15
  And
• 46:16
  I
• 46:16
  didn't
• 46:16
  pay
• 46:17
  up,
• 46:17
  so
• 46:17
  no
• 46:18
  more
• 46:18
  Vimeo.
• 46:18
  Well,
• 46:19
  there
• 46:19
  you
• 46:19
  go.
• 46:19
  Well,
• 46:20
  Tim,
• 46:20
  I
• 46:20
  will
• 46:21
  drop
• 46:21
  all
• 46:21
  that
• 46:21
  stuff
• 46:21
  in
• 46:21
  the
• 46:22
  show
• 46:22
  notes.
• 46:22
  And
• 46:22
  I
• 46:23
  really
• 46:23
  appreciate
• 46:23
  you
• 46:23
  carving
• 46:24
  some
• 46:24
  time
• 46:24
  out
• 46:25
  between
• 46:25
  first
• 46:26
  dinner
• 46:26
  and
• 46:26
  second
• 46:26
  dinner
• 46:26
  for
• 46:27
  me
• 46:27
  this
• 46:27
  evening.
• 46:28
  It's
• 46:28
  been
• 46:28
  great
• 46:29
  chatting
• 46:29
  with
• 46:29
  you,
• 46:29
  Marvin.
• 46:30
  Um,
• 46:31
  let's
• 46:31
  do
• 46:31
  it
• 46:31
  again
• 46:32
  sometime.
• 46:32
  How
• 46:32
  about.
• 46:33
  You
• 46:33
  betcha?
• 46:34
  And
• 46:34
  we'll.
• 46:34
  We'll
• 46:34
  talk
• 46:34
  about
• 46:34
  surfing.
• 46:35
  Yeah,
• 46:36
  there
• 46:36
  you
• 46:36
  go.
• 46:36
  Yeah,
• 46:36
  we'll
• 46:37
  talk
• 46:37
  about
• 46:37
  jams
• 46:37
  and
• 46:38
  all
• 46:38
  kinds
• 46:38
  of
• 46:38
